My friend @herhappyhome talked on her story earlier this week about meal prep. She mentioned cooking a whole chicken because it gives so much meat for meal options! HEALTHY BANANA BREAD- This is yet another great recipe from @erinliveswhole (suggested by @abbybaailey because if you can’t tell, we love Erin so much)! She used simple substitutes to make a little bit healthier of a bread and also no refined sugar! Can’t wait to to make this one again as soon I have ripe bananas. Also the butter is highly suggested, especially fresh out of the oven😍From my kitchen to yours, here’s the recipe! ⁣ ⁣ INGREDIENTS: ⁣ * 1 & 3/4 cups white whole wheat flour ( I used white)⁣ * 1 tsp. baking soda⁣ * 1/2 tsp. salt⁣ * 1 tsp. cinnamon⁣ * 1 & 1/3 cup mashed ripe bananas (about 3 large bananas)⁣ * 2 eggs, whisked + room temperature⁣ * 1/2 cup melted coconut oil⁣ * 1/2 cup maple syrup ⁣ * 1 tsp. vanilla extract⁣ * 3/4 chocolate chips (more for topping)⁣ ⁣ DIRECTIONS: ⁣ * Preheat oven to 350F, grease a 9x5 loaf pan⁣ * Mix together flour, baking soda, salt, and cinnamon ⁣ * In another larger bowl, mix together mashed banana and eggs⁣ * Mix in oil, maple syrup, and vanilla⁣ * Add dry to wet and combine⁣ * Add in any chocolate chips, nuts, or mix ins ⁣ * Pour into loaf pan and bake for 40-45 mins or until a toothpick comes out clean! If you’re not using a whisk to shred your crockpot chicken then you’re doing it wrong! I’m making Buffalo Chicken Sandwiches tonight! Super simple crockpot recipe and since I’ve been gone all day and we have baseball tonight... it’s nice to come home and not have to do much to get dinner on the table! Crockpot recipes are my JAM! •1-2 lbs chicken • Full bottle of Franks Buffalo Sauce •half packet of ranch seasoning •half cup of non fat plain Greek yogurt Cook it on low for 6 hours. Shred chicken (with whisk, duh!), and then mix in the ranch and yogurt. Mix well and keep it in the crockpot on warm for an extra 20 minutes. Serve on a hamburger bun, on top of a baked potato, or use as a dip with celery or tortilla chips! My FAVORITE Fruit Cobbler!!😃🙌🏻 . FILLING Ingredients: • 5-6 c of fresh fruit (blueberries, peaches, apples, raspberries, blackberries, etc.) • Juice of 1 lemon . Directions: Place fruit in 8×8 casserole dish. Squeeze lemon juice over top. Set aside while you prepare topping. . TOPPING Ingredients: • 2 c almond flour • 1/4 c 100% pure maple syrup • 1/4 c coconut oil, melted • 1 1/2 tsp vanilla extract • 1/2 tsp cinnamon • Pinch of salt . Directions: Preheat oven to 350. Place all topping ingredients in a bowl and stir until soft (somewhat sticky) dough forms. *If dough is not forming, add a little more almond flour*. Press and spread dough onto fruit filling. Cover casserole with foil and bake for about 30 minutes. Remove foil and bake another 10-15 minutes or until topping is golden brown. Let cool before eating. Enjoy!🤤 . **Notes: If you choose a fruit filling other than blueberries, you may have to slightly adjust the cook time so that fruit is baked until soft. For example, apples may take longer to bake than to blueberries. If using FROZEN fruit, expect a longer bake time as well! Almond flour burns easier than all purpose flour so do not uncover until the last 10-15 minutes!

