Snacking on that handful of almonds, but still hungry? 😩 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ I have to be very honest here, a handful of nuts has never filled me as a snack🙅‍♀️I’m always left feeling unsatisfied and ready to have another few snacks! 😜 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Now don’t get me wrong here, nuts are an amazing source of healthy fats and are filled with essential oils and minerals❤️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ However, I find them extremely easy to over eat, and are caloric dense for what they are! 🤷‍♀️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ This is why I like to have the nuts , ALONGSIDE something less caloric dense- to give me that VOLUME. VEGGIE TOMATO CURRY Oooo a new recipe that I’ve never tried! That’s one good thing to come from this world lately right?! What have you been doing to keep busy??? PLS I NEED IDEAS. Anyways this is brown rice, mixed veg, spinach and roasted potatoes in a tomato curry sauce. I generally followed a recipe for “curried chickpeas with spinach by Budget Bytes” (google that if you wanna check it out) but obviously modified considering there ain’t even chickpeas in here🤷🏽‍♀️ I added a lil coconut milk, turmeric, black pepper, and cayenne.

Miren el color de este carpacho de naranja y betarraga ☄ y para que les cuento el saboorrrr! Exótico, nuevo, fresco: perfecto para sorprender en un picoteo 🔥 Aqui les dejo la receta! Ingredientes: - 2 naranjas cortadas en rodajas finas - 1betarraga cortada en rodajas finas (con la mandolina quedan perfectas) - 1 taza de jugo de naranja - 1 cucharadita de vinagre de arroz - 1 y 1/4 cucharadita de aceite de sésamo - 1/4 cucharadita de pimienta cayena - cebolla morada el pluma (bien delgada) - hojas de menta - sal de mar Preparación ⚀ Sancochar en agua hirviendo las betarragas, y en un pote aparte amortiguar la cebolla con agua fria y sal. ⚁ En un sartén, reducir el jugo de naranja hasta que espese (Alrrededor de 10 minutos) y agregarle la pimienta cayena. Dejar enfriar ⚂ Verter el jugo en un recipiente y agregar el vinagre, y el aceite. Revolver bien. ⚃ colar las betarragas y las cebollas. En un plato grande ordenar, intercaladamente, las betarragas y las naranjas. Agregarle por encima la salsa de naranja, esparciendo bien. ⚄ sobre todo esto, agregar las cebollas de manera repartida, la menta y un poco de sésamo. ⚅ Servir frio y reposado. Y’all don’t even UNDERSTAND how good this dinner was. My quarantine blues dissolved for the entire 15 minutes I ate this. Like sweet baby hay-zeus!!!! 🍋 TORTA MATERA INTEGRAL DE LIMON Y ALMENDRAS🍋 ✨El día reee pinta para hacer una tortita para la merienda, la hice con lo que tenía en casa porque domingo y de cuarentena no hay lugares para ir a comprar. ✨Estos días, hay que aprovechar lo que uno tiene en casa ✨Lo casero siempre es más barato y saludable, tener en cuenta antes de comprar galletitas, es mejor hacerlas. Aprovecha y hace esta torta que quedó tremeeeendaa 👇🏼👇🏼 INGREDIENTES 👉🏼1 taza de harina leudante 👉🏼1 taza de harina integral 👉🏼1 cda de polvo de hornear 👉🏼2 huevos 👉🏼¼ taza de aceite 👉🏼10 cdas de jugo de limón (no tenía limón en fruta, si tenés usa 1 limón y su ralladura) 👉🏼¾ taza de azúcar común o mascabo o 10 sobrecitos de edulcorante o 2 cdas soperas de edulcorante líquido sucralosa 👉🏼Esencia de vainilla 👉🏼50 gramos de almendras PROCEDIMIENTO 📌Por un lado mezclar los secos, la harina, el polvo de hornear y el azúcar y por otro los líquidos, los huevos, la esencia, el jugo de limón y el aceite 📌 Después mezclar todo! Y agregar las almendras. 📌 Colocarlo sobre un molde previamente aceitado y cocinar en horno medio por 50/60 minutos por 40 minutos. Dejar enfriar y LISTOOOO!!!! 100% sure this Spicy Black Bean Burger from @veganosity is the best black bean burger ever. Usually they’re kinda mushy and just not great, but this was really perfect and packed with vegetables. We are them with roasted veggies last night and happily again tonight with broccoli-cauliflower tots and fresh rolls for an easy dinner. Banana Bread 🍌 . One of the classics made GF, DF and refined sugar free . INGREDIENTS: . 1 1/2 cup GF self raising flour, 1/4 cup coconut sugar, 1 tsp cinnamon, 125g nuttelex melted, 2 eggs, 3 ripe bananas METHOD: . Preheat oven to 180 degrees Celsius. Line loaf pan with baking paper. . Combine flour, sugar, cinnamon then whisk in nuttelex and eggs. . Mash bananas with a fork than fold in and spoon batter into the tray. . Bake for 45-50mins or until a skewer inserted comes out clean. . Set aside for 10mins to cool.

