Zucchini crisps 🍴 ⠀ INGREDIENTS: •2 small zucchinis •1 cup of flour •Pinch of salt •1/2 cup of vegetable broth •1/3 cup of water •1 cup or breads crumbs •1/3 cup of nutritional yeast or parmigian •1 tsp paprika ⠀ SAUCE: •1/2 cup unsweetened soy yogurt •2 tbsp lemon juice •1 tbsp coriander ⠀ •Oil for frying ⠀ METHOD: •Slice zucchinis in 1cm thick slices ⠀ •Mix together flour, salt, broth and water ⠀ •In another bowl mix bread crumbs with nutritional yeast and paprika ⠀ •Season zucchinis with salt and pepper and first dip into flour mixture and then in bread crumbs and fry 3mins from each side ⠀ •For the dipping sauce mix together soy yogurt, lemon juice and coriander ⠀

A beautiful mess of a burger. This was the best burger I’ve had in a long time, and it’s likely due to the fact that we used Dr. Praeger’s black bean & quinoa patties instead of the beyond/impossible slabs of unimpressive imitations, now the norm for vegans. 🌱 GOOEY CHEDDAR STYLE VEGAN CHEESE. This cashew and veggie-based cheese is the perfect melty, stretchy texture for a grilled cheese. Recipe below 👇⠀ ⠀ 📢 We are OPEN and providing much-needed Pantry Foods & Toiletries. LINK IN BIO.⠀ ⠀ ⠀ INGREDIENTS:⠀ ½ cup cashews⠀ 1 medium carrot, sliced⠀ 3 tbsp nutritional yeast in Vegancuts Pantry Box⠀ 2 tbsp tapioca starch⠀ 1 tsp lemon juice⠀ 1 tsp salt⠀ ¼ tsp garlic powder⠀ ⅛ tsp turmeric⠀ vegan butter, to taste⠀ 8 slices of bread⠀ ⠀ INSTRUCTIONS:⠀ 1. In a medium pot, bring 4 cups of water to a boil. Add cashews and carrot and boil for 10 minutes.⠀ 2. Use a slotted spoon to transfer cashews and carrot to a high-speed blender. Save the cooking water.⠀ 3. Blend nutritional yeast, tapioca starch, lemon juice, salt, garlic powder, turmeric, and 1 cup plus 2 tablespoons of reserved cooking water. Blend for 2-3 minutes.⠀ 4. Pour the “cheese” sauce back into the pot and stir with a spatula over low heat for 2-4 minutes, or until the sauce is thickened and stretchy. Set aside.⠀ 5. Butter each slice of bread on 1 side. Add to a medium nonstick skillet, using a spatula to spread cheese sauce on top. ~nothing is what it seems lately~ a thursday feels like a saturday, mushrooms are posing as steak, and most importantly we have potato-less mashed potatoes. what a time to be alive? i know what you’re thinking; “?????!!” sums it up, correct? i’ll let you in on the secret, and you’ll fool any non plant based person around you (or even yourself) into thinking they’re eating a steak and potato plate. except.. they’re not. times are weird amiright i’ve talked about how much i’m obsessed w marinated mushrooms before. if you scroll back you’ll see them in some tacos, and get the whole scoop on how i make them there (very simple fyi) the star of this post is my mashed potato hack. while there’s nothing wrong w potatoes, these are an incredible dupe if you want to chill on carbs and up your protein. i promise you won’t even notice! the secret you ask? chickpeas. my OG superstar for many vegan meals. details below ;) . . POTATO-LESS MASHED POTATOES 1 can chickpeas + 4-6 cloves garlic + 3 tbsp olive oil + splash coconut milk (from a can is preferred) + salt + pepper + coconut oil or vegan butter . -rinse and drain chickpeas -fill a pot w the chickpeas and water and boil for about 5 mins -while that’s happening chop the garlic and fry in the oil on med heat until golden -add drained chickpeas, garlic and oil to a blender. splash in some coconut milk and blend until mashed potato consistency -season w salt and pepper to taste -finish with a pat of vegan butter or coconut oil ENJOY. soooo sooo easy right? you can sub these in for any dish that calls for mashed potatoes, serve under a soup or stew, or some mushroom “steak” and veggies like i did. unbeatable . if you try these lmk! i would love to know how you like them 😛

Jackfruit Tostadas 🤤 . . Super easy and fast meal in under 15 minutes! I thawed frozen jackfruit (I used @thejackfruitco brand), then sautéed it in a skillet with cumin, chili powder, smoked paprika, garlic powder, onion powder, seasoning salt, and cayenne pepper for about 5 minutes and that was it. . . The fun part was assembling the tostadas with my favorite toppings. THE IDEAL SUMMER MEAL☀️⁣ ⁣ - 2 bell peppers ⁣ - 1 cup cooked rice/ quinoa ⁣ - 1/2 onion ⁣ - 2 garlic cloves ⁣ - 1 zucchini ⁣ - Handful of crimini mushrooms ⁣ - 1 carrot ⁣ - Handful of kale ⁣ - Tomato paste⁣ - Chili powder⁣ - Salt and pepper⁣ ⁣ Preheat oven to 425 degrees. Sauté mushrooms, onions, garlic, zucchini, carrots and