healthy - simple - delicious: what I loved most about my lunch today! I threw together this quick salad with ingredients all from @traderjoes: cucumbers, grape tomatoes, blood orange slices, and roasted red pepper hummus on top of a bed of the “cruciferous crunch collection” which includes kale, brussel sprouts, broccoli, green cabbage, and red cabbage 🤤 this meal is also gluten-free! Real Talk - if you’ve been watching my stories since starting this account, you’ll see I’ve had a go at and failed making some vegan meals🤦🏼‍♀️ going gluten free and vegan seems like such a challenge except making salads of course. This is a delicious Almond Ricotta cheese. I can tell this is going to become an integral part of my experimental cooking. I had no idea when I threw it together this morning that it would give me a serious hankering for lasagne. But there it is. I guess I’m running to the store for lasagne noodles. Let me know what this creamy non-dairy ricotta conjures up for you. I want to take this cheese and run with it. Bring it on. Almond Ricotta (Makes two cups) 1 1/2 cups almonds (I used almonds with the skin on but it requires a serious high power blender to make them creamy. You could use blanched almonds and just forfeit a bit of flavor) Soak in 3-4 cups of warm water with 1 T Himalayan salt for 6-24 hours Drain and rinse in a colander. Toss into a high speed blender (Vitamix) and add: 2 T fresh lemon juice 1 t apple cider vinegar 1 1/2 t light colored miso (yellow or garbanzo) 1/4 cup unsweetened coconut milk yogurt (I used Cocoyo, which is hands down the best I’ve ever tried, by @gtskombucha) 4 T - 5 T unsweetened nut milk 1/2 t salt Blend on low increasing the speed over time. Use plunger to force mixture toward blade and scrape sides. Stop every so often to use a spatula to scrape sides. Add more milk if needed but it should be fairly thick. Blend on high speed until super smooth and creamy. You can serve immediately if you can’t wait or let the flavors come together by putting into a covered container and leaving on the counter for a couple of hours. Quinoa and vegetable stirfry This is a stir fry I like to make with a lot of protein. It also feels good to chew on a bunch of vegetables. I don’t know about anyone else, but when I get my vegetables in, the difference in my digestion and mood is night and day. They just make you feel good. 1 cup of quinoa 1/2 cup of garbanzo beans (chickpeas) 1/4 block of tempeh (thinly sliced) 1-2 cups of mixed vegetables (this time it’s carrots, celery, mushrooms, onions and garlic) For flavor I used soy sauce, teriyaki, and some sriracha. Recipe: Swede Mash / Rutabaga Mash (GF, V)⁣ ⁣ INGREDIENTS (3 - 4 side servings):⁣ 🥣 1 Swede/Rutabaga, approx. 2 lbs⁣ 🥣 1 tbsp extra virgin olive oil⁣ 🥣 1/2 cup raw cashews⁣ 🥣 4 garlic cloves, peeled (or 10 for extra-spicy)⁣ 🥣 3 tbsp lemon juice⁣ 🥣 1/2 - 3/4 cup filtered water⁣ 🥣 1/4 tsp kosher salt ⁣ 🥣 salt to taste⁣ ⁣ ❣Garlic is optional if you have a sensitivity to it - we turn this to cashew cream this way😉❣⁣ ⁣ INSTRUCTIONS:⁣ ⁣ 1. Wash/scrub the rutabaga, pat dry.⁣ ⁣ 2. Cut off the ends. Using a potato peeler, peel the skin off. Cut them into half inch cubes.⁣ ⁣ 3. Place rutabaga cubes into a large pot, fill it up with water (about 1n inch above the cubes) and bring it to the boil.⁣ ⁣ 4. Boil for about 1 hour or until the cubes mash easily with a fork.⁣ ⁣ 5. Let's make garlic aioli. Put cashews, garlic cloves, lemon juice, water, olive oil, and 1/4 tsp kosher salt into a blender. Blend it until smooth.