Enjoying some baked Parmesan zucchini today! Super easy, healthy, and delicious—the ideal set of qualities found in most of the snacks on my account. What more could you want? ☺️ Recipe below. What would you have this dish with? I had it as a side for my pasta with shrimp and broccolini. It was great; the only edit I would make for next time is cutting the zucchini into thinner pieces. ~~~ Recipe: *3 Zucchini cut lengthwise in half. *1/3 cup Parmesan cheese * 1&1/2 T (tablespoon) Olive oil * Freshly ground black pepper *3 T chopped Basil 1. Oven at 400 degrees 2. Line cookie sheet with parchment paper. 3. Place Z halves, skin side down on the sheet. Sprinkle each with 1 T cheese. Drizzle with oil, sprinkle with pepper. 4. Bake 15 to 20 minutes or until Z is tender & cheese is light golden brown. Cool. Garnish with Basil.

🦄 Believe it or not, this recipe is delicious, pretty, AND HEALTHY, Despite its sugary pastel hues! 🌠 💫 This is perfect for a virtual cooking get together with some of your EDM friends! ⁣ ⁣ Here's how you can make your dream rave toast:⁣ ⁣ Layout five bowls and add two tablespoons of yogurt or cream cheese to each, then create your colors.⁣ ⁣ Bright pink: Beet juice⁣ ⁣ 💜 Start with 1 teaspoon of beet juice and add slowly until you get a hue you like.⁣ ⁣ 🧡Orange / Yellow: Turmeric juice⁣ ⁣ Juice a 1-inch chunk of turmeric root. So many more shutdowns and regulations put in place everyday are definitely changing life. My days definitely feel like they’ve started melting a bit sometimes. And I feel like my kid is just exploding out of this house 😂 anyone else feeling that way yet? Definitely excited for the no rain forecast for today so we can spend the day in the backyard - some hula hooping and hand stand practice is always fun now that the mud puddles have dried up and our little worm friends have gone underground again 😄 . Backyard hang out days call for yummy snack platters! 🙌☀️ Having to wait in line to get in the store had me procrastinate going back but I was able to make a simple guacamole and black refried bean dip with what I had on hand! I served it with the pita chips and blue corn tortilla chips, but I’d say pretty much anything works, so whatever you have is great 👍 . For the guacamole I used: 2 large avocados, mashed 6 small baby tomatoes, chopped 1 handful cilantro, chopped 1 glove garlic, minced or pressed 1/2 lemon, juiced Salt and pepper to taste . I usually also add jalapeño, red onion and use lime instead of lemon but it was still delicious 😋 . For the black bean dip: 1 can of black refried beans 1 onion, chopped 7 cloves of garlic, minced Chili Lime Seasoning to taste Salt and pepper to taste . It’s delicious warm so I served it right away! I love having leftover black bean dip so I went ahead and made the whole can. It’s delicious for adding into burritos or I also really love using the leftovers as a spread in my vegan grilled cheese sandwich! Adds a whole layer of richness to it 👌 . Hope everyone’s week is off to a good start! 💖 I will be braving the stores later today because we are out of avocado among many other things but that seems the most tragic to me 😄 Who else loves their avocados? 🥑🥑🥑

