Avocado ‘Nice’ Cream🥑 ———————————————————————— 🌟 1.5-2 ripe avocados diced . 🌟 1/2 cup canned low fat coconut milk . 🌟 1/3 cup of honey . 🌟 2-3 drops of mint extract, I used 5 drops of @younglivingcanada peppermint food flavouring! . 🌟 pinch of salt . 🌟 splash of lemon juice . 🌟 1/3 cup of semi sweet chocolate chips (can sub for dairy free chips to make a complete dairy free ice cream!) . . —> Makes about 2 servings, one scoop each. . . 1️⃣🌪Blend everything BUT the chocolate chips in a food processor or blender. Once smooth fold in the chocolate chips and taste the avocado mixture to make sure it doesn’t taste too avocado-y. Feel free to add more/less of the honey or peppermint to mask the avocado. 2️⃣ Pour into a loaf pan or stainless steel bowl and freeze. 3️⃣ Check every hour on the ice cream. If it freezes for too long it turns rock solid and is very hard to scoop. But if this happens no worries! Igual hace 3-4 años desde la ultima vez que comí puré de patata. Aún recuerdo estar en la cocina de mi casa y mi madre, que había llegado hace nada de trabajar, nos preparaba la cena. Y cuando la veía sacar el cazo rojo significaba que iba a preparar puré de patata. Y, ¿sabéis que? Eran de sobre, eran en polvo. Pero estaban increíbles porque me los había preparado ella. Y ahora que estoy aquí lejos de ellos me viene a la cabeza. Y comprendo que para mi el puré de patata es una comida emocional, porque me evoca a mi infancia. Y me encanta. El puré de patatas huele a mi madre con un moño y su camisón. Aquí va la receta: 🥔Hierve dos patatas peladas en agua con sal. Pasa a un bowl y machaca bien. Añade bebida de coco y sal. Sigue mezclando y machacando bien. Puedes añadirle pimienta u otra especia. 🍲Para el guiso: pocha una cebolla, bien pochada. Añade guisantes congelados, brócoli, zanahoria y espinacas (o lo que sea que tengas ahora en la nevera). Añade alubias o cualquier otra legumbre. 1cda de tamari, 1 lata de tomate, 1/2 lata de bebida de coco y 1/2 de agua. Añade azucar o bicarbonato para rectificar de acidez, sal, especias (cúrcuma) y tapa. Here is a ‘Tasty Tuesday Treat ‘ for you 🍪 . A friend ( @aud141 ) posted a recipe last week and I put my vegan spin on it 🌱 Here is my version: . . ➡️1 cup PB ➡️ 3/4 cup Rolled Oats ➡️ 1/3 cup @vitafibercanada . ➡️1/2 tsp baking powder . ➡️ 1 flax egg ( 1 tbsp flaxseed meal & 2.5 tbsp 💧- stir and sit for 5 minutes) . ➡️ 1/4 c vegan choc chips @enjoylifefoods . ➡️1/2 c salad topper mix ( sunflower seeds, pumpkin seeds and cranberries) ➡️sea salt and vanilla to taste . 👩‍🍳 Bake at 350 for 10 minutes , checking the bottom of the cookies occasionally. . . Of course if you want more chocolate chips you could reduce the seeds, or vice versa. Easy to make ...and easy to eat 😬 These didn’t last long. Even my husband loved these. ( Of course I didn’t tell him they were vegan until he tried them. For some reason anytime I say vegan he immediately says ‘ no thanks ‘....a future post topic ...how vegan-carnivore marriages survive 😜) . . I dropped off some of these for a friend today. Peanut butter cups ✨ . Last night I had such a craving for something sweet 🍫 . I said no to the biscuits cause lets face facts I wouldn’t stop at one! . nothing appealed to me in the goodie jar but then the peanut butter looked at me yes it looked at me 🤭 . And I thought mmmmmm peanut butter cups . A little rumbling around and I found 2 squares of 90% cocoa Lindt chocolate (6 syns) which I melted and divided half the chocolate equally between 2 cases enough to cover the ends and then popped them into the freezer for a few minutes to set . . I then took 1 tbsp of pip&nut smooth peanut butter (4.5) and divide half into each case and topped them with the remaining chocolate on both and into the freezer to set . . The chocolate wasn’t too thick but the peanut butter was and they were really tasty! . . The 2 pieces were 10.5 syns, you could reduce the syn value with less peanut butter and a different chocolate. I found them perfect for killing my craving and filling the gap before bed 🥳

