Recipe
50g (1.8 oz) vegan margarine *could sub coconut oil
50g (1.8 oz) light brown sugar
3 flax eggs
1 tbsp vanilla extract
Beetroot puree (see @sovegan)
Dry ingredients (see @sovegan) *sub gf flour if needed
75g (2.6 oz) dark chocolate
Pinch of salt
75g (2.6 oz) dark chocolate

METHOD
Combine vegan margarine and brown sugar in a bowl. Add flax eggs, vanilla extract and beetroot puree and stir. Add in the dry ingredients, sifted, and combine. Add in 75g (2.6 oz) dark chocolate and a pinch of salt and combine. In a greased oven safe tin, add in half of the brownie batter, layer with another 75g (2.6 oz) dark chocolate, and finely the other half of the batter. Bake at 180C/356F fan for 45 min. Before serving, add the beetroot icing, cut in squares and enjoy!
