Can you believe that there are only 4 days left in January?! Time seems to just fly! Today's recipe is great for a grab-and-go breakfast, snacks, or even as a dessert. These blueberry citrus muffins require less than 10 minutes of hands-on time! Blueberry Citrus Muffins Ingredients: · 1 cup unsweetened plant milk · 1 tsp apple cider vinegar · 2 cups flour · Zest of 1 lime OR lemon · 2.5 tsp baking powder · ½ tsp baking soda · ½ tsp salt · ½ cup sugar · 6 TBSP vegetable oil · Juice of 1 lemon OR lime (or use 1 tsp lemon or lime extract) · 1.5 cups blueberries, fresh or frozen Instructions: 1. Preheat your oven to 375° Fahrenheit and line a muffin tin with 12 liners. Set aside. 2. In a small bowl, mix the milk and vinegar and set aside. The milk will curdle, so don’t be alarmed if it looks chunky! 3. In a large bowl mix flour, zest, baking powder, baking soda, salt, and sugar. 4. Add oil, milk, and citrus juice. Stir until just combined. DO NOT overmix or your muffins will be dense! 5. Gently fold in the blueberries. 6. Fill each muffin liner ¾ full. 7. Bake for 20-25 minutes or until a toothpick comes out clean after being poked into the center of a muffin. 8. Whenever we are in a cooking rut we just roast a bunch of colorful veggies and turn them into a meal. Tonight featured roasted broccoli, cauliflower, red cabbage, cherry tomatoes, carrot, zucchini (plus handful of fresh spinach), seasoned roasted chickpeas, brown rice, cashew/lemon juice/tahini/garlic/nutritional yeast sauce. Bulgur pilaf Great side dish to accompany anything, healthy & delicious. 1/2 cup Xtra fine noodles 1 1/2 cups large bulgur 3 1/2 cups water 1 1/2 cups garbanzo beans 1/4 cup olive oil Salt to taste Brown noodles in oil, mix constantly to prevent burning. When noodles get brown, add the bulgur & stir 2 minutes. Now add the water,salt & beans, bring to a boil, turn down heat & simmer with lid half open until water is absorbed (20-25 min). These are vegan?!😱👇🏽RECIPE BELOW👇🏽 . RECIPE by @goodful 14 oz extra firm tofu (395 g) . MARINADE 2 tablespoons low sodium soy sauce 2 ½ tablespoons nutritional yeast 1 teaspoon garlic powder ½ teaspoon kosher salt 2 tablespoons grapeseed oil, or other neutral oil ½ teaspoon hot sauce ¼ cup unsweetened soy milk (60 mL) ¾ teaspoon apple cider vinegar . BOWL 1: ½ cup all purpose flour (60 g) 1 tablespoon cornstarch . BOWL 2: ½ cup unsweetened soy milk (60 mL) 1 ½ teaspoons apple cider vinegar . BOWL 3: ¾ cup panko breadcrumbs (90 g) 1 ½ tablespoons nutritional yeast 1 ½ teaspoons garlic powder 1 ½ teaspoons paprika 1 ½ teaspoons onion powder ¾ teaspoon kosher salt ¾ teaspoon black pepper ⅛ teaspoon cayenne . METHOD: 1. Freeze the tofu overnight, let it defrost and then press it for 20-30 minutes. 2. In a bowl, mix all the ingredients for the marinade, pour it over the tofu and let it marinade for 30-60 minutes. Stir halfway through. 3. Prepare the breading in three bowls by mixing the ingredients in each bowl. 4. Coat the marinated tofu according to the video. Bowl 1-2-1-2-3. 5. Add the tofu to a baking tray, spray on some cooking spray (optional) and bake at 400F/200C for 20-25 minutes flipping halfway. 5. Serve with barbecue sauce and enjoy! . Reposted from @nourishingalex Roasted Balsamic, Chilli & Maple Glazed Brussels Sprouts with Pecans & Dried Cranberries Reposted from @nourishingalex ⁣ Recipe:⁣ - around 620g Brussels Sprouts, halved ⁣ - a couple handfuls pecan nuts⁣ - a Handful dried cranberries ⁣ - 3tbsp balsamic vinegar ⁣ - 2tbsp maple syrup⁣ - 1/2 tsp garlic granules - 1/2 tsp dried chilli flakes ⁣(how ever much you like) - olive oil, for cooking⁣ - salt & pepper⁣ ⁣ Method:⁣ 1. Preheat the oven to 200C/180C fan/400F/gas mark. Line a large baking tray with non stick baking parchment.⁣ 2. Add your sliced sprouts to the lined baking tray then drizzle with a little olive oil, rub the oil into the sprouts using your hands, then season with salt and pepper. ⁣ 3. Roast in the oven for 10 mins until slightly soft.