    QEESADILLAS (2 servings) Veggies: - Sauté 1/2 bell pepper, 1/2 onion, 100g mushrooms, 4tbsp corn kernels. Then add fresh 1 cup spinach. Set aside. Bean Mash: - Add to a pan: 230g black beans (drained), 1 cup water, 1 tbsp cumin, 1tsp smoked paprika powder, 1/2 tsp sea salt. Let this simmer until almost all water has dissolved, then mash it up to a paste. Set aside Vegan Cheese Sauce: - Add to a saucepan: 1/2 cup vegan milk (unsweetened), 2tbsp nutritional yeast, 1tbsp tapioca flour, 1/2 tsp sea salt, 1/4 tsp onion powder. Whisk while simmering on medium heat until it becomes stretchy (add more liquid if too stretchy) Dip: - Add to a small blender: 1/2 cup unsweetened vegan yogurt (thickest you can find), 2tbsp vegan mayonnaise, 1/2 tbsp lime juice, 1/4 cup fresh coriander, 1 pinch sea salt. Blend until smooth Assemble on 4 whole wheat tortillas!
