Finding inspiration in the everyday has been really important to me since everyone has started staying at home. It helps me to stay positive and cooking has been such a healthy outlet for me during all of this. #ad Looking at familiar favorites like @mrstspierogies and creating different recipes with them has been fun for me and such a creative outlet. I love Mrs. T’s Pierogies because they are delicious, easy to make and so versatile. You can really use them in so many ways, whether you boil, bake, sauté, fry or grill them. Recently, we made these Teriyaki Pierogies with Mrs. T’s Classic Onion Pierogies and they were delicious! The homemade teriyaki sauce worked perfectly with these classic little dumplings and we added in a homemade peanut sauce for dipping too. Check out my stories to see a step-by-step in making this easy family friendly recipe and save this post to keep the recipe too! #mrstspierogies ___ Cooking Mrs. T’s Pierogies Add 1-2 Tbsp of sesame oil to a warm pan and heat for 2 min Add in Pierogies. Do this in batches if you need to. Cook for 4 minutes and then baste with Teriyaki Sauce Cook another 4 min and then baste again. Baste again after 2 min. Then baste again in 2 minutes after removing them from the heat. Total cook time is 16 min. ___ Teriyaki Sauce ½ cup of reduced sodium soy sauce ¼ cup of brown sugar ¾ cup of pineapple juice 1 Tbsp. of corn starch 3 Tbsp. Hunters chicken & mutant crispy hasslebacks! . A chuck it all in oven baked dinner - no stove top pre-cooking required! Looks a lot of Ingredients but hardly any prep needed! Just slice and season the potatoes, combine the sauce ingredients, wrap the chicken in bacon and bake . The kids nailed the lot - I knew they’d go for this and Max ate an entire hassleback 😳 we had slaw with ours and they had broccoli. A lovely easy dinner 🍽 . Recipe - serves 4 4 chicken breasts 4 smoked back bacon rashers 4 large baking potatoes Sauce 1 tin of tomatoes with herbs 1 red onion, chopped 1 fat clove of garlic, crushed 1 tbsp sweet smoked paprika Pinch of cayenne pepper Pinch of mustard powder 2 tbsp white wine vinegar 2 tbsp balsamic vinegar 3 tbsp ketchup 1 Tsp oregano 1 Tsp bbq seasoning 2 tsp sugar 150 ml water 1 ball of light mozzarella, sliced into 4. . Heat oven to 200 fan. Slice the potatoes every 5mm on a large metal spoon (this stops the slices going all the way through). Rub with a little oil and season well. Place in oven for 30 mins. In a shallow ovenproof dish with a lid (or use a small deep sided ovenproof dish or baking tray and wrap tightly with foil) add all the sauce ingredients and mix. Wrap each chicken in a bacon rasher and place in the sauce. Put a lid on. Once the potatoes have been in 30 mins put the chicken dish in and reduce the heat to 180 fan. After 45 mins, remove the chicken dish and pop a slice of mozzarella on top of each piece of chicken. Check the potatoes and cover with parchment if colouring too much. Return the chicken to the oven for 15 mins without the lid or foil. The sauce will thicken up. Tonight’s dinner was ‘use what you have’ chilli con carne 🌶 I had a pack of @thespicepioneer chilli mix in the cupboard. Didn’t have any peppers or kidney beans so I threw in onion, carrot, courgette and sweetcorn along with some beef mince and passata. For some reason tinned tomatoes is the one item I can’t find anywhere! 🍅 Even though it was the ‘wrong’ ingredients it still tasted delicious! 😋 Plus it’s completely allergy friendly even though it doesn’t use any free from ingredients 👌 What random ‘use what you have’ meals have you made recently?

Sharing a recipe for Hot Garlic Fried Rice where I give a Desi twist to Chinese fried rice by adding lots of garlic and spices. It’s a one pot meal - no additional gravy required. It’s also super adaptable - uses minimal ingredients and is a great way to use up leftovers in the fridge and pantry, especially boiled rice. Hot Garlic Fried Rice 1. Season 2 eggs with salt and red chili powder. 2. Cook till scrambled and set aside. 3. In the same pan, add 2 tsp oil and sauté 2 cloves sliced garlic, 1 tbsp garlic paste and 1 tsp red chili flakes. 4. Add 200 gm boneless chicken followed by 1 - 2 cups sliced vegetables (use a mix of whatever you have in the fridge / freezer) 5. Add soy sauce, vinegar and chicken cube. 6. Add boiled rice (about 3 cups) and toss through. Taste and add salt if needed. 7. Once rice is warm, add the scrambled egg and top with spring onions (if available - I used some that I had frozen earlier). 8. Serve hot. This recipe is super adaptable so in case you don’t have an ingredient just substitute or just add more of something else. Cheesy Eggplant Kale Pasta Sheet Bake 🍝 This easy recipe will have dinner done in 20 minutes and you can make it with whatever vegetables or protein you have on hand! I decided to soak some eggplant in balsamic and throw in some kale and canned tomatoes. It was delicious! INGREDIENTS •12 ounces short pasta, such as Rotini or penne •1 cup grated Parmesan •1 cup Mozzarella •1 bunch kale, ribs and stems removed, torn into small pieces •1 eggplant, cut into cubes •3 cloves garlic, finely chopped •2 tbsp. Olive Oil, for cooking •1 13oz can/box of crushed tomatoes •2 cups Balsamic vinegar •2 cups Ricotta •1 tablespoon Dijon mustard •Salt and Pepper to taste Directions: •In a large bowl, soak the eggplant in the Balsamic vinegar for at least 1 hour •Preheat oven to 450°F •Cook pasta in a large pot of boiling salted water according to package directions. •Reserve about 1 cup