I pretty much baked welsh cakes every week (being welsh and baking all the time it’s a given). However I didn’t know how to make it vegan as haven’t made them since I’ve started a plant based diet. Pudín de chía con sirope de dátiles y frutillas🍯🍓🤤❤ Esta receta sirve como desayuno, snack dulce o hasta postre 🐷 además a la receta de pudín le pueden hacer variaciones, como echarle canela o cacao por ejemplo, porque su sabor es más bien neutro. Ingredientes 🍓 Para el pudín: 2 cucharadas de chía por cada 1/2 taza de leche vegetal (soya, almendra, coco o la que tengan). Le pueden agregar media cucharadita de azúcar rubia si lo prefieren más dulce, o del endulzante que prefieran. Procedimiento 🥄: En un pote o vaso echar la chía y la leche y revolver Refrigerar al menos por una hora, hasta que tenga una consitencia no líquida. Para el sirope 🍯: 1 taza de dátiles (remojados previamente en agua hirviendo hasta que estén blanditos) por cada 1 taza de agua y 1 cucharadita de jugo de limón. Mezclar todos los ingredientes en la juguera y listo. Cuando el pudín ya esté listo, echar el sirope y una frutilla picada. Easiest. Dessert. Ever. 1. Melt dark chocolate + coconut oil over medium heat on stovetop. Make sure you’re mixing it every so often so it doesn’t burn. The more coconut oil you use the sweeter it’ll be. I buy the 72% dark chocolate bar from Trader Joe’s . It has maybe 5 ingredients in there so it’s definitely one of the cleaner options. 2. Drizzle over your choice of fruit. Dates + chocolate taste like a chocolate donut!! Kiwis, bananas, apricot, apples, berries, etc are all super yummy 3. Freeze until solid. After it’s frozen you can refrigerate them 4. Since my hubby has high cholesterol I have been experimenting with recipes that have little to no fat in them. This vegan peach cobbler is one of my latest creations. I substituted applesauce for the egg which provided enough moisture for the crust. No need to add any butter or oil to it. Apple 🍏 pie with currants. So much yum and vegan! I topped mine with Reddi Whip almond milk (vegan) whipped cream. Nothing had to change with my original recipe except the crust is done with Crisco now instead of lard. Want my vegan crust recipe? Let me know in the comments. Recipe... 2 Granny Smith apples peeled, cored and sliced 1/2 cup Domino sugar 1 teaspoon cinnamon 1 tablespoon all purpose flour 1/4 cup (ish) of currants Top & bottom pie crust How to make it... Combine the apples, cinnamon and flour in a mixing bowl. Gently stir (don’t break the apple pieces up) until the apple is coated with the sugar mixture. Allow it to sit for about 10 minutes until the sugar mixture looks wet. Mix in the currants. Put the bottom crust in the pie pan. Pour the apple mixture in and spread it evenly in the pan. Cover with the top crust. Seal the edges. Cut vent holes in the top of the pie. Brush a layer of melted vegan butter over the raw top crust and generously sprinkle cinnamon sugar over the butter. Bake in a 350 degree oven for 45 ish minutes. Let the pie cool for at least 30 minutes before cutting into pieces. Fudgy brownie Ingredients: 3/4 cup oat flour 6tbsp cacao powder 1tsp baking powder 3/4 cup +1,2 tbsp plant based milk 3/4 cup dates 3tbsp peanut butter 2tbsp agave melted chocolate for topping Instructions: Preheat the oven to 180C. Soak the dates in hot water for 5 min. In a bowl, add all dry ingredients and combine. Then add the rest of the ingredients. Transfer the mixture in a form covered in parchment paper. Bake for about 20min. Method: 
1. Beat the aquafaba for around 5-15 minutes till it’s a firm airy texture - tilt your bowl upside down it should hold itself. 2. Melt the chocolate in a double boiler, allow to cool to room temperature and add almond butter. 3. Slowly incorporate the chocolate to the ‘eggs’, carefully without breaking them (see video) 4. Add sugar if needed and shaved chocolate. 5. Place in ramequins and cool 2-3hours in the fridge, top with fruits!!! Hope you enjoy! My dad is clearly very excited to eat this Carrot Cake topped with vanilla icing strawberries and walnuts. 