I’ve had this Palestinian “maftoul” gifted to me a while back at a Palestinian supper club run by @zaytoun_cic here in Bristol. I couldn’t think of anything to do with it until @zaleha.olpin shared a recipe from @deliciousmag she used to make Palestinian maftoul salad 🤩 and boy I’m glad you shared this Zaleha cause that was a DELICIOUS salad 🙌🏼 we had ours with falafel and grilled halloumi wraps 🤤 You guys HAVE to absolutely give this recipe a go!!! Ingredients 80ml Palestinian olive oil (@zaytoun_cic brand is the best and supports Palestinian farmers affected by the occupation and help support them by fairly trading their olive oil) 3 onions, sliced 2 tsp garlic paste 2 green chilies, deseeded and finely chopped 250g maftoul, rinsed and drained 600ml vegetable stock 60g raisins 3 roasted peppers, thinly sliced 1 cucumber, chopped into small cubes 3 spring onions, finely sliced Handful of fresh mint, roughly chopped 2 handfuls of fresh parsley, roughly chopped Juice of 2 lemons 1 Tbsp zaatar spice 1 Tbsp sumac spice 100g almonds, skin on, roughly chopped Steps 👉 Put a large saucepan over medium heat with 40ml of olive oil. Once the oil is hot, add onions and cook, stirring for a few minutes. Then add the garlic and chilies and cook for 5-7 minutes more until the onions soften and begin to caramelise 👉 Add the maftoul and stir well making sure it is coated with oil. Fry for a couple of minutes. Add the stock and bring to boil. Add the raisins and a couple of pinches of salt. Being to a simmer and cook for 20 minutes, until maftoul is cooked and the liquid is absorbed 👉 Transfer maftoul to a tray to cool. Once cooled, place it in a bowl along with the peppers, cucumber, spring onions and herbs. Stir in the remaining 40ml olive oil, lemon juice, and some salt and pepper to taste. •Healthy PERI PERI chicken & chips• •thought we’d do a foodie post to switch it up abit, and also because we miss nandos so much 😢(hoping this is a bit easier to follow rather than looking through our highlights)💓• ————————— •INGREDIENTS FOR 2• 🥘1 lemon• 🥘1 Apple• 🥘1 red chilli• 🥘1 garlic clove• 🥘2 spring onions• 🥘320g chicken thighs• 🥘1 tsp dried oregano • 🥘1 carrot • 🥘15ml white wine vinegar (apple cider vinegar also works)• 🥘20g chipotle paste• 🥘20g tomato paste• 🥘4 potatos • 🥘50 ml Mayo • —————————- •INSTRUCTIONS• 🥘preheat oven 200°C• 🥘cut potato’s skins on, in to chips • 🥘add chips to a baking tray with a drizzle of oil and a pinch of salt, cook for 25-30 mins • 🥘peel & finely chop the garlic, chop the chilli finely• 🥘Role the lemon on a hard surface and cut in half 🥘mix together in a bowl the chipotle paste, tomato paste, oregano, white wine vinegar, chopped garlic and chopped chilli in a bowl with the juice of half a lemon - add 2 tbs olive oil & 1 tbs water• 🥘add half of this Piri piri sauce in to a separate bowl with the chicken thighs - mix well until chicken is covered• 🥘Transfer coated chicken on to a baking tray and cook in the oven for 16-20 mins• 🥘while chicken is cooking, add mayonnaise to the remaining piri piri sauce- this is your perinaise• 🥘peel and grate the carrots, cut the apple in to thin slices & trim the spring onions, separating the white bits from the darks• 🥘combine the carrot, apple and spring onion whites & a table spoon of your perinaise in a bowl to create an “apple slaw”• 🥘cut the remaining lemon in to wedges• 🥘one chicken is cooked through (no pink meat) and chips are cooked, serve on a plate with the remaining perinaise and your apple slaw - garnish with the left over spring onion greens and lemon wedges • —————————— HOPE YOU ENJOY ❤️ —————————— #healthyrecipe #healthyrecipes #healthyrecipeshare #tagsta #healthyfoodrecipes #healthyrecipeideas #tagstagram #healthyfood #healthyeats #tagsta_food #tagstagramers #easyhealthyrecipes #healthyfoodideas #healthyfood #eatwell #colorfulfood #wholefood #wholefoods #eatwholefoods #healthymealprep #healthyfoodinspo #eatingclean #eatclean.

