Orzo pasta also known as kritharaki in Greek. Some fun facts about orzo: 1.Orzo pasta is a type of pasta which is made in the shape of a grain of rice 2.The word orzo is Italian for "barley" and a reference to the size and shape of the pasta. 3. One serving of orzo contains 42g of carbohydrates. Orzo made with tomato sauce and seasoned with salt and pepper. Veggies Sautéed with olive oil, salt and pepper. Add some olive oil in the pan and add the mushrooms, onion and zucchini. After they become soft, add the shrimp. When the veggies and shrimp are ready, mix them with the orzo and add the feta at the end. INGREDIENTI 📝 per 300 g di pasta 265 g di fave cotte (io ho utilizzato quelle precotte in scatola) 20 g di noci tritate 3 foglie di basilico 🌿 fresco tagliato finemente 100 ml di latte (a scelta) 🥛 50 ml di acqua 10/15 gamberi 🦐 Olio evo Pepe nero . . . INGREDIENTI ⬇️ Lasciare le fave precotte sotto l’acqua corrente per qualche secondo, poi trasferirle in un mixer con le noci tritate, il basilico, latte e acqua. Frullare fino a raggiungere un consistenza cremosa. Trasferire il pesto in una pentola, scaldare aggiungendo del pepe nero e a fine cottura un cucchiaio di olio evo a crudo. Saltare i gamberi in padella con uno spicchio d’aglio e un cucchiaio d’olio per insaporire a piacere. BUTTERNUT SQUASH LINGUINE WITH CRISPY PROSCIUTTO⁣⁣ ⁣⁣ By popular demand! Surprised at how many of you were keen for this 🙊🥰⁣⁣ ⁣⁣ Got a gorgeous butternut squash in my @busybeecateringglasgow box and I already had this recipe idea in my head so my dreams could become reality 🤪 and it worked out so damn gooooood ! When having a shitty day, make yourself comfort food! This is my go-to recipe for a quick, healthy, vegan and soulwarming pasta when I have an off-day or am just craving pasta 🍝 A lot of people have already asked the recipe and I am flattered 😂 So here you go ⬇️ For 4 people; - Sauce; 1 ripe avocado 200 gram of frozen peas One good hand of fresh basil 1 cup of cooked hot water One tab of veggie broth A good tablespoon of nutritional yeast Pepper and salt Mix everything in blender til smooth Cook pasta. Glace a small onion and 2 gloves of garlic Put sauce in pan to heat up, simmer til it thickens if too watery, or add some (pasta cooking) water when it's too thick. 3 min before finishing, add 150 grams of frozen peas into sauce and taste if more pepper/salt is necessary. Add juice of half a lime. Pour pasta in sauce and stir til evenly spread. Additional; vegan bacon nibbles baked til crunchy, they make it even better!! Also: made too much sauce? Farfalle tossed in creamy cilantro pesto-- pesto is my favorite sauce and it is so healthy while being utterly rich and decadent. Typically pesto is made with basil, which is a herb not commonly found at our local greengrocers in India. Cilantro, on the other hand, is available in abundance, and often doubles up as change when the grocer doesn't have loose coins or small currency notes. This pesto also replaces pine nuts with a combination of the more readily available cashew nuts and peanuts. This sauce is easily made with our local ingredients without hassle, and at a quarter of the cost. But the taste is as solid as any pesto you may have had at a high-end Italian kitchen. Pasta Bolognese, a classic Italian dish made with ground beef, tomatoes and onions. Foe a twist, i added carrots and mushrooms. Soooo yummy 🤩🤩 Ingredients: 500 gr pasta bolognese package 2 large onions chopped 1 head garlic chopped 1/2 kg minced meat 1 kg tomato crushed 1 tbsp tomato paste 5 long carrots (rondelle) 200 gr chopped mushrooms 1 tsp salt 1 tsp sweet pepper 1/2 tsp cinnamon 1 cup water Preparations: 1. Boil pasta for 7-8 mins (or as mentioned on package) 2. When finished, sink pasta in ice water to prevent over cooking. 3. Saute onions with garlics until golden color 4. Add meat and mix until brown color 5. Add carrots and mix for 3mins 6. Add crushed tomatoes and tomato paste 7. Add spices, water and mix well until combined. Leave it to boil on low heat foe 15mins 8. Be sure to tag me @fuel_my_smile and @betterfoodguru with your turmeric creations. —————————————Ingredients 1 1/2 cups lentils (I used green because they hold their shape but red or yellow would be delish too) 1/2 tbsp avocado oil 1 cup water- plus more to thin if desired 1 small onion, diced 3 tbsp minced fresh ginger 6 cloves garlic, minced 1 tbsp curry powder 1/2 tbsp coconut sugar 1 tsp kosher salt 1 tsp ground turmeric Pinch of Cayenne or chili powder 1 can 14 oz coconut milk 1/2 limes-juiced Rinse and drain the lentils. Set the Instant Pot to sauté and add thoil. Once the oil has melted, add the onion, ginger, and garlic. Cook, stirring often, until fragrant and the onion is soft, about 2 minutes. Add the curry powder, coconut sugar, salt, turmeric, and cayenne and stir vigorously. Add the lentils, coconut milk, and 1 cup of water. Stir. Turn off sauté mode. Cover @instantpotofficial and seal. Pressure cook on high 15 minutes. Quick release. Stir in more water until desired consistency. 😉!

