After a very fun weekend in Connecticut visiting friends, I’m happy to be back home where there are temps above freezing and SUN☀️ Celebrating with this sunshine inspired recipe—Golden Milk Donuts! Baked, spiced, and fluffily made with new turmeric infused coconut milk from @edwardandsons💛💛 . Donuts ‣1 cup (240g) @edwardandsons Native Forest Organic Turmeric Coconut Milk ‣1/4 cup (60g) unsweetened applesauce ‣1/2 cup (70g) coconut sugar ‣1 tsp vanilla extract ‣1 1/2 cup (180g) oat flour ‣2 tbsp (15g) coconut flour (makes them fluffier, more oat flour is okay too) ‣2 tsp baking powder ‣1/4 tsp salt ‣1 tsp cinnamon ‣1 tsp ginger ‣1/2 tsp cardamom (optional) ‣Pinch of black pepper Glaze ‣1 cup powdered sugar ‣4-5 tbsps @edwardandsons Native Forest Organic Turmeric Coconut Milk ‣Shredded coconut for sprinkling . Preheat the oven to 350ºF. Whisk together the Native Forest Organic Turmeric Coconut Milk, applesauce, coconut sugar, and vanilla. Add the remaining ingredients. Mix to combine. Pipe into a greased donut pan. Bake for 20-22 minutes at 350ºF. Cool completely. Whisk together the glaze ingredients, adding milk slowly to create a thick but drizzle-able glaze. Dip donuts into the glaze, shaking off excess. Sprinkle with shredded coconut and refrigerate until glaze is set. Promise your upcoming mon-fri will be better with a batch of homemade vegan/paleo KIT KATS by your side (but like…metaphorically ofc, you should actually keep them in the fridge✌️) Recipe this a way… . 3/4 cup (75g) unsweetened shredded coconut 3/4 cup (105g) almonds Pinch of salt 1/4 cup (65g) nut or seed butter 1/4 cup (80g) maple syrup 1 cup (160g) dark chocolate chips (I used my fave @hukitchen gems) . Blend the coconut and almonds to a fine flour. Melt the nut/seed butter with the maple syrup, stirring until smooth. Mix into flour along with a pinch of salt to form a dough. Press/roll as thin as possible on a lined baking sheet. Bake for 10 minutes at 350ºF. Cool for 10-15 minutes. Trim edges into a rectangle, and then cut that rectangle into 3 equal sized rectangles. Melt the chocolate. Divide into 2 separate bowls. Crush/blend the cut off edges into fine crumbs. Stir into one half of the melted chocolate. Layer the wafer rectangles with the crumb-filled chocolate. Refrigerate about 10 minutes until it holds together. Slice into 8 bars. Cover with the remaining chocolate. Cake ➤2 cups oat flour ➤1 cup cacao powder ➤3/4 cup tapioca or corn starch ➤1 tsp baking powder ➤1/2 tsp baking soda ➤1/2 tsp salt ➤1 1/2 cup almond milk ➤1/2 cup almond butter ➤3/4 cup coconut sugar ➤1 1/2 cup applesauce ➤1 tbsp apple cider vinegar ➤1 tsp vanilla extract ➤1 tsp coffee extract (optional) Frosting ➤1 1/2 cup raw cashews soaked overnight ➤1/4 cup maple syrup ➤1/4 cup cacao powder ➤1/4 cup coconut oil ➤1 tsp vanilla extract ➤1/2 tsp salt . Preheat the oven to 350F. Whisk together oat flour, cocoa powder, tapioca starch, baking powder, baking soda, and salt. Blend almond butter, coconut sugar, applesauce, non-dairy milk, apple cider vinegar, vanilla extract, and coffee extract. Add the wet ingredients to the dry and stir to combine. Pour into a 9-inch cake pan. Bake for 30-35 minutes at 350F or until a toothpick inserted into the center comes out clean. Cool completely before frosting. Blend frosting ingredients, adding milk slowly until it is smooth and thick. As much as I’m missing gingerbread these days, embracing the fact that it’s LEMON CAKE…I mean citrus season definitely helps🍋🍋 . 