Lemon and Raspberry Bars by @rubybhogal ⁣. You'll Need:⁣ 100g Gluten Free Oats⁣ 125g Almond Flour⁣ 30g Coconut Sugar⁣ 15ml Maple Syrup⁣ 65g Coconut Oil⁣ ⁣. 125g Cashews (soaked 1hr in boiling water)⁣ 250g Coconut Milk (the cream at the top of the tin)⁣ 15g Cornflour⁣ Juice of 3 Lemons, Zest of 2⁣ 70g Maple Syrup⁣ 1tsp Vanilla Bean Paste/Extract⁣ Handful of Raspberries⁣ ⁣. You Do It Like This:⁣ 1. Preheat oven to 175C/160C Fan. Add oats, almond flour and coconut sugar into Food Processor and blitz till fine. Add in maple syrup and coconut oil and blitz again until it all comes together 2. Transfer to a greased and lined 8x8inch baking tray and spread evenly. Pop into a preheated oven at 175C/160C Fan for approx 20mins. Remove from oven to cool⁣ 3. Add cashews, coconut cream, cornflour, lemon juice zest, salt, maple syrup and vanilla into Food Processor and mix until smooth⁣ 4. Pour cashew filling over the oat base, scatter on top raspberries and pop into oven for a further 25 mins⁣ 5. Zucchinis in abundance! . My hubby has grown us some zucchinis so I whipped up these Grain Free Zucchini & Pepita Muffins tonight. . I topped them with a sprinkle of Sumac and served them with a spread of organic butter. . Best part is they are dairy free (I used coconut oil), nut free, grain free, and gluten free. Perfect for the kids lunch boxes and freeze well. Next time for my daughter Alex, I will top them with chopped olives - she loves them. . 🏴󠁧󠁢󠁳󠁣󠁴󠁿 DAY 25 BUDGET #VEGANUARY2020 / SAVOURY SCONES AND OATCAKES / HAGGIS 🏴󠁧󠁢󠁳󠁣󠁴󠁿 Hello! It’s Burns day in Scotland today and to celebrate I am making oatcakes and showing you my dinner the other night - the amaizing vegan haggis from @simonhowiebutcher I made a simple vegan garlic cream sauce to go with it and of course ‘neeps and tatties’ I’m talking about oatcakes and savoury scones here too. I make these to go with my soups, so cheap and a bit more exciting than just bread! Savoury scones 200g self raising flour 50g margarine (I use flora buttery) Soya milk (use a little at a time - how much you need will depend on the absorbency of your flour) approx 75ml for a rough guide Any flavour of your choice - I used chopped olives and cheese. I think the applewood would be great here, or any other strong tasting cheese. 1. Grate the cheese, chop the olives. 2. Rub the fat into the flour until it looks like breadcrumbs. Add the cheese and olives (or your own choice of flavours) 3. Gradually add the milk until it is a dough. 4. Roll out about 1 inch thick, cut and bake at 180°c gas 5 for about 10-15 minutes. Oakcakes 1.5 cups oats 30ml sunflower oil Pinch salt 1. Place oats and oil in a food processor and pulse to break them down slightly. 2. Add water slowly to bring to a dough. 3. Roll out 5mm thick, cut into shapes and bake for around 8-10 minutes at 180°c has mark 5 until slightly golden around the edges 😋