🍠GF/VEGAN sweet potato gnocchi🍠 (with pesto green vegetables) These gnocchi are made from only 3 ingredients! I was inspired by the recipe from @foodwithfeeling and I cannot believe how simple, yet DELICIOUS and healthy these were! Ingredients: For the gnocchi (2 medium sweet potatoes, 2.5 cups of gluten free plain flour *I used more as my potatoes were quite large, 2 teaspoons of salt For the veg (2 zucchini’s, 2 cups of raw Brussel sprouts, broccolini, garlic, salt, pepper, olive oil and homemade pesto) Method: Bake sweet potatoes in the oven (200degrees Celsius) with a few fork holes in them for about 50 mins until really soft (let sit to cool down) Flour a clean surface and then place the flour and salt mixture onto your working space, making a well in the middle Use a potato ricer and first take the skin off potatoes, then place riced potatoes straight into well. Flour your hands and start to work the mixture until dough is fully combined and NOT sticky at all (I had to use quite a bit more flour for this...just be patient you’ll get there) When combined roll the dough into a ball, cut into 8 even pieces and then roll each piece into a 1/2inch log, cutting into little gnocchi pieces To cook the gnocchi boil a large pot of water with salt, place gnocchi in 2 batches and wait until they all rise to the top, let cook for another 30 seconds and then collect For the veggies: I just tossed Brussel sprouts cut in half, zucchini cut into cubes, broccolini, garlic olive oil and salt and pepper in the oven at 160 degrees Celsius and baked for about 20-25 mins (make sure to mix halfway through) I served my gnocchi with homemade pesto (I’ll eventually get my recipe up for this) but you can use any good quality pesto, the roasted veggies and a good sprinkling of ricotta on top (Parmesan would work well too) *to keep vegan omit this step/use vegan cheese instead This recipe serves 4 healthy portions. I hope you enjoy your gnocchi as much as I did, I know I’ll be making many more variations to come- and don’t forget to send/tag me in your creations 💖💫

still thinking about my Sunday night pasta🍝 my newest challenge has been creating meals with items in my pantry plus whatever organic produce we have in the fridge... here’s the latest product! The Ingredients - @simplekneads_gf homemade breadcrumbs - @jovialfoods spaghetti - lots of garlic - @wearebrightland awake olive oil - squash - spinach - salt - pepper - nutritional yeast - red pepper flakes (optional) The Recipe 1. Toast the breadcrumbs! Tear some stale or leftover bread into small pieces (you can crumble in a food processor if you want to be fancy) and place in a large pan over medium high heat, with olive oil. Once toasty, pour onto a plate to cool and sprinkle with salt. 2. Fill a big pot up with water and bring to a boil. While you wait, chop up all your veggies! I chopped garlic, squash, and spinach, but you can add anything to a dish like this (eggplant, mushroom, onion, etc). 3. Sauté the zucchini in olive oil and garlic with salt and pepper. Add the spinach towards the end with more olive oil. 4. Once the pasta is done, drain it (setting aside a cup or so of water) and add the veggies/olive oil and mix it up, adding some pasta water as you mix to thicken it up. 4. Add salt, pepper, nutritional yeast and some red pepper flakes (if you like that) and pile it on your plate. Top with the breadcrumbs and dig in!