⁣ ⁣ Note: if you are using a large blender like a Vitamix, this volume may be too small to blend well. In this case, just add in 1/2 cup of the rutabaga cubes that's being cooked, and add a tbsp of water at a time until the blender is able to blend it until smooth.⁣ ⁣ 6. Pour the garlic aioli into a bowl and set aside.⁣ ⁣ 7. When the rutabagas are mashable, pour our any excess water. Mash it with a potato masher or a stick blender. I used a fork 🤣.⁣ ⁣ 8. Add in 2 tbsp of the garlic aioli at a time and mix it well incorporated. Repeat this step. Stop at your desired consistency and taste. Add salt to taste.⁣ ⁣ 9. What else? Why an ancient Roman dish. Minestrone is a Roman dish, invented by the Romans and specifically the Roman army. We know it existed and was not only widely used as a staple of the Roman army as early as the 2nd century BC(before Christ), but as Ancient Rome conquered the Western sphere, their armies spread the minestrone dish everywhere- Minestra is ‘soup’ and the ‘strone’ part refers to the large augmentative version of ‘soup’ combined with ‘amministrare/ or ministrare’ to administer or minister/ to serve- therefore it translates ‘soup to be served.’ Minestrone was not just a Roman army invention but it was always a vegan dish. The Roman army could not travel with meats, or meat broths etc- so it was always cooked with a base of water, and whatever veggies were available along the way- they literally threw in any available vegetable that was around and cooked it in quantity- it served as a hearty meal, a warm meal for the troops. It was not until many centuries later, when minestrone began to be cooked, not out of necessity but as a luxury form of cooking, did certain cities and peoples in the Roman Empire start cooking it with meat broths or with beans and/or pasta. But that is not the traditional original minestrone- traditional minestrone, the one served by the Ancient Roman army, is a simple vegan dish- veggie broth, and whatever veggies you have at the moment- no oil, and the bare spices like thyme, basil/oregano/salt/garlic/and a pinch of peppers. Butter tarts have been a favorite treat for the holidays since I can remember. I remember helping my mom cut the dough but really munching on the pecans. Her crust was the best! Trying to match it has always been a challenge. Now that I'm gluten free I've had even more of a challenge master the crust. So today I'm tackling a new gluten free vegan recipe after several trial and flops. I making the crust now and keeping very cold and heading down to mom's to finish the baking with her. For now sharing the recipe I've created: INGREDIENTS 3/4 cup white rice flour 1/2 cup each sorghum flour and tapioca starch 1/2 c. (1 stick) nondairy butter, cut into 1/2" pieces 1 tbsp. granulated sugar 1/4 tsp. baking powder 1/4 tsp. kosher salt 1/4 cup vegan buttermilk ( 1/4 c unsweetened coconut milk with 1/2 teaspoon apple cider vinegar DIRECTIONS Keep you non dairy butter very cold. In a large food processor, pulse flour, sugar, baking powder, and salt until combined. Add butter and pulse until pea-sized and some slightly larger pieces form. With the machine running add non dairy buttermilk until dough starts to come together. Mine formed a ball Turn dough onto a lightly floured surface, form into a ball, and flatten into a disk (making sure there are no/minimal cracks). The easiest and tastiest rocky road you’ll ever make. All ingredients from @thegreenedge (except almonds). I haven’t added quantities to the filling, I just used the whole bag for each (except marshmallows). Put as much as you want it for all! I just didn’t want leftovers. I made this to give away as thank you gifts so ♻️ TIP ♻️ if you too want to gift it and use baking paper, use it as wrapping paper! You could even use old jars 🎁 . ⚠️ WARNING ⚠️ this is very sweet and delicious! So... while I made it for other people, Dan and I ended up eating a lot of it too 🤣 . ROCKY ROAD . 