⁣ 4. Meanwhile make the glaze by adding the balsamic vinegar, maple syrup, garlic granules chilli flakes to a small bowl of jug, then whisk everything together until combined. ⁣ 5. Take out the sprouts, add the pecans & dried cranberries, then drizzle with the balsamic glaze. ⁣ 6. Place back into the oven and cook for another 5-10 minutes, until the sprouts are roasted but soft. • This is a very quick & easy salad for that lazy person who still wants to eat healthy ;) • The ingredients you’ll need: - 4-6 beetroot - 1/2 can of chick peas - 1/2 can of red kidney beans - 1/2 onion - a pinch of salt & pepper •(optional)• - pickled gerkins but that’s just your choice -distilled white vinegar, apply 1 TBSp full of it (check as You like... ENERGY BALLS🙌✨⁣ Here’s a super simple & quick recipe for some delicious energy balls! These make the perfect snack! Also these ones don’t require a food processor so basically anyone can make them and requires very little equipment, basically all you need is a bowl, a spoon, your ingredients & about 10 mins👍 ⁣ ⁣ Ingredients:⁣ ⁣ - 1 cup almond butter⁣ - 1 cup rolled oats—I think quick oats would work too⁣ - 1/4 cup maple syrup ⁣ - 1 tsp vanilla extract⁣ - 1/4 cup hemp seeds⁣ - 1 tbsp chia seeds⁣ - 1/4 cup coconut shreds⁣ - 1/4 cup mini non dairy chocolate chips ⁣ - Pinch of sea salt⁣ ⁣ Method:⁣ 1️⃣ Combine all ingredients in a bowl, and mix until fully combined! 2️⃣ Roll into balls and place in the fridge for 20 mins to firm up a little more⁣ 3️⃣ Store in an airtight container in the fridge and eat within a week

This is an extremely easy recipe to satisfy your sweettooth craving any day of the week! . 220g (@whittakersnz 72% Cocoa Dark Ghana) Dark Chocolate 2 Tbs Homemade Macadamia Butter (recipe from 2 weeks ago) 1 Cup Rice crispies (for gluten free version, ensure the crispies are GF) • Just simply melt the chocolate in a pot, add nut butter and crispies and fold to combine. Divide the mix into a 12 mini muffin tin layered with strips of parchment paper or a tiny bit of coconut oil. Place in the freezer for 25 min if you really want to speed up the process or in the fridge for 1 hour - or until set. Busted out some pesto this weekend to use for different meals this week.✌️If you want to add a little flair to your meals give it a try. . Basil Pesto -2 cups spinach -1 pack of fresh basil -3/4 cup walnuts -1/4 cup toasted pine nuts -1/8 cup olive oil (I didn’t measure but it’s was around this) -4 cloves garlic -2 Tbsp Nutritional Yeast -Salt to taste -1 tsp dried oregano -1 tsp dried thyme -Dash of dried rosemary . Put all ingredients into a food processor and blend until desired consistency.

VEGAN FILET-O-FISH! This past weekend I was inspired to make a vegan Filet-o-fish sandwich after getting a craving for the McDonald's version. 🙈 This was surprisingly easy to make! I pan fried some @gardein fishless filets 🐠 🚫according to package instructions. I then made my own tartar sauce by mixing a spoonful of @sirkensingtons vegan mayo and relish. I then assembled my sammie with the fried fishless filets, vegan tartar sauce and @wholefoods brand vegan cheddar cheese in between a buttered bun. And ta-dah!! Chickpea & sweet potato curry 😍💙🥳 I’m overdue a fruit and veg shop so tonight’s dins was just using up anything I could find in the kitchen 🤷🏼‍♀️! I made the curry using coconut milk, curry powder & a few other spices with chickpeas, roasted sweet potatoes & served with thai brown, black and red rice and ofcccc some greens 🤤🥦🥒 really takes no time at all and is v tasty & filling ⚡️🌈💖

[Recipe] Roasted Root Veggie Pot Pie - flaky vegan pie crust, roasted parsnip, turnip, fennel, and sweet potato, a dairy-free béchamel, and a touch of homemade garam masala. Sometimes you need something warm and comforting when it’s cold, rainy, and you’re under the weather. I used the pie crust recipe from my white bean galette post, however, store-bought vegan puff pastry works really well and is a lot faster. Peas and some thyme would also work really well here. RECIPE: Ingredients: - 1 large onion - 1 medium fennel bulb - your choice of root veggies - I used 2 large sweet potatoes, 2 medium turnips, and 7 medium parsnips - 2 -3 cups plant milk - 2 tbsp all purpose flour - 1 tbsp oil or vegan butter - 2-3 tsp Garam Masala - 2-3 garlic cloves, minced - salt, pepper, and oil - pie crust or puff pasty Directions: Preheat oven to 425˚F. Cut the onion and the fennel into thin strips, toss in salt and oil, and place on