Crudités & Garlic Hummus; Snack Pack! Crudités today consist of radish, celery, carrot & baby cukes. Hummus is a new recipe I’ve smashed together - roasted garlic 🥰🥰 Roast two whole heads of garlic, wrapped loosely in foil individually & topped with a dash of EVOO, roast at 180C for an hour. Add the following to a food processor; 1 can of chickpeas 1 lemon zested & juiced 1 tbsp tahini 3 tbsp EVOO 3 tbsp filtered water Generous salt & pepper 1/2 tsp smoked hot pimento pepper powder 1 tsp sumac (not necessary, if you have it add it) Once garlic is roasted, remove cloves from the skin with a spoon, almost like your scooping passion fruit out of its shell. Add both heads of cloves straight in. Put the lid on & blitz that baby for 3 mins, the more you blitz the smoother it becomes. Add more water if needed, just 1 tbsp at a time! No going back if it’s too thin 😬🤓 Serve with fresh parsley & EVOO ontop. You could portion it up like I have for individual snack packs, or take it to a friends in a big bowl for a snacko, or sit your ass on the couch & munch away while you watch the new season of 99 on Netflix! My father died the day after Thanksgiving so December was rough since I am an emotional eater. Stress has never allowed me to lose weight! With encouragement from my fellow Arbonne family I was able to halfway stay on track. I also had severe pain in my arms for the last 10 years and also fatigue after 2pm every day. Fatigue and pain is completely gone!! It actually left a week and a half into the 30 days. The 2nd pic is me last night in a loose 16 (29 lbs lighter). I had so much fun today doing a cooking demo @jamasoftware . I showed Jama employees how to make lentil & mint salad and chocolate tahini date balls. Leftover chicken strip salad with gluten free “croutons” I’m lying it’s just gluten free bread that I almost, but didn’t, burn in the toaster and then broke into pieces. Buuuut I did make the chicken strips myself. Hence the weird yellow colour but it needed flavor so naturally I grabbed the curry powder. They weren’t the best chicken strips in my opinion (a bit new to cooking meat) but I think a few more tries and I’ll get them right. I also used the leftover mayo because #zerowaste. It was just mayo, water, peri peri sauce, S&P - one of my favorite combos. Toss in whatever salad items you have, sprinkle with, preferably real (if we’re honest) croutons. #glutenfree chocolate chip banana bread, anyone? As promised in my stories, here’s the recipe. My two-year-old, a total banana bread aficionado, readily accepted this #gf replacement for his usual loaf—it’s that good. The recipe is scrumptious and moist as is, but I’ll update after a couple experiments to see if I can get a little better rise/lighter texture. I’ll also be providing an exact measurement for the mashed bananas so you don’t have to wonder if yours are small, medium, or large 😉 . Combine dry ingredients: 1 C gf all-purpose flour (I used Bob’s Red Mill) 1/2 C almond flour 1 tsp gf baking powder 1/2 tsp sea salt 3 Tbsp coconut or brown sugar (counting sugar as a dry ingredient) . Whisk together wet ingredients (whisk as you add the egg if your coconut oil is warm): 3 medium to large ripe bananas, mashed as smooth as possible 1/4 C coconut oil, melted (butter will work, too) 1 large egg 1 tsp vanilla extract . Add dry ingredients to wet and stir to combine well (don’t whisk). Fold in 1/4 cup chocolate chips of choice (I LOVE @enjoylifefoods mini vegan chips). Pour into a standard loaf pan (@williamssonoma gold touch are my favorite) coated with cooking spray or butter and gently shake to distribute evenly. Bake in preheated 350 degree oven for about 40 minutes, until toothpick inserted in center comes out nearly clean. Cool in pan about 15 minutes, then turn out onto wire rack to finish cooling. . From our January Smoothie Challenge with @miraculouslivingfoods 🌟 "Friday for me means a healthy treat! This smoothie is made from: 1 frozen banana 1 cup of homemade or store bought non dairy mylk (more or less to get it blended) 1 tbsp cacao powder 2 tbsp nut butter (any kind works great but I do love almond butter) 1 packet of frozen acai (unsweetened) or a handful of frozen blueberries 1 handful of ice optional fresh mint (I used chocolate mint from the garden) After everything was blended I pulsed in some gluten free granola. Okay everyone it’s here! It’s time to get out your air fryer and whip up some dry ribs! Who remembers these babies? I say remember because being gluten-free means I cannot eat the Chinese food ones. Get out your air fryer, chip up some ribs into bite sized pieces and soon SOON you’ll be able to enjoy these garlicky dry bites! Here is the recipe 👇🏻 Air Fry Dry Rib Bites 1 kg pork side ribs, cut up into small pieces 1/4 cup gluten free soy sauce or coconut aminos 1 Tbsp garlic herb seasoning @splendorgardenorganics 1/2 Tbsp onion powder @silkroadspices Maldon sea salt or Celtic sea salt 1️⃣In a medium bowl add the rib bites. Add the soy sauce, garlic herb seasoning and onion powder and stir. 2️⃣Heat air fryer to 400 degrees. 