Anyone ever had a go at baking a whole-roasted cauliflower? I’ve made them in the past with varying degrees of success. They’re such show stoppers, though! Great to make for a special occasion or holiday. This herby yogurt, za’atar, and golden raisin version turned out really well and was actually very low-fuss. I combined some vegan @kitehillfoods Greek yogurt with lemon juice and minced garlic and brushed a nice layer of that all over the cauliflower. Then I doused it liberally with za’atar seasoning and baked it at 400° for about 45 minutes (30 minutes covered in foil, then 15 minutes uncovered.) After it was done baking, I showered it with lots of herbs (mint, parsley, cilantro, dill) and golden raisins. 🍄 Creamy vegan Mushroom Stroganoff Mushrooms dishes are amazing😍🤤 ⠀ Follow: @vegalien❤️ Follow: @vegalien❤️ ⠀ Credits: @elavegan ⠀ 🔖Recipe: 1 onion diced 2-3 cloves of garlic, minced 1 tbsp vegetable oil 11 oz mushrooms, sliced (300 g) 4 tbsp white wine (optional) 1 tbsp tamari or soy sauce 3/4 cup vegetable broth or water (180 ml) 3/4 cup plant-based milk or plant-based cream (180 ml) 2 tbsp cornstarch Spice mixture: 1 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, a pinch of chili flakes, sea salt & pepper to taste 1 tbsp nutritional yeast flakes (optional) Fresh thyme leaves and/or parsley (and/or tarragon), chopped Serve with brown rice or pasta of choice ⠀ 📍INSTRUCTION: -Heat oil in a large pan/skillet, add onion and fry for about 5 minutes. Add garlic and fry for a further 1 minute. -Now add the mushrooms and fry over medium heat for about 5 mins. -Pour in white wine (optional), vegetable broth, tamari (or soy sauce), and the spice mixture. -Add cornstarch to the plant-based milk or cream and stir to dissolve. -Pour the milk/cream mixture into the pan and cook on low-medium heat for about 10 minutes until the sauce thickens. 🥔Sweet potato pizza crust Have you ever cook pizza this way?😏 ⠀ Follow: @vegalien ❤️ Follow: @vegalien ❤️ ⠀ Credits: @elavegan ⠀ 🔖Recipe: 235 g (1 cup) mashed sweet potato 120 g (3/4 cup) white rice flour 40 g (1/3 cup) tapioca flour 1 tsp baking powder 1/2 tsp salt ⠀ 📍INSTRUCTION: 1️⃣Peel and chop one medium sweet potato into chunks and boil it in a pot with water for about 10 minutes or until fork tender. Discard the water and mash the sweet potato with a potato masher. You'll need 1 cup of mashed sweet potato for this recipe. 2️⃣Preheat oven to 375 degrees F Add rice flour, tapioca flour, baking powder + salt and mix with a spoon. 3️⃣Once the mixture cooled down a little bit, use your hands to knead the pizza dough into a ball. If the dough is too dry, add a tiny bit of water or oil. If it's too sticky, add more rice flour. 4️⃣ Place the pizza dough onto a sheet of parchment paper and add a second sheet of parchment paper on top. Use a rolling pin to roll out the dough into your preferred shape 5️⃣ Remove the top parchment paper and transfer the rolled out pizza dough onto a baking sheet. Bake the pizza dough in the oven for about 10 minutes. 6️⃣ Meanwhile, you can prepare your pizza toppings! After 10 minutes, remove the pizza dough from the oven. Add the second parchment paper on top, and carefully flip the pizza dough over. Please don't burn your fingers! If the crust is too hot, simply wait a few minutes. Now, peel back the hot parchment paper. 7️⃣ Place your favorite toppings onto the sweet potato crust and return the pizza to the oven for about 10 to 18 minutes. A @nybakeryco red onion and chive bagel for lunch today, filled with half a smashed avocado with lemon, some red pepper, tomato, parsley and @cauldronfoods marinated tofu pieces. Almond butter overnight oats 😱 Serves 4-6 *Can be made gluten free if you use GF oats and check that the plant milk and almond butter are cherries GF as well! • 2 cups oats • 2 cups unsweetened plant milk • 3/4 cup creamy almond butter • 1 1/2 bananas (mash with almond butter) • 1/2 tsp vanilla extract • 1/2 Tbsp cinnamon • 1/4 cup maple syrup • 1/4 cup chia seeds Mash the banana with a fork and mix it with the almond butter until relatively smooth/combined. Mix in the vanilla, cinnamon, maple syrup, and chia seeds. Then add the oats and plant milk and mix together. Add a bit more milk if necessary. It’s not meant to be runny it should be a bit more creamy in consistency. Let sit in the fridge overnight and enjoy the next morning. Good in the fridge for about four days.

🌱Pieminister vegan Kevin pie with waffle fries 🌱 ✨My sister got me these from the reduced to clear section at Sainsbury’s so I immediately had to try it because I had been eyeing their pies for a while but never did because I think they are pricy. They have other meat pies but have got some vegan ones too, The ‘Kevin’ pie was filled with mushroom, tomato, quinoa and baby onions.✨ 🌿This pie was delicious (and not because it was at reduced price) it had so much flavour and moisture. Definitely giving it a 10/10🌿