Easy dinner that is PACKED with nutritional goodness. Loads of colours which signifies lots of nutrient density. There's beta carotene which is the precursor to vitamin A, vitamin C, magnesium, b vitamins, zinc, iodine and loads of others!⁣ ⁣ The sweet potato does take about an hour in the oven. You can microwave it in 5 mins but its SO much tastier in the oven. ⁣ ⁣ Serves 2: 1 onion ⁣ 5 garlic cloves (you don't need to use this much I just love it!) ⁣ 2tsp smoked paprika ⁣ 1tsp chilli flakes ⁣ Extra virgin olive oil ⁣ 250g cooked prawns⁣ 150g cherry tomatoes⁣ 1 red pepper⁣ Greens of some sort: kale, spinach, broccoli, bok choy. I used kalettes which were delicious!!! ⁣ 2 Sweet potato⁣es Salt ⁣ Pepper⁣ ⁣ Heat oven to 180 degrees C.⁣ Scrub sweet potatoes, prick with a fork, put some olive oil and salt on the outside. Put in oven to roast. ⁣ Leave for 30 mins and start on next step. ⁣ Chop onion and garlic and put into frying pan with a little olive oil over gentle heat. ⁣ Add paprika and mix together. Cook until soft. ⁣ Add red pepper and tomatoes. Season with salt and pepper.⁣ Cook over gentle heat, squish down on the tomatoes.⁣ You may need to add a small amount of water to loosen it up. ⁣ Gently cook the tomatoes for about 20 mins. ⁣ Put greens into steamer and lightly steam for about 7 mins ⁣ Add prawns to tomatoes and heat through. ⁣ ⁣ Check sweet potato cooked and serve up. We’re going to PREP by precutting all the veggies your going to use. Now, reminder 💡, frozen veggies are just fine! And another prep hack of mine! If it’s in your budget, some stores have veggies already cut for you! But honestly, it only takes a little bit of time to cut them yourself. You can chop while the protein is cooking. 3️⃣Lastly, PREP your starch! Boil your rice or noodles and bake or roast your potatoes. Now if you want roasted potatoes, throw some veggies on the pan too! Warm up with a bowl of this delicious & healthy soup! 🍲 INGREDIENTS 2 chicken leg quarters 2 cups kale 2-3 carrots 4 baby potatoes 1 can 15 ounces tomato sauce 1 onion 4 bay leaves 14 cups water 1 lemon 1 tsp salt INSTRUCTIONS Peel carrots, baby potatoes and onions Chop carrots into bite size pieces In a large pot add 14 cups water, chicken quarters, tomato sauce, bay leaves, onion, potatoes, carrots and salt Bring to boil, then simmer for 1 ½ hours Remove kale leaves from stems. Chop kale leaves Add chopped kale leaves into soup and boil for 10 minutes Remove chicken leg quarters from soup, shred them and remove bones Add shredded chicken back in the soup Squeeze juice of lemon in soup Enjoy while still warm!

🌮Taco-bout a winning combo here! Cod tacos with mango salsa, kale slaw and avocado crema. Impress your dinner party guests, family or just yourself with this recipe: ⁣ ⁣ 🐟Cod: brush with olive oil and season withpaprika, chili powder and a squeeze of lime. Baked at 350F for 15 mins, until flaky. ⁣ ⁣ 🥭Mango salsa: combine 1 chopped mango, 1chopped red bell pepper, ½ diced red onion, fresh cilantro (can use parsley if you’re not a fan), and the juice of 1 lime.⁣ ⁣ 🥑Avocado crema: in a blender, combine 1 avocado, 1 tsp minced garlic, 2 tbsp plain Greek yogurt, the juice of ½ lemon and 1 lime, s&p to taste and hot sauce as desired. Add water or more citrus juice slowly if too thick. ⁣ ⁣ 🥬Kale slaw: in a bowl, mix ½ cup 2% plain yogurt, 2 tbsp lemon juice, 1tbsp apple cider vinegar, s&p, to taste. Pour over bag of kale slaw and mix through. Several people asked me about this marvelous meal I posted on my story Monday. It has been a cold and wet week around here so something hearty but healthy was what we had in mind. We are huge fans of chicken sausage and this easy recipe checked all the boxes and was a huge success . Below is the recipe and I hope you try it and enjoy as much as we did!