QUICK & EASY VEGAN BANANA MUFFINS⁣ ⁣ Prep Time: 10 mins⁣ Cook Time: 24 mins⁣ Total Time: 34 mins⁣ ⁣ INGREDIENTS: ⁣ 2 large or 3 small bananas⁣ 230ml non-dairy milk⁣ 20g oil (I used coconut) ⁣ 20g granulated sugar ⁣ 2 teaspoons apple cider vinegar⁣ 1 tablespoon vanilla⁣ 280 g all purpose flour⁣ 1 tablespoon baking powder⁣ 3/4 teaspoon salt⁣ 135 g chopped walnuts or chocolate chips plus more for sprinkling on top⁣ ⁣ INSTRUCTIONS: ⁣ 1. Preheat the oven to 200 degrees C. ⁣ 2. Line a standard muffin pan with liners and spray them lightly with oil. ⁣ 3. Mash the bananas in a large mixing bowl. ⁣ 4. Add the non-dairy milk, oil, sugar, vinegar and vanilla to the bowl and whisk with the bananas until well combined. ⁣ 5. To the wet mixture, add the flour, then sprinkle the baking powder and salt on top of the flour. Stir to mix with a large spoon until just combined; be careful not to over mix. Some small lumps are fine.⁣ 6. Fold in chopped walnuts or chocolate chips, if using. Oil the muffin liners. Distribute the mix equally. Sprinkle more walnuts/chocolate chips on top if desired.⁣ 7. Bake for 20-24 minutes, until golden on top and a toothpick comes out clean.⁣ 8. Let cool for 5 minutes in the pan, then transfer to a cooling rack. BURGUERS DE ALUBIAS 🖤 Y SOJA TEXTURIZADA : Anoche puse 200g de alubias negras en remojo, esta mañana las he escurrido y puesto a hervir. Mientras llenamos una taza con soja texturizada y agua caliente. Lika gott en vardag som helg💚 • FILÉPANNA MED GRÄDDIGA GRÖNSAKER • 💚Häv ner 1 pkt (á320g) FILÉBITAR (@halsanskok) i en panna & stek i OLJA. 💚Riv ner 100-150g GRÖNKÅL i bitar med händerna. Skär 1-2 BROCCOLIBUKETTER i bitar. Även stammen. (Jag körde 500g men det funkar med en bukett på 250g) 💚Häll över 1 pkt (250ml) VÄXTMATLAGNINGSGRÄDDE, 2 dl VATTEN, 1 GRÖNSAKSBULJONG. Koka ihop några minuter. Ånga en del under lock så broccolin mjuknar men ändå har tuggmotstånd. 💚Avsluta med att häva ner 1 RÖD PAPRIKA skuren i bitar. Vänd ner. Och servera medan paprikan har kvar sin crunch. 💚Servera med RIS. (TIPS! Blötlägg gärna ris i en skål med vatten. Helst över natten eller hela dagen. Och byt gärna vatten ett par gånger. Då sköljs stärkelsen bort till stor del & riset blir fluffigare & finare när det väl kokar. Ha gärna mycket vatten i kastrullen när du sedan kokar & häll bort överflödigt vatten så får du även bort mer arsenik ur riset. Vitamin B9 (also called folate or folic acid) deficiency is the most common in the world!⠀ All the B vitamins are water-soluble, meaning the body doesn’t store them. They help the body use carbohydrates, fats and protein in metabolic processes and are needed for a number of other systems. Folate is the naturally occurring form of B9, whole folic acid is the synthetic form of B9, found in many supplements.⠀ ⠀ •⠀ ⠀ KEY FUNCTIONS:⠀ ⠀ CELL DIVISION AND DNA SYNTHESIS: Folate is crucial for proper brain function and mental health. It supports the production of DNA and RNA, and without it, cells can’t divide properly. It’s especially important for rapid cell growth such as those in the gastrointestinal and genital tracts.⠀ ⠀ FOETAL DEVELOPMENT: Alongside being important for the cell division involved in growing a baby, it’s critical for the development of the nervous system and deficiency of this vitamin in pregnant women is linked to birth defects such as spina bifida.⠀ ⠀ RED BLOOD CELL PRODUCTION: Folate also works closely with vitamin B12 to help make red blood cells, and help iron work properly in the body.⠀ ⠀ CONTROLLING HOMOCYSTEINE LEVELS: It works with vits B6 and B12 to protect against high levels of homocysteine in the blood. High levels of this amino acid are associated with cardiovascular disease and osteoporosis.⠀ ⠀ •⠀ ⠀ Despite its occurance in many foods, folate deficiency is common. Alcohol and many prescription drugs like oestrogens and barbiturates impair folate metabolism. It’s also easily destroyed by light and heat (cooking).⠀ ⠀ Symptoms of deficiency:⠀ ⠀ - Poor growth⠀ - Inflamed tongue⠀ - Bleeding gums⠀ - Loss of appetite⠀ - Shortness of breath⠀ - Diarrhoea⠀ - Fatigue⠀ - Irritability⠀ - Forgetfulness⠀ ⠀ •⠀ ⠀ Some food sources:⠀ ⠀ Brewer’s yeast⠀ Soybeans, kidney beans, mung beans, chickpeas, lentils⠀ Leafy greens (spinach, kale, swiss chard)⠀ Asparagus⠀ Broccoli⠀ Walnuts, peanuts, almonds⠀ ⠀ Folate deficiency can be detected in blood. If supplementation is required, a methylated form of folate (which is considered more effective in the body) would be my recommendation over folic acid.