300-400g vegan chocolate Vegan honeycomb Vegan marshmallows Vegan lollies Almonds . METHOD . 1. Line a 20x20cm tray with baking paper or use a silicone baking mat. 2. Melt chocolate on low heat, stirring regularly. I used @sweetwilliamchocolate 3. Chop almonds and honeycomb (I used the end of the knife while they were still in the bag) and add to a bowl with marshmallows and lollies. 4. Once chocolate is melted. Add to bowl with other ingredients. Stir well until all covered in chocolate. 5. Pour into lined baking tray and use a spoon or spatula to spread relatively evenly. 6. Put in the fridge to set for about an hour. 7. FUDGEY BROWNIES 🍫🥜🍌 . 4 overripe bananas (around 2 cups mashed) 1 cup smooth nut butter (I use organic peanut) 1/2 cup @arbonneaunz Chocolate protein powder 1/4 cup Organic cacao powder . Pre-heat oven to 180°C . Line a baking dish with baking paper . Mash bananas in a large bowl, then add nut butter, protein & cacao and stir well to combine . Pour batter into baking dish & spread evenly . Bake for around 40 minutes depending on oven and thickness of brownie - check after 20 minutes . Allow to cool before cutting into bite sized pieces & store in the fridge - if you can resist gobbling it all up when it’s still warm! . Healthy tasty appetizer idea - swap your bread base with sweet potato planks! Top with #sofrito a pile of #kraut and #fermentedjalapenos. I shallow fried thinly sliced sweet potatoes in coconut oil in a cast iron skillet. Don’t forget to salt and pepper both sides. I've been slowly working my way through all the processed food that I bought before I started trying to eat wfpb, so tonight I made these sausage rolls with the gluten free puff pastry that I've had in the freezer so long I don't remember when I bought it. I've finally had the time to cook different things again and I realised how much I missed pumpkin!! Tonight I'm having a pumpkin (and cashew) sauce on my pasta with spinach and red capsicum. NEW RECIPE BELOW ⬇️ ⠀ ➡️ Introducing a Gluten Free and Vegan Pasta Salad that is 100%: *️⃣ simple to make *️⃣ yummy for all *️⃣ a guaranteed hit for any upcoming holiday gatherings ⠀ Utensils You’ll Need: 🔹 a large mixing bowl 🔹 a rubber spatula or wooden spoon to mix 🔹 a cutting board 🔹 a knife for cutting/slicing/dicing 🔹 measuring utensils; 1 C, 1/2 C, 1/4 C ⠀ Recipe: 1) Wash all veggies (broccoli, cherry tomatoes, cauliflower, and red pepper). 2) Cook @jovialfoods farfelle pasta as directed on packaging 3) While the pasta is cooking, be sure to slice/dice/chop all veggies and put into a the large mixing bowl. I made each veggie serving size equal 1.5 C. 4) Once the pasta is done cooking and strained, put pasta into the large mixing bowl with the veggies. 5) Take 1/4 C of @chosenfoods lemon garlic avocado oil dressing and mix it into the pasta and veggies 6) Cover the bowl with the pasta salad and put into fridge until you’re ready to serve! When you’re ready to serve, give the pasta a quick toss to remix the dressing as it more than likely settled at the bottom of the bowl while in fridge! ⠀ This is a very easy dish to bring to any holiday party! It’s something you can whip together last minute and feel confident that you’ll have something safe for you to eat and for others to surely enjoy! ❤️