🤩 What you’ll need: •Donna Hay Carrot Cake mix (make life easy) • add 1/2 tablespoon of cinnamon, 1/2 tablespoon of mixed spice, 1 1/2 teaspoons of vanilla essence. I also added a little ground ginger about 1/2 a teaspoon. I added all of this to the dry mixture. For the egg substitute: Ground flax seeds 1 tablespoon of ground flax seed mixed with 2 1/2 tablespoons water = “ 1 egg” For the icing: I substituted cream cheese for nuttelex and you can either add a little vanilla essence or lemon juice. Chocolate covered protein balls🤤 . I was sitting there one night and boom got up and started throwing random things in a bowl😂 This is our final outcome . Preheat oven to 350f . Add the following to a food processor 1C gluten free oats 1/4C maple syrup 1/2C almond milk 1/2C organic Pb or tahina 1 scoop @vivolife protein Sprinkle of cinnamon Sprinkle of salt . Run ingredients till smooth. Should be nice and doughy😊 . Scoop one spoonful of dough into hand roll into balls. Place on parchment sheet and bake for 8 minutes . Pull out and let cool. Next, melt 1/2 bar of dark chocolate on low heat on stove. Drizzle as desired. who else loves chocolate and peppermint? 🙋🏻‍♀️ this is one of my favorite flavor combinations, and I developed this SUPER easy recipe with it in mind ☺️ just melt 1 cup of semi-sweet chocolate chips in the microwave in 20 sec intervals until the chips are completely melted, stirring between each of the 20 secs. Then add in 2 tsp of peppermint extract (or add in .25 tsp at a time to taste). Spoon or pipe the chocolate into the bottoms of muffins tins and stick in the freezer for a few minutes. And that’s it! You have peppermint chocolate disks 🤤 and y’all these were the bomb! Chocolate chip muffin 🥜 🍫 •Simple easy recipe, they are so good and FILLING! I was surprised, they kind of in a way taste like banana bread lol😋 •••••2 cups of whole grain oats, 1 scoop vegan peanut butter protein ( i used bowmar), 1 serving vegan chocolate chips, 1 cup almond cashew milk, 2 tbs of syrup, 1 banana smashed in, tsp of baking soda & 1 tbs of ground flax meal mixed with a little water and let it sit for 5 mins it’s considered an egg replacement & cinnamon! •••••bake @ 400 for 20-25 mins i kinda just threw this together with random stuff i already had!! definitely can change it up and make this in different ways, perfect sweet treat that’s a healthier alternative and vegan 🌱 of course ••••i included the nutrition facts on them as well 7g of protein per muffin 😇

Leftover Cranberry Sauce Sorbet! We have to admit it’s kinda genius- right out of our test kitchen to yours! . Recipe: -16 oz cranberry sauce (reserve some whole berries to mix in at the end) -½ cup fresh squeezed orange juice -¼ cup sugar -1/8 tsp stabilizer blend (one part guar gum + 1.5 parts xanthan gum – we like @bobsredmill brand) -1 ½ tsp lemon juice -Zest of 1 orange -1 cup stewed orange segments . 1. Dissolve sugar, orange juice and stabilizer on the stovetop. 2. Blend all ingredients together (except for orange segments) then freeze in ice cream machine. 3. Once frozen layer with toppings and let set in freezer for at least 30 mins. . White Chocolate Drizzle: -1/3 cup cocoa butter chips -1 TBS coconut milk -1.5 tsp sugar -1/2 tsp vanilla . 1. In a small pot over low heat cook the coconut milk and sugar to dissolve 2. Add the vanilla and coco butter chips and cook to melt together, stirring frequently 3. Yesterday I made a beautiful Boozy Banana Bread. (Counting down the moments until I get home and have some 😍)(the video is on my YouTube and website) Recipe: 3 ripe bananas, mashed splash of vanilla essence 1 tbs Maple syrup 1 tsp Agave syrup 1/4 cup vegan baileys (any plant milk or melted coconut oil will do) 1 3/4 cup flour 1/3 cup coconut sugar 2 tsp baking powder 1/2 cup cocoa nibs 1 tsp mixed spice Pinch salt Mix mashed bananas, vegan baileys (plant milk or melted coconut oil) together in a bowl with vanilla essence, maple syrup and agave syrup and stir well. In a separate bowl, mix flour, coconut sugar, baking powder and salt. Add the dry ingredients to the wet ingredients and mix to combine. Pour into a parchment paper-lined loaf pan and bake at 180C (350 F) for 45 minutes or until browned.