Vegan Pizza Nights!⁣ ⁣ Before I jot down a pizza paragraph or eight, I’ll be posting homemade cookies tomorrow - made in the flavour that was voted clear winner in my IG stories! ⁣ ⁣ The title ingredient wasn’t in my pantry so I’ll have to pop out tomorrow ahead of a bake 😌 ⁣ ⁣ Let’s chat vegan pizza! One of my favourite quick meals, I use a pizza maker appliance. It speeds things up and this thing helps biocheese reach it’s true potential - melting it so well.⁣ ⁣ In a wildcard move to join together rivals - these days I use both biocheese and sheese. I know I run the risk of isolating everyone here, but in a pizza maker this combo is great. ⁣ ⁣ My top 3 vegan pizza toppings subject to change (likely to change as I read this posted)⁣ ⁣ 3. Vegan cheese, cherry tomatoes, chilli oil and fresh basil. Yes. So good. So simple too.⁣ ⁣ 2. Mushroom + a dash of p̶r̶e̶t̶e̶n̶t̶i̶o̶u̶s̶n̶e̶s̶s̶ truffle oil topped with vegan cheese. Is truffle oil really vegan? I’ve heard a few different opinions, and I’m honestly happy to hear out any argument on it for or against (DM or comment). ⁣ ⁣ 1. Sprouts, mushrooms, olives, pineapple, spinach. Top with sriracha mayo. It’s a bit of everything really but it’s a neon orange mess that’s so tasty! ⁣ ⁣ 🍕 If you feel like it, tell me which pizza toppings you’d give the number 1 spot to. Or start a truffle oil rant/rave. CHEESY HASH BROWNS 💚 Loving this recipe They say: “Cheesy Hash Browns: These cheesy hash browns are so simple and delicious! We hope you enjoy, Roxy & Ben.“ Makes 10 hash browns: Ingredients 800 g potatoes (peeled) 2 carrots (grated) 1 onion (finely chopped) 3 garlic cloves (minced) handful of fresh parsley (finely chopped) 100 g vegan cheese (grated) 1 tbsp flax seeds 1 tbsp chickpea flour 1/4 tsp salt 1/4 tsp pepper Method 1. Preheat the oven to 180°C. 2. Make a flax egg by combining the flax seeds with 2 tbsp of water in a small bowl. Leave to one side so the mixture thickens. 3. Meanwhile, grate the potatoes, then use a tea towel to remove as much moisture as possible by folding the towel around the grated potato and squeezing the excess water into a bowl. 4. Add the potato to a mixing bowl, along with the carrot, onion, garlic, parsley, cheese, flax egg, chickpea flour, salt and pepper. 5. Use a wooden spoon to combine all the ingredients together. Then take a small handful of the mixture and place it on a tray lined with baking paper. Shape the mixture into a small rectangle roughly one cm thick, then repeat until all of the mixture is used up. 6. This freezing weather calls for comfort food ❄️ With nothing much in the house but the allotment veg my dad brought round (dried chickpeas and parsnips) we had an improvised tagine with Moroccan spices, tinned tomatoes, Parsley, lemon juice and harissa, sweetened up with a blob of mango chutney and served with rice instead of cous cous. First porridge of the week 🍎 Made overnight then warmed and topped with baked spiced apple, maple agave and almonds 🍎 The very easy Recipe 💜 Add 1/2 cup oats to jar with 20g chopped dates soaked for 5 mins in 50ml boiled hot water. Add 1 cup plant milk (I used almond), 10g ground almonds, 5g chia seeds, a splash of vanilla extract, sprinkle of cinnamon and nutmeg. Shake well and leave to soak overnight. In the morning put in pan or microwave and heat until creamy. Serve with sliced baked apple (bake for 20 mins on 200 with a sprinkle of cinnamon) almonds and with maple syrup if you like extra sweetness. Yum!!! We went out for a family dinner to @thebhaktitree in Mayfield and it didn’t disappoint! The kids basically licked their plates clean 🤗 They serve meals off the menu, buffet or takeaway, it’s all vegetarian mostly vegan and GF. $16 buffet dinner, $8 for children which includes dessert 🧁 This will be a regular family favourite. 🌱🌱🌱

SCRAMBLE SHOWDOWN 🥚 -⁠ 🌮 For a while now eggs have been considered "ultra healthy" in some groups, with the reasoning being that it's packed with protein and nutrients. But does that come with a risk? Let's compare it to one of my favorite staples, tofu scramble.⁠ -⁠ ❤️ One of the most obvious risks that comes with eating eggs is it's insanely high amount of cholesterol. Cholesterol is one of the main contributors of clogged arteries, which results in...you guessed it....heart disease.⁠ -⁠ 💪🏼 Tofu usually also has a bit more protein than eggs as well, although this statistic was primarily used just to show that it's easy to get in the same amount of protein on a vegan diet.⁠ -⁠ 🥛 And who says vegans can't get calcium? Soy products are one of the best sources of calcium for vegans, along with all the leafy greens, seeds, and nuts that are loaded with calcium too.⁠ -⁠ 🍚 Bottom line: Tofu is the much healthier option that comes with even more benefits outside of health, like saving hens and chickens from the absolutely terrible conditions they are kept in to cultivate their eggs. If you think you can’t eat healthy because you don’t have time to cook, think again. This meal took all of 10 minutes. I’ve been using that excuse a lot lately, grabbing meals on my way home from a long day at work, but it felt good to stock up the fridge with fresh produce and get back in the kitchen. As promised: here’s the recipe Ingredients: Puff pastry (I used jus roll) 🌱 Red pepper cut into little squares 🌱 Carrot again cut into very small pieces 🌱Oil of choice 🌱 For salad: is used Pak Choi and red pepper and some pumpkin seeds 🌱 Method: cut a rectangular section of pastry size dependent on how many you want to make. Sprinkle the pepper and carrot into the centre of one half of the pastry. Fold the pastry over and press down on edges to create an enclosed parcel. If you want you can create an unnecessary garnish like I did! Slice little grooves in the top to let air out and sprinkle some oil on top. Cook on 200c for 10mins. Prepare side salad and enjoy!