Pasta party for one 🍝 _____________________ The goods: 1. 4 Italian meatballs (I buy raw from Kroger) 2. 1/4 cup marinara sauce of choice 3. 1 cup @eatbanza noodles 4. Handful of cherry tomatoes 5. Handful of spinach 6. 1/4 cup mozzarella cheese 7. Chunks of goat cheese (if wanted) _____________________ Get to cooking: 1. Preheat oven to 375℉ 2. Bake meatballs for 30 minutes 3. While baking, cook noodles to directions, drain and place back in the pan 4. On low heat, add marinara, spinach, mozzarella cheese and tomatoes to noodles. Simmer until meatballs are done 5. Add meatballs and goat cheese chunks to pasta 6. Enjoy :)

Ingredientes: 1 ajo picado 2 tazas de champiñones fileteados 1 Cda de aceite de aguacate o de oliva 1 taza de nuez de la India (yo la puse a remojar en agua 2 horas antes para que fuera más fácil licuarlo) 3/4 de agua mezclada con 1 Cda de consomé de verdura Spaghetti (yo use fusilli de chicharo). Albahaca en polvo Sal y pimienta al gusto. . How to: 1. Poner a cocer la pasta. 2. En un sartén pones el aceite junto con el ajo picado; lo salteas poquito y le agregas los champiñones.. 3. Ya que estén como doraditos le agregas sal y pimienta. 4. Pasas los champiñones a la licuadora. (Dejas poquitos aparte para usarlos de topping) 5. Agregas la nuez de la India (sin el agua con la que la remojaste), el consomé, y albahaca al gusto. 6. Si ves que le falta agua le vas agregando poquito a poquito hasta que quede una consistencia cremosa. 7. Healthy Vegan Mac & Cheese - kid approved! Need some comfort food while in quarantine? This mac and cheese is easily a favorite at our house these days. The kids love it, my husband and I can’t get enough, it’s a crowd pleaser all around. And best of all, it’s totally healthy and satisfying. You may never go back to mac and cheese from a box again, enjoy! Ingredients: One box Jovial Brown Rice Elbow Pasta (or other GF pasta of choice) 1 large or two medium red/white potatoes - peeled and cubed 1 orange carrot - peeled and cubed 1/2 cup butternut squash - peeled and cubed (You can also use just carrot or just butternut squash) 1/2 cup raw cashews or blanched almonds - Soaked for 1-4 hrs. 2 Tpsn. Tahini Salt and pepper to taste 1/2 tsp. Garlic powder Directions: Cook pasta according to package instructions. Drain and pour into a large pot. To make the sauce: *In a medium pot, boil potatoes, carrots and butternut squash until soft. Drain and put into a high speed blender or food processor. *Then add the almonds/cashews, tahini, salt, pepper, and garlic powder. Blend everything until smooth. *Pour sauce over the pasta and stir well until all the pasta is covered with a generous amount of sauce. Add more salt and pepper if needed. Pasta with wild garlic pesto topped with pine nuts and chilli flakes for dinner. 🍝 Inspired by @kptncookapp @absolute_lebenslust Ingredients Pasta of choice 2 cups wild garlic Zest of 1/2 lemon 1/2 cup pine nuts (leave some for decoration) 1tbs agave syrup 4 tbs olive oil 1/2 cup cashews Chilli flakes Salt Pepper Cook the pasta according to the instructions. Roast the pine nuts, set them aside and let them cool down. Blend all ingredients, except pasta, together until smooth. Mix with pasta. Put leftover pine nuts and chilli flakes on top. How to...pump up your pasta bowl! • Pasta is delicious but I know for some of us, the portion size that digests the best for me doesn’t leave me satiated. Here are a few of my tips to pump up the volume, allowing you to feel fueled after instead of sluggish. • Cut half of the noodles with