Am I right?! ⠀ ↠⠀ Loving their new sprouted spelt sourdough topped with @artisanaorganics cashew butter, my homemade triple berry chia jam, @emmysorganics dark cacao cookies and of course bluebs⠀ ↠⠀ Chia seed jam⠀ 1C frozen mixed berries⠀ 2tbsp maple syrup⠀ Half a juiced lemon⠀ 1tsp vanilla⠀ Pinch of cinnamon⠀ Pinch of nutmeg⠀ 2Tbsp chia seeds⠀ Add all ingredients except for chia seeds to a small sauce pan. Cook on medium until you can mash up berries. Mash to desired consistency and allow mixture to heat until it begins to bubble. Take off heat and mix in chia seeds. ✨ Chia jam! ✨ If you haven't made chia seed jam yet.. YOU MUST! It is so easy and you only need 2 ingredients, fruit and chia seeds! Put 1 cup of frozen or fresh fruit (I used frozen cherries 🍒) into a saucepan, and heat, stirring occasionally until they start to breakdown Turn off the heat and mash with a fork or masher, just to make sure all big lumps are gone Add 1 tablespoon of chia seeds and leave to cool (Optional) Put into a mason jar... Recipe below ⬇️ What better is there than crepes and fruits in a beautiful pink bento box? 💞 These are vegan buckwheat crepes filled with homemade raspberry chia jam and served with a loot of fruit 💖 —— I bought my bento box from @monbento in january and couldn‘t be happier with it!! Do you have one? What do you use it for? —— What you‘ll need: 1 3/4 cups of buckwheat flour 2 1/2 cups plantbased milk (i used soy milk) 1/2 cup sparkling water 1/2 cup cashew (mixed with a little bit of water and blended until you habe a pulp) A pinch of salt 2 tbsp maple sirop —— How to make it: First mix all the dry ingredients. Then blend the cashews and the water. Now combine the dry and the wet ingredients and mix well. Heat some oil in a frying pan (i used coconut oil). Put one scoop of dough in the frying pan and rotate until the dough is completely spread. If the dough isn‘t runny enough it will stay in one place (like when making pancakes), in that case add more liquid to it. Bake from both sides until golden. Serve with fruit, peanut butter or other topping. —— I posted the recipe for the raspberry chia jam on an earlier post, just scroll down ☺️

In a medium saucepan over medium heat, add the raspberries and cook until they start to break down, stirring and mashing frequently, about 10 minutes. 2. Turn the heat to low, stir in the maple syrup, lemon juice and vanilla extract. Then stir in the chia seeds and turn off the heat. 3. Allow the mixture to stand for 5-7 minutes until the chia seeds thicken the jam and the mixture to cool down. (The jam will continue to thicken as it cools.) 4. Serve immediately, or transfer the jam to a jar and store in the fridge for up to 2 weeks. Chocolate Banana PB & J oats! 🍫🍌🥜🍓I have actually never been a huge fan of PB & J, but the other day I was topping my oats and craving both raspberries and PB, but not sure if I would like them in the same oat bowl. I ate the combo and had a realization that this was basically PB & J. So I made some raspberry chia jam so I could make these oats! Chia jam is SO easy to make. Hello welcome to the ultimate mashup: French toast.... banana bread!!!!! Inspired by @alizarae It’s soooo good you guys don’t even know! I waited a few days so that the banana bread was a little less soft so it would hold up easier. Then I dunked/soaked it in an egg/milk mixture and French toasted it!! It’s topped with @siggisdairy plain Greek yogurt and a berry chia compote (heated raspberries, blueberries, chia seeds and water in a saucepan over med-high heat until the berries start coming apart and it all thickens up)