a baking sheet in a single layer. Peel and cut the parsnips, potatoes, and turnips into bite size pieces. Toss in oil, salt, pepper, and 2tsp of Garam Masala and spread onto a baking sheet in a single layer. Roast for 30-45 minutes until vegetables are cooked through. While veggies are roasting, heat the oil or butter in a small pot on medium flame. Add garlic and cook for 1-2 minutes, then add the flour, and cook for 4-5 minutes. Whisk in plant milk and cook until the sauce thickens. Stir veggies into the sauce and cool to room temperature before assembling the pie. Preheat the oven to 400˚F. Add the vegetable mixture to a baking dish. Roll pie crust to 1/4-inch thickness and 1-inch wider than your baking dish. Drape the crust over the baking dish and press the sides to seal. For lunch I made a delicious vegan burrito that was so fast and easy. This is how I made it: 1. First I sautéed chopped mushrooms, and then added a fajita vegetable mix that has chopped peppers and onions. 2. Next I added half a jar of chickpeas and seasoned it all with paprika and curry spice. 3. Then I spread a microwaved sweet potato on a flaxseed wrap and topped it with spinach. 4. Sweet potato black bean tacos RECIPE by @mimlanie 🍠 For the roasted sweet potato: 1-2 tbsp oil 2 sweet potatoes (2 cups once cubed) 1 tsp garlic powder 1 tsp smoked paprika 1 tsp salt 1/4 tsp black pepper 🌶For the black beans: 1 tbsp oil 2 garlic cloves, pressed 1 yellow onion, diced small 1/2 tsp ground cumin 1/2 tsp dried oregano 1/4 tsp cayenne pepper 1/4 tsp salt 2 cans black beans (the entire thing!) Juice from 1 lime 1 bayleaf 🌮 For the tacos: Avocado Pickled red cabbage (easy recipe 2 posts back!) Your fave tortillas (warm them up on a pan right before serving) . METHOD 1) Peel and cut sweet potato into small cubes. Toss with the oil, garlic, paprika and salt. Roast on a parchment-lined baking sheet for 20 min at 400 F. 2) Meanwhile, in a medium pot, sauté onion in oil for 10 minutes. Add the garlic, cumin, oregano, salt and cayenne. Cook for 5 more minutes. 3) Add the entire contents of the canned black beans. Mix in the lime juice and add the bay leaf. Simmer for 20 minutes. Remove bay leaf. 4) Either make fresh tortillas or warm your favorite tortillas on a pan over medium-low heat for up to a minute on each side. Have you ever thought that you can actually bake your oatmeal?🤔😱⁣ ⁣ It’s just PERFECT for the winter to warm you up as it takes 4 minutes to make it!😏 You throw all the ingredients in a heat resistant mug, mix it, and wait till it’s baked!🥤 Tadaaaa your too yummy winter comfort bake breakfast is ready!🍽🥧⁣ ⁣ All you’ll need:⁣ 🌾1 cup of fav Oats⁣ 🍌1 Ripe Banana⁣ 🍯1 tsp Maple/Agave Syrup⁣ 🥛1 cup of Water/Plant milk⁣ 🍫Dark Chocolate (Optional)⁣ ⁣ And that’s it!!!😍⁣ Mash the banana. Honest THE BEST lentil soup 🥣😍 This recipe is . • high in protein (40 grams per serve) 💪 . • super easy 💁‍♀️ . • tastes awesome 👏 And only needs ingredients! . . . Ingredients- • 1 medium onion • 1 teaspoon of minced garlic . • 3 cups of water or coconut mylk . • 2-3 teaspoons of chicken stock (I use massel - which is vegan, if you don’t have access to a vegan chicken stock, vegetable works fine too) • 1 1/2 cups of dry lentils . • garam masala, coriander seeds and chilli flakes to taste . • a drizzle of olive oil and a scoop of natural coconut yoghurt to serve . . . This Mushroom Chickpea Ragout 🍄🔥 by @cookingforpeanuts is bursting with flavour! Recipe Cook 3 finely minced (small) onions in enough vegetable broth to moisten (or olive oil) until softened and starts to brown a little (about 10 minutes). Add 3 minced garlic cloves, 1-1/2 tsp dried rosemary, 1-1/2 tsp dried thyme and 1/4 tsp ground sage and cook another 30 seconds until fragrant. Add 1 lb (16oz) thickly sliced mushrooms (cremini or white button) and cook on high until mushrooms have released their liquid and start to soften. Add 1/2 cup vegetable broth, 1/2 cup coconut milk, 1 tbsp balsamic vinegar, several turns black pepper and 1-1/2 cups cooked chickpeas. Simmer until liquid has thickened. (You can add more broth or coconut milk depending on desired consistency.) Remove from heat and stir in 2 cups spinach and about 2-3 tsp fresh lime juice. Salt to taste.