veggies! If you have spaghetti or fettucine like I have here, zoodles work great as well as wilted spinach or greens. For shape pastas like penne or rotini I had more whole veggies like cauliflower, cubed zucchini or squash. • Add lots of protein! I would recommend doing this with any dish, but instead of have meat in your pasta sauce, make it a prominent fixture of your meal not an addition. • Use a variety of toppings over sauce! I like to add a variety of toppings and condiments to add flavor and not rely on just pasta sauce. Sauces are usually not filling since they are in liquid form. Add things like light cheeses, herbs, seasonings and spreads to minimize the amount of sauce you need for flavor. Chicken with zucchini noodles! 🥒 Ingredients 3 large zucchini 1.5 lbs boneless & skinless chicken breasts, cut into 1” pieces 1/2 tsp cumin 1 tsp salt, divided Ground black pepper, to taste 2 tsp any small hot pepper/jalapeño or to taste, seeded and minced (leave seeds in for very hot version) 1 medium or 1/2 large lime, juice of 3/4 cup cilantro, chopped Cooking spray (I use Misto) Instructions Using a spiralizer, make zucchini noodles, transfer into a large bowland set aside. You can also chop zucchini into any size pieces, if you don’t have the gadgets for making zucchini noodles. Preheat large ceramic non-stick skillet on high heat and add chicken. Saute until golden brown, stirring occasionally. Add cumin, 1/2 tsp salt and ground black pepper towards the end, stir and cook for another minute. Transfer to a bowl and set aside. Wipe clean or wash and pat dry the skillet and return to the stove on high heat. Spray with cooking spray and add zucchini noodles. Saute for 1.5 minutes, stirring frequently. Remove from heat and add previously cooked chicken, remaining salt, small hot peppers/jalapeños, lime juice and cilantro. Extra time at home means extra time to try new dinner ideas 💡 Spaghetti Squash Boat—sneaky yummy recipe • • • There are so many fun/easy ways to make spaghetti squash. My favorite way: Preheat the oven to 375. Slice the spaghetti squash down the middle “hotdog” style. Spoon out the loose seeds and string as you would carving a pumpkin. Drizzle olive oil on the inside of the quash and sprinkle with salt. Face inside down on a cookie sheet and bake for 40 minutes or until soft and crispy on the inside. Create the “spaghetti” scraping inside of squash with fork. Top with any sauce or toppings! 🌱Tofu Shakshuka By @cookingforpeanuts ✨ Recipe: {For oil-free option, bake tofu cubes at 400F on lined baking sheet until golden, about 15 minutes. Cook onions and peppers in veggie broth instead of oil.} ✨ Press 1-14oz block extra-firm tofu to remove excess liquid. Cut into about 3/4-inch cubes. ✨ Heat a little olive oil in non-stick skillet and pan fry tofu until golden brown on all sides. ✨ Remove from skillet. Add a little more olive oil and sauté 1 chopped red onion and 2 small diced red bell peppers about 4-5 minutes until onion starts to soften. ✨ Add 4 minced garlic cloves, 2 tsp ground cumin, 2 tsp sweet paprika, 1/2 tsp turmeric, 1/4-1/2 tsp chipotle. Sauté another minute or until fragrant. ✨ Add 1 large chopped tomato and cook until tomato breaks down and softens. ✨ Add 2 tbsp tomato paste and 2-14oz cans chopped tomatoes. Mix well and simmer about 10 minutes. ✨ Add 1 tbsp fresh lemon juice and maple syrup to taste. ✨ Mix in the sautéed tofu cubes and 1-8oz bag frozen chopped spinach and cook until warmed through. Add salt and black pepper to taste. Serve with chopped fresh parsley.

