Chipotle Bowl (2 servings)
- White or brown rice for 2 (add in lime juice and coriander when it’s done cooking)
For the chipotle tofu scramble
- 200g firm crumbled tofu
- 2 tbsp tomato puré
- 2 tsp chipotle paste
- 2 tsp cumin, ground
- 1 tsp dried oregano
- 1/4 tsp sea salt
- 1 garlic clove, minced
Crumble the tofu and cook in a pan on high heat together will all other ingredients plus a splash of water or oil for a couple of minutes
Serve with lettuce, the lime rice, drained and rinsed black beans, tomato, red onion and mashed avocado!