Tasty Tuesday ✨| Day 10 #CalmDecember Delicious, healthy, sweet treats - who's in? These delicious RAW FERRERO CHEESECAKE CUBES thanks to @thekindnessechoes 😍lovingly made & enjoyed! Equipment: > Silicon Cube tray or an icecube tray. > Blender > Oven (for the hazelnuts) > Freezer CHEESECAKE INGREDIENTS: > 1 cup of soaked cashews (4-6hours soaked) > 2 heaped tablespoons of coconut oil > 2 tablespoons of hazelnut butter or 1/4 cup of hazelnuts (heat in the oven for 10 mins & remove the skin) > 1/2 cup of cacao > 1 cup of coconut cream (use most of the solidified cream) > 1/4 maple syrup (or rice syrup) CHOCOLATE INGREDIENTS: > 2 cups vegan choc melted (Loving Earth or Pana are best) > 1/4 of crushed hazelnuts (remove the skin) METHOD: > Blend all of the cheesecake ingredients and pour them into the cube moulds > Freeze (overnight is best) > Remove them from the mould & place a skewer in the middle. > Dip into melted chocolate & hazelnut mixture. > Freeze again for 5 minutes. > Remove the skewer. > Decorate over the skewer with edible flowers > ENJOY! #mindfulliving #tastytuesday #plantbased

QUICK OAT COOKIES (4 cookies) - 1 cup quick oats (or thin rolled oats) - 1 cup dates (if using medjool, soak for 5 minutes in hot water and then drain) - 3 tbsp peanut butter (unsweetened) - About 30g vegan dark chocolate HOW 1. Preheat the oven to 180C/350F 2. Add the dates, oats and peanut butter to a bowl and combine by mashing with your hands (or do this in a food processor until combined) 3. Roll the dough into 4 equal balls, place them on an oven tray lined with parchment paper 4. Use your hands to make the balls flat and form into cookies. Crush the chocolate into smaller pieces and carefully press them into the cookies 5. Now bake the cookies for about 8-10 minutes until lightly browned 6. When the cookies are baked, let them rest and cool down before enjoying them! . Stewed beans & rice #simplydelicious Stewed garbanzo beans: (made by my hubby, because he makes them so damn good) 1 cup diced onion 2-3 cloves garlic, minced 1 tsp black pepper 1/4 tsp cumin 1/2 tsp oregano Approximately 1 tsp of salt 1 tsp aji panca purée (this is a Peruvian chili. We buy them dried, rehydrate & purée. This is not an essential ingredient, but adds a delicious flavor. Chipotle paste or another chili you prefer would be a suitable substitute. Milder chilis recommended) 1 tbsp tomato paste 1 pound garbanzo beans, presoaked Over low flame, sauté onions until translucent in 2 tbsp avocado oil Add garlic & spices, sauté one minute Add tomato paste & aji panca Mix well Add beans and toss with mixture, cook for a minute Add water to cover beans 1 inch Bring to simmer, cover & simmer 45 minutes, stirring occasionally #imadetherice 😜 #eatrealfood #riceandbeans

Everything but the Bagel Sesame Cucumber Chips 🤤 ⠀ I’m back and with a very simple yet yummy recipe 😍. Huge shout out to @kelseylynn_lifts for introducing me to this snack, which I tweaked very minor things to. ⠀ What you’ll need: 🥑 Avocado Oil 🥒 Cucumbers (I used the entire back of cucumbers you see in this picture) 🥯 @traderjoes ‘s everything but the bagel sesame seasoning blend 🔪 cutting knife and board 🥄 TBSP and Cup measuring tool 🥣 a medium sized mixing bowl ⠀ Recipe ⬇️: ▫️ Wash cucumbers then slice them to your preferred size. ▫️ Put cucumbers into a medium sized mixing bowl. ▫️ Pour a TBSP of avocado oil onto cucumbers and mix. ▫️ Pour a TBSP of the Everything but the Bagel Sesame Seasoning into the bowl and mix! ▫️ Enjoy! ⠀ I typically make these ahead of time then store in glass Tupperware and in the fridge — these help give them that a nice crisp ❄️. My typical serving size is 1 C of sliced cucumbers then the same portion of avocado oil and seasoning as stated in the recipe.

