Baked Teriyaki Salmon . Ingredients 4 Skinless Salmon Fillets about 6 oz each 1 Green Onion sliced 1 Tbsp Sesame Seeds Teriyaki Sauce: ⅓ Cup Low-sodium soy sauce ¼ Cup Fresh orange juice 2-3 Tbsp Water 2 Tbsp Honey 2 Garlic Cloves minced 1 Tbsp Minced fresh ginger 1 Tsp Chili Flakes or to taste ½ Lemon juiced ½ Tbsp Gluten-free flour . Instructions Preheat the oven to 400 degrees. In a small bowl whisk together all teriyaki sauce ingredients. Spray a baking dish with non-stick cooking spray and place the salmon in. Pour the sauce over then bake in the preheated oven for 12-15 minutes until cooked through and flaky. Once the salmon is cooked, remove from the oven, and spoon over with the thickened sauce from the baking dish. Garnish with sesame seeds and green onions. Enjoy! . Italian Turkey Meatballs . Ingredients 1 pound ground turkey 93% lean 1/4 cup breadcrumbs 3/4 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon garlic powder 1/2 teaspoon dried basil 1 egg 1 tablespoon water 3 cups marinara sauce look for a low sugar, low-fat variety, warmed 2 tablespoons chopped fresh parsley cooking spray . Instructions Preheat the broiler. Line a sheet pan with foil and coat the foil with cooking spray. Place the turkey, breadcrumbs, salt, pepper, garlic powder, basil, egg and water in a bowl; mix until thoroughly combined. You may need to add more water, 1 teaspoon at a time, to get a smooth mixture. Take approximately 2 tablespoons of the meat mixture and roll it into a ball. Place the meatball on the sheet pan and repeat with remaining meat. Spray the tops of the meatballs with cooking spray. Broil for 10 minutes or until meatballs are just done. Place the meatballs on a plate and pour the marinara sauce over the top, Sprinkle with parsley and serve immediately. . Creamy and Healthy Tuna Pasta Salad . Ingredients 8 oz Whole Wheat Penne or gluten-free 2-3 Celery Stalks chopped 1 Cup Frozen Green Peas thawed 6.7 oz Tuna in Olive Oil 1 jar, drained and flaked For the creamy sauce/dressing: 1 Avocado very ripe 1 Cup Plain Greek Yogurt 2 Tbsp Chopped Fresh Dill plus more to garnish ½ Lemon juiced 1 Tbsp Dijon Mustard 1-2 Garlic Cloves minced 1 Tsp Chili Flakes or to taste Kosher salt and pepper, to taste . Instructions Cook the pasta according to package directions, then drain and set aside in a large bowl to cool. Place all sauce/dressing ingredients into a blender or food processor and pulse until smooth and well combined. Taste and adjust the seasoning. Easy Chicken Alfredo Brussel Sprouts . Homemade chicken alfredo loaded with chicken chunks and Brussel sprouts for a low carb option.l . Ingredients 1 lb Boneless skinless chicken breast cut into bite-sized pieces 2 Tbsp Avocado Oil divided 2 lbs Brussels Sprouts trimmed and halved if too big 1 Cup Milk of choice (dairy or non-dairy) 2-3 Garlic Cloves minced 1 Tbsp Freshly Squeezed Lemon Juice 1 Tbsp Cornstarch ¼ Cup Shredded Cheese 1 Tbsp Chopped Parsley Salt and pepper, to taste Instructions Heat 1 tablespoon of oil in a large skillet over medium heat. Add chicken and cook until golden brown. Season with a pinch of salt and pepper then set aside on a plate. Add remaining oil and sauté the Brussels sprouts until it starts to brown. Meanwhile in a small bowl, whisk milk, garlic, lemon juice, a pinch of salt & pepper, and cornstarch, until well combined. Pour milk mixture over the Brussels sprouts and stir to deglaze the pan. Lower the heat and simmer until sauce thickens and sprouts are tender. Return the chicken back to the pan and stir in the shredded cheese. Continue to cook until everything is hot and melty.
