But when I had some yummy pasta sauce, some tempeh and fresh pasta I thought to make the most of it all and combine it in one tasty, wholesome and healthy meal. Here’s a deliciously simple, healthy, vegan, GF and chocolate-y recipe for breakfast, snacking, dessert and more… click save to make this later! ✔️ . Chocolate Banana Crumble 👆🏻 [serves 4-6] ⭐︎place 4 sliced bananas in the bottom of a dish and cover with 100g chopped chocolate (I used the dark dark dark 95% @divinechocolateuk ) ⭐︎add 100g oats, 70g mixed nuts, 2 tbsp mixed seeds, 2 tbsp desiccated coconut, 1 tsp cinnamon and a pinch of salt to a blender and blitz to small chunks. ⭐︎melt 30g coconut oil with 30g coconut honey or syrup. When you just want something quick and easy… 🙌🏻🌈 One thing that never fails is a good throw-everything-on-a-piece-of-toast kind of meal. And that’s exactly what I am having having tonight as I’ve got some of my recently baked Seedy Wholemeal Soda Bread which is great for mopping up all these juices… 💖 . It’s been a long old day on my laptop - working extra hard ahead of the @creativeimpactco summit next Friday which I am so excited for! For those of you who don’t know, creative impact is where I work part-time and #nourishingamy is the rest… so it’s a quick dinner for me and here’s the recipe again for this delicious toast! . Balsamic Mushrooms and Tomatoey French Lentil Avo Smash 👆🏻 [Serves 2] 🍄Rub 2 large field mushrooms with 1 tbsp balsamic glaze and heat under the grill for 10-15mins until juicy and tender. Turn over halfway through. 🍅Meanwhile add a pouch of Tomatoey French Lentils or 250g cooked lentils to a saucepan with 100g tomato passata and warm through. 🥑Mash 1 avocado with salt and pepper using a fork. 🍞Toast 2-4 slices thick soda bread or sourdough, top with smashed avo, warmed lentils and balsamic mushrooms. Serve with greens, tahini, extra seeds, chilli flakes and tomatoes. . Salads will forever be my number 1 ✨🌈 Who agrees? It makes me so sad to see such limp salads on menus when there are so many wonderful things you can do with vegetables, grains and dressings to make really amazing and inspiring salad or grain bowls, as I like to say! [#ad] . This one is a new favourite, packed with paprika-cumin roasted squash and crunchy chickpeas, cooked quinoa, crunchy hazelnuts, fresh pomegranate and lots of garlicky kale thanks to @sacla_uk ‘s new Vegan Aioli! It’s deliciously garlicky and egg/dairy/gluten-free making it a perfectly creamy and flavoursome salad dresser and grain bowl topper… . Here’s how to make it for yourself… all in 40 mins with minimal effort ✨ . Roasted Squash, Garlic Kale and Quinoa Grain Bowl 👆🏻 [Serves 2] ⭐︎peel and shop 1/2 butternut squash (300g peeled weight) into bit-size cubes and add to a large tray with 1 tin drained chickpeas, 1 tsp smoked paprika, 1 tsp ground cumin and some olive oil. Roast at 160Fan/180*C for 30-40 minutes until tender. ⭐︎cook 100g quinoa. ⭐︎add 60g kale to a bowl and tear the leaves. Pour over 40g (4 tbsp) Sacla Vegan Aioli and massage with your hands. Stir in 50g raisins. ⭐︎plate up: divide the kale between two bowls, top with the quinoa, roasted squash and chickpeas. Sprinkle over 40g chopped hazelnuts, some fresh herbs, pomegranate, lime wedges and more Vegan Aioli! . With rain pouring all day long, we couldn’t get out of the house (well, unless we wanted to get soaked) and it’s easier to feel down. To feel lonely. To feel un-inspired and un-enthusiastic… . So perhaps a good morning mantra today is to remind ourselves that we bring our own sunshine. Our bright outlook has such an impact on events that unfold… I hope this Monday is off to a great start and you are bringing the rays of sunshine today. And maybe even with a delicious breakfast, too… . Chocolate and Plum Baked Buckwheat 👆🏻 Like baked oats but with buckwheat flakes, this hearty, wholesome and choc-berrylicious recipe is easy, gluten-free and vegan. Save this one for later… . [serves 1] ⭐︎stir together 50g buckwheat flakes (from @koro_uk or oats) with 25g chocolate protein (I used @freesoulsistas ) + 80-100ml almond milk (@plenishdrinks )+ 1/2 tsp baking powder until thick. ⭐︎arrange 1 chopped plum at the bottom of an oven-proof ramkein or dish. Here’s another one for the traybake-rs 🌟🌈 After sharing my one-bake dish the other night, it reminded me that I have this super easy and tasty traybake hiding in my Nourish Me ebook!! . Traybake dinners are just the easiest way to pack in so much goodness, flavour and colour, too. They are a great way to meal prep or to feed a hungry family. Have mixed feelings when people refer to chocolate as a “treat” as if it’s something we should naughtily indulge in. But actually no food is off limits, it’s all about balance 🤩 .
