It’s perfect for weekday lunches. 🥗 🍴 Salad- Romaine Lettuce or Spring Mix Tomatoes Cucumber Red onion Feta Cheese Eat Banza Chickpea Pasta Dressing- 2 Tsp Sriracha 1/4 C. Olive Oil 1/4 C Greek Yogurt 2 Tbsp Lemon Juice 1 Garlic Clove 1 Tbsp Feta Cheese Salt & Pepper to Taste Instructions: 1. Cook pasta according to package directions and let cool. 2. Binge Eating😩 - - Question: “How to take control of binge eating? Help!!” - - Honey, Lord knows I get it - - I struggled with the binge/restrict mentality about 10 years ago and it was THE. ABSOLUTE. WORST. - - Here’s the issue: - - You have a goal. Say: fat loss is your goal (which can be positive) - - But then you do extremes to get there, extreme calorie restriction, extreme exercise (mindsets/actions that are negative) - - 10 years ago, I used to eat “perfectly”, then see Oreos and then I’d treat myself to one. Then I thought, “oh no I messed up.” And I’d eat like 10-15 Oreos (not enjoying it but from shame). And then I’d freak out and go on a 6 mile run or do a “juice cleanse”😩😩 This was literally the worst time ever and probably set the stage for my stomach illness in the years to come. - - How to get OUT: - - ✅Education: If you are in this cycle, I would encourage you to reach out to a nutrition consultant (like me), dietician, nutritionist, etc. to help you achieve your goals in a sustainable way. ✅Eat balanced meals: Eat meals with a lean protein, a healthy fat, loads of vegetables, & a starchy carb (sweet potato, potato, brown rice, etc.). ✅Eat regularly: Keep blood sugar stable and eat a meal/snack roughly every 3 hours ✅No extremes: No super low calories, no over-exercising, no over-compensating ✅Mindset: Don’t look at eating as being “perfect” but as fuel ✅Disciple: Baby steps every single day towards your goal ✅Workout: Don’t use workouts to “work off” food you’ve eaten. MIXED GREEN SALAD⁣ ⁣⁣ ⁣2 cups spring mix⁣ ⁣1 head romaine lettuce, shredded⁣ ⁣1/2 cup wild rice, soaked for 12 hours and drained⁣ ⁣1/2 cucumber julienne sliced ⁣ ⁣1/2 cup grape tomatoes cut in half ⁣ ⁣2 tsp chopped shallots ⁣ ⁣1 tsp chopped garlic⁣ ⁣2 thin carrots thinly sliced⁣ ⁣1 tbsp pepitas ⁣ ⁣1/2 and avocado, sliced⁣ ⁣⁣ ⁣Dressing was made on Sunday so I don’t recall the measurements, but it was soaked cashews, 2 cloves garlic, lemon juice, ACV, miso paste, Italian seasoning, and crushed red pepper.

Vegan lemon poppyseed cake🍋 Vegan-friendly, dairy-free, refined sugar-free 🌱 Sharing with you guys one of my (and your) favorite recipes of 2019! Working on lots of new healthy recipes and exciting projects that I can't wait to share with you💛 Happy Friday Love, Yuki♡ Ingredients Dry 250g | 2 cups spelt or all purpose flour, sifted 50g | 1/3 cup unrefined brown sugar or coconut sugar 120g | 1/2 cup + 1 tbsp light brown sugar 5g | 2 teaspoons baking powder 1/2 teaspoon pink salt 20g | 2 tablespoons poppy seeds Zest of 1/2 organic lemon Wet 240ml |1 cup plant milk (I used soy) 65g |1/3 cup coconut oil, melted 40ml | 2 tbsp lemon juice Frosting 100g cashews, soaked overnight 1 tsp vanilla bean paste 70g coconut cream 20g | 1 tbsp coconut oil, melted Zest of 1/2 orange or lemon 1 tsp lemon juice Instructions * Preheat the oven to 175C| 350F °. * Lightly grease and line with parchment paper a 22x10cm loaf pan. * In a large bowl, combine the dry ingredients and whisk well. * In another bowl, combine lemon juice and soy milk, stir and set aside to curdle for 5 minutes. Add the melted coconut oil and vanilla and stir to combine. Make sure that all your ingredients are at room temperature. * Pour the wet mixture over the dry ingredients and gently mix to combine. Don't over mix. * Pour into the prepared loaf pan. * Bake at 175C| 350F for 55 minutes or until a toothpick inserted near the center comes out clean. * Let cool in the pan for 10 minutes then turn out on a cooling rack to cool completely. . . You had me at chocolate!😍 .⁠ Get baking with this recipe🔽⁠ Cupcakes⁠ 125g | 1 cup white spelt or all purpose flour⁠ 30g | 2 1/2 tbsp raw cacao powder⁠ 50g | 1/4 cup + 1 tbsp moscovado or coconut sugar⁠ 50g | 1/4 cup light brown sugar⁠ 3/4 teaspoon baking soda⁠ 1/4 teaspoon sea salt⁠ 50g | 1/4 cup coconut oil, melted, room temp⁠ 60ml | 1/4 cup espresso coffee, warm⁠ 1/2 teaspoon vanilla bean paste⁠ 1/2 teaspoon white vinegar⁠ 160ml | 2/3 cup water⁠ _⁠ Frosting⁠ 30g | 1 oz| 1/4 cup Fresh blackberries⁠ 100g | 3,5 oz | 2/3 cup cashews, soaked overnight⁠ 150g | 5,2 oz| 3/4 cup coconut cream from a can⁠ 20g | 7oz raw cacao butter, gently melted, at room temp⁠ 3tbsp rice syrup⁠ 1/2 tsp vanilla bean paste⁠ 1 tbsp lemon juice⁠ _⁠ Make the frosting⁠ Mash the blackberries through a sieve and discard the seeds.⁠ Place the (rinsed and drained cashews), coconut cream, rice syrup and mashed blackberries in a food processor or high speed blender and blend until smooth. With the machine running, slowly add the melted cacao butter and blend until completely smooth and creamy. Transfer the frosting in a bowl and place in refrigerator to set for st least 4 hours.⁠ _⁠ Make the cupcakes⁠ Preheat the oven to 180 C degrees and line a muffin tray with 6 cases.⁠ In a large bowl, sift together the dry ingredients.⁠ In a small bowl, combine the wet ingredients.⁠ Pour the wet mixture over the dry ingredients and mix until just combined (don’t over mix).⁠ Divide the batter equally (I used an ice cream scooper) between the 6 muffin cases and bake for 15-17 minutes or until a toothpick inserted into the center comes out clean.�Leave to cool completely before frosting.⁠ . . For me the key to successful healthy eating is meal prepping. I’d rather spend a few hours a couple times a week cooking multiple proteins and veggies than try to fit it in every night with after school activities and homework.