Healthy balanced dinner! Had a much better day today and went on a 4.5km run after I finished my work for the day, it was 22 degrees at 7PM I haddddd to get outside!!! I listened to one of the @rhitrition Food For Thought podcast while I was running then when I came home I was literally craving a plain nutritious meal!! This meal was: whole grain rice, green beans, broccoli, cod fillet and some hummus! This was exactly what my body needed and I felt super refueled after 🤗 Sometimes all you want is some boring nutritious food 😂👏🏼

Do you enjoy cooking more now that you’re home every evening? I personally love it, but I also know that I have 30 to 45 minutes to get dinner ready so it’s all about easy, quick recipes with whole ingredients. I just shared the recipe for this quick stir fry in my Instagram stories, but here’s once again for later reference: What you’ll need: - 150g quinoa, rinsed and soaked . - 200g organic tofu, sliced in cubes . - any vegetables you have at hand (carrots, mushrooms, pepper, green beans, green onion etc) or as I did - a frozen organic mix of Asian wok vegetables . - fresh ginger (3cm cube) and 1 clove garlic, grated . - 2 tbsp toasted sesame oil . - 2 tbsp low sodium tamari . - 2 tbsp rice vinegar . - 1 tbsp almond butter . - 1 tsp raw cane sugar . . How to: 1. To steam the quinoa with @mielebelgium steam oven: Place the soaked and rinsed quinoa in a solid stainless steel steamer dish and cover with 300ml water. Set the oven to 100 degrees Celsius and steam for 20 minutes. Once done, fluff with a fork for the best quinoa! . . 2. While the quinoa is steaming, heat up 1 tbsp sesame oil in a pan on a medium setting. Add the tofu cubes and let them brown a little. Remove from the pan. . . 3. In the same pan add the other tbsp sesame oil, and gently fry the ginger and garlic (careful not to burn them). Add the vegetables of your choice and let them cook until soft and juicy. Once softened add 1 tbsp tamari and rice vinegar each and mix well. . . 4. Make the sauce: in a small bowl mix together the almond butter, rest of tamari, rice vinegar and raw cane sugar. It should be smooth and slightly runny. . . 5. Once the vegetables are cooked, add back the tofu to the pan, add the steamed quinoa and the sauce and mix well. Adjust flavor to your liking.

Not only do I think quinoa tastes GREAT, it’s considered a superfood meaning it’s exceptionally healthy and good for you.🤗 Many people use it as a substitute for white rice, and the great thing is that it’s much healthier than regular white rice: it has much fewer calories and carbohydrates than rice, with much more fiber and protein. I love cooking at home — which there seems to be an awful lot of these days. 💚🧡💛 It lets you control the ingredients and customize dishes to your preference. However, it can be incredibly time consuming. Especially when you count time spent searching for a recipe and clean up. I try to keep quick and healthy options on hand for when I don't want to spend more than 10 minutes in the kitchen, but still want a wholesome meal. My family loves these yummy frozen butternut squash raviolis! This brand is @rising_moon_pasta (which is organic + vegan), but you can use any kind of ravioli. Add your favorite veggies and spices to make a meal. TO MAKE: While I am cooking the ravioli per package instructions, I cut up some cauliflower, bell pepper, and garlic. I add it to a saute pan with frozen green peas and any other veggies I have on hand. Add a little avocado oil and a splash of water to the pan along with a generous sprinkle of turmeric, paprika, pepper, salt, and parsley. I also have a spice in my cabinet called zhug that is delicious and I put it on most things. Feel free to add your favorite spices! Cook on medium heat until the veggies are tender, adding more water if necessary and stirring every minute or two. Once the veggies are almost done, add the cooked ravioli to the pan and cook another 1-2 minutes to brown the ravioli. You may need to add more oil to the pan for this to prevent sticking depending on your cookware. Transfer to a bowl and enjoy! You can add pesto or your favorite sauces, but I enjoy it on it's own.