Post workout snack 🤪 - 300ml water - 1 scoop chocolate protein for those with a chocolate addiction like me - 1/2 banana - some chopped strawberries This is low calorie and high protein, with some extra fruits to help get your 5 a day in. I don’t always add fruit to my shakes as blending takes away a step from the digestion process, which means it’s quickly digested and not very satiating. These fast acting carbohydrates will feel great after a workout and quickly replenish you, and the protein will help with muscle recovery and keep you fuller for longer. 🥧Švestkový dort s povidly 🍯 ~ Ingredience (dortová forma ø18cm) ~ • 60g ovesných sušenek • 50g pohankové instantní kaše • 4 vejce • 50ml kokosového oleje • 100 ml datlového sirupu • 50g erytritolu • 80g povidel • švestky • 500g tvaroh • 150 ml mléka (já zvolila ovesné) • skořice ~ Postup ~ Rozdrcené sušenky smícháme se směsí na pohankovou kaši, přidáme 4 žloutky a kokosový olej. Hmotu vmačkáme do dortové formy tak, aby tvořila i okraje a dáme uležet do lednice. Tvaroh, bílky, datlový sirup, erytritol, povidla a mléko smícháme v jednotnou směs. Vlijeme do dortové formy na připravený korpus a ozdobíme přepůlenými švestkami. You guys won't believe how EASY it is to make your own yogurt in the instant pot!! I'm addicted and don't think we will be going back to store bought after this ! Here is what you need: instant pot 🍶1/2 gallon of milk 🍶1/4 cup already made plain yogurt 🍶thermometer 🍶strainer and coffee filters (if you want thick/Greek style yogurt) THAT'S IT!! THICK AND CREAMY PORRIDGE . This is another super simple and delicious way to use up leftover oat grounds from making your own oat milk (see oat milk post!), but this recipe can also be done with quick oats. . 1/2 cup oat grounds (or quick oats) 1 cup water (probably less for quick oats) 1/2 tbsp honey (or maple syrup) A dash of vanilla extract 1 tsp cinnamon . #whatdiyaeats - BOVINE COLOSTRUM PUDDING : . . Bovine colostrum (thick milk that a cow produces for the first 3 to 5 days after delivering a calf) is full of antibodies, nutrients, proteins and everything essential for boosting immunity and improving gut health. . . Recipe courtesy : @kaaviyavimalkumar❤ . Ingredients: 1. Colostrum - 1 litre. 2. Jaggery - as required. 3. Elachi pods - 2. 4. Dired ginger powder - half tsp. 5. Ground pepper - half tsp. Method: 1. Prepare jaggery syrup by adding jaggery to small amount of boiling water. 2. Add elachi to it and strain once the jaggery gets completely dissolved. 3. Mix the jaggery syrup + dried ginger + ground pepper with the milk and transfer it to a vessel that fits into a wide bowl or a cooker. 4. For steaming, place a wide open bowl filled with two cups of water over the stove and bring it to a boil. 5. Keep the vessel containing milk on top of a trivet placed in the bowl. 6. Close the lid and steam in simmer for 10 to 15 mins or until you get a pudding consistency ( pierce a tooth pick or knife into it. The milk should not stick to it). 7. Once cooled down completely, refrigerate and enjoy ( can be stored upto 7 days max).😋😋😋😋😋😋😍 . . . Note : 1. Use salt in place of jaggery if you dont like sweetness. 2. 👉If you’re not happy with your food choices than only you can make that change. You don’t need ½ hour to make breakfast at home you can make a nutritious shake in under 5 mins. The most common thing I hear is “I don’t have time”. You need to make your health a priority and make the time for yourself. It will take you longer to go out and buy a meal then it would to make a simple 5 minute breakfast at home which is made with real ingredients rather than an unhealthier option with many added ingredients and lets not forget the added oils and excess calories. If I start my day with healthy, nutritious, satisfying meal I find my self more content throughout the day and Im less likely to nibble on less healthier foods. I personally love starting my day with eggs. Eggs are high in protein which keeps me fuller for longer They’re the perfect little package. Both of these options are healthy and nutritious. sprouted black bean dip & roasted root vegetable chips — soluble fiber, beta-carotene, and anthocyanins galore. a well suited combo for the all day quarantine snackers like yours truly. details for the dip: step 1: cover 1 cup dried beans in a bowl of water and add 1 tbsp ACV. let sit for 24 hours. step 2: strain and rinse beans and add to a pot with 4 cups of water. bring to a boil and let simmer for an hour and a half to two hours. continue to add water as needed by 1/2 cup increments until beans are tender. step 3: add cooked beans to a blender or food processor. also add 1/2 cup avocado oil, 1/4 cup ACV, 1 tsp sea salt, 1 tsp cumin, 1/2 tsp coriander, and 1/2 tsp cayenne (more if you like it spicy). blend on high until you get a smooth consistency — you may need to scrape down the sides a few times and add more avocado oil as needed based on your preferred texture. happy snackin!

🍓The season of strawberries🍓 The strawberry season is back, so I decided to prepare this post, to get you to know this juicy fruit and all that it offers to us! . 🍓So why is strawberry such an amazing fruit? ◾Per 100gr. strawberries (less than a cup) we get – 32 kcal, 7.7 gr. Carbs, 3 gr. fibre, 0.7 protein and only 0.3 gr fat. ◾Strawberries also provide a number of micronutrients, such as Vit C, potassium, magnesium and folic acid. In fact, just 1 cup contains 140% of the recommended Daily Value of vitamin C for kids. ▪️▪️Vitamin C is extremely important for growth, body tissue repair, and a healthy immune system. ◾They are also rich in potassium and magnesium, which help reduce high blood pressure caused by increased sodium intake and various other risk factors. ◾Strawberries are also rich in antioxidants including anthocyanins (these compounds give strawberries their bright red colour), which help the body fight free radicals and DNA damage❗ ◾Strawberries can also, indirectly, contribute to a weight loss effort. Although tasty, they contain very little calories. And since they are sweet, they can satisfy our sweet tooth without giving us more sugar and saturate fat. At the same time, the fibre helps us feel full and therefore reduces the tendency for snacking ☺️ . . 💧HOW DO WE WASH THEM?Wash them well under running water ** (this helps remove up to 20% of pesticides). For even better results leave in a bowl of water for 15 minutes or wash with vinegar). . . ◾There are numerous ways to serve strawberries: 🥣BREAKFAST – add them to your milk or yoghurt along with some cereals 🥗MEALS – add them to your salads! (Also try adding some cheese i.e. cottage cheese, the perfect combination!) 🥤SNACK – on their own or prepare a smoothie using strawberry as the main ingredient. 🍫For all the chocolate lovers out there, you can dip strawberries in some melted dark chocolate! . . 📒TIP- When fresh strawberries aren't in season, choose frozen without added sugar! CARROT CAKE COOKIE DOUGH ENERGY BITES: well that’s a mouthful 😂 i had to add “cookie dough” in the name because the texture inside is SO soft + chewy (helloooo picture #2)....these seriously are a must try! i love them as a quick pre-workout snack or tossed in a bowl with some greek yogurt for breakfast. if you can keep them in the house for more than a day, I will be very impressed 😏goodluck hehe ingredients: -1/4 cup mashed banana (~half of a banana) -1/4 cup shredded carrots -1/2 cup oats -1 tsp chia seeds + 1 tsp ground flaxseed (or just 2 tsp of one) -pinch of salt -1/2 tsp cinnamon -2 tbsp plain greek yogurt (@greekgodsyogurt) -1 heaping tbsp of PB (or any nut butter) -2 tbsp almond milk (or any milk) -1/2 tsp baking powder -chocolate chips (optional, but not really😏) . how to: preheat oven to 350. combine all ingredients, roll into balls (about a tbsp per bite) + place on a baking sheet with nonstick spray. i like to add aluminum foil for easier cleanup too! bake cookies for 10 minutes, remove from oven and allow to cool for a few minutes on hot pan. this recipe makes ~9 bites depending on how big you roll them! #simpleeats