3️⃣Place on row of rib bites in air fryer and fry for 7 minutes. 4️⃣Toss and air fry again for another 7 minutes. 5️⃣Remove, sprinkle with sea salt and set aside and continue air frying ribs in batches. Whole fruit vs. fruit juice… Which is the healthier option? Let’s talk about some of the things to consider when choosing! First, consider the nutritional content of 1 medium apple compared to 10 ounces of pure apple juice: * Apple: 95 calories, 25g carbs, 19g sugar, 4.5g fiber * Juice: 180 calories, 43g carbs, 39g sugar, 0g fiber As you can see, 1 medium apple has about half the calories, carbs and sugar as 10oz of pure apple juice. The apple also has 4.5g fiber compared to no fiber in the juice (removes with the pulp and skin). Most vitamins and minerals are retained in the juicing process, but all the sugar without any fiber can lead to a significant spike in blood sugar (not good). Fiber plays an important role in blood sugar regulation, but also in keeping us full, aiding in digestion, and helping our gut microbiome stay healthy. It’s also important to note that many people naturally consume more than 10oz of juice at a time, while 1 apple is usually a natural serving size. This means even more sugar and calories tend to be consumed when drinking juice compared to eating whole fruit. This all also applies to fresh pressed juices, which have become popular. The benefit of fresh pressed is the avoidance of sweeteners, preservatives, artificial ingredients, and artificial colors that can be found in many commercial juices. To be clear, I’m in no way anti-juice (or anti any food all the time). I just hope to provide some information to keep in mind when you’re making food choices. I personally love fresh pressed juice with beets, ginger, apple, carrots - yum! I do have smoothies much more often though, since those retain all nutritious parts of the fruits and veggies (and you can add fun things like cacao nibs for texture!). Most often I eat whole fruit - either on its own or sliced with different toppings... Peanut Butter Cookies are a PB-lover’s dream come true. Aka my dream come true. In case it was't obvious, I've been a *slight* bit obsessed with peanut butter recently, and these cookies just crossed all limits. So irresistibly good! I may or may not have eaten all 10 at once. They're super soft with a crispy edge, and so delicate that they literally melt in your mouth! There's no way I could stop at just 1 - or even 2! I also decided to dip them in a dark chocolate sauce; Makes them a little prettier and a lot more delicious coz chocolate. • • • • Info: Yield: 10 | Calories: 72 each | Prep: 5 min | Cook: 10 min Ingredients: ½ cup Rolled Oats or 3½ Tbsp Oat Flour 1 tsp Baking Powder ⅓ cup Peanut Butter ¾ tsp or 3 packets Stevia Sweetener (1½ Tbsp Sugar) 1 tsp Vanilla Extract 1 Tbsp Almond Milk/Water Sauce: 1 Tbsp Unsweetened Cocoa 2-3 Tbsp Water ⅓ tsp or 1½ packet Stevia Sweetener (= 2 tsp Sugar) Instructions: - Preheat oven to 350°F. - Pulse rolled oats in a food processor for 30 seconds to make oat flour. - In a small bowl, combine flour and baking powder and mix. - Cream peanut butter and sweetener in a large bowl. - Add vanilla and beat. - While beating, add dry mix 1 Tbsp at a time, until dough is crumbly. - Add almond milk/water and beat till uniform. Do not overmix. - Roll about ¾ Tbsp dough at a time into balls and place on parchment-lined baking sheet about 2” apart and flatten with a fork. - Bake for 10 minutes or until lightly golden. Watch closely since they burn quickly. - Let cool for 5 minutes removing from the pan (important so they can get firm). Galettes consist of a pie-like crust and fruit filling. After discovering the dessert, I made this gluten-free, dairy-free, vegan version. It tastes better and is easier to make than apple pie. Ingredients: Dough: - 1 1/4 cups gluten free all-purpose flour (I use @kingarthurflour) - 1 tablespoon sugar - 8 tablespoons dairy-free butter (I use @earthbalance) - 1 tablespoon lemon juice - 1/8–1/4 cup ice water - 1 tablespoon melted butter, for brushing - 1 tablespoon sugar, for sprinkling Filling: - 2 lb apples, peeled and thinly sliced - 1 1/2 tablespoons lemon juice - 1 teaspoon cinnamon - 2/3 cup sugar - 1 1/2 tablespoons dairy-free butter Recipe: 1. In a medium bowl, mix flour and sugar with a fork. 2. Add butter two tablespoons at a time and use fork to cut the mixture into pea-sized lumps. 3. Pour in lemon juice and mix into dough with fingers. Add 1/8 cup ice water and mix with hands. Add more water if the dough is too dry. 4. Form dough into a ball, cover with plastic wrap, and set in refrigerator for 30 minutes. 