it’s basically been like an episode of chopped around here, so I present you with CREAMY ROASTED PEPPER & HERB SAUCE 🌶🌿 my mom used to make us tomato & roasted pepper “gravy” all the time, so we decided to give this a go when we found a jar of @traderjoes roasted peppers in the pantry. it was a hit — we made pasta with it & topped off our grilled chicken with the extra! I then proceeded to eat any leftovers by the spoonful 🙃 grab these ingredients, throw ‘em in a blender & let it work it’s magic✨ __ RECIPE: -16 oz jar roasted red peppers (drained) -1/4 c fresh basil & parsley, chopped (use whatever herbs you have or just omit!) -1/4 c extra virgin olive oil -1 shallot (chopped) -2 cloves garlic (chopped) -1 tbsp lemon juice (1/2 lemon) -sprinkle of paprika, salt + pepper __ HOW TO: DUMP IT ALL into a high-speed blender. BLEND for about one minute — yup, that’s it. POUR over warm pasta of choice (we used @explorecuisine brown rice fusilli). OPTIONAL: SPRINKLE crushed red pepper (and/or cheese). ENJOY! 💛💛

Comfort food at it's finest 😋 ⠀ ⠀ Thank you to @alixturoff_rd for sharing with us this amazing Light High Fiber Macaroni and Cheese 🧀 ⠀ ⠀ INGREDIENTS ⬇️ ⠀ · 4 oz Fiber Gourmet Elbow Pasta, Dry ⠀ · 2 tsp Light Butter ⠀ · 2 tbsp White Flour ⠀ · 2 tbsp Minced Onion ⠀ · 5 fl oz Skim Milk ⠀ · 3 fl oz Chicken Broth ⠀ · 2 oz Cabot Sharp Light Cheddar Cheese ⠀ · 1 oz Fat Free Cheddar Cheese ⠀ · 1.5 tbsp Grated Parmesan Cheese ⠀ · Propellant free cooking spray ⠀ · Optional: 2 tbsp Bread Crumbs of choice or GG Cracker · Crumbs ⠀ ⠀ DIRECTIONS ⬇️ ⠀ · Salt pasta water and cook pasta according to directions on box. ⠀ · Preheat oven to 375°F. ⠀ · In a medium skillet, add butter and allow to melt. Add flour and reduce heat to low, whisking flour into butter mixture to create a roux. ⠀ · Add minced onion to the butter mixture and allow to cook for ~2 minutes. ⠀ · Increase heat to medium-high and add milk and chicken broth. Whisk and allow mixture to come to a boil. Once the mixture is smooth and has thickened, season with salt and pepper to taste. ⠀ · Remove milk mixture from heat, add cheese and mix well until cheese has melted. Add additional salt and pepper if needed. ⠀ · Add cooked pasta to cheese mixture and then transfer to a baking dish sprayed with nonstick cooking spray. ⠀ Top with grated parmesan cheese and breadcrumbs (optional). The first #MeatlessMonday of April calls for something extra delicious. Start the week off with our Balsamic Braised Fusilli recipe. Made with our Organic Chickpea Fusilli Pasta, this recipe will have you going #meatfree every day of the week. #MeatFreeMonday Ingredients: 1 box Explore Cuisine Chickpea Fusilli (cooked according to package directions) 2 tbsp olive oil 1 yellow onion (thinly sliced) 2 garlic cloves (smashed) 1 Red Bell Pepper (thinly sliced) 1 orange bell pepper (thinly sliced) 1 yellow bell pepper (thinly sliced) 1/2 cup balsamic vinegar 1/4 cup fresh basil (torn) 1/4 cup freshly grated parmigiana cheese (or substitute with vegan cheese) Kosher salt & freshly ground black pepper Directions: Bring a large pot of water to a boil. Cook Chickpea Fusilli according to package directions. Drain, set aside and reserve 1 cup of pasta water. In a large sauté pan over medium heat, add olive oil and onion. Cook until translucent about 5 minutes. Add garlic, bell peppers and season. Turn to medium low, and cook for 20 minutes until caramelized. Turn heat up and deglaze with balsamic vinegar. Allow to cook for 5 minutes until reduced and syrupy. Turn off heat, add in fusilli and stir vigorously. Add in basil and freshly grated parmigiana. To loosen sauce, use a small amount of the reserved pasta water to achieve desired consistency. Garnish with more cheese and serve.

#Repost @vegansfoodrecipes • • • • • • Creamy pasta with chickpeas by @earthofmariaa 🧡 Share this with someone who loves a good bowl of pasta! . 125g (4oz) pasta of choice 1/2 medium onion, chopped 150g (4.5oz) mushrooms, chopped 2 tbsp tomato paste 1/2 can chickpeas, drained and rinsed 1/4 can coconut milk 1/2 tsp paprika 2 tsp curry powder 1 tbsp tamari 1 tbsp nutritional yeast 1 tsp cornflour 1/4 cup green peas Large handful spinach Cook the pasta according to instructions on packaging. Add the onion and mushrooms to a non-stick frying pan and cook for 3-4 minutes, until the mushrooms soften. Then, add the tomato pasta and stir for a minute to coat. Add the chickpeas together with the coconut milk, paprika, curry powder, tamari and nutritional yeast. Cook for 3-4 minutes, stirring frequently, then at the last minute add the pasta together with the cornflour, green peas and spinach to allow the sauce to thicken and the spinach to wilt.
