Mexican “Tamales” —— . Hola lindo y #healthy #lunes 🙌🏻 Como cada año les comparto la receta de tamales veganos para el día de la candelaria 😉 Ingredientes para la base de tamales: 1 kilo de masa para tamales (maíz) 2 tazas de aceite de coco Tip de la abuela: 2 tazas de agua de cáscara de tomate y anís (poner a hervir aproximadamente 6 o 8 cascaras de tomate verde con anís, deja enfriar el agua y reserva) 1 cucharada de polvo para hornear Hojas de maíz (remojadas previamente) Tip de la abuela:1 pizca de bicarbonato Para los tamales salados necesitamos: Sal de mar recién molida Champiñones en trocitos Calabacitas en trocitos Chícharos cocidos Salsa de jitomate Para los tamales dulces necesitamos: Stevia al gusto Nuez en trocitos (remojada aproximadamente 2 horas) 1/2 taza de mantequilla de almendras Cacao en polvo (aprox de 5 a 6 cucharadas) 1 1/2 cucharada de Matcha 1/4 de taza de chispas de chocolate 80% Cacao Procedimiento: Unir la harina para tamal con el agua de tomate, el aceite de coco, el polvo para hornear y el bicarbonato, mezclar bien hasta obtener una mezcla homogénea. Separar la mezcla en dos partes, una será para los tamales salados, a la cual agregaremos la sal en grano al gusto y mezclamos hasta que quede bien integrada. Una vez con la masa lista se procede a llenar una hoja de maíz (lado brilloso) con un poco de la misma (3 cucharadas aproximadamente), se agregan los champiñones, las calabacitas, los chícharos y la salsa de jitomate y se cierra formando el tamal, reserva. A la otra parte de la mezcla vamos a agregar la Stevia al gusto, mezclamos hasta incorporar perfectamente y volvemos a dividir la mezcla dulce en 2 a una parte le vamos a agregar 6 cucharadas de Cacao y mezclamos nuevamente hasta incorporar. La mezcla que tenemos sin Cacao le vamos a agregar el Matcha y vamos a rellenar con las chispas de chocolate, formamos los tamales y reservamos. La mezcla de chocolate la vamos a mezclar con la nuez y a rellenar con la mantequilla, se forman los tamales y reservamos. Coloca todos los tamales en una vaporera y déjalos cocinar por una hora y media. Recuerda que el relleno puede ser de lo que quieras el limite es tu imaginación!!!

banana pancakes • My dad instilled in me a love for all the breakfast foods. He would get up early and either walk down the hill to buy us the best tamales ever or he would whip up some pancakes, French toast, or waffles. I definitely can’t pick a favorite from those 3 but in my married years I’ve definitely played around with pancakes the most. We enjoy a variety of different kinds from healthy to not so healthy 😬 but since this is my “healthy” account I’ll share my super easy healthy recipe with you! This recipe is quick, packed with great stuff, and yummy!