5. In a large pan over medium heat, combine the sliced apples, lemon juice, sugar, cinnamon, and butter. While stirring, cook mixture for 10-15 minutes or until apples are soft. Remove the pan from the heat. 6. Preheat oven to 425°F and line a baking sheet with parchment paper. 7. Lightly flour the baking sheet (or counter if preferred) and roll out the dough into a thin circle, around 1/8-inch. 8. Spoon the cooked apples into the center of the dough, leaving a 2-inch border on the edges. Fold edges over the apples. 9. Brush melted butter on the edges and sprinkle with sugar. 10. Bake for 25 minutes or until the crust is golden brown. 11. So zucchini is not exactly in season right now (at least not here in Ottawa!), but I saw a display of them at the grocery store the other day (I have no idea where they were from!) and it made me think of my chocolate zucchini muffins 😋⁠ .⁠ They're like cake...rich, chocolaty cake. 🍫 And if you're worried about picky eaters turning their noses up because there's zucchini in there, they'll have no idea, you can't taste it or see it. My mates are scattered around the globe and some are an hour or two away from my little home in Bali. @donnainbali ❤️ Most can't cook or can't be bothered cooking. . . Then there are a handful of mates (just a weeeee handful) that are EPIC cooks that I lean on, who have trusted taste buds. Who I seek their guidance and their care often who are able to share recipes without fear. Who have some truly delicious recipes that I get to experience. I am blessed to have been shared this recipe, (thank you Donna, my local foodterer) who whipped this eggplant jam glory at one of our put it together pizza nights. All hands in FUN!! We order giant cooked to go pizza bases and we do our own DIY toppings, which we all hand make and eggplant jam was one of many that night. Except this topping smacked me in the face with flavor. Those damn tasty pizza nights with a spin, ROCK our food worlds. Thank you How To Make Spicy Eggplant Jam . . 2 Long Eggplants, roughly chopped 1 Tomato, roughly chopped ¼ tsp Liquid Smoke 1 Garlic Clove, roughly chopped ½ tsp Chili Flakes, optional 1 Tbsp Balsamic Vinegar 3 Tbsp Coconut Sugar A pinch of Salt A pinch of Black Pepper Water, as needed Method Add all the ingredients to a pot and bring to the boil with the lid on. Cook for 5 minutes, remove the lid and simmer for 30-40 minutes or until the mixture starts getting the jam-like consistency and the liquid has evaporated. Allow to cool and then transfer to a jar.

Excited about this meal but even more excited about my new bowl. Gotta love a good thrift find 💃🏼 . . . Dinner: left over salmon with @traderjoes vegan kale cashew & basil pesto + cauliflower gnocchi. . . The ONLY way I have been successful with this gnocchi is baking it (which is not in the instructions if you get it). I set the oven to 425 and seasoned the gnocchi with avocado oil, garlic powder, Italian seasoning, salt & pepper. I let it sit in there for about 25-30 min- but check it and take it out when it is at your preferred crispness! ⚡️

Sundays are just simply better with pancakes! ... this batch is a new paleo pancake recipe I just tried out and gotta say, I’m pretty happy with it! Recipe below if you want to try it out! 🙌🥞❤️ . Dry ingredients: - 3/4 cup almond flour - 1/3 cup tapioca flour - 1/4 cup coconut flour - 1/2 tsp baking soda - 1/4 tsp salt Wet ingredients: - 4 large eggs - 1/4 cup almond milk (or your choice of plant based milk) - 1 tbsp maple syrup - 1 tsp vanilla extract Directions: 1. Whisk dry ingredients together 2. Whisk wet ingredients together and then mix in the dry ingredients 3. Heat a skillet sprayed with coconut oil over the stovetop and pour about a 1/4 cup of batter into the skillet. Working on expanding my baking portfolio and incorporating more alternative baking, starting with these Paleo Chocolate Chip Cookies! 🍪❤️ Check out the recipe below! . Ingredients (Yields ~30 cookies): - 3/4 cup creamy pure almond butter - 3 tbsp coconut cream - 1/2 cup pure maple syrup - 1/3 cup coconut sugar - 1 tsp vanilla extract - 1 large egg - 2 cups blanched almond flour - 1/2 tsp baking soda - 1/2 tsp sea salt - 1 cup paleo chocolate chips - 1/2 cup chopped walnuts . Instructions 1. Preheat oven to 350 degrees and line baking sheets with parchment paper 2. In a large bowl, mix together the almond butter, coconut cream, maple syrup, coconut sugar and vanilla on medium speed until creamy 4. Beat in the egg on low speed and then slowly add in the almond flour, baking soda and salt and mix until a sticky dough forms 6. Stir in the chocolate chips and walnuts 7. Refrigerate the cookie dough for 10 minutes, until slightly firmer 9. After chilling, scoop 1tbsp of the cookie dough onto prepared baking sheets 2” apart 10. Bake in the preheated oven for 10-12 minutes 11.
