Last nights dinner 🤤🍴 ⁣ ⁣ Of course I had to make a 30 days approved dinner, and it was DELICIOUS! ⁣ ⁣ When I first started eating more vegan/plant based, I struggled SO MUCH with what to make throughout the day. I love making this super easy DAIRY FREE parm that is waaaaay cleaner than any you can buy in the store &it stores in the fridge for a couple weeks+ is great to use in anything for that cheesy, umami flavor. The addition of nutritional yeast makes this a BOOSTER food- meaning that even a small amount of it is packing a strong nutritional punch!! 💪🏼 . . Take almost equal parts (maybe a small amount more of cashews to nutritional yeast), and blitz them in a blender or food processor until they are finely ground to a parm texture! Top on foods for umami delish 😋flavor. I keep it in a jar in the fridge for about 1 month- 6 weeks! A good amount to start with is about ½ cup of both! . . , ✨Nutritional yeast health benefits: (Usually nutritional yeast is fortified with extra nutrients giving it such a booster profile) Nutritional yeast has alllll the amino acids you need for complete protein. While you won’t get enough in a serving to get a meals worth of protein, it’s a nice little protein booster throughout the day! It has lots of b vitamins, which support energy, hair, nails etc and are harder to find in plant based sources. So if you eat a mostly plant based diet it can be a great source of these! It contains trace minerals which we all are probably a little deficient in, trace minerals like zinc support immunity and hormones. Selenium and magnesium are great for the thyriod, metabolism and more. Something to note! If you’re struggling with candida overgrowth or an imbalance of gut bacteria this is not the food for you. Also, if you’re on the birth control it’s not advised, since it’s very easy to tip the scales into a yeasty situation. Another Meatless Monday comin at ya - some quick kimchi fried rice with spinach, lentils for plant based protein and a perfect egg! Recipe below: 1️⃣ KIMCHI: Chop up kimchi and sauté in a hot pan with sesame oil and minced garlic. Cook until the kimchi becomes slightly translucent and toasty/slightly blackened. 2️⃣ RICE: Add day old rice into the pan and toast. Mix well with the sautéed kimchi. Add frozen chopped spinach and cook through. Add cooked lentils and mix, then put everything in a bowl. 3️⃣ TOPPINGS: Fry an egg and top the bowl with the egg. Add sesame seeds, red chili flakes and enjoy!

I used to think that food was my enemy... and trust me I LOVE FOOD!! ♥️ Food used to make me feel bloated, gassy, constipated, nauseous, tired, sick to my stomach and just overall ill. It also gave me awful migraines that I thought I’d have to live with the rest of my life... I had them just about every single day for the longest time!!! That’s not a fun life to be living... Only come to find out that food was not my Enemy!! It was the kinds of food I was consuming and the fact that my body was just not a fan of foods that contained Gluten or Lactose!!! Who knew 🤷‍♀️?!?! I had to learn a whole new way of eating and at first it was hard...because all I wanted was a chocolate covered donut with sprinkles and ice cream 🤦‍♀️...but I eventually was able to get over that!!! Yes it has changed my life...not only for the better... but also brought out that Healthier Version of ME that was hiding all this time!!!

They will be your best friend coming off cooked foods, especially if you’ve been eating 💩! Get large green juices into you, green smoothies and at every meal have sides of greens! You don’t have to make huge salads (you can) just enjoy greens with your fruit!!! . . Get the fruit in! Bows not a time to under eat! I know when you’ve gained weight and you’re getting on track your mindset says under eat you’ll lose the weight quicker, but this will lead you back to cooked! Nourish, eat super ripe fruit and eat until you’re satiated! . . Drink lemon water! You’ll be dehydrated, help your body flush out any impurities. Plus water fills your belly! . . Read affirmations, connect with the raw community, exercise, meditate, breath, pre-pack your food and leave nothing to chance. Have dressings pre-made, greens pre-cut, make 3-4 juices at once. Pre-chop fruit if that’s easier. . . Know that the next 72 hours will be tough, get through them and then take joy In the fact you are back on the wagon. . . ✨You are worth way more than just your BMI✨ ⠀ ⠀ Double tap if you agree that BMI is a worthless measurement 🙋🏻‍♀️ ⠀ ⠀ Using BMI to determine your health status is probably the worst idea ever! #sorrynotsorry⠀ ⠀ Listen girl, ⠀ ⠀ I know your doctor has been telling you to lose weight because according to your BMI you are "overweight or obese". ⠀ ⠀ I know this because I have experienced this myself. It's actually what started this vicious cycle of my disordered eating when I was a teenager.⠀ ⠀ According to BMI I am "overweight" and I should be between 110-120lbs 🙄⠀ ⠀ Ever since I was 16 years old, every year at my physically, I would be so embrassed, when the doctor told me my BMI was in the overweight category and that I needed to lose weight 😭⠀ ⠀ This bothered me for years! I wanted to be in the normal BMI category soo bad! I was willing to do anything! Seriously it was all I was focused on. I was convinced that the only way I would be considered "healthy" was if I was in that normal range category.⠀ I thought that my health was only determined by my weight and BMI number. ⠀ ⠀ That's when I first decide to download my fitness pal and track every single food and calorie I put into my mouth. I was so focused on being in the normal range category that I would restrict myself from all the foods I loved. ⠀ ⠀ And guess what? ⠀ ⠀ I didn't lose any weight! 😱⠀ ⠀ I actually ended up gaining weight because I was so stressed, undereating, and so ashamed of my body just because of a stupid number. ⠀ ⠀ This is the result of diet culture putting nonsense in our head saying we have to fit into a certain category to be "healthy".⠀ ⠀ 8 years later I'm still considered "overweight" but you what?⠀ ⠀ I finally learned to LOVE MY BODY! ⠀ ⠀ No matter what BMI category I'm in. ⠀ ⠀ Why? ⠀ ⠀ Because ⠀ ⠀ I am HEALTHY and that's what matters. ⠀ ⠀ I know how to fuel my body with the foods that work best for me!⠀ ⠀ So the next time your doctor tells you to lose weight because of your BMI politely tell them that ⠀ BMI is BS! 😉⠀ ⠀ If you have been struggling to find what foods work best for you and are ready to love your body again, send me a message and let's chat! 💌⠀