mushrooms until cooked. Add kale, spices, and tomato paste and cook for a few more minutes. ✨Kale Gnocchi w/Rainbow salad ✨ I’m a @traderjoes gnocchi groupie! Adding the greens in there makes them heartier, and less tricky to cook. Like the cauli gnocchi, I recommend ignoring the package instructions. Here’s my go to method: ▪️Spread a tbsp of oil in a non stick pan. Heat the pan for a minute over medium heat. Place the frozen gnocchi separated and in one even layer. ▪️Note: Do not thaw the pasta, make sure you add them directly from the bag frozen. ▪️Cover and cook for 4-5 minutes on medium heat. Flip the gnocchi over for an even crisp on the other side. Cover and cook for 5 more minutes. ▪️Uncover and continue cooking for 10-12 more minutes turning them around gently every couple of minutes. The longer they stay in the pan, the crispier they get. ▪️In the end, sprinkle 3-4 tbsps water and let them be absorbed completely and you’re done! Swipe for 📸closeups. I used my left over salad dressing to make my rainbow salad again, and topped them with these crispy pillowy gnocchis, with a healthy sriracha drizzle over the top. One-Pot Unstuffed Cabbage Rolls- ain’t no nobody got time to stuff & roll a bunch of cabbage just to cut it all up... okay it’s a #quarantine, we probably all do but I actually like this way better. Cabbage is perfect for our #socialdistancing lifestyle these days because it lasts such a long time. I’m sure you could adapt this for an instant pot too! . Sauté onion and “beef” crumbles in oil or water/broth about 7 minutes, add garlic sauté 1 min more. . Next, add chopped cabbage, 2 cans diced tomatoes and 1 can tomato sauce. Bring to simmer and cover. Stir occasionally. Simmer on low until cabbage is tender, about 30 min, add 1 cup cooked rice at the end. Season with salt & pepper and smoked paprika. Enjoy! . Tip: can also use lentils or TVP in place of beef. My rice and cabbage took forever to cook all together, so to save time you could try frozen rice or pre-cooks dinner add near the end.

Chili and Cornbread Feeling my southern roots tonight Ingredients Cornbread >1 Cup Flour >1 Cup Yellow Cornmeal >1/3 Cup White Sugar >1/3 Cup Brown Sugar >1 Teaspoon Salt >3 1/2 Teaspoons Baking Powder >1 Egg (Or egg substitute) >1 Cup Choice Milk >1/3 Cup Vegetable Oil Chili > 1/2 Tablespoon of Choice Oil >3 Cans choice beans[I used 1 pinto, 1 black bean, 1 chickpea] (One can not drained, 2 cans drained. If bean juice sketches you out, use more broth. This is to make sure the quinoa has enough liquid to cook in) >1 Large Can of Tomatoes > 1 Cup of Quinoa > 1 Cup of Choice Broth >2 Choice Bell Peppers Diced >1 Onion Diced > 1 Tablespoon of Garlic > 1 Tablespoon of Cumin > 1/2 Tsp of Mustard Powder > 1 Tablespoon of Choice Hot Sauce > 1 Tablespoon of Liquid Smoke >1/2 Tsp of Tumeric > 1 Tablespoon of Coffee (Optional but really makes the dish) > Salt/Pepper to taste > Option add in: Vegan "beef" I got mine from @traderjoes. Recipe Cornbread 1. Preheat your oven to 400F. Combine all the dry ingredients in a large bowl and then add the wet ingredients. 2. Lightly grease a cast iron pan and add the batter to it. Slide that shit in the oven 3. Bake the cornbread until a utensil cleanly slides out of the middle. (About 25 minutes) Chili 1. Place a large soup pot on a stove under medium high heat. Once hot, add oil and then onions, and garlic. Cook stirring occasionally for 5 minutes, then add the peppers. 2. Add the rest of the chili ingredients and cover the pot, stirring occasionally to prevent any burning. Once boiling, lower the heat to a simmer. 3. Cook the chili until the quinoa finishes cooking (fluffs up) 20-30 minutes. 4. And that can be very different from your routine when leaving the house, that’s okay! Just establish a routine and stick to it. Ganz am Anfang meines Pflanzenesser-Daseins habe ich Gyros-Wraps ausprobiert und die zählen seitdem zu meinen Lieblingsspeisen! ♥️ Diesmal habe ich Dinkelreis verwendet, weil ich den gerade daheim gehabt hab, sonst nehme ich normalerweise Reis. In der Pfanne brate ich eine gehackte Zwiebel und das Gyros (gibt's beim Spar) an und gebe dann den gekochten Reis dazu. Den Tortilla-Wrap mit Salsa-Sauce bestreichen (und nach Belieben mit veganem Käse belegen), ca. 30 sec in der Mikrowelle aufwärmen, dann die Reis-Gyros-Mischung, Bohnen, Mais, Tomaten und was ihr sonst noch als Füllung haben wollt dazu geben und einrollen 😊 Geht echt schnell und ist so gut! 😍 #itsawrap #wrap #vegan #veganinösterreich #veggies #lieblingsessen #easycooking #easyvegan #vollkorn