Добрый вечер!! Ну что , уже Декабрь, а значит пора запасаться Рождественскими Рецептами Кексов ! Любите Xурму?? Я- очень люблю!! Сегодня Печем Кекс с Хурмой, без сахара, яиц, молочных продуктов , с цельнозeрновoй мукой. ※※※※※※※※※※※※※※※※※※※※※※※ РЕЦЕПТ: Берем 2 спелыe, крупные Хурмы- [ прочитала, что можно положить хурму в пакет с яблоком, на один день, чтобы фрукты поспели], у меня была шикарная Хурма сразу!! Пробиваем блендером, без косточек и шкурки. Добавляем в пюре 1/2 стакана сиропа топинамбура/ агавы, , 1ст.л. лимонного сока, 2 ст,ложки оливкового масла, отдельно смешиваем сухие ингредиенты 2 стакана цельнозерновой муки [ я смешала молотый миндаль, рисовую, кукурузную, овсяную муку с маркировкой без глютена] 216 грамм получилось, добавила 1 ч.л соды, 1 ч.л. разрыхлителя, 1/2 ч.л. розовой соли, 1/2 ч.л. молотого имбиря, можно добавить корицы или мускатного ореха [не дружу с мускатным орехом совсем. Когда-то купили на Черном море и я ,с дуру баxнула в горячее от души, с тех пор вкус и запах не переношу, к сожалению], поэтому у меня- корица на кончике ножа. Выливаем влажные ингредиенты в суxие, максимально!!! быстро!! перемешиваем , затем добавляем по желанию рубленные орехи- любые грецкие, пекан , сухофрукты : клюква вяленная, изюм, цукаты - все вместе не более 1/2 стакана. Я заливаю сухофрукты горячим сиропом, можно ягодным , настаиваю несколько часов/ дней, затем на сито, чтоб стекла жидкость и тщательно обваливаю в крахмале : кукурузном/картофельном . Выкладываем в форму для кнксов, смазанную маслом, присыпанную мукой, выпекаем в заранее разогретой духовке до 18ОС 4О-5О минут, до сухой зубочистки, можно испечь в форме для мафинов/ капкейков, тогда время сокращается до 25/ 3O минут. 1О минут охлаждаем, затем достаем из формы. Остужаем, если есть терпение- заверните в пакет до утра!!! Кекс будет просто Чудесным, с Карамельным, Медовым Вкусом- Да, Да, Хурма придаёт выпечке вкус Карамели и такой же красивый карамельный цвет. При желании можно взять пюре из 1 хурмы и 1 яблока/ груши, можно взять хурма/ банан , не бойтесь экспериментировать!! ※※※※※※※※※※※※※※※※※※※※※※※※※※ Украшаем по Желанию , читаем в комментариях!!

Recipe-Brownie 2 Tbsp flax seeds, ground 90 mL water 1 cup buckwheat flour 3/4 cup cacao powder 1/2 tsp good-quality salt 2 tsp baking powder 1 cup coconut sugar 1/2 cup black tahini 1/2 cup coconut oil, melted 1 cup + 1 Tbsp almond milk 100g vegan dark chocolate, chopped ⠀⠀ Method ⠀⠀ 1. Preheat oven to 180 degrees C. Line a 20cm square brownie tin, set aside. 2. Make flax eggs by combining flax with water. Mix well, and set aside for 10 mins to thicken. Melt chocolate and coconut oil in a heat proof bowl, over a pot of simmering water. Once melted, remove from heat and set aside. 3. Mix all dry ingredients in a mixing bowl. 4. Add flax eggs, sugar and milk to the dry mix bowl, and combine until it just comes together. Add melted chocolate, then gently fold through, until uniform. Transfer to the baking tin and bake for 28-32 mins (I do 30). Allow to cool partially in tin, then turn onto a cooling rack to cool completely. . ⠀⠀ Matcha Frosting 1 cup cashews, soaked 4 hours 1/4 cup maple syrup 1/4 cup coconut oil, melted 1 1/2 Tbsp matcha latte powder . . 