RECIPE For potato wedges: 600g regular yellow potatoes 1 tsp chili pepper 0.25 tsp sea salt . For the avocado dip: 1 avocado 2 tsp plant milk 1 tsp lime juice 0.25 tsp sea salt . Steps 1. Preheat the oven to 220C/428F 2. Cut the potatoes into wedges and put them into a pot 3. Boil the potatoes for 5 minutes and then drain the water 4. Add the spices into the pot, close the lid and give it a shake (it doesn’t matter if some wedges break) 5. Spread the wedges on an oven tray lined with parchment paper 6. Bake the potatoes in the oven for about 20-30 minutes 7. In meanwhile prepare the avocado dip by combining all these ingredients in a bowl 8. Mash and wish until it’s creamy 9. Miso-Tahini Sauce: 3 Tbsp tahini 1 tsp brown rice miso 1 tsp lemon juice 1 tsp date syrup 5-6 Tbsp water (depending to desired consistency) —•—Method—•— 1.Wash your cauliflower and trim the leaves so that it stands straight. 2.Fill a large pot with water (until ¾ full) and bring to boil. Once boiling, carefully add in the whole cauliflower head. Boil for 10-12 minutes (depending on the size of your cauliflower) and drain when done. 3.Preheat your oven to 200°C/390°F and line a baking sheet with paper. 4.Place your cauliflower on the sheet and gently massage the olive oil into the head. Sprinkle some salt on top and bake in the oven for 7 minutes. 5.In the meantime prepare your miso sauce by mixing all ingredients together. Take the cauliflower out of the oven and gently brush the sauce on top and the sides. Place the chocolate chips and coconut oil in a bowl; microwave in 30-second increments until fully melted. Place approximately 1 tablespoon of melted chocolate in the bottom of each liner. Method: 
1. Beat the aquafaba for around 5-15 minutes till it’s a firm airy texture - tilt your bowl upside down it should hold itself. 2. Melt the chocolate in a double boiler, allow to cool to room temperature and add almond butter. 3. Slowly incorporate the chocolate to the ‘eggs’, carefully without breaking them (see video) 4. Add sugar if needed and shaved chocolate. 5. Place in ramequins and cool 2-3hours in the fridge, top with fruits!!! Hope you enjoy! If not, it’s time to try this 🌽 CORN SALAD 🥗, but with a little twist I’m going to tell you🤫 Still easy and sooo good you definitely need to try it 🤤 ⠀⠀ What I usually do is add some nori and swap that dressing to a creamy one 😊 with some mustard and black salt, using such bases as👇: -cashew/almond/sunflower seed -tofu -soy/almond/cashew yogurt ⠀⠀ You’ll be surprised how good that version is 😱🎉 There’s also an option to swap avocado for tofu or even leave it out, still yummy 😋 ⠀⠀ Which dressing option would you choose?
