Is there something better than vegan curry‘s? If so, tell me :)👇 Ingredients for 6 servings 1x onion 400g chickpeas 400g tofu 1x paprika 3x carrots 400ml less fat coconut cream 1x zucchini 2 tbsp red curry paste 1 tbsp coriander seeds 1 tbsp cardamom 2 tbsp peanut butter 1 tsp salt and pepper 500g brown rice How to Cut vegetables as you like. I prefer julienne method for curry’s. Cut tofu in 1 cm cubes. Bake in a pan with some water. Add onion and stir 2-3 min. Add red curry paste, coriander seeds and cardamom. Fry 5 min. Use the time to prepare sauce. Heat up a medium pot together with coconut milk and peanut butter. Mix until you get a creamy sauce Add vegetable to the pan and stir 5 min. Add chickpeas and allow to chill 2-3 min. Once everything done. Serve rice and curry with the sauce and add fresh coriander and optional soy yoghurt if you like. Little Millet Bowl for Breakfast 🌞 Millet is one of the things I had for the first time after going vegan! Too bad I haven`t discovered it earlier, because I really like it, especially for breakfast. You can call millet healthy, because it contains a lot of good ingredients: iron, zinc, magnesium, fluorine, silicon, protein, vitamins B1, B3, B5, B6, beta carotene. Furthermore millet is really filling and gluten free, too. Especially for vegetarians and vegans it`s a good source for protein and iron. I cooked the millet with oatmilk and added some hemp seeds, blueberries, fresh mango and goji berries. 💜😋 . . Kleines Hirsefrühstück🌞 Hirse gehört mit zu den Dingen, die ich erst das erste Mal probiert habe, nachdem ich vegan geworden bin. Schade, dass ich sie nicht schon früher entdeckt habe, denn ich mag sie echt gerne, besonders zum Frühstück! Man kann Hirse guten Gewissens als gesund bezeichnen, denn sie enthält viele gute Dinge: Eisen, Zink, Magnesium, Fluor, Silizium, Eiweiß, die Vitamine B1, B3, B5, B6, Betacarotin. Ausserdem ist Hirse sehr gut sättigend und auch glutenfrei. Besonders für Vegetarier und Veganer ist sie eine super Protein- und Eisenquelle. Green Chili with Lime Quinoa + Sweet poato + black beans by @plantbased.traveler. . INGREDIENTS: • 3-4 Hatch chiles (or poblano/bell peppers). • 1 large sweet potato. • 1 cup black beans. • 1 small onion. • 1 garlic clove. • 1/2 cup salsa verde. • 1 + cup veggie broth. • Fresh cilantro. • Salt and pepper. • ½ Avocado. • 1 cup Cooked quinoa. • Lime juice . INSTRUCTIONS: 1. Wash and seed chiles (or peppers), peel sweet potato and cut into even small pieces. Finely dice garlic and onion. 2. Add onion, garlic and hatch chiles to a pan and fry with a bit of veggie broth until everything is starting to brown. Add sweet potatoes and more broth and continue cooking until potatoes are soft. 3. When sweet potatoes are almost done, add black beans and salsa verde and season with extra salt and pepper to taste. 4. Serve with cooked quinoa, fresh avocado and cilantro. . Vegan 🌱| Gluten Free| Dairy Free . Raise your hand 🙋🏻‍♀️ if you’ve been spring cleaning like me. With spare time in my hands, I thought I should declutter the pantry. . My favorite part about this tedious task is finding things you don’t remember buying🤦🏻‍♀️. . Like three packets of matcha powder 🍵? . So I decided to whip up a scrumptious dessert instead of letting it go to waste. . What’s inside this tasty tart? . This tart is my ode to spring💐and its lovely colors. I made it with an earthy nutty crust that encompasses the silky smooth matcha 🍵 mousse. . The green center is topped with fresh fruits 🍇and edible flowers🌼 to celebrate the season. . Ingredients: Crust • 16 dates, pitted • 2cups GF rolled oat • 1 cup almond flour • 4 tbsp. cacao powder • 2 tbsp. coconut oil Filling: • 2 cups cashew, soaked • 1/2 cup pure maple syrup • ¼ cup coconut oil • 1/2 cup full fat coconut milk • 1 tbsp matcha powder @cakeup24 Method 1. Take an 8” tart tin with a removable bottom and grease it with coconut oil. 2. Chuck all the crust ingredients in a food processor. Then pulse them until the mixture feels like wet sand. 3. Press the crust firmly into the bottom and sides of the greased tart tin. Pop it in the freezer to set. 4. Add all of the filling ingredients in the food processor. Blend for 2 mins, or until the mixture is silky smooth and creamy. 5. Scrape down the sides if required. You can add some more coconut milk if your mousse filling isn’t smooth. 6. Once done, pour the mousse onto the crust. Spread it with the back of a spoon and smooth out the top. 7. Tap the pan against the counter to release air bubbles. (3x) 8. Pop it in the fridge to set. Asian inspired chickpea and quinoa bowl. Quinoa topped with chickpeas tossed in sesame oil, soy sauce, red curry paste and sesame seeds, with blistered shishito peppers, cucumber, eggplant, carrots and onion I cooked the quinoa with touch of rice vinegar and salt. To make chickpeas , I tossed 1 can of chickpeas (drained) with 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1/2 tsp of red curry paste. Zanim zdradzę Ci sekret idealnej, chrupiącej granoli, przyznam otwarcie, że NIENAWIDZĘ słodkich śniadań, a mimo to każdy dzień staram się rozpoczynać miseczką granoli. O czym to świadczy? Albo o mojej wielkiej determinacji albo ponadprzeciętnych właściwościach mojego musli. Biorąc pod uwagę obecną aurę - skłaniam się ku opcji nr 2 :) . A tak serio, to lubię granolę, bo dzięki niej mam z głowy jakąś tam porcję pełnych ziaren, orzechów, pestek i ostatnio także owoców jagodowych. No i jak przyjemnie chrupie...🤓 Do miseczki dodaję też łyżkę mieszkanki liofilizowanych malin, porzeczek, jeżyn i wiśni. Całość zalewam mlekiem sojowym. Ale możecie też każdym innym, ja po prostu za krowim nie przepadam. . Sekret chrupiącej granoli? Kiedy się upiecze - poleć kilkoma łyżkami płynnego miodu lub syropu klonowego i zostawić do ostygnięcia w uchylonym piekarniku. Dzięki temu zrobią się charakterystyczne pozlepiane orzechowo-owsiane kęsy. . Pewnie zauważyliście, że ostatnio więcej tu kulinariów niż less waste. Okazuje się, że to ta dziedzina, o której rozmyślam najwiecej, czytam i uczę się najchętniej, o której mówię z największym zaangażowaniem. Co myślicie o tym, żebym pisała o tym na swoim blogu?