1. Mix everything in a bowl until uniform. Place cooled brownie back in tin, then put frosting on top. Bang on the bench to smooth, then set in the fridge. Once frosting is turned up, cut into desired servings, and store in an air-right container in the fridge. . **this brownie is better on day 2, after resting in the fridge. Breakfast: Vanilla Creme Chia Pudding with Persimmon ❤⁣ (GF, V)⁣⁣ ⁣ ⁣⁣⁣ RECIPE👇👇⁣⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣⁣⁣⁣ Ingredients (1 serving):⁣⁣⁣⁣⁣⁣⁣⁣⁣ 🥄3 tbsp whole chia seeds⁣⁣⁣⁣⁣⁣⁣⁣⁣ 🥄1 cup unsweetened non-dairy milk⁣⁣ (I used Cashew Mylk)⁣⁣⁣⁣ 🥄1 tsp vanilla extract⁣⁣⁣⁣⁣⁣⁣⁣⁣ 🥄1 Fuyu Persimmon, peeled & cubed or sliced⁣ 🥄 Optional: Raw Honey or Maple Syrup (if Vegan)⁣ ⁣ INSTRUCTIONS:⁣⁣⁣⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣⁣⁣⁣ (the night before)⁣⁣⁣⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣⁣⁣⁣ 1. Vegan Coconut Curry on rice Just made this and it is delicious. Ingredients: 3 cloves garlic 1 onion 24oz can crushed tomatoes 16 oz extra firm tofu 14 oz can coconut milk 1 carrot 1 large sweet potato Chili powder, cumin, coriander, turmeric, black pepper, curry powder Broth/water as needed Serve over rice or mix with red lentils for more protein. Holiday Mashed Potatoes with Celeriac and Parsnips Serves 4-6 4 large potatoes (I’ve used Yukon Golds here but Russets work great for a fluffier mash) 2 parsnips 2 celeriac bulbs Peel parsnips with a vegetable peeler and celeriac with a knife. I leave the skins on my potatoes but you can peel them for a prettier end result. Quarter the potatoes and celeriac and cut parsnip into large chunks. Steam for 25 minutes until tender. Drain water from steamer and dump the veggies into the pot part of your steamer. Add: 1/4 cup Miyoko’s cultured vegan butter @miyokoscreamery (or other butter substitute) Warmed alternative milk (sugar-free and vanilla-free). I’ve used flax milk - start with a 1/4 cup Salt and pepper to taste - don’t skimp on the salt. Make sure the flavor is nicely salted without tasting ‘salty’ Blend with a hand mixed or masher. Add more milk until desired consistency is achieved. If you are using a potato that is not a russet, do not over-mix or your mash with become gluey. Russets don’t get gluey so they are a nice potato choice. Transfer to a pretty bowl and garnish with a pad of butter. I needed an excuse to buy an immersion blender 🤷🏻‍♀️, so I attempted @the_reed_feed_ ‘s Creamy Butternut Squash Soup! Plus, it’s starting to cool down in the Sunshine State ☀️ and a bowl of hot soup sounded amazing 🤩! ⠀ Utensils You’ll Need 🍴: • A cutting board • An apple slicer with an apple corer • A cutting knife • A medium skillet • A wooden spoon • A crockpot • An immersion blender • Measuring Utensils (1 C, 1 TBSP, 3/4 C, and 1/4 TSP). ⠀ Ingredients 🍲: • 1 Medium diced onion • 1 TBSP minced garlic • 1 TBSP olive oil • 1 L peeled, seeded, and diced butternut squash • 1 peeled, cored, and diced apple • 2 C vegetable broth • 1 TSP salt • 1/4 TSP black pepper • 1 TBSP chili powder • 3/4 C unsweetened coconut milk ⠀ Recipe 👩🏻‍🍳: 1. In your medium skillet, sauté the onion and minced garlic in the olive oil over medium heat. When the onions are soft, add this to the crockpot. 2. While the onion and minced garlic are sautéing, peel / core / slice the apple and prepare yourself for the challenge of peeling / dicing the butternut squash. 3. Add the apple, squash, vegetable broth, and seasoning into the crockpot. 4. Cook on high for 4 hours (I stirred the mixture every hour). 5. Mix in the coconut milk. 6. Blend with an immersion blender until the mixture is smooth (adding more coconut milk as needed - I ended up using the entire can of coconut milk). 7. Enjoy! I added @udisglutenfree dinner rolls as my side with the soup! I didn’t add anything on top of the soup as the spices used to make it were flavorful enough 🤤. ⠀ The longer version of the recipe with more pictures and commentary will be up on the blog 👩🏻‍💻 by Friday, November 22!

