Sriracha Ramen Noodle Soup . 170g uncooked ramen noodles 2 tbsp vegetable oil 1 tbspchopped ginger 3 cloves of garlic, chopped 1 onion, chopped 500 g Chinese lettuce, sliced 3 tbsp soy sauce 3 tbsp mirin seasoning 1 diced tomato 4 cups vegetable broth (1 liter) 2 tsp Sriracha sauce Salt and pepper to taste Chopped green onions . Rehydrate the ramen noodles in hot water for 10 minutes, drain and set aside. In a saucepan, over medium heat, heat vegetable oil, then add in ginger, garlic, onion, Chinese lettuce and cook until softened and fragrant. Add soy sauce, mirin, tomato, vegetable broth and sriracha sauce. "Unlike many other tempeh recipes, there is no need for a long marinade time with this one, making it great for a last-minute weeknight meal. Orange Glazed Tempeh 3 tbsp vegetable oil 240 g of tempeh, diced 1 tbsp chopped ginger 2 cloves of garlic, minced 3 green onions, chopped 1 cup of vegetable broth 250 ml 1/4 cup orange marmalade 60 ml 2 tbsp soy sauce 1/2 tsp Sriracha sauce Salt to taste ⠀⠀ In a skillet over medium-high heat, brown the tempeh in oil for 5 minutes. Add ginger, garlic and green onion. Cook for 2 minutes. Stir in vegetable broth, orange marmalade, soy sauce, Sriracha sauce. Cook until most of the liquid is absorbed. Add salt to taste. "Easy vegetable pasta 🥦 Ingredients: 1 tbsp oil Small yellow onion, sliced 1/2 tsp crushed red pepper flakes 1/4 tsp crushed rosemary 1 tsp salt 1/2 tsp pepper 2 cups broccoli florets 2 cups cremini (baby bella) mushrooms, sliced 1 cup cherry tomatoes, halved 4 garlic cloves, minced 1 cup oat milk 2 tbsp nutritional yeast (if you are sensitive to niacin, use flour instead!) 2 cups farfalle or your fave pasta Steps: In a pan over medium heat, add the oil and onion. Sauté for 15 minutes. Add the broccoli, mushrooms, crushed red pepper flakes, rosemary, salt and pepper. Cook while stirring occasionally for 5 minutes. In a separate pot, start cooking your favorite pasta following instructions on the box. Add the tomatoes to the pan and cook 3-5 minutes, stirring occasionally. Add the oat milk and nutritional yeast. Mix together and bring to a simmer. Immediately turn off heat. Mix in the cooked pasta. It’s also easy to customize - you can add mushrooms, bell peppers and/or broccoli depending on what you feel like! Ingredients: 8 roma tomatoes, halved Half an eggplant, cubed Oil with a high smoke point Salt to taste 1 tbsp dried rosemary 1 tsp dried thyme 1 tsp dried oregano 1/4 tsp crushed red pepper flakes 1/4 tsp ground black pepper 4-6 garlic cloves, pressed (depends on how much garlic you want!) 1 tbsp sliced basil leaves 2 cups rigatoni pasta Steps: Toss the eggplant and tomatoes with oil, salt and rosemary. Roast at 400F for 17-20 min. Remove from oven, let cool, and remove all tomato skins. Cook your favorite pasta in heavily salted water. In a pot over medium heat, cook the garlic in oil until fragrant. Add the tomatoes and mash them together using either a potato masher or fork. Add the thyme, oregano, red pepper, black pepper and eggplant. Mix together and cook for a minute. Add the basil and cooked pasta, mix, and serve!