• • • •Chicken Sausage over Spaghetti squash Recipe 3 chicken sausage ( I used garlic chicken sausage from Trader Joe’s) 1 small onion chopped 1/2 green pepper chopped or 1 -1 1/4 cups broccoli florets 1 -8oz container whole white mushrooms cut in half 1 spaghetti squash sliced in half long ways and deseeded 2 Cups Rao’s Arrabbiata sauce 2 tbsp olive oil Salt and pepper Preheat oven to 375 Spray a baking sheet with nonstick cooking spray. Drizzle both sections of squash with olive oil and salt and pepper . Place face down on baking sheet and roast in the oven for 40 minutes . Place onions in a skillet with 1 tsp olive oil. Cook for 5 minutes tossing frequently . Add in chicken sausage and brown on both sides . Add broccoli florets or peppers and mushrooms and cook for 3-4 min. Add Rao’s sauce and cook for another 3-4 minutes. Using a fork scrape out the spaghetti squash onto plates . So I whipped up some homemade chocolate - and let's just say it didn't last very long!🥰 psst.. the secret ingridient was the milk I used! Not only is it delicious, but it's aslo organic, gluten free and vegan!🌿 Check out the easy recipe below!👇 [Ad] ____ INGREDIENTS: •1 cup of @oatsome.official organic oat milk •1 tbsp sugar •3 tsp @ghirardelli cocoa powder •Homemade whipped cream for topping •Chocolate curls (i used @nestletollhouse ) ____ DIRECTIONS: 1) Pour the milk into a sauce pan and gently bring to a simmer on medium heat. 2) Add the cocoa powder and stir in the sugar until well dissolved. 3) Pour into a mug and top with homemade whipped cream! 4) Enjoy!💙

Tuna pesto hash If your toddler refuses fish, try this. I've discovered good ways of smuggling good stuff into your child's diet is to a) make a 'hash' of it by adding potato or b) slather it in pesto. Here I've done both. Serves 2 adults + 2 toddlers Prep 10 minutes Cook 45 minutes Ingredients 1 onion 3 medium potatoes Drizzle olive oil Whole basil plant Third of a pack of parmesan in small chunks Juice of half a lemon 1 small tin of sweetcorn 1 tin of tuna Directions Preheat oven to 220°C. Finely dice onion and potato and throw in oven dish. Drizzle in olive oil, stir and bake for 25 minutes until starting to brown. Meanwhile make pesto by blitzing drizzle of olive oil, basil, parmesan and lemon juice in blender. Add splash of water to get the blender going if necessary. Remove dish from oven and add pesto, sweetcorn and tuna. Break tuna up into small chunks and stir well. Bake for further 20 minutes until hash is crispy on top. Bad pain days always remind me why I meal prep soup 🥣 I find it’s the best food when I can’t stand and cook for very long, and I’m mildly nauseous 🤐 • This is my most recent batch of tomato soup and I’m pretty happy with it! I sautéed onion 🧅 peppers 🌶 and celery in mushroom broth 🍄 before adding crushed tomatoes 🍅 and spices. Thursday: Easy Asian Chicken and noodles ~ This is always a winner over here and the best bit? It’s super easy! 👍🏼 ~ I’m sure lots of you already have your own versions of this meal but here’s what I did today: So in a bowl add: • 1 tbsp honey • 2 tbsp soy/tamari • 1 tbsp sesame oil • 1 tbsp lime juice (juice of half a lime) • 1 garlic clove - crushed • 1 inch ginger - finely grated • 1 tbsp sesame seeds • Black pepper ~ Mix that together then pour over your chicken mini fillets. rise & SHINE your own unique light today! ☀️ feeling so grateful for another day of sunshine today. it’s been such a dreary february and I know personally, the lack of sunlight has taken a huge toll on my mental health. since my mental health has taken a hit I’m a lot less social, less inclined to exercise, and overall just not motivated to be my best self. but that’s OK! when we recognize & accept that we’re not feeling our best, we can move on toward making ourselves feel better instead of beating ourselves up for not being as active or for being a hermit. let’s all try and practice a little more acceptance and a lot more love instead of jumping straight to self judgement during these times. if you’re feeling down and in need of a pick me up you can... ❤️ call a caring friend. ❤️ prepare your favorite meals. ❤️ go for a walk and listen to music.