"What do you eat for lunch?" I've been asked a number of times lately by people who are either transitioning to gluten-free plant-based eating or who simply marvel at how someone could sustain themselves as a gluten-free vegan. Well, here's a pretty darn standard example of what I eat for lunch. A @bfreefoods Quinoa and Chia Seed wrap stuffed with half an avocado I smashed onto the tortilla with the side of my knife ('cause laziness 😆) and dusted with salt and pepper, a baby lettuce mix, sliced red onion, halved cherry tomatoes, and strips of @eathempeh that I roasted earlier in the week with some garlic powder and smoked paprika. I had some raw broccoli that was about to turn, so I had some broccoli and hummus on the side. Loads of protein (namely from: quinoa, chia seeds, avocado, hempeh, broccoli, and hummus) and lots of fresh veggies. Yum! Making your own pesto is surprisingly easy and so tasty. This recipe is gluten free, dairy free and Vegan and does not contain cashew nuts. It’s great to batch make and store in small portions in the freezer for when required. This is a great recipe for elimination diets too and love this in my quinoa and broccoli bake. To make take 2 bunches of fresh basil, Juice of 1 lemon, 3 garlic cloves, 1 good pinch of sea salt, 1 good gulg of olive oil, 3 tbsp of pine nuts and pop them into a blender or nutribullet. Blitz them together and taste and adjust where necessary. My love of the humble spud 🥔 is well documented. I’ve loved them for as long as I can remember. They’re my first go-to for comfort food, a low-budget meal, and a satisfying breakfast. Potatoes offer nutrients like vitamin C, fibre, and potassium- and are a complex carbohydrates that offers slow-burning and long lasting energy (when eaten whole). —— Tonight’s dinner was simple. Baked potatoes topped with mushrooms, zucchini, and onions- stewed in a veggie broth. There’s not much to it- but it was a perfect meal for this cool wintery night. Here’s my recipe: 1 whole zucchini, chopped 2 cups mushrooms, sliced 1 small white onion, chopped 1 cup Veggie broth 1 tbsp brown rice flour Baked potatoes Salt+pepper to taste Combine zucchini, mushrooms, onions and broth in a stovetop pan. Add veggie broth. Cook over medium heat for 10 mins or until vegetables are soft. Uncover and add brown rice flour- stirring well to make sure no clumps form. Turn heat to med-high and cook another 10 mins uncovered- stirring frequently. Remove from heat and let cool. Season with salt and pepper as desired. Serve over baked potatoes. FREE RECIPE: Healthy Chocolate Doughnuts. Gluten free and vegetarian! Ingredients 2 bars Well Naturally No Sugar Added Rich Dark Chocolate, chopped into small pieces 1 Cup Buckwheat Flour (or GF Flour) 2 tbsp. of Cocoa Powder, sifted ⅓ Cup sugar 1 egg at room temperature ½ cup of milk of your choice 3 tbsp olive oil 1 tsp of vanilla extract ½ tsp baking powder ¼ tsp baking soda ¼ tsp of salt Instructions 1. Preheat oven to 165 degrees celsius. Grease the donut pan and set aside. 2. In a bowl, whisk the egg, milk, vanilla extract and oil together. 3. Add in the dry ingredients (except chocolate chips) and stir until combined then Fold in the chocolate chips. 4. Spoon the batter into the donut tin, being careful to not overfill the moulds. 5. Bake for 14-16 minutes until a skewer comes out clean. 