I do love a banana bread! Problem is that it doesn’t last very long! 😜 I always make banana bread with naturally gluten free grains, legumes, nuts and seed flours that pack a punch nutritionally and if you have a high speed blender, it’s so quick and easy to make your own. Use gluten free oats to make oat flour, lentils to make lentil flour, almonds to make almond meal, flax seeds to make flax meal and quinoa to make quinoa flour. Quinoa contains all of the essential aminos acids which many plant sources of proteins do not so combined with your favourite clean protein powder, you can easily increase your daily protein intake. See below for gluten free, dairy free banana bread 3 ways. 👉PROTEIN BANANA BREAD See image for the ingredients. Blend some quinoa to make your own quinoa flour or you can buy your own. (You can replace with any flour here but quinoa is high in protein for this version) Mix the dry Ingredients together, combine with the wet. Bake for 40 - 50 mins at 175 degrees C / 350 F (Depending on how sweet your protein powder is, you can leave out or add the coconut sugar) I used @vivolife perform vanilla protein powder. 👉OAT BANANA BREAD WITH DARK CHOC CHIPS 3 bananas mashed 3 tbsp ground flax seed 80ml almond milk or any plant milk 80mls coconut oil melted 3 tbsp maple syrup 3 tsp vanilla extract 50g gluten free rolled oats 2 tbsp coconut sugar 1 tsp baking soda 1/2 tsp baking powder 210v oat flour (oats blended in blender) 2/3 tsp sea salt Couple squares dark chocolate like green and blacks chopped Mix dry ingredients and then wet separately as before, combine and bake for 40-50 mins at 175 C / 350 F. 👉NUTTY VEGAN BANANA BREAD 3 ripe medium bananas, mashed ½ cup almond milk, plain, unsweetened ¼ cup coconut oil, melted 2 tablespoon chia seeds 1 teaspoon vanilla extract ¼ cup coconut sugar 1 1/4 cups almond meal 1 teaspoon baking soda ½ teaspoon baking powder ½ teaspoon cinnamon Pinch salt (optional) 2 tablespoons sunflower seeds 2 tablespoons shredded coconut 2 tablespoons sliced almonds 6 tablespoon chopped walnuts Combine dry with wet ingredients. Bake for 40-50 mins at 175 F / 350 C Enjoy! Xx

Gluten- free, dairy- free Banana Nut Bread. Preheat oven to 350, lightly coat parchment paper with coconut oil and line your loaf pan. In one large bowl, combine: + 3 very ripe mashed bananas (I had 2 so I added 3 TBL unsweetened organic apple sauce!) + 3 eggs (vegan option below) + 2 tbl maple syrup + 1 tbl melted coconut oil + 1/2 tsp vanilla extract + Mix well then add dry ingredients below- folding in 1/4 cup unsweetened almond milk until you reach desired consistency. . + 2.5 cups fine blanched almond flour + 1/4 cup flax meal + 1 tsp cinnamon + 1/2 tsp sea salt + 1 tsp baking soda +1/4 cup walnuts- more if you like! *Vegans can swap eggs for chia or flax “eggs”. Just combine 1 Tbsp chia seed or flaxseed meal with 2.5 Tbsp water per egg needed, mix and let set for 5-7 minutes to activate. Cook for 50 minutes to an hour depending on your oven- use a toothpick to check if the bread is fully cooked- if it comes out clean- it’s ready! So this morning I ended up making this thing I would probably call a pumpkin spice & mixed nuts cake🤣 I mixed in so many ingredients I can't even remember everything, but it turned out so amazing I couldn't believe my mouth!!! . First I graded -boiled pumpkin -raw zucchini . Then I blemded with a mixer -almonds -walnuts -brazil nuts -a few macadamias -dried appricots -dried plums -a few scoops of fresh papaya -an egg -water -salt -cinnamon . Finally I mixed the blend with the veggie gradings, a bit of apple vinegar, whole wheat flour, oats and baking soda . Making a simple dessert for the family or friends with simple ingredients that can be found easily at home can switch our mood a little bit and draw a simple smile on our face😊 lets try to be optimistic more about the coming days and satisfy our quarantine with long days home with a simple dessert🥧🍫 Receipe⬇️ Ingredients Crust * 1 cup of oats flour or grind your own flour in the processor * 1/3 cup of raw almonds * 1/2 cup or more of pitted dates * 2 tbsp of raw honey * 2 tbsp of unsalted butter * 2 tbsp of raw cocoa powder Filling * 1 cup of thinly sliced strawberries * 2 or 3 small bananas thinly sliced * 1/2 lemon squeezed Topping * 1 pack of low fat chocolate whipped cream + whisked for 4-5 minutes with 100 ml of skimmed milk * 4 digestive biscuits crushed inside the topping Optional: 2 tbsp of crushed walnuts, crushed biscuits and some fresh strawberries Instructions 1. For the crust add th3 first 3 ingredients and process in the food processor for 5 minutes on high speed and then add the rest of your ingredients. Process for another 3-4 minutes, press your crust into a round pan with a spoon and make sure your crust is high at the ends. 2. Add your sliced fruits with a your lemon squeezed 3. For the topping whisk your chocolate whipped cream with your prefered milk until its think and add your crushed biscuits 4. Honey-Lemon Curd is yummy.