Add the sausage and cook until browned, breaking up with a wooden spoon, about 8 minutes. Add the broccoli, red pepper flakes, salt, and pepper and stir to combine. 🥞 Friday pancakes 🥞 Hurray for the weekend! 🥳 Friday mornings usually involve pancakes for us. These ones are naturally #glutenfree by using half buckwheat flour and half LSA mix. LSA is ground linseed (aka flaxseed), sunflower seed and almond and is very useful in baking as it contains lots of lovely fats especially the essential omega 3. . 🤓 Omega 3 is associated with 👉🏼good brain health 👉🏼reduced cardiovascular disease. especially in those who don’t regularly eat fish (VITAL study, 2018) 👉🏼 it is crucial to the structure of all cell membranes, and ALA omega 3 (the type that is found in linseed) cannot be made by the body so must be taken in via diet. NB. Any supplementation should only be done under the advice of a registered nutritionist or medical professional, as omega 3 supplements may be unsuitable for some people. . 👩🏻‍🍳 I mixed ½ cup of LSA mix, ½ cup buckwheat flour with a tsp baking powder and a dash of vanilla paste. Mix in an egg and slowly add enough milk (I used oat milk here) to make a pancake batter. I fry these on a medium heat in ghee or butter 🧈. If you serve with sweet tropical fruits such as the mango🥭 and kiwi🥝 here, you can skip the syrup! In the U.K. winters I served these with frozen berries so usually drizzled manuka honey on top. . HOMEMADE HONEY 🍯 CHICKEN & FRIED RICE 🍚 . —— This was the most DELICIOUS rice & chicken dish I have ever made 😍👌🏽 —— INGREDIENTS for the chicken: 1/2 cup vegetable oil 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks 1 cup all-purpose flour 1 cup buttermilk —— FOR THE SAUCE: 1 tablespoon cornstarch 1/2 cup honey 2 tablespoons reduced sodium soy sauce 1 tablespoon apple cider vinegar 1 teaspoon sesame oil 1/2 teaspoon crushed red pepper flakes, or more, to taste —— METHOD: Heat vegetable oil in a large skillet over medium high heat. Working one at a time, dredge chicken in flour, dip into buttermilk, then dredge in flour again, pressing to coat. Working in batches, add chicken to the skillet, 3 or 4 at a time, and cook until evenly golden and crispy, about 2 minutes on each side. Transfer to a paper towel-lined plate. In a small bowl, combine cornstarch and 1 tablespoon water; set aside. In a small saucepan over medium high heat, combine honey, soy sauce, apple cider vinegar, sesame oil and red pepper flakes. Bring to a boil; reduce heat and stir in cornstarch mixture until slightly thickened, about 2-3 minutes; set aside. Serve chicken immediately, drizzled with honey glaze . —— INGREDIENTS for the rice: 1 cup white long-grain rice 2 teaspoons vegetable oil 2 eggs, lightly whisked 2 bacon rashers, chopped 1 carrot, peeled and grated 2 shallots, trimmed, finely sliced 1/2 cup frozen peas, thawed 1 tablespoon soy sauce Sesame Seeds, to serve Shallots, sliced, extra, to serve —— METHOD: Step 1 Cook the rice in a large saucepan of boiling water for 12 minutes or until tender. Drain and leave to cool. Step 2 Heat oil in non-stick wok or large frying pan over medium heat. Add eggs. Swirl over base to form an omelette. Cook for 2 minutes or until set. Transfer to a chopping board. Set aside to cool slightly. Cut into short strips. Step 3 Add bacon to wok. Cook 4 minutes until light golden. Add carrot. Stir fry 1 minute. Add shallots, peas and rice. Cook, stirring, 3-4 minutes. Add egg and soy sauce. Stir until heated through. Sprinkle with sesame seeds and top with extra shallots. Serve immediately.

Acne is so shit! I’ve had it for 6 months now and I know now that it is gut related (diet) stress related, and a result of hormone imbalance. Just another reason that makes my journey for holistic health important. my body has been turning mental and emotional hardship into physical symptoms because I havnt been addressing my core issues. A lot of them are rooted in childhood trauma and stress that has accumulated over time, and becoming a mum has brought those issues right up to the surface. It’s super confronting, and at times heart wrenching but in order the be the best me I have to dig deep and face all of this head on. So hard, but absolutely vital for my life and my babies health and well-being, and I’m excited to go even deeper because It’ll be helpful to understand some of my thinking patterns and re-evaluate essentially my entire belief system. There are weeds I need to rip out by the root that aren’t serving me.

🙌🙌🙌 I have been SO excited for this book to land on our doorstep. An incredibly in-depth, evidence-based manual on diabetes by @masteringdiabetes @mangomannutrition @mindfuldiabeticrobby - covering Type 1, 1.5, 2, pre + gestational Diabetes and whole food plant based nutrition. As soon as we realized a plant based diet was more effective for my husband in managing his Type 1 Diabetes, I wanted to know why it worked so well (and so much better than the traditional diabetic high protein/low carb diet), if this way of eating can also reduce future potential complications for him, and if it could help keep my kids from getting Type 1 and Type 2 diabetes, for that matter.