Totalno zdrava pizza! 🍕🍕Tijesto bez brašna 👏🏼 Ova pizza je napravljena od kaule/cvjetače. Oduševljenje samo takvo. Znamo da je pizza pizza, ali ovo definitivno može proć 👌🏼 TIJESTO: -1 cvjetača (srednje veličine) -2 jaja -3 žlice ribanog tvrdog sira -1 žlica maslinovog ulja -sol -papar -origano -bosiljak NADJEV: (šta voliš i šta se ima doma) Moja verzija: -gauda -mozzarella -umak od rajčice -poriluk -cherry rajčice -masline -origano Cvitove cvjetače dobro oprati i staviti u kipuću vodu na 5 minuta. Procijediti, pustiti da se malo ohlade, pa sitno izribati na ribež. Dodati ostale sastojke i sve jako dobro promiješati. Staviti tijesto na pleh obložen papirom, oblikovati ga po želji, te ga peći 40-ak minuta na 200 stupnjeva (pečenje ovisi o pećnici, najbolje pratiti dok tijesto ne dobije zlatkastu boju). Izvaditi ga iz pećnice, staviti nadjev i vratiti ga još 5 minuta, dok se sir fino ne otopi. Philly Cheesesteak Stuffed Peppers 😊 These Philly Cheesesteak Stuffed Peppers are a delicious low-carb spin on the classic sandwich! An easy and filling keto meal that the whole family will love ❤️ 🙌🏻 🔸 🔸 👀⬇️ for ingredients and recipe 🔸 🔸 — Ingredients 2 tbsp olive oil, divided 4 green peppers, cut in half 1 lb of flank steak or 1lb lean ground beef, cooked drained 1 1/2 c sliced mushroom 1/2 red pepper, sliced 1 small red onion, sliced 3 Tbsp Keto Mayo, we used @primalkitchenfoods avocado mayo 4 slices of provolone cheese, (omit for dietary restrictions) Salt and pepper — Instructions 1. Preheat oven to 400. Cut green peppers in half and de-seed them. Drizzle with 1 tbsp olive oil, season with salt and pepper and bake in a 9x13 dish covered with foil for 10 min. 2. Prepare the cheesesteak filling. Heat the olive oil in a large pan over medium-high heat. Add the steak to the pan and sear for 3 minutes on each side. Remove steak from the pan and let rest. 3. Add the onions, mushrooms, and sliced peppers to the pan and cook for 4-5 minutes or softened. 4. To a large bowl, add thinly sliced steak, sautéed vegetables, mayonnaise, garlic powder, salt and pepper, and diced cheese. Stir to combine all the ingredients. 5. Fill each pepper with the cheesesteak mixture. Bake for 10-15 minutes until the peppers are done and the cheese is melted. This is the same frother I use in my stories to quickly and easily blend my protein shakes🥤 in the morning but, as you can see it's versatility comes in handy for so many recipes! Ingredients: 🍵1 heaping teaspoon Matcha powder 🥛3/4 cup almond or coconut milk 💧 1/4 cup hot water 🍓3 sliced strawberries 🍯Honey or agave to taste if you want to sweeten (I don't generally use any) 🧊Lots of ice Directions: 1️⃣Heat pan and bring milk to simmer. 2️⃣Froth the milk using the @zulay_kitchen Milk Boss frother. 3️⃣Bring water to a boil then let sit and cool for a few minutes (I just heat water in microwave). 4️⃣In a mug, mix the water with matcha powder until it's dissolved. 5️⃣Slowly add milk to the mug and stir (I again use the frother to mix) 6️⃣Add lots of ice and if you want to sweeten add honey or agave to taste. 🥜 No bake peanut butter bars 🥜⁣⁣ ⁣⁣ The first time I fall in love with peanut butter squares was while working in Montauk. Just love the taste of melting peanut butter and chocolate together. So I tried to do healthier version of an original recipe and combining just 5 ingredients I came up with this recipe. The taste is amaaaaazing! ⁣⁣ ⁣⁣ You will need: ⁣⁣ 🥜 2 cups oat flour⁣ 🥜 4 tbsp peanut butter ⁣⁣ 🥜 4 tbsp agave syrup ⁣⁣ 🥜 6 tbsp milk ⁣⁣ 🥜 120g chocolate⁣⁣ ⁣⁣ Mix together all the ingredients except chocolate, you will get a sticky mixture, press evenly into the bottom of a smaller pan. You can put a baking paper on the bottom. Melt the chocolate with a little bit of milk and spread over the prepared crust. Refrigerate for at least 3 hours before cutting into squares. QUICK CHICKEN HUMMUS BOWL! This quick recipe takes 10 minutes to make and there are 2 serves per dish Recipe: •200g hummus •1 small lemon, zested and juiced •200g pouch cooked mixed grains (we used Merchant Gourmet red rice & quinoa) •150g baby spinach, roughly chopped •1 small avocado, halved and sliced •1 cooked chicken breast, sliced at an angle •100g pomegranate seeds •½ red onion, finely sliced •2 tbsp toasted almonds Preparation: 1•Mix 2 tbsp of the hummus with half the lemon juice, the lemon zest and enough water to make a drizzly dressing. Squeeze the grain pouch to separate the grains, then divide between two shallow bowls and toss through the dressing. Top each bowl with a handful of the spinach. 