These dessert bites are tender, lemony, just sweet enough, made with whole-food ingredients, and were the hit of this weekend’s Brave event. Myself, I do eat eggs and dairy and gluten and sugar - so I make these beauties at home purely for their deliciousness. Add in the fact that they meet lots of people’s special diets, and this is a keeper of a recipe! . Cranberry Lemon Balls . 1/4 cup fresh lemon juice (this really is best with freshly squeezed, rather than bottled) 1/4 cup maple syrup 1/4 cup softened coconut oil 2 teaspoons lemon zest, grated with a microplane, from 1-2 organic lemons 1/2 teaspoon vanilla 1 1/2 cups fine-ground almond flour 1/3 cup coconut flour 1/4 cup dried cranberries, roughly chopped . With a large spoon, mix lemon juice, maple syrup, soft coconut oil, lemon zest and vanilla in a mixing bowl. . Then mix in almond flour, coconut flour and chopped dried cranberries. Scoop up spoonfuls and roll between your palms into balls. WAFFLES. Buscando en internet, vi diferentes recetas para hacer waffles sin gluten. Y me pareció buenísimo, que se pueden hacer los típicos waffles dulces, o también salados! Como no tenía wafflera, me compré una (que también es sandwichera y hago unos tostados gloriosos). Esta receta es una pavada y salen increíbles!!! La saqué de un recetario de santa maria @santamariaprod Hoy, los hice para comer de postre con dulce de leche. Pero también los comimos tipo sandwich, con jamón y queso derretido y son riquísimos. RECETA. INGREDIENTES: ◾️ 2 🥚. ◾️400 ml de leche. ◾️ 100 g de manteca derretida. ▪️ 220 g de premezcla (uso @santamariaprod ). ▪️ 1 cucharada de polvo para hornear. PREPARACIÓN: En la batidora, batir apenas los dos huevos. Agregar la manteca derretida y la leche y batir un poco más. En otro bowl, mezclar la premezcla y el polvo de hornear y tamizarlo. Agregar los secos a los húmedos y mezclar hasta unir todos los ingredientes. Listo!! COCCIÓN: Calentar la wafflera y engrasarla con un poco de spray vegetal @mundonaturaargentina. Poner una cucharada grande de mezcla y distribuirla. Cerrar y esperar a que esten listos y doraditos. Ponerlos en un plato cubiertos con un repasador, asi no se secan. 💡 Con estas cantidades, salen 8 waffles. 💡 Se pueden guardar en la heladera x 48 horas. 💡Calentarlo en el horno un ratito si se enfrio. 💡Comerlo con lo que más te guste: dulce de leche, crema, nutella, helado, chocolate, frutas, etc. 💡Si lo vas a comer salado, podes agregarle un poco de sal a la mezcla, algo de queso rallado o alguna especie para darle más sabor (albahaca, oregano, etc). #sinharina #santamaria #sintacc #glutenfree #wafflesandwich #celiacofeliz

Today started another chapter in my health journey. I was diagnosed with Hashimoto's Thyroiditis. I saw my blood test results last week, and after spotting all the red numbers indicating my high antibodies and TSH levels, I figured it would be Hashi's. Dairy, gluten, and soy are commonly avoided in people with Hashi's. Since I already don't eat any animal products, don't eat gluten, and my soy intake is very limited, I spent the weekend trying to figure out what changes I could make to my diet. After reading #theplantparadox and listening to a bunch of podcasts, I'm testing out going #lectinfree. I'm currently on day 3 of phase 1 of the program. When I met with my doctor to review my labs today, she suggested removing lectins from my diet to see if it would help (very grateful to see a doctor that is on the same page as me). In addition to this, based on her recommendation, I'm starting synthetic T4 tomorrow. I wasn't thrilled at the idea of meds, but I know sometimes they are necessary and luckily I have a nearby compounding pharmacy that gave me a vegan option. I also had a thyroid ultrasound done today to determine the current state of my thyroid (fingers crossed that it's not bad). It’s been a crazy few days, but as scary as a new diagnosis is, I'm grateful to have a name for the way I've been feeling for over two years (and SO grateful for a doctor that knows to test ALL THE THINGS). I wanted to share this, because two years ago I asked a different doctor to test my thyroid. My TSH was tested and the results indicated normal levels. Doctors will usually test TSH and NOT antibodies, but antibodies are elevated before TSH. There's a part of me that wonders if I could have prevented damage if I knew to ask for the antibodies tests. It’s easy for me to get frustrated in times like this. Sometimes it feels like as soon as I figure out which foods work for me, I have to change it up again. But every time I learn something new about my body, I'm challenged to educate myself, give up old habits, and implement a new way of doing things. Hopefully being on this journey and sharing my experiences will help others through theirs.