Seriously good oaty Spiced apple crumble. Everyone loved it, 8/10 💖 based it on a recipe from @hungryhealthyhappy but swapped maple syrup for honey and left out the sugar 🍯 Melt 2 tbsp of coconut oil, mix with a big squeeze of honey and add a few big handfuls of oats so the oats are coated in the mixture. Add one tbsp of coconut oil to a pan and melt. Add a bag of apples (peeled, cored and chopped) and gently cook for 5 minutes until softened. Put a generous sprinkling of cinnamon in the pan, stir and cook for a further 2 minutes. Add the apples into a baking dish, top with the oat mixture and whack in a pre-heated oven for 29 mins at 200°. Serve with coconut yoghurt 😋

𝐑𝐎𝐀𝐒𝐓𝐄𝐃 𝐕𝐄𝐆 𝐖𝐈𝐓𝐇 𝐏𝐄𝐒𝐓𝐎 & 𝐐𝐔𝐈𝐍𝐎𝐀 (Vegan & Gluten Free) 🍅🥕A 𝐒𝐈𝐌𝐏𝐋𝐄 & 𝐍𝐔𝐓𝐑𝐈𝐓𝐈𝐎𝐔𝐒 dish, full of veggie goodness! ✏️ 𝐇𝐄𝐑𝐄’𝐒 𝐓𝐇𝐄 𝐑𝐄𝐂𝐈𝐏𝐄: INGREDIENTS: Serves 4-6 2 carrots, peeled & cubed 2 courgettes, washed & cubed 1 red, 1 yellow pepper, washed and cubed 2 sweet potatoes, peeled & cubed 1 red onion, peeled & cut into wedges 12 cherry tomatoes 2 tbsp olive oil 2 tsp dried mixed herbs To serve: 4 tbsp pumpkin seeds 2 x 250g pouches precooked quinoa/rice 150g vegan pesto 125g vegan feta (optional) Basil leaves 1️⃣ Preheat your oven to 180c fan. Toss all the veg in the olive oil & herbs. Divide between 2 baking dishes & roast for 30-35 mins, stirring the veg once now and again, until cooked and starting to caramelise. 2️⃣ Meanwhile, toast the pumpkin seeds in a dry frying pan over a med heat until they start to pop. Tip onto a plate & set aside. 3️⃣ Heat the quinoa according to pack instructions, and divide between 4-6 plates. Stir the pesto through the veg & spoon over the quinoa. Crumble over the vegan feta (if using) and sprinkle with pumpkin seeds and basil leaves. 𝐃𝐄𝐋𝐈𝐂𝐈𝐎𝐔𝐒! Coming in hot! #dairyfree fish pie recipe from a @tescofood recipe but used oat milk instead, 8/10 😋 Serves 6 - 10 mins to prepare and 45 mins to cook 600ml free from soya milk ½ medium onion, peeled and thickly sliced 1 bay leaf 1 bushy thyme sprig 1 wide strip lemon zest 750g skinless white fish fillets, such as cod or haddock 75g Free From sunflower spread, plus extra for greasing 75g plain flour 31g flat leaf parsley, leaves roughly chopped 175g cooked and peeled king prawns, drained freshly ground black pepper 1kg floury potatoes, such as Maris Piper 25g free from sunflower spread 25g free from cheddar style spread 1tsp flaked sea salt Make the mash, peel the potatoes & cut into even sized chunks. Put in a large saucepan & cover with cold water. Bring to the boil & cook for 12-15 minutes until very tender. Drain the potatoes in a colander & leave to stand for 2 minutes. Tip back into the saucepan. Mash the potatoes with the sunflower spread until smooth. Add the Free From cheddar style spread & mix until smooth and creamy. Season with 1 tsp salt & some freshly ground black pepper. Set aside. To make the pie filling, pour the soya milk into a large non-stick frying pan. Add the onion, bay leaf, thyme & lemon zest & bring to a gentle simmer. Carefully add the fish & turn off the heat. Leave to stand for 6–8 minutes or until the fish is just cooked. Remove the fish from the pan with a slotted spatula & place in a large mixing bowl. Pour the poaching liquor through a fine sieve into a jug & set aside. Discard the onion, herbs & lemon zest. Preheat the oven to 190C/fan 170C/ Gas 5. Melt the 75g sunflower spread in a large non-stick saucepan. Add the plain flour, mix well & cook over a low heat for 1 minute, stirring constantly. Gradually add the infused soya milk, stirring constantly between each addition. Bring to a simmer & cook for 2 minutes, stirring regularly until smooth & thick. Stir in the chopped parsley and prawns. Flake the fish into chunky pieces & scatter over the bottom of a 1.5 litre shallow ovenproof dish. Pour the parsley & prawn sauce over the fish. Top with the mashed potatoes & bake for 30 mins until bubbling with a golden top. Yum 😍