Munira loves to join us at the table and shows such an interest in food so we have started to give her little tastes of different fruits and vegetables before we fully start her weaning journey. Happy Shrove Tuesday lovelies.. I have fond childhood memories of Pancake Day. One of the first being my primary school teacher whipping up pancakes of varying colours to excite us into trying them. I remember pink pancakes, blue ones & green being piled on to our plates that we excitedly doused in lemon and sugar. Another memory being the after school race home to devour as many pancakes as my mum would allow forgoing a savoury supper for that zingy sweet and sour hit. These days Pancake Day doesn’t excite me as much as it once did but I do still love them and will try and whip up a batch for Steve and I to enjoy but it may not be today. Teaching duties might get in the way! 🩰 It’s likely to be a late celebration for us, but that’s ok. i got Chocolate Covered Sunbutter Raspberry bars for you, vegan+gf, low sugar, nobake. in a bowl mix 2 tbsp sunbutter, 2 tbsp maple syrup, 1/4 cup applesauce, 2 tbsp flax seed meal, 2/3 cup oat flour. press into a loaf pan and freeze. . mash 1 cup raspberries, combine with 1 tbsp chia seeds, pour into loaf pan, freeze again. once solid, cut into bars, keep them cold. melt 1/2 cup chocolate with 2 tsp coconut oil and dip cold bars. refrigerate. keep bars cold. #lazymotherbaker

RECIPE for this WILDBERRY CHIA JAM PIE coming at you 🤟🏼❤️ It’s has a paleo crust, is refined sugar free and pretty low in calories for a CAKE 😇 . @tesiamuniz asked me for the recipe and I finally came up with it! I am so sorry it took me so long to upload it ❤️ . For the PIE CRUST: - 1 cup almond flour - 1 cup coconut flour - 2/3 cup tapioca flour - 1/2 cup melted coconut oil - 1 tbsp coconut sugar - 1/2 tsp sea salt - 1 large egg . Mix all the ingredients without the egg first, then slowly add in the egg until a dough forms. Chill in the fridge for about at least half an hour then roll out using some more almond flour to make sure it doesn’t stick. Place into your pie dish and make sure to leave some of the dough out for decoration later. Bake at 180 degree celsius for about 7 minutes. In the meantime prepare your chia jam! . . For the Wildberry Chia Jam: . Heat around 500g frozen wildberries over the stove, then transfer to a blender and blend until smooth. Add in about 2-3 tbsp chia seeds depending on the consistency you want and add sweetener if you like. Let it thicken for at least 15min. When done, spread the chia jam on your semi-baked pie crust, add decorations made with the remaining pie crust if you like and place back in the oven for about 5-8min until golden brown. BLUEBERRY CHIA JAM 😋 Happy Monday everyone! Have had a great 10 days off social media - I deleted the apps from my phone over half term and I have to say it was very liberating! In that time I attended @ion_nutrition training clinic, finished an assignment (now only 2 to go until I’ve completely finished!), saw some PT clients, squeezed in an adventurous ride, visited my family in Worcester, watched 2 days of lectures and now I am back, ready for action! Over the weekend whilst watching lectures, I tested out some recipes, (the benefits of watching at home!) one of which was this Blueberry Chia Jam. It’s super easy to make and is delicious on some cream cheese and this chia and rye bread from @oleandsteenuk or on a slice of my Gut Loving Loaf of Bread. You need: 1 1/2 cups frozen blueberries 1 lemon (juiced) 1 tablespoon maple syrup 1 tablespoon water 1/4 cup chia seeds Over a medium heat simmer the blueberries, lemon juice, maple syrup and water for 15 mins. Apparently it’s #internationalpancakeday tomorrow, but I have not made pancakes recently so here is a waffle recipe instead to prepare you! I’m sure you could just fry these up in a pan as well to make panckes, but I do think waffles are more fun to be honest 😅 Anyway, it’s a day to be celebrated, that is for sure! But the winter generally means higher prices for berries… well fresh berries. This is the time to use frozen berries and this jam/compote is the perfect way to pull out their flavor. We are still in porridge mode and I find I need to mix it up to keep it interesting and nourishing. This morning we are loving this cinnamon and cocoa porridge bowl, perfect for a cold, lazy Sunday morning! To make add oats to plant milk of your choice and add 1 tsp of cocoa and 1/2 tsp of cinnamon. To boost the nutrient density I add some nut butter, whole natural yogurt, homemade raspberry chia jam and a sprinkle of flax seeds and walnuts. This breakfast is packed with omega 3 fats, protein, fibre, iron, b vitamins, vitamin C and calcium. The cocoa powder is rich in magnesium and protective antioxidants. Need a healthy pancake recipe for the upcomong Pancake Tuesday? Here's our healthy coconut flour crêpe recipe with some sugar free chia jam. Recipe makes 6 crêpes: 15g Dr.Coy's Coconut Flour 7g tapioca starch or arrowroot flour 4 eggs 125ml coconut or almond milk 1 tbsp Dr.Coy's Stevia Erylite Cinnamon and Vanilla 1/2 tsp each Dr.Coy's Coconut Oil for frying Blend all ingredients together in a blender and fry in coconut oil on medium heat about a minute per side. For the chia jam: Pop a handful or two of frozen berries into a small saucepan, add 1-2 tablespoons of Stevia Erylite and a tablespoon of chia seeds. Let berries melt slowly and come to simmer then take off the heat - ready to eat immediately. CHIA JAM ✨ a friend recently reminded me of the wonders of a good old PB&J... and as wonderful as the classic Smuckers and Kraft combo may taste, it’s not quite #NCapproved so I took it upon myself to make a clean version and boy did it ever SUCCEED. ✨mixed berry chia jam ✨ - heat 1 cup frozen (or fresh) mixed berries in a saucepan on medium heat until soft and liquidy ~5 mins - stir in 1 tbsp lemon juice and 1 tbsp sweetener of choice, I used @organictraditions yacon syrup but maple, agave, or honey would work too! - remove from heat and add ~1 tbsp chia seeds (I used 1.5 tbsp because I like a thicker jam) - let the chia thicken up for ~5 mins and you’re good to go!!! ✨✨✨✨✨✨✨✨ I used my favourite vegan, keto, & gluten free buns from @unbunfoods , topped it with organic almond butter, the jam, and a dash of cinnamon 🍴

