Chickpea & tomato salsa stuffed sweet potatoes with hommussy sauce 🍅🍃🍠 I made up this recipe about 12 months ago, but tweaked it a little tonight to suit what I felt like. Last time I made it, I topped it with smashed avo & made the sauce out of hommus (not half Greek yogurt like I did tonight) & it was quite heavy. This lighter version worked well 👏 We’re cooking pescatarian this week (just for fun!) so this sticks to the theme. Recipe below 👇 it’s a goodie! 💯

Zucchini Noodles with Chicken, Cilantro and Lime Ingredients 3 large zucchini 1.5 lbs boneless & skinless chicken breasts, cut into 1” pieces 1/2 tsp cumin 1 tsp salt, divided Ground black pepper, to taste 2 tsp any small hot pepper/jalapeño or to taste, seeded and minced (leave seeds in for very hot version) 1 medium or 1/2 large lime, juice of 3/4 cup cilantro, chopped Cooking spray (I use Misto) Instructions 1)Using a spiralizer, make zucchini noodles, transfer into a large bowl and set aside. You can also chop zucchini into any size pieces, if you don’t have the gadgets for making zucchini noodles. 2)Preheat large ceramic non-stick skillet on high heat and add chicken. Saute until golden brown, stirring occasionally. Add cumin, 1/2 tsp salt and ground black pepper towards the end, stir and cook for another minute. Transfer to a bowl and set aside. 3)Wipe clean or wash and pat dry the skillet and return to the stove on high heat. Spray with cooking spray and add zucchini noodles. Saute for 1.5 minutes, stirring frequently. Remove from heat and add previously cooked chicken, remaining salt, small hot peppers/jalapeños, lime juice and cilantro. Para mí, existe una única cosa imposible en esta vida: aburrirme de desayunar tortitas. Quizás es por eso que me la paso probando mil recetas diferentes (para muestra, echa un ojo en mi feed 👀) . . Además, hoy tengo el día libre porque me voy a tatuar, así que aproveché la mañana para entrenar y preparar una torre enorme de tortitas 🥞 . . Esta vez, son paleo, libres de cereales, libres de gluten pero ABSURDAMENTE ricas. Si me las ponen enfrente de nuevo, me las vuelvo a comer 🙄 #sorrynotsorry . . TORTITAS DE ALMENDRAS: 1/3 de taza de harina de almendras 1 cucharada de lino molido (puedes usar chía, pero no omitas este ingrediente o se te van a destruir las tortitas) 1/4 de cucharadita de canela 1/2 cucharadita de esencia de vainilla Endulzante al gusto (yo usé gotas de sucralosa, pero funciona lo que tengas) 1/4 de cucharadita de bicarbonato de sodio (para que sean súper gorditas) Un chorrito (un poco menos de 1/4 de taza) de bebida de almendras . . Bate todos los ingredientes en tu batidora. Calienta una sartén antiadherente a fuego medio. Cuando esté bien caliente, echa un poco de aceite de coco y lo distribuyes en la sartén. Do you guys find yourselves eating the same things over and over? 🥦 I can definitely end up repeating the same meals - especially for lunch! 🍫Peanut Twix Bar Recipe🍫 • I feel like twix bars are growing on me and are soon to become my all time favourite chocolate bar (but I guess it’s hard to beat snickers, boosts and Kit Kat...) 😜 What’s your favourite chocolate bar? • Peanut butter Twix bar recipe: Base: ➡️ 70g @mckenziesfoods coconut flour ➡️ 40g @lucky.nuts almond meal ➡️ 70g @natvialiving sweetener ➡️ 50g @brawnaturals salted caramel vegan protein powder ➡️ 80g vegan butter ➡️ 20g full fat coconut cream ➡️ 5g @thechiaco ground chia seeds ➡️ 1 tsp vanilla extract ➡️ 1/2 tsp salt # Caramel: ➡️ 120g pitted dates, soaked in hot water for 1hr ➡️ 10g peanut butter ➡️ 10g coconut oil ➡️ 80ml full fat coconut cream, chilled, white part only ➡️ 4 tbsp sticky sweetener (e.g. rice malt syrup, maple syrup) ➡️ 1/2 tsp salt ➡️ 30g @brawnaturals salted caramel protein ➡️ 100g salted toasted peanuts # Chocolate layer: ➡️ 150g dark chocolate ➡️ 10g coconut oil # Directions: 1️⃣ Preheat oven to 180C 2️⃣ Combine all base ingredients in until a crumbly dough forms 3️⃣ Press dough firmly into a lined tin using the back of a measuring cup (If it’s not firm, it could crumble apart once baked) 4️⃣ Bake for 15-18min or until dark golden brown. Allow to cool completely in pan (base will harden once cooled) 5️⃣ Caramel: drain liquid from dates and blend with all caramel layer ingredients (except protein) until smooth - may take a while and requires patience 6️⃣ Pour caramel into a bowl and add protein. Whisk until smooth (caramel will thicken but should still be spreadable and hold onto the spoon if held upside down) 7️⃣ Spread caramel over base and refrigerate for 2-3hrs 8️⃣ Slice bars and place in freezer for 30-45 min 9️⃣ Chocolate coat: microwave chocolate layer ingredients for 2 min. Mix until smooth 🔟 Dip bars into chocolate. Freeze for 15 min or until chocolate hardens. Enjoy! ▶️ Store in air right container at room temperature - caramel hardens in fridge)

День 16-ый) болезнь пока не отступает, но и я тоже💪. На завтрак сегодня творожно-яблочная шарлотка, @_sneg_ok_ сказал, что ему можно было бы и послаще😀 На обед фриттата из тунца🐟 (на последнем фото она только что приготовлена😊), а на перекусы гречневая каша с молоком и фрукты🍌🍊🥝 Шарлотка: 100гр творога, 100гр яблок, 2 яичных белка, 1 желток, 0,5 ч.л разрыхлителя, 30 гр рисовой муки. Творог перемешать с желтком, разрыхлителем и подсластителем (по вкусу), белки взбить блендером со щепоткой соли, затем соединить творог и белки, аккуратно перемешать, добавить муку, снова перемешать. В форму выложить нарезанные яблоки, залить смесью и поставить в духовку на 35 мин при 190°. Фриттата: 100гр картофеля, 100гр моркови, 80гр тунца (консервы), 2 яйца, 10гр чеснока, 20 гр сыра. Овощи отварить, порезать кубиками и вместе с рыбой выложить в форму. Яйца смешать с сыром, чесноком и можно добавить зелень по вкусу. Залить этой смесью рыбу с овощами. Je peux enfin poster 🙏🏻 ça m’avait trop manqué 🥺 . Dans mon assiette : nouilles de riz sautées avec du citron et de l’huile d’olive, haricots verts, choux de Bruxelles, pois mange-tout, un oeuf (très) mollet, avocat. Sel rose d’himalaya et poivre noir. De la crème de sarrasin par dessus ( pas sur la photo) c’était un délice 😍 . Belle journée à vous ♡ .