⁠ Calories, calories, calories. All I want is to get better, no more pain from acid reflux, no more wishing I could eat what I want, and no more feeling lost in life. ⁠ ⁠ Foods do have calories but when you have acid reflux counting them doesn’t help with the pain or doesn’t help with the burning. What helps is looking at food as Nutrition which is much simpler and so healing. It is a big plus to get that nutrition particularly when you have gut issues and emotional stress.⁠ ⁠ I teach my clients that nutrition does not mean deprivation. When I overcame my acid reflux I learned that I did not have to live without desserts and neither my kids. ⁠ ⁠ My kids were having a hard time. So I followed the voice in my head to make more desserts and purchased a recipe book. We made a lot of desserts and had fun making it together.⁠ ⁠ They were learning and I was learning and the biggest part was I had less pain from acid reflux. 🍌🍫BANANA BREAD WITH CHOCOLATE CHIPS🍫🍌 Hey guys! Today I made one of my favourite recipes ever! My soft and sweet banana bread. It has only 236 calories per 100g! It’s so easy to do and absolutely worth it, here is the recipe❤️ -170g of peeled ripe banana -5g of coconut oil -50g of dark chocolate -150g of wheat -2 eggs -Sweetener of choice -1tsp pf baking powder—✨Add all the dry ingredients and mix. Separate the yolks and the whites in different bowls. Whisk the egg whites until stiff and in other bowl, mash the banana and mix it with the coconut oil, the egg yolks and the sweetener. Pour the dry mix with the banana one and blend everything together till it’s homogeneous, then slowly add the egg whites and mix. To finish add the chocolate in chunks to everything. Put it in a baking pan with baking paper and put it in the preheated oven for 20 minutes at 140°. Don’t forget to check with a knife when it’s done. Take it out, let it cool for some minutes and enjoy!

HEALTHY NO BAKE BROWNIES . 📝Ingredients * 2 cups healthy homemade nutella * 1/2 cup sticky sweetener of choice * 3/4 cup coconut flour * 1/2 cup canned coconut milk * 3/4 cup chocolate chips of choice . 👨‍🍳Instructions 1. Line an 8 x 8-inch pan with parchment paper and set aside.
 2. In a large mixing bowl, add your smooth healthy homemade Nutella, sticky sweetener of choice and coconut flour. Mix very well until a thick, gooey batter remains. If the batter is too thin, add a little extra coconut flour. If the batter is too thick, add some liquid or extra syrup. 3. Transfer the batter to the lined pan and spread out using a spatula. Refrigerate. 4. While the brownie base is in the refrigerator, prepare your half cup of coconut cream/milk. In a microwave-safe bowl or stovetop, combine your chocolate chips and coconut milk and melt until combined.
 5. Pour your chocolate ganache over the brownie base and refrigerate until firm. Once firm, cut into 10 bars. Healthy nutella . 📝Ingredients * 3 cups raw unsalted hazelnuts * 1 cup granulated sweetener of choice * 1/4 cup cocoa powder * 3/4 unsweetened almond or coconut milk . 👨‍🍳 Instructions 1. Firstly, toast your hazelnuts at 175C/300F for 15-20 minutes, until fragrant and toasted. 2. Allow to cool 3. Blend or pulse for 5-10 minutes, until it resembles a smooth and creamy texture. Ensure you regularly scrape down the sides using a rubber spatula. 4. Add your granulated sweetener of choice and cocoa powder and blend for 4-5 minutes. Add your unsweetened milk of choice and blend until a thick and creamy texture remains. Do not over blend, unless you want a super silky and smooth ‘Nutella’. 5. For the granulated sweetener of choice, I used monk fruit sweetener, which is stevia-based and keto-friendly. .