2•Squeeze the remaining lemon juice over the avocado halves, then add one half to each bowl. Divide the chicken, pomegranate seeds, onion, almonds and remaining hummus between the two bowls and gently mix everything together just before eating. 2 years, 70 pounds less. I’ve changed more than just physically since this time but to be honest I’m really proud of myself. In 2016 I was 205 pounds and as of today I’ve lost 70. I think I my current weight(135)is pretty good for 5’ 10”. I’ve gone from size 15 jeans to size 2/4, I’ve worked so hard and now I can see it. 2 years later I’m so different in ways I never would have guessed. Thank you to everyone who supported me but more than that thanks to everyone who poked fun at me because without you guys I would have never made this change for myself. It was lost healthily and one of the most difficult things. I’m still not 100% confident but I feel so much better and I’m fine with slightly bragging about this. No matter what others say, only you can define your worth. So from a 1X to a small, from 2016 to 2018, and from my life then to my life now, if there’s one thing I learned is that hard work will eventually pay off. Sautéed Scallops with Shaved Celery Salad Makes 4 servings 4 cups celery stalks with leafy tops 2 1/2 pounds sea scallops 1/2 teaspoon freshly ground black pepper 1/8 teaspoon kosher salt 4 teaspoons olive oil, divided 3 tablespoons fresh lemon juice (from 2 lemons) 2 teaspoons Dijon mustard 1 packet of Stevia 2 ounces sliced almonds, toasted How to Make It 1. Remove celery leaves from stalks; reserve leaves. Thinly slice stalks using a mandoline. 2. Pat scallops dry with paper towels. Sprinkle scallops with pepper and salt. Heat a large skillet over medium-high. Add 1 tablespoon oil to pan; swirl to coat. Add half of the scallops, and cook to desired degree of doneness, 1 to 2 minutes per side. Remove from skillet; repeat procedure with 1 tablespoon oil and remaining scallops. 3. Whisk together lemon juice, mustard, stevia and remaining 1 tablespoon oil in a large bowl until well combined. Add celery stalks, leaves and almonds; toss to combine. Divide salad evenly among 4 plates. Top with scallops. Keto Cheeseburger Ball from @bunny_hopps76 🤤🍔🔥⁠ - 📋 INGREDIENTS:⁠ 2 x 1/4 pound Burger patties⁠ Bacon⁠ Onion⁠ Cheese⁠ - 👨🏽‍🍳 INSTRUCTIONS:⁠ 1. Dice onion and caramelise in a pan. Good morning! My oats this morning featured the usual Lindt chocolate, peanut butter, raspberries and a lot of blueberries! I make my oats with water in the microwave and I just use the Quaker porridge oats! I find that water works completely fine because the oats are really creamy anyways 😊 . Didn’t post my dinner or lunch yesterday because to be honest I was having a really bad day... this is my 4th week in self isolation now. I live in a shared apartment with 2 other people but I never see them. So yesterday I started to go a bit crazy. Also, working from home is getting stressful and tensions are rising due to communication issues and technical problems... After finishing work at 8:30pm I was so deflated, I had been crying for ages and I wasn’t able to go outside at all for a walk or run due to my busy work day. I did 45 mins of Yoga with Adrienne - I did the Day 1 of the 30 Day yoga program and after I felt much more relaxed. It’s okay to have a stressful day once in a while!! You just have to find something that will calm you down at the end of the day, it could be yoga, a walk, a face mask, baking, even watching a TV series! Hope everyone is doing okay & keeping sane during self isolation ❤️