Snacks! A very difficult task on lofo vegan. Noochy popcorn is one of my faves. 100g popcorn + 2 tbsp (~32g) savoury yeast flakes. Not only does it make a delicious cheesy popcorn but the nooch adds a whole host of b vitamins, including B12 and per tablespoon it even provides over 8g of protein. Officially out of training for my second job as a patient care tech on the floor and I couldn’t be more thrilled🥳 my schedule should die down a bit more (I’ve literally been working every day🤦🏼‍♀️) and I can sleep and take care of people to my best ability😊 and to top it all off, my follow up is Wednesday which hopefully means I can start running again soon!🙌🏼🥳 lets just say it’s going to be a fantastic week and we started it off right with this delish salad😍

Gelatina de mandarinas 👩🏻‍🍳💙🍊. Una merienda para tus pequeños 👦🏻👧🏽 fácil de preparar, saludable, refrescante y cargada de muchas propiedades: Antiflamatorias, diuréticas, depurativas, reduce el colesterol y refuerza el sistema inmunológico. Ingredientes: - Una taza de jugo de mandarinas - 2 cucharadas de gelatina sin sabor - 2 cucharadas de fecula de maíz (maizena) - 2 cucharadas de endulzante (Miel de abejas) Preparación: ▶️ Colocar en una olla el jugo de mandarinas con el endulzante, en un envase aparte mezclar la fecula de maíz con un 1/4 de taza de agua y de igual forma hidratar en otro envase la gelatina sin sabor con 1/4 de taza de agua a temperatura ambiente. ⏩ Llevar la olla con el jugo de mandarinas el endulzante al fuego y mezclar, luego se le agrega la maizena y la gelatina disueltas en agua poco a poco sin dejar de remover para que no cree grumos, al llegar al punto de hervor, colocar 1/2 taza de agua a temperatura ambiente, bajar el fuego y remover por 2 min más. ⏭️ Apagar y retirar la mezcla permitiendo que baje un poco su temperatura para vaciarla en su envase de preferencia, dejar enfriar y luego llevar al refrigerador por un espacio minimo de 2 horas que este suficientemente firme al desmoldarla. After the day I had yesterday having to take my newborn to the ER, I legit wanted to pull into an italian restaurant and just drown my sorrows in a bowl of carb laden pasta! But who am I kidding...I can't go anywhere with my 3 kids and my husband out of town! So, I made my own super quick Chicken Carbonara with Protein Noodles from Costco. Still in my stories now and then saved in my highlights after. Share what your favorite quick go to meal is when your carb cravings are bad. Please share...I need all the help!

Turkey sausage with roasted cabbage steaks and fingerling potatoes was tonight’s dinner of choice and let me say- Deeeelish! 🥬🦃🥔 . I love a good German inspired meal (it’s the Cincinnatian in me) and I love how the cabbage steaks give some flare to a super simple meal. I will say I wasn’t my best and used some butter on the cabbage to give extra flavor but that’s what ya try to plan for right?! I think the recipe could do without it though if you’re trying to be better than I was 😉 . For the cabbage and potatoes- cut the potatoes in half and place on roasting pan. Remove the first layer of cabbage as it’s pretty wilty. Cut the cabbage into 1 in thick steaks and put on separate roasting pan. Melt 2 tbsp butter. Add 3 cloves minced garlic to the butter and brush potatoes and cabbage. Sprinkle with S&P. I did do a little spritz of non stick cooking spray on both to create extra crisp. Set oven to 400 and roast about 45 mins, flipping and checking them every 15. Once cabbage is almost done, add a small sprinkle of parmesan. . For the sausage- slice into thin pieces. I seasoned with paprika and garlic powder but you can omit this if you want. Brown in a pan with a little EVOO. Once it is getting a little crispy, add 1 thinly sliced shallot. . This was about 13 #weightwatchers points but again, you can leave out the butter for 4 less points. I wanted the extra flavor tonight so I said go for it 💁🏻‍♀️

Can you shakshuka like that? 💃🎉 ••••••••••••••••••••••••••••••••••••••••••••••••••••••••• More Israel things- Egg white shakshuka with eggplant 🍛, Israeli salad 🥗, AND a gf roll for ideal sauce dipping 🥖😋 •••••••••••••••••••••••••••••••••••••••••••••••••••••••• (Traditionally, shakshuka is make with poached eggs so the yolks break into the sauce! I am sensitive to yolks so was grateful they could make this with just the whites! 😋😋) VERY well done, very accommodating A++. My non-allergic friends were raving about this place too 👌

Caneeeelonessss!!!! . . 👩🏽‍🍳👨🏼‍🍳 Hoy teníamos ganas de comer esta delicia 🙌🏿 Te contamos los pasos y los ingredientes que necesitas!!🥁 .🥞 250 cc de leche. .🥞 200 gr de premezcla ( nosotros usamos Santa María). .🥞 2 huevos. .🥞 1 cucharadita de aceite. El primer paso seria mezclar la leche con los huevos, luego vas a ir agregando la premezcla de poco hasta lograr una consistencia semi líquida y que pueda tener punto letra. Le agregas el aceite y continúas batiendo lentamente. Por último colocamos la preparación en una panquequera y la cocinamos de lado a lado, la cocción es rápido así que tenemos que estar atentos!! Los panqueques se hacen sin azúcar ni sal para poder utilizarlos tanto en comidas dulces como así también en saladas. . .