2 tbsp flax meal + 4 tbsp water 1/2 cup (120g) lemon juice 1 cup (240g) non-dairy yogurt 1/2 cup (160g) maple syrup 1 1/2 cups (180g) oat flour 1 1/2 cup (165g) almond flour 1 tsp baking soda 1/2 tsp salt 1 tbsp lemon zest . Preheat the oven to 350F. Stir together the yogurt, maple syrup, lemon juice, and flax eggs. In a separate bowl, whisk oat flour, almond flour, baking soda, salt, and lemon zest. Add wet to dry, and stir to combine. Pour into a small (8-10-cup) greased bundt pan Bake for 30-35 minutes at 350F, or until golden around the edges. Cool for at least 30 minutes before flipping out onto a cooling rack to cool completely. As @the_bananadiaries reminded me, in this weird holidays > healthy time where no one knows what to eat/post…CHOCOLATE. Because chocolate is never wrong. So Buckwheat Chocolate Breakfast Pudding with coyo swirls, hazelnuts, and chopped @hukitchen chunks was the perfect thing to brighten up this gloomy morning🍫☀️ . ➤1/2 cup raw buckwheat ➤1-2 tbsp maple syrup (or 2 medjool dates) ➤2-3 tbsp cocoa powder ➤1/4 tsp salt ➤1/2 tsp cinnamon (optional) ➤~1/2 cup canned coconut milk . New years breakfast resolution: eat more chia pudding. Because I truly did not give it the time and attention it deserves in 2019. This morning’s was a blender blueberry version with the simple but best toppings💜 . ➤1/2 cup (120g) nondairy yogurt (I used @kitehillfoods almond milk yogurt) ➤1 cup (240g) cashew milk ➤1/2 cup (70g) frozen blueberries ➤1-2 tbsp sweetener (I used @madhavafoods honey) ➤Pinch of salt ➤1/2 cup (90g) chia seeds . Blend everything but the chia until smooth. Add the chia and blend briefly, then pulse every few minutes until the chia seeds no longer sink to the bottom. Chill until thick. In my family glazed sugar cookies are the ultimate christmas cookie, and this is my favorite healthier holiday version✨ Super simple to make with just 7-ingredients, easy to roll/cut into any shape, super tender with just crispy edges, and made with almond flour so they are vegan and paleo! Recipe below… . 2 1/2 cups (280g) almond flour 1/4 cup (90g) maple syrup 1/4 cup (70g) unsweetened applesauce 1 tsp baking powder 1/4 tsp salt 1 tsp vanilla extract 1/2 tsp almond extract (optional) . Mix all the ingredients to form a sticky dough. Chill for 1 hour for easier rolling (recommended but not required). Preheat the oven to 350F. Roll out the dough to 1/4 inch thickness between 2 sheets of wax paper (flour as necessary). Cut into shapes. Use a spatula to transfer the cookies to a lined baking sheet lined. Re-roll and cut out as many cookies as you can fit. Bake for 12-14 minutes or until golden brown around the edges. Remove from the oven and cool completely before frosting (coconut butter glaze recipe linked in my bio). It’s the last weekend before christmas, which definitely calls for a fluffy GINGERBREAD #pancakesunday stack! Lots of loving reviews on this one, so if you haven’t tried them yet this is your moment🥞🎄 . 1/2 cup unsweetened applesauce 1/2 cup almond milk 1 tbsp lemon juice 2 tbsps molasses 1 tsp vanilla extract 1 1/4 cup oat flour 1/2 tsp baking powder 1/2 tsp baking soda 1 tsp ground ginger 1 tsp cinnamon 1/2 tsp cloves 1/4 tsp salt . Whisk together all the ingredients. Spoon batter into a preheated nonstick pan (about 1/4 cup per pancake) and gently spread with the back of a spoon. Cook on low heat for 4-5 minutes per side, flipping when golden around the edges. Repeat until all the batter is gone (I usually get 5-6). There’s hot chocolate. And then there’s hot chocolate MOUSSE. I won’t tell you one is better than the other, but I will let the ultra luscious texture and squishy marshmallows and melty chocolate drizzles speak for themselves😍😍 . 6oz (180g) unsweetened chocolate 1 cup (200g) pitted medjool dates 1 3/4 cup (420g) almond mik 1 tsp vanilla or peppermint extract Pinch of sea salt . Roughly chop the unsweetened chocolate and melt. In a high speed blender, combine almond milk, medjool dates, extract, and salt. Blend on high until very smooth. Slowly stream in the melted chocolate and continue blending until creamy. Transfer to cups or jars. Refrigerate overnight (or at least 8 hours). Top with vegan marshmallows and a drizzle of melted chocolate.
