Eating clean doesn’t have to be boring. ❤️ This is my go to Mexican salad bowl that I can keep eating without any guilt. 1. I start off with macerating some thinly sliced onions in lime juice. This time, I added some shredded zucchini to it as well. 2. While the onion is soaking on its way to deliciousness, I start baking the cauliflower florets and red peppers tossed in some olive oil and few spices like cumin powder, garlic powder and chilli powder. bake it at 400 degrees for 35 minutes tossing it once in between. 3. Pico de Gallo is something very easy to throw together - finely chopped tomatoes, Thai green chilies and onions all tossed with some freshly squeezed lime juice and salt. The heat comes from Thai green chilies. 4. Mix them all together with some salad greens, black beans drained and rinsed, thawed fire roasted corn and sliced avocado. Dîner Super léger .. ❤️ On a tellement du temps que j'ai créé cette recette de gratin léger et facile .. I know I said I love a buddha bowl for an easy meal and some of this was easy, sort of. This is my favourite Mexican version. Homemade pico de gallo - finely chopped good quality, small tomatoes(makes all the difference!), red onion, coriander, salt, lime juice and red chilli. That's it, tastes so fresh and cliché I know, but mouth-watering! The Mexican slaw (totally made up, sorry if it's not even slightly Mexican eek) is finely sliced carrot, red cabbage, sweetcorn and red onion with garlic, onion salt, oregano, paprika, cumin and chilli plus vegan mayo and a small dash of red wine vinegar. Delicious! I had some bulgar wheat and rice left over from the day before so heated them for a few minutes to make up the grains part. I also threw in pieces of fried vegan chorizo for a flavour hit and protein kick, I was impressed as not tried it before. The easy bit was the shop bought beans. I chose the barbecue ones as they have mixed pulses in them. They're smoky and sweet. A hit with my husband but not so much with me. I think the other ones in the second picture or homemade would have been better. Chopped an avocado, left that as is because they're tasty on their own anyway. Served with some tortilla cups to scoop it all up. Spicy, zingy, fresh, filling and very healthy too. Wanted to see if I could lighten up these brownies while still making them taste good and I think I succeeded! ⁣🥜🥜 I based it off the Hershey Recipe and came up with this recipe: ⁣ ⁣ • 1 cup of mashed avocado ⁣ • 2/3 cup of sugar ⁣ • 2/3 cup of no calorie sweetener ⁣ • 2 tsp of vanilla ⁣ • 4 eggs ⁣ • 1 cup kodiak mix ⁣ • 3/4 cup of cocoa ⁣ • 1/2 tsp of baking powder ⁣ • 1/4 tsp of salt ⁣ • 1 tbsp of Reese’s peanut butter chips ⁣ ⁣ Follow the directions the same as the Hershey Recipe ☺️⁣ I think you could replace the 2/3 cup of sugar with applesauce and it would taste fine and not be too moist so I might try that next time! ⁣ Came out to 4 points a brownie and made 16 brownies! If you use the original recipe it’s 12 points a brownie and makes 16 brownies 😲😲 big difference! ⁣

Lemon Parmesan Chicken Ingredients * * 1 1/4 lbs boneless skinless chicken breasts, diced into bite size pieces * 2 Tbsp olive oil, divided * 2 Tbsp butter, divided (or more olive oil) * Salt and freshly ground black pepper * 3 tsp Italian seasoning, divided * 1 tsp garlic powder*, divided * 1/2 tsp onion powder * 1 tsp lemon zest, plus more for serving * 10 oz. (2 small) zucchini, sliced and halved if wider * 10 oz. (2 small) yellow squash, sliced and halved if wider * 1/3 cup finely shredded parmesan, or more to taste * 2 Tbsp chopped fresh parsley * 2 Tbsp fresh lemon juice Instructions 1. Heat 1 Tbsp olive oil in a 12-inch non-stick skillet over medium-high heat. Dab chicken dry with paper towels. Season with a fair amount of salt and pepper, 2 tsp Italian seasoning, 1/2 tsp garlic powder, onion powder and lemon zest then toss to coat (I just added the seasonings to the chicken on the cutting board). Melt butter in pan with olive oil then add chicken and cook 3 minutes then flip and cook opposite side until chicken has cooked through (center of larger pieces should register 165 degrees), about 3 minutes longer. Transfer to a plate and tent with foil to keep warm.
 2. Heat remaining 1 Tbsp oil and 1 Tbsp butter in same skillet over medium-high heat. Add zucchini and squash, then season with salt, 1 tsp Italian seasoning and 1/2 tsp garlic powder. Cook tossing occasionally until just tender, about 4 minutes.
 3. Return chicken to pan with zucchini and squash. Drizzle in lemon juice and toss. Sprinkle with parmesan and parsley. Serve warm with more parmesan and lemon zest if desired (I served mine over cooked orzo which is delicious). Notes *1 Tbsp minced fresh garlic may be substituted. Add half of it to the chicken halfway through cooking and add half to the zucchini/squash when added to the skillet. VEGAN LENTIL SHEPHERDS PIE 🌷The perfect pantry-staple, plant-based meal for your Easter holiday (or any spring meal, let’s be honest). This recipe is a holiday staple amongst my family, and while I won’t be with them this Easter, nothing will stop me from eating this delicious recipe on Sunday (unless the store is out of potatoes, of course 😅). Hearty, nourishing and comforting, this is exactly the type of grounding meal that I need right now. I originally made this recipe for the holiday season (as you can tell by the photo 😂) but because it relies on pantry staples, it’s a pretty awesome Easter or just SPRING meal right now 🙌🏼 I’d also be willing to bet that you have pretty much all the ingredients on hand already, or can make some pretty easy substitutions ✨. . Some easy subs if you don’t have everything on hand (PSA I haven’t tried these, but I’m guessing they’ll work!): Try crumbled tofu, chickpeas, or black beans in place of the lentils. Sub regular potatoes for sweet potatoes. Use fresh carrots, celery, chopped cabbage, frozen corn or peas if you can’t find frozen mixed veg right now. Whip up an easy gravy with veggie stock and corn starch if you can’t find enough mushrooms to make a gravy. . I hope these subs are helpful! Let me know if you try any of them out. I wanted to discuss a little bit about nutrition. One of my clients told me to check out a film called gamechanger. It's a case for vegan athletes.i haven't watched all of it yet, but so far I find it to be a good case. For me, it's not really a gamechangers. More than 20 years ago I came to realize many of the things the film addresses and I tried doing a vegan diet for over a year before ultimately giving up on it. However, my takeaway from the experience and from continuing to refine my diet over the years, is that a mostly plant based diet is best for people including athletes. I do believe moderation and variety are essential to a healthy diet and anything in excess is not optimal. I posted a very typical meal for me. Rice,beans, plantains, carrots, onions, tomatoes, numerous spices and herbs, and some lean beef. I do not count calories or protein intake. I try to eat a variety of plant based foods and as little animal protein I feel is necessary. I let my body tell me. Sometimes I crave more meat. Others times not so much. Nutrition is of course very important, but your training program is more likely to dictate how much muscle you can develop. A crossfit type program will likely make you very strong, lean, and fit, but not big muscles, as opposed to a bodybuilding program geared towards muscle growth.