6. Let them cool in the pan for few minutes before transferring to a wire rack to cool completely. Breakfast: Easy & Fast Rolled Buckwheat Porridge Blueberries (GF, V)⁣ ⁣ Here is a healthy, fast gluten free vegan porridge recipe especially for those who are sensitive to oat meal. ⁣ ⁣ Buckwheat is NOT a wheat and is gluten-free. Additionally a great source of protein, fibre and antioxidants (esp. Flavanoids such as Quercetin - which is a natural antihistamine).⁣ ⁣ What I love about rolled 100% buckwheat flakes is it cooks really fast - 5 mins and tastes almost the same as oatmeal except with more benefits. You can easily get them at health food stores or amazon, or if you are just trying them out, get what you need at a bulk food store such as Bulk Barn.⁣ ⁣ Try this out and let us know how you like it❤⁣ ⁣ BUCKWHEAT FLAKES PORRIDGE RECIPE👇⁣ ⁣ INGREDIENTS (1 serving):⁣ 🥣1/3 cup rolled 100% buckwheat flakes⁣ 🥣1 cup boiling water⁣ 🥣2/3 cup unsweetened non dairy milk (I used cashew milk)⁣ 🥣2/3 cup boiling water⁣ 🥣1 tbsp maple syrup *optional*⁣ 🥣Blueberries (frozen or fresh) as toppings⁣ ⁣ INSTRUCTIONS:⁣ ⁣ 1. Когда Предыдущий Грушево-Ореховый Тортик был в проекте , наткнулась на РЕЦЕПТЫ Запеченной Груши - так что ловите вкусные, полезные, и в то же время простые Рецепты, которые надеюсь понравятся и взрослым и деткам, естественно с откорректированными ингредиентами!! ※※※※※※※※※※※※※※※※※※※※※※※※※※※ 1. Духовку включаем на 180С, 2-3 груши моем , разрезаем на пополам, вырезаем серединку с косточками ( можно очистить от кожицы, при желании- не обязательно!), выкладываем в форму для запекания , а дальше сплошная импровизация!! Можно смолоть любые орешки( у меня грецкие, пекан) подойдут к груше и кедровые и даже тыквенные семечки, полить и смешать молотые орехи с сиропом топинамбура ( или другим сиропом , мёдом- кто ест), выложить приготовленную начинку в углублении в груше, немного полить сиропом сверху и поставить запекать на 20- 25 минут. ※※※※※※※※※※※※※※※※※※※※※※※※※※※※ 2.У меня есть Веган сыр Violaif с клюквой , я всё никак не знала куда его использовать, и вот, Пожалуйста- идея! Просто размять Сыр вилкой, смешать с небольшим количеством сиропа Топинамбура, выложить в грушу, сверху можно добавить клюквы, при желании сверху полить сиропом- запекать , так же по времени минут 20-25, можно снизить затем температуру до 100- 120С и дать потомиться грушам дополнительно, главное, чтоб карамель не начала гореть- приглядывайте!! Можно также присыпать немного молотыми орешками перед или после выпечки! ※※※※※※※※※※※※※※※※※※※※※※※※※※※※ 3. Кто ест молочное творог, сыр- можно приготовить начинку с творогом смешаннным с сиропом или взять сыр Дор блю, камамбер, горгонзолу, также размять с творогом и перемешать с сиропом , выложить в грушу и опять же посыпать молотыми орешками или даже семечками до или после приготовления! ※※※※※※※※※※※※※※※※※※※※※※※※※※※※※ Любите сухофрукты- возьмите их!! ( чернослив, курагу) - мелко рубим и смешиваем с орехами, наверняка можно использовать Финики- и приготовить запеченную Грушу с финиками и орешками - вообще без сиропа! Будет достаточно природной сладости фиников! - Вроде бы ВСЁ!! Вкусно??? - Очень !! Просто и быстро??- Очень!! Полезно?? - КОНЕЧНО!! Калорийно??- да, но точно Полезней и Витаминней, чем булочка или покупное магазинное печенье. Можно добавить

I was really disappointed in my dinner tonight (which RARELY happens), so instead I'm posting a picture of this pizza I made a bit ago that I want in my mouth and on my tongue and in my tummy right now please.
