snacking can get a little wild when you’re home all day ammmmiright?! my solution is to always have healthy snacks prepped for a quick bite I can feel good about ❤️ these are my no bake chocolate almond butter coconut energy bites aka ‘dank a$$ almond joy bites’ — and I cannot stop eating them! ingredients: 1/2 cup natural creamy almond butter 3 tablespoons honey or date syrup 1 teaspoon vanilla extract 1/3 cup flaxseed meal 1/4 cup @lovemajka chocolate lactation powder (great for nursing mamas) or your fav protein powder — if you don’t have protein powder you can add 1/4 cup almond flour 1 tablespoon cacao powder (or unsweetened cocoa powder) 1/2 teaspoon cinnamon 1/4 cup unsweetened shredded coconut for topping: 1 tablespoon chocolate chips 1/4 teaspoon coconut oil extra shredded coconut for topping + sea salt add almond butter, honey and vanilla to a medium bowl and mix until well combined. add flaxseed meal, protein powder, cacao, cinnamon and shredded coconut. mix with clean hands to combine. roll into 9 balls. you should be able to form balls that stick together but bc all nut butter consistencies are different and depending on what protein powder you use, you may need to add in more nut butter or sweetener to help the balls stick together! melt chocolate and coconut oil in 30 second increments in microwave. Once melted, drizzle over balls then sprinkle with shredded coconut. place in fridge to harden the chocolate. store covered in fridge for up to one week.