Gluten and Dairy Free Cinnamon Toast Hello everyone I first had cinnamon toast on top of a gluten and dairy free cupcake. It was a cinnamon cupcake with vanilla frosting and a lovely little square of cinnamon toast for decoration. I’m lucky enough to work near a fully gluten free bakery so I occasionally pop out for a little cake. I think cinnamon toast is more popular in America than over here but I’ve started making it as a treat breakfast for an alternative to French toast. I made this and photographed it just before Christmas but I hated the photograph. I have the most beautiful Spanish ceramic plates and bowls but for some reason they never photograph well. I think the orange and yellow colours are too bold against the food on the plate. Never mind, I’ve rephotographed and typed up the recipe to share this morning. Enjoy! Roasted tomato and asparagus black bean fettuccini 🍎 #glutenfree #dairyfree #vegan • 100g Black bean fettucini • 200mls Almond milk • 1 Tblspn gluten free flour • 1/2 onion • 5-6 tomatoes • 5-6 sundried tomatoes • 3 asparagus spears • 2 cloves of garlic • 1 Tblspn olive oil Roast the tomatoes in the oven with salt and pepper for 10 mins. Fry the onion with sundried tomatoes. Add flour and slowly add almond milk to bring to the boil. Cook pasta for 5mins. Add to the sauce with roasted tomatoes. My Friday night fakeaway - sweet and sour chicken. Depending on how much time I have, I’ll make this three different ways; uncoated chicken, homemade battered using gram flour, or totally cheat and use @sainsburys freefrom nuggets that I find in the chiller aisle. But the basic recipe stays the same, *chicken *pineapple (fresh or tinned) *bell pepper *onion *3 tablespoons of tomato ketchup *6 tablespoons of sugar No, this is not exactly healthy. But it’s a treat to be enjoyed in moderation. If you put all the ingredients in a pan (excluding the chicken, cook that separately) and put on a high heat, you’ll get a sticky sauce with still crunchy vegetables. Anyone for a winter-y rice porridge? Think creamy rice, cinnamon spices, pecans & baked apple to make for a perfect breakfast thanks to @plant.steph!—ps you could even split the portion for a delicious after dinner pudding. Ingredients. • 60g arborio rice. • 1/2C @naturescharm evaporated coconut milk (essential for creaminess) • 2tsp maple syrup. • cinnamon, nutmeg, ginger to taste • 1 sweet apple • pecans to serve Method 1. In a pre-heated oven, place a halved apple on a baking tray & bake at 180C. 2. In a pan, bring to the rice to the boil with 1/2C water. Add in the spices, sugar/syrup and simmer. 3. As rice absorbs all the liquid, add in the evaporated coconut milk, keep stirring. 4. Cook on a low heat for around 20-30min - adding more milk if necessary. 5. Once rice is creamy and softened, transfer to a bowl. In Ayurveda—one of the oldest systems of natural healing in the world—warm milk is used as a remedy for sleeplessness. In herbal medicine, roots and harder plant material like seeds and bark are often cooked over low heat as a way of extracting their healing properties. Nut milk facilitates this, and fat nourishes our vital essence and glow (called ojas). This recipe uses turmeric to reduce inflammation. Ceylon cinnamon helps digestion and cardamom flushes out toxins. Nutmeg is a natural sleep aid and ashwagandha, an adaptogenic root herb, is good for the nervous system and inducing sleep. Ginger helps assimilate all the nutrients into our systems, and together they pacify a racing, restless mind. 1 cup unsweetened nut milk (such as hemp, almond, or cashew) ½ teaspoon ground cinnamon ½ teaspoon ground turmeric ¼ teaspoon ground ashwagandha (or another adaptogen, like shatavari or astralagus) 2 pinches of ground cardamom Pinch of ground ginger (optional) Pinch of ground nutmeg Freshly ground black pepper 1 teaspoon virgin coconut oil or ghee 1 teaspoon honey, preferably raw Bring milk to a simmer in a small saucepan over medium-low heat. Whisk in cinnamon, turmeric, ashwagandha, cardamom, ginger, and nutmeg; season with pepper. Whisk vigorously to incorporate any clumps. Add coconut oil, reduce heat to low, and continue to cook until warmed through, 5–10 minutes (the longer you go, the stronger the medicine). Remove from heat and let cool slightly. Stir in honey (you want to avoid cooking honey or you'll destroy its healing goodness). Pour into a mug, drink warm, and climb right into bed. Recipe: Bon Appetit January 2017

CHICKEN BACON RANCH CASSEROLE ⭐️dairy free⭐️ •••••••••••••••••••••••••••••••••••••••••• 5-6 chicken breasts cooked and shredded* 9 pieces bacon cooked and crumbled** 2 heads broccoli (about 4 cups chopped) 3/4 cup ranch dressing (tessamaes =dairy free) 3 TBSP green onions diced (optional) •••••••••••••••••••••••••••••••••••••••••••• *I baked my chicken breasts in low sodium chicken broth, black pepper, garlic powder and onion powder: 350 for 30 mins then cubed it. Next time I think I’ll use my crockpot and SHRED the chicken but cubed tastes good too!! ** cook bacon as directed on package. Bacon hack: put 3 strips on double layer paper towels on bottom with 1 paper towel on top-microwave for 3 mins ✅ •Preheat oven 350 degrees and grease 9x13 casserole dish with cooking spray. •toss chicken and broccoli together in dish then coat completely with ranch. •crumble bacon on top and bake dish for 15 mins. Bump up the temperature to 375 and bake for additional 15 mins. •top with green onions, if desired and can add on top of rice. No rice makes a great low carb option!! I’ve been craving something like this for a while now and finally came across @momsbestcereal at my local grocery store and tah-dah! ✨ ooey gooey chocolate crispy goodness! ⁣⁣ ⁣⁣ Happy Friday!⁣⁣ ⁣⁣ ⁣⁣ 𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:⁣⁣ 3 tbsp dairy-free butter⁣⁣ 5 1/2 cups marshmallows⁣⁣ 6 cups gluten-free crispy rice cereal⁣⁣ ⁣⁣ 𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:⁣⁣ 1. Spray a 13x9 inch pan with cooking spray and set aside.⁣ 2. Microwave butter in a large microwave-safe bowl for 45 seconds or until melted. Add marshmallows and toss to coat. ⁣ 3. Microwave for 1 minute 30 seconds or until marshmallows are completely melted and mixture is well blended, stirring every 45 seconds. ⁣⁣ 4. Add cereal immediately and mix well. Ultimate comfort food that’s great for all the cold evenings!! Yas! We’re talking about this Creamy Cauliflower Pot Pie by @likeavegan 🥧 The Evaporated Coconut Milk from gives this recipe an extra dimension of creamth and trust us, you are going to love this one! Ingredients 1 sheet vegan puff pastry 1 head cauliflower 1 tablespoon olive oil 1 brown onion, diced 2 cloves garlic, crushed 3 celery stalks, diced 1/2 cup vegan butter or margarine 1/2 cup plain flour 1 1/2 cans @naturescharm Evaporated Coconut Milk (plus a little extra) 1/4 cup nutritional yeast 1 tablespoon salt 1/2 teaspoon white pepper 1 teaspoon garlic powder Method 1) Preheat your oven to 180°C and remove your pastry from the freezer to thaw. 2) Break or chop the cauliflower into bite-sized chunks and steam until about 3/4 cooked. ⁣Checked the weather and all I saw was soup. ☔ 👇 #frouxition⠀ ⠀ Roasted Butternut Squash Soup ⠀ ⠀ 1 butternut squash ⠀ 1/2 white onion, chopped ⠀ 3 cloves garlic, minced ⠀ 1 apple, peeled, cored, & chopped ⠀ 1 can coconut cream ⠀ 4T olive/avocado oil⠀ 1T dried rosemary ⠀ Salt & pepp⠀ Pepitas (optional) ⠀ ⠀ Preheat oven to 415. Peel and chop butternut squash. Toss in 2T oil, salt, & pepp and roast on a baking sheet about 25 mins. Meanwhile, Cook onion in olive oil until translucent. Add garlic and cook another few mins. Add veggie stock, apple, squash, & rosemary. Bring to a boil and simmer until apples are soft. Transfer to a blender or use handheld and blend until smooth. Transfer back to pot and add coconut cream, salt, & pepper. Garnished with pepitas. 🤤

