"Easy vegetable pasta 🥦 Ingredients:
1 tbsp oil
Small yellow onion, sliced
1/2 tsp crushed red pepper flakes
1/4 tsp crushed rosemary
1 tsp salt
1/2 tsp pepper
2 cups broccoli florets
2 cups cremini (baby bella) mushrooms, sliced
1 cup cherry tomatoes, halved
4 garlic cloves, minced
1 cup oat milk
2 tbsp nutritional yeast (if you are sensitive to niacin, use flour instead!)
2 cups farfalle or your fave pasta
In a pan over medium heat, add the oil and onion. Sauté for 15 minutes.
Add the broccoli, mushrooms, crushed red pepper flakes, rosemary, salt and pepper. Cook while stirring occasionally for 5 minutes. In a separate pot, start cooking your favorite pasta following instructions on the box.
Add the tomatoes to the pan and cook 3-5 minutes, stirring occasionally.
Add the oat milk and nutritional yeast. Mix together and bring to a simmer. Immediately turn off heat. Mix in the cooked pasta. Serve and enjoy!