of the salted pasta water once the pasta is finished cooking. Drain the pasta and return it back to the pot with a splash of olive oil so the pasta doesn’t stick together. •In a large hot pan, heat the olive oil until it starts to shimmer. Add the garlic and cook for about 2 minutes. Add the eggplant and cook for 10 minutes or until the pieces are soft. Add the kale and cook for 2 minutes. Add the tomatoes and stir until everything is soft and incorporated. •Gently stir in the cooked vegetables to the pot with the pasta. Add the Dijon mustard and 1 cup of the Ricotta and some of the pasta water. Stir into the pot until a salsa-like consistency forms. Season with salt and fresh ground pepper. •Pour the pasta out onto a baking sheet. Layer the pasta with the Mozzarella and Parmesan cheese. ~Manicotti~ -2 packages Manicotti noodles -1 lb ground beef -1 lb ground Italian sausage -1 1/2 cups cottage cheese -1/2 cup Parmesan -2 cups mozzarella cheese, separated -2 eggs -1 jar spaghetti sauce -1 medium onion -1 tablespoon garlic Spray a 13x9in and a 8x8in pan. Brown sausage, onion, and ground beef. While that is cooking, boil 1.5 packages of manicotti noodles. Drain cooked beef/sausage mixture and mix with cottage cheese, garlic, 1 cup mozzarella cheese, Parmesan cheese, and eggs (make sure mixture is cooked enough before you add the eggs so they don’t scramble) Open noodle lengthwise (I don’t stuff the noodles because it takes too long and the meat to noodle ratio is better) and add two big spoonfuls of the meat mixture to the noodle (similar to if you were stuffing a tortilla shell for enchiladas.) Place noodle facedown in the baking dish. When all the noodles are filled, pour spaghetti sauce over the top of the noodles. Sprinkle the remaining mozzarella cheese on the top. Cover with aluminum foil and bake at 350 for an hour. At the 50 min mark, remove the foil to allow the cheese to brown slightly. For 2 of us, I usually cook the 13x9 and freeze the 8x8 pan for us to have another time!! #manicotti #easydinner

Officially adding this Gnocchi Carbonara to my dinner rotation 🍽 — thank you @kalekouture for the delicious and easy idea!! All you need is cauliflower gnocchi from @traderjoes any kind of Alfredo sauce (I used @bertolli_us Organic Creamy) frozen peas & bacon bits! 🥓 I considered adding chicken but it was very filling without. Meanwhile blitz together the black beans and the water from the carton with the garlic, as much hot sauce as you like and the other half of onion until smooth. Heat the sauce in a pan for 10 mins on a medium - high heat, add half a glass of water. You want the sauce quite loose. It will thicken quickly. Fill the tortilla with the fried onion and half the cheese and fold over. Fry the stuffed tortillas until crisp in olive oil. To serve cover them with the black bean sauce and sprinkle over cheese and chopped avocado. Simple Recipe time. One of the easiest, tastiest meals I've cooked for a while with very few ingredients. #readysteadycook - cooked basmati - shallot/ small white onion - peas (preferably frozen) - eggs - steak/ red meat - soy sauce - ginger - ground coriander (optional) 1. Chop onions up small, fry on a med-low heat for a few mins. Add a teaspoon ground coriander. 2. Season the steak with ginger and soy, cook to your liking 3. Leave for a few more mins and crack in the eggs and stir, leave to cook most of the way through before stirring again 4. Add cooked rice and mix all up 5. 7 good glugs of light soy sauce (half this for dark soy 6. Take the meat off the heat and let sit in the pan to let the juices come out 7. Add peas to rice and stir through 8. Cut your steak and pour leftover juices in the rice 9. Not the prettiest photo, but these were the BEST. There’s delicious pan sautéed fish under there! And it felt like such a treat to have a warm lunch instead of the sandwiches we’ve been having lately. I used frozen wild Alaskan cod, but you can make this with any type of fish or shrimp. 1) Warm about 2 tablespoons oil in a pan. I used my non-stick ceramic @daterracucina and avocado oil. 2) Season fish with lime (or white wine vinegar), seasoning salt and cumin. I used @redmondrealsalt seasoning and it was great! 3) Sauté the fish seasoned side down until opaque around edges, about 2 minutes. Flip to cook the under side, turning heat to low while the fish cooks through. 4) Warm a tortilla and top with some of the cooked dish, lime, shredded cabbage and habanero ranch from @tessemaes. If you don’t have habanero ranch, use sour cream, plain Greek yogurt or regular ranch. Guacamole would also add some great flavor and creamy consistency. Top with your fave salsa. Super quick and super delicious dinner! Stuffed sweet potato & courgettes with skinny pork sausages. I pierced the sweet potato and popped it in the microwave for 7 min. In the meantime I pre-heated the oven to 200 degrees. Once soft I halved the potato and removed some of its insides 🤪 I then stuffed it with crispy bacon & raw garlic and dropped a raw egg inside. The egg will set when in the oven. I stuffed the courgettes with crispy bacon, bell peppers and cheese. I popped it in the oven for 12min. Chicken potsticker soup...and yes, using frozen potstickers from Costco! I fried a big batch of these tasty delights, topped them with some steamed veggies, and smothered each bowl with garlicky chicken broth. For extra flavor, I added a dash of rice vinegar, sesame oil, red pepper flakes, chopped green onion, and a splash of chili oil (for some extra kick).