Creamy spaghetti carbonara with crispy mushrooms! 🤤 This was sooooooo delicious! All veggies were from @misfitsmarket - if you are interested in fresh produce delivery during this time, check them out! (use code COOKWME-OV1IPK for 25% off your first order) See below for instructions! . Start caramelizing the onions before anything, as this takes some time. The lower temp and slower cook time you can do is best, but if you are short on time you can cook them on medium low for 15-20 minutes. Just slice a whole onion and cook with olive oil (enough to coat the bottom of the pan) and 2-3 large pinches of salt. . As the onions are cooking, prep the rest of the veggies. Chop a head of kale, cook the peas (or use frozen if you don’t have fresh!), roughly chop the garlic (3-4 cloves), slice the mushrooms (saving the stems), and make the cashew cream. Oh, and also make the spaghetti! . Mix the mushrooms and stems with a little oil (higher heat oil is better, such as grapeseed) and salt. Bake at 475 for 15-20 minutes, keeping them separate on the pan. Broil for the last couple of minutes to get them really crispy. . To make the cashew cream, simply blend cashews with water (1/2 cup cashews and 1/2 cup water) until smooth and creamy. Soak the cashews for a few hours if you think of it ahead of time, but not completely necessary. . When the onions are soft and caramelized, add the garlic and 1/2 tsp paprika - this is super imports it will give it that smoky ‘carbonara’ flavor! Let cook for another few minutes. . Add the kale and peas, turn the heat up to high, and cook until the kale is wilted, stirring constantly. Deglaze with juice from half a lemon. . Add 1 cup veggie broth and the cashew cream, and simmer for a few more minutes. . Stir in the cooked spaghetti (you will probably only use half a pound) and top with the crispy mushrooms. Enjoy!! Simple soup 🥣 for about 2 portions- 1 measuring cup red lentils, 6 cups water, 2 carrots 🥕, an onion 🧅, grated fresh ginger, garlic and turmeric (about 1/2 to a teaspoon of each), optional other veg u have in like leek, celery all finely chopped and added to the pan. Boil up, remove any scum off the lentils, as they swell you may need another couple of cups of water. Simmer. Add 2 veggie stock cubes after 15 minutes or vegan bouillon to taste. Add chopped spring onion, kale, spinach and/ or frozen peas for the last minute with lots of black pepper and optional nutritional yeast. Veggie scraps from the week make the best broth and you use the whole vegetable so you don’t miss out in any nutrients in discarded skins, roots, leaves, or the magical place where the roots meet the leaves and where the vegetable meets the plant... this pot contains celery root, onion and garlic skins, carrot tops, basil stems, romanesco leaves and stem, spinach that was about to go if I didn’t use it today, radish tops and leaves, parsley, etc... anything! Well, I think it’s time to break into my beautiful freezer stash of office lunches 😭. ENYUCADO-TORTA DE YUCA. Está receta a base de mandioca y coco frescos la aprendí de mi abuela y mi mamá, muy popular en la costa. Dulce y vegana! 😁 Necesitas 1kg de yuca (mandioca) pelada y molida o rallada. 1 1/2 tazas de coco rallado. 1 taza de ralladura de panela 2 cucharadas de azúcar de coco 20 ml de aceite de coco 2 cucharaditas de anís en grano. Ralla la mandioca, el coco y la panela por el lado más fino del rallador, todo en el mismo bowl. Agrega el azúcar y el aceite de coco y el anís triturado. Forma una masa con la mano coloca y aprietala en un molde redondo de 20cm de diámetro o uno rectangular si quieres cortarlo en barritas. Lleva al horno alla 180°C por 45 minutos aprox. Saca, desmolda y deja enfriar para cortar. •Depende del tipo de rallado que hagas será la consistencia de esta torta, mientras más fina o molida este la yuca (mandioca) en resultado final será más compacto. •Yo ralle del lado más común, el que se usa para el queso, para obtener una consistencia más parecida a una torta con harina. It's my boyfriend's birthday and seeing as we are still in quarantine we have had no choice but to stuff our faces all day😕 Started off with some oreo and bournville stuffed brownies, followed by a @lindamccartneyfoods pork bao bun kit and some salted caramel vodka. Bao buns were peng but at a fiver for 4 buns they are a bit steep. Vodka is lush with a bit of Pepsi max - not sickly like I expected, would recommend❤🎉🎈
