🍝🍅 Roasted vegetable pasta with zucchini, eggplants, red bell peppers and tomatoes by @lea.bowls.your.mind Follow us @vegadishes for daily vegan recipes Ingredients For 500g spaghetti Oven baked vegetables 1 small eggplant, diced 1 zucchini, diced 1 red pepper, diced 2 hands full of vine tomatoes 3-4 tbsp oil Salt, pepper, paprika sweet, dried rosemary, parsley, thyme, oregano and a pinch of cinnamon For the sauce 1 garlic clove, chopped 400g tomato sauce 4 tbsp oil Salt, pepper, chilli, paprika sweet, dried basil, rosemary and thyme Directions 1. Preheat oven at 180 degrees. 2. Put the diced vegetables into a bowl, add 4 tbsp of oil, mix and then add the spices and mix well again. 3. Put the vegetables into a suitable shape and bake for 35-40 minutes. 4.Slightly fry the garlic in a saucepan with a little oil, add the tomatoes, add 4 tablespoons of oil and season with salt, pepper, chili, paprika, rosemary and thyme. 5. Simmer for 20 minutes at medium heat. 6. Helloooo peeps. Finally some sign from me. 😅 Well I hope you don't mind. 👆This is one of my favourite food (meals). It's hummus with veggies. The hummus is made of chickpeas, some water (or oil) and spices. [Details below this text]. I vary with my veggies and cut them into sticks. COUS COUS SALAD 🥗🌶 . Serves 4 : ✔️1 red pepper, chopped ✔️1 red onion, diced ✔️1 carrot, diced ✔️1 clove of garlic, crushed ✔️1/2 tsp paprika, 1 tsp ground coriander, 1 tsp turmeric, 1 tsp ground cumin, 1/2 tsp cinnamon ✔️3 handfuls of frozen peas ✔️1 can of chickpeas ✔️1 vegetable stock cube . . Heat up 1 tbsp of olive oil in a large pan, add the red onion, pepper and carrot. Cook until soft. Then add the garlic and cook for 1 min . . Add the paprika, ground coriander, turmeric, ground cumin, cinnamon. Stir fry for 1 min . . Add the frozen peas and cook for 1 min. Add the chickpeas, pour in the stock and add the cous cous. Stir and leave for about 5 mins until the water has all been absorbed. Another day, another lunch packed!⠀And, a threat to my children at the bottom Staples here. ⠀ 🍎 Organic Apple slices with organic peanut butter. Gone are the days that I could get these kids to eat other Nut and seed butters. Their dad turned them into peanut butter only, at least it’s unsweetened, organic and peanuts ONLY! A lot of peanut butters have added oils - check your labels! ⠀ ⠀ ♦️ Raw unsweetened local yogurt. This comes in a glass mason jar from the local farm. Peppercorn picks up the raw milk and yogurt every day from Huckins Farm in New Hampton to sell at Peppercorn. It’s really zero waste- we wash out the jar and return for the deposit back and Maddy Sanitizes and reuses! ⠀ ⠀ 🥣 leftover soup in the @ukonserve insulated container. ⠀ ⠀ 🍑 one peach apricot cookie in the reusable wet bag, snack size! ⠀ ⠀ 🍎 unsweetened organic apple sauce from a large glass jar. I did mix in powder probiotics and 🤞 she doesn’t notice! ⠀ ⠀ 🍴 reusable utensils. One child keeps coming home with plastic cutlery from the school cafeteria , even though I send reusable. I told them every time I see plastic in their lunchbox, I’m taking $1 out of their piggy bank and donating it to save the ocean. Send me your favorite environmental non-profits!! I think it’s because they want to “go up” and get something, but it’s getting old. 🤣

Pietūs – salotos su avinžirniais 🥗 Būna dienų, kai tiesiog norisi ,,pailsėti” nuo mėsos. Ir šiaip manau, visai sveika, nors viena diena tiesiog nevalgyti mėso ir pabandyti ją pakeisti kažuo kitu. Aš vietoj mėsos šiandien pasirinkau avinžirnius. • Avinžinių pasiruošimas – užbarščiau savo mėgstamais prieskoniais, įdėjau 1 v.š alyvuogių aliejaus ir kepiau orkaitėj apie 30 min. 180 laipsn. • Salotoms naudojau - špinatus, pomidorus, fetos sūrį, avokadą, sėklų mišinį.