These didn’t photograph very well, but they tasted really good. My husband had two servings! I have made a version of these without tomato sauce, using coconut aminos, and steaming them in a pot, but these were cooked in the crock pot for a super easy, thrown-together dinner. Inspired by Suzie Caldwell Cooley these were definitely a hit in my house! I didn’t pre-cook anything either. I put a can of tomato sauce in the bottom of the crockpot with some garlic, onions and spices. In a bowl I mixed ground pork with frozen cauliflower rice, mushrooms and onions; rolled the mix into savoy cabbage leaves and placed them the crock pot. I topped the rolls with a little more sauce and set the crock pot on high for 2.5 hours. Easy and delicious!

The last three fairs I've been to have had events where visitors can hand milk cows. The cows are always tied up and restrained and then one human after another, children and adults, come and put their hands on the cows teats to squeeze milk out of them as if the cows are milk machines. This is the latest fair where I saw this happening, the @pafarmshow in Harrisburg, PA. Four cows were restrained simultaneously while a constant long line of humans came to milk them. Wood chips were poured on the ground below the cows and the milk was just poured onto the wood chips.⁣⁣ ⁣⁣ Fairs do these as a so-called act of transparency to show the public what "life is like on the farm" as if cows are clean like the cows here and they just wait around all day to be milked. During the milking event at the PA Farm Show different young dairy farmers took turns talking about the so-called health benefits of dairy and the so-called good life cows live. One of the dairy farmers asked a little girl who was coming to milk a cow, "how many servings of dairy do you need a day?" The dairy farmer went on to tell the girl she needs to consume dairy three times a day. She gave the girl a sample of how to get her three servings in a day, "a bagel with cream cheese for breakfast, mac and cheese for lunch, and lasagna for dinner." It's no wonder most of the dairy farmers at this farm show look like they are falling apart or on the verge of exploding.⁣⁣ ⁣⁣ At the Calving Corner area of the fair where the cows give birth in front of huge crowds, one of the dairy farmers told me one of the most frequent questions they get from the public (children and adults) is "do brown cows give chocolate milk?" It's really terrifying how disconnected humans are and it's no wonder why people are so often shocked to hear that as a vegan I can eat chocolate. Humans will go home from the fair feeling "more connected" to their "food" when they are still just as disconnected as ever.

SWEET TOOTH Those after dinner sweet cravings! Unfortunately processed sugar is a no-go. But you can try to emulate delicious puddings to calm the cravings if you have a sweet tooth. If you can get used to having desserts like this then it means you can have the (somewhat) best of both worlds. If I’m looking for something sweet, something like this dairy free coconut yoghurt with frozen mixed berries and banana helps do the job. It doesn’t look like much, but afterwards it’s like you’ve really tricked your mind into thinking it was something bad (or good rather!) I chucked some chia seeds on too for good measure. Lamington crackle slice 🍫🥥😍 This is the perfect treat to make for this long weekend! ingredients: 🍫BASE - 1C oats - 3/4C almond meal - 1/4C cacao powder - 1tbsp coconut oil - 1/4C agave (or any other sweetener) - dash of almond milk * add all ingredients in a blender and process until combined. Place in a lined baking tray . 🍫CRACKLE FILLING - 2 1/2C rice puffs - 1/4C coconut oil - 2tbsp cacao - 1/3C shredded coconut * combine all ingredients in a bowl and place evenly on top of the base. Leave in the freezer until set . 🍫TOPPING - 3/4 block of dark chocolate - 1tsp coconut oil *melt dark chocolate and add in coconut oil. Place on top of slice and put back in the freezer to set! I hope you enjoy this recipe!
