"This serves 2 but can easily go to 4-5 servings by adding a 15 oz can of tomatoes (or doubling up the roma tomatoes!). It’s also easy to customize - you can add mushrooms, bell peppers and/or broccoli depending on what you feel like!
8 roma tomatoes, halved
Half an eggplant, cubed
Oil with a high smoke point
Salt to taste
1 tbsp dried rosemary
1 tsp dried thyme
1 tsp dried oregano
1/4 tsp crushed red pepper flakes
1/4 tsp ground black pepper
4-6 garlic cloves, pressed (depends on how much garlic you want!)
1 tbsp sliced basil leaves
2 cups rigatoni pasta
Toss the eggplant and tomatoes with oil, salt and rosemary. Roast at 400F for 17-20 min. Remove from oven, let cool, and remove all tomato skins.
Cook your favorite pasta in heavily salted water.
In a pot over medium heat, cook the garlic in oil until fragrant. Add the tomatoes and mash them together using either a potato masher or fork. Add the thyme, oregano, red pepper, black pepper and eggplant. Mix together and cook for a minute. Add the basil and cooked pasta, mix, and serve!