Plant-based tiramisu cups in only 15 minutes! Can you believe it? 😍 These are healthy and taste much better than some tiramisus I had in restaurants. Trust me, you need to try this recipe by the sweet Carlotta from @cucinabotanica: . . 👉 INGREDIENTS (4 servings) . 🍪 Base - 12~16 biscuits of your choice (neutral flavor)* - 4 cups of coffee *I didn't test yet, but I'm pretty sure granola could also replace the biscuits beautifully . 🍧White cream - 150 g cashew nuts - soaked for 2 hours (room temperature) or 10 mins (boiling water) - 80 ml plant-based milk - 60 ml maple syrup (or 60 g of sugar dissolved in 40 ml of water) - 30 g (2 tbsp) coconut or sunflower oil - ~1 tsp of vanilla extract . 🍫 Chocolate topping - 60 g dark chocolate - 40 ml plant-based milk - ~2 tsp cocoa powder . . 👉 DIRECTIONS 1. Make coffee for 4 servings 2. Break the biscuits into small pieces inside each cup 3. Slowly pour the coffee on the biscuits while gently smashing them with the back of a spoon 4. Prepare the cream: drain the cashew nuts and simply blend all the ingredients together 5. Place the cream on top of the biscuits 6. Take the cups to the fridge while you prepare the chocolate topping - so that the cream hardens a little bit 7. Melt the chocolate in a bowl over simmering water, then add the plant-based milk and stir until well combined 8. Remove the cups from the fridge and top each one of them with the chocolate mix 9. Sprinkle the cocoa powder (you can use a sieve) 10. If you can resist, put your tiramisus back to the fridge for at least 30 minutes to have them firm and cool. Until the end of September, the #AnatomyOfAction Challenge invites you to involve in one or many action from 5 lifestyle categories (food, move, fun, money, stuff). As a proud ambassador of this challenge, I chose to show you how we can be more conscious about the value of the food we often discard (I mean, value of chickpea water being Chocolate Mousse, how better can it get?). I commit to not waste any part of my food during the challenge! What about you? RECIPE for a decadent mousse you won’t resist! 🌱 (makes about 4) Ingredients: - 130g (1/2cup) aquafaba : water from a normal sized can of cooked chickpeas, preferably salt free. - 100g dark 70% chocolate - 1 heaped teaspoon almond butter - 2 teaspoons coconut sugar (optional, would recommend if your chocolate has under 30g sugar/100g) - extra chocolate (2squares) - top: more choc, fruits.. Method: 
1. Beat the aquafaba for around 5minutes till it’s a firm airy texture - tilt your bowl upside down it should hold itself. 2. Melt the chocolate in a double boiler, allow to cool to room temperature and add almond butter. 3. Slowly incorporate the chocolate to the ‘eggs’, carefully without breaking them (see video) 4. Add sugar if needed and shaved chocolate. 5. Place in ramequins and cool 2-3hours in the fridge, top with fruits!!! Hope you enjoy! A Poached Pair 🍐 ⠀⠀⠀⠀⠀⠀ • I know poached pairs sounds complicated... but I promise it’s really apPOACHable. ⠀⠀⠀⠀⠀⠀ • Poached pears are simple to make and have quite the effect! They can be made ahead and served later for, idk, something like Thanksgiving. ⠀⠀⠀⠀⠀⠀ • You can cover and smother them in chocolate as I did, syrup, spices or have them as is! I prefer to add much less (hardly any) sugar compared to most recipes as to focus on the natural sweetness. ⠀⠀⠀⠀⠀⠀ • 🍐 RECIPE ☝🏼YOU’LL NEED 2 Bosc pears ( peeled and cored/ leave stems) 1 T lemon zest 1 cinnamon stick 1 tsp allspice 2 T apple cider vinegar 1 T brown sugar ⠀⠀⠀⠀⠀⠀ • 👐🏼TO MAKE 1. Fill sauce pan with water enough to cover the pears. 2. Add in all of the ingredients and bring to a simmer. 3. Cook for about 20 mins, turning pears occasionally, until you can gently pierce with a fork. 4. Remove from heat and let cool. 5. ℂ𝕙𝕠𝕔𝕠𝕝𝕒𝕥𝕖 𝔹𝕖𝕣𝕣𝕪 ℝ𝕚𝕡𝕡𝕝𝕖 ℂ𝕒𝕜𝕖 • This hot mess is a practice run for a simple Christmas Day dessert. So it got a bit tumbled in my bag on the way to work this morning, but thank you to my taste testers @tiddleoh & @annavita63 for taking one for the team & giving me feedback on it. I’ll tweak it accordingly for Christmas Day & hopefully they’ll like it, if not... more for me 💁🏼‍♀️ (silver linings) I normally would make it with whipped coconut cream but I found that left a oily & heavy taste... this time I used an even easier self made up ‘recipe’ • Chocolate Ripple Biscuits layered with @nakulaorganic natural coconut yogurt and the mixed berry coconut yogurt. Then spread with the same over the biscuits then refrigerate overnight & I decorated this morning with blueberries, mint & edible flowers from the garden. Recruited @laurendebeau as my photography assistant the other week to take pictures of the brookies I made with @sweetlorens cookie dough to enter their contest🍪 honestly, half the time I just eat the dough raw because it’s SO GOOD and I can’t help myself. #sweetlorensbrookie One version is chocolate chip dough on top of chocolate brownie dough, with chocolate in the middle and drizzled on top🍫 and the other is sugar cookie with sprinkles on top, brownie on the bottom. The chocolate was my favorite!!😍