Make some now and take them everywhere!! 🍫☕️ - SALTED ESPRESSO TRUFFLES (makes approx 22 truffles) - you can customise these truffles to your taste- if you prefer sweeter, choose any inexpensive dairy-free dark chocolate bars (most grocery brand ones are around 50% cacao), or if you like a more bitter taste, use 75-85% cacao dark chocolate. - ingredients: 100g dark chocolate (1/2 cup chopped) 1/4 cup @naturescharm Sweetened Condensed Coconut Milk 1/2 tsp vanilla 1/2 tbsp finely ground espresso (the stronger the better, i used a turkish espresso) generous pinch sea salt, plus more to sprinkle on top cacao or cocoa powder for dusting - method: microwave chocolate in a large bowl on medium heat, until mostly melted, then add condensed milk and microwave again until just melted. stir together, adding vanilla, espresso, and sea salt. refrigerate for 1-2 hours, just until completely cooled, but not overnight or mixture will be too hard to properly roll into truffles. remove from fridge and scoop using a tablespoon measure or a melon baller to make truffle size uniform. shape into round balls with your hands, then roll each truffle in cacao powder to evenly coat the outside. sprinkle with extra sea salt. - store in an airtight container, at room temperature if serving the same day, or in the fridge to keep fresh longer. Mexican fiesta! Handmade tortillas, grilled eggplant, smashed avo, corn chips and limes! For eggplant, cut in half and slice length ways into strips. Toss in a bowl with paprika, cumin, salt and oil. Heat a pan and add eggplant mix. Sauté. For tortillas, put 4 cups flour, 2 teaspoons baking powder, and 3/4 teaspoons salt in a large mixing bowl. Add 2 tablespoons of olive oil and mix. Add 1 1/2 cups water and form into a dough. Might take some kneading but make sure it looks like a smooth ball when you’re done. Let sit for 5 mins. Then begin tearing off golf ball size pieces and rolling them out with a pin or wine bottle. Feel free to add flour if it sticks. Heat up a pan to medium high, make sure it’s non stick or a cast iron, and cook until bubbles form. Flip after a min or so and repeat! Super easy soup for Sunday meal prep! 🍲 . I accidentally picked up double my normal week's worth of greens and decided to make soup with them and some of my pantry staples - BPA-free canned organic tomatoes, chickpeas, shallots, and bouillon! . 🌱 2 chopped shallots 🌴 1 Tbsp coconut oil 🌿 garlic powder, sea salt, dried herbs to taste 🥕 3-4 medium carrots, sliced 💦 8 cups water + 2 veggie bouillon cubes 🍅 1 large can organic diced tomatoes with liquid (approx 500ml) 🌱 1 large can organic chickpeas, drained & rinsed 🍃 1 container organic dark greens (baby spinach, arugula, kale, etc) (approx 120g) . 🍲 In a large stockpot saute the shallots in the coconut oil and spices over medium heat until the shallots start to soften and become translucent, about 2 min. 🍲 Add the carrots and continue to saute another 2-3 min. 🍲 Add the water + bouillon and tomatoes + liquid. Cover partially, stir occasionally, bringing to a simmer, about 10 min. 🍲 Add the drained chickpeas and continue to simmer until carrots are just softened, another 8-10 min. 🍲 Add the greens to wilt, and then serve. . 🍞 Great with a sprinkle of fresh ground pepper and a slice of garlic toast. Today, I wanted to make something warm and spicy to drink that was healthy and filling. I made a batch of golden turmeric latte with coconut milk and it’s delish! . . . Benefits of turmeric have long been documented for centuries across many civilizations. Here’s some of the benefits of golden turmeric latte: Yummy Filling Vegan May help with inflammation Helps aid indigestion May improve memory/brain function Curcumim in turmeric may improve mood May lower blood sugar May protect against heart disease Has antibacterial, anti fungal, and antiviral properties . . . Recipe: 2 cups of light organic coconut milk (or any plant based milk you prefer) 1 teaspoon of turmeric 1/8 teaspoon of ground cardamom 1 teaspoon of ground ginger 1 cinnamon stick 1-3 whole cloves 1 tablespoon of coconut oil (unrefined, cold pressed organic) 1 teaspoon of organic maple syrup Dash of cinnamon . . . Add your milk to a small saucepan and add all of your ingredients except the maple syrup and coconut oil. Whisk together and simmer for 6-10 minutes (don’t boil). Then strain with cheesecloth or strainer and add coconut oil and maple syrup. Dash with cinnamon on top. Enjoy! . . .