~~Wild Orange Oats~~ 🍊🍊🍊🍊🍊 Oats are a staple in my household. We all eat them for breakfast so I make a big batch every few days. I find I eat better if it looks better 😉 ————— - 1 cup rolled oats - 2 tbsp chia seeds - 2 tbsp quinoa flakes - 2-4tbsp greek/natural yoghurt (depends how tangy you like it) - Milk of choice - Optional: 1-2 drops Wild Orange essential oil I add all ingredients except the milk to my jar/container that I will store it in. Add enough milk to cover then stir. You can add as much milk as you like remembering that these ingredients will soak it up. I like mine to set nice and firm by morning but some like it more milky. You can use any milk you like, we personally prefer oat or almond. Now is the fun part! You can add nuts, seeds and dried fruit to the mix to sit overnight aswell so they soften. Alternativey add these in the morning with fresh fruits. ————— This recipe is so basic and easily changed. You can take away or add anything you like! Don’t like chia? Don’t have quinoa flakes? Just use oats! In the picture I have used 2 drops wild orange oil, grapes, blueberries, yellow plum, hemp seeds and homemade strawberry chia jam 🤤 HEAVEN Oats are the best start to your families day. They are loaded with vitamins, minerals, antioxidants, can lower cholesterol, improve blood sugar control and they are filling meaning you wont be snacky an hour later... because we don’t have time for that 😂

10 MINUTES RASPBERRY CHIA JAM 🍯 ✨Ingredients for 1 cup of jam✨ • 350g fresh or frozen raspberries (you can alternatively use strawberries, blackberries, blueberries, cherries, peaches, apricots, plums, pineapple, kiwi • 2 tablespoons chia seeds • 1 tablespoon freshly-squeezed lemon juice • 2 teaspoons honey or maple syrup (only if needed) • 1/2 teaspoon vanilla extract 1) Heat fruit in a small saucepan over medium-high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble. Use a spoon or potato masher to mash the fruit to your desired consistency 2) Stir in the chia seeds and lemon juice until combined. Then taste, and stir in 1 or 2 tablespoons sweetener if needed 3) Remove from heat and let cool for 5 minutes. (The jam will thicken as it cools.) 4) Give the jam one final good stir. 5)Then serve immediately, or transfer to a sealed container and refrigerate for up to 1 week, or freeze for up to 3 months.