I rarely if EVER measure my ingredients, start with less and add more as desired ————————————————— 💚Tip: the key to this dish is patience when caramelizing onions. Keep it on low heat and don’t change it! When the onions become translucent add a pinch of cane sugar if you want it sweeter but it’s totally optional. Gently stir onions every couple of minutes for one quick turn then leave them alone. They’re done with most are a beautiful light brown. ✨COCONUT RED LENTIL SOUP✨⁣⁣ ⁣⁣ Another easy lunch or dinner idea! I’ve found it’s really difficult to get all the ingredients I need whilst in quarantine, so I’ve been creating recipes with ingredients that don’t expire quickly. Soups are amazing because they’re filling and arguably one of the easiest, stress-free meals to cook. ⁣⁣ ⁣⁣ The ingredients below are for more than one serving, so put the leftovers in a mason jar - I like to double this recipe so I have enough for a couple days😊⁣⁣ ⁣⁣ INGREDIENTS:⁣⁣ 1 cup red lentils⁣⁣ 1 onion diced⁣⁣ 2 tomatoes diced (canned tomatoes are fine too)⁣⁣ 1 cup packed spinach⁣⁣ 2 tbsp minced garlic⁣⁣ 3 tbsp minced ginger⁣⁣ 2 tbsp coconut oil⁣⁣ 1 cup coconut milk⁣⁣ 1 tbsp coriander⁣⁣ 2 tbsp curry powder⁣⁣ 1 tsp cayenne powder (optional)⁣⁣ 1/2 cup shredded coconuts (optional)⁣⁣ 4-6 cups filtered water⁣⁣ sea salt⁣⁣ ⁣⁣ ⁣⁣ STEPS:⁣⁣ ✨heat coconut oil in a large pot on low heat. once hot add diced onions and minced garlic. after 5 min, mix in the ginger, coriander, and curry.⁣⁣ ✨add 4 cups of water to loosen everything up, then add in lentils, sea salt, and shredded coconuts. if you don’t have shredded coconuts that’s totally fine - the recipe is still delicious without it! ⁣⁣ ✨after about 20 min, add in spinach and diced tomatoes. be sure to keep an eye on the consistency and add more water if it becomes too thick. ⁣⁣ ✨let mixture simmer for another 5-10 min. it’ll be done when the lentils are at a nice soft consistency. add more sea salt to taste, and serve alone or with a dollop or vegan yogurt!

Y como hoy es 29 de ñoquis... pintó guiso de lentejas. Estamos pasando por momentos de poca variedad de vegetales (por no salir mucho a la verdulería que además está algo desabastecida) así que una vez más salió excursión a la cocina a ver qué se podía cocinar. Había una mezcolanza medio rara, y qué se hace cuando tenés muchas cosas que nada que ver? Un guiso. Había unas lentejas que ya se estaban por poner feas y unas papas. A partir de ahí ya vale todo. INGREDIENTES 🍅 3 cebollas chicas/medianas 🍅 2 papas medianas/grandes 🍅 2 tazas de lentejas cocidas 🍅 2 zapallitos 🍅 1 berenjena 🍅 1 tomate redondo 🍅 1 taza acelga cocida 🍅 3 dientes de ajo 🍅 1cm de jengibre rallado 🍅 1 taza caldo de verdura 🍅 1 1/2 taza salsa de tomate 🍅 2 hojas de laurel 🍅 pimienta 🍅 pimentón ahumado 🍅 comino 🍅 tomillo 🍅 orégano PREPARACION 🌱 Saltear con un poquito de caldo la cebolla y el ajo. Una vez doraditos agregar el jengibre, el zapallito, la berenjena y el tomate cubeteados y cocinar revolviendo por un par de minutos. 🌱 Agregar la papa (y si las lentejas están remojadas, agregarlas ahora también. Si están cocidas van sobre el final para que no se pasen de cocción y se desarmen). 🌱 Cubrir con la salsa de tomate + el caldo de verdura y dejar hirviendo con la tapa puesta unos minutos. 🌱 Condimentar a gusto con las especias que quieran. Dejar a un hervor suave por 25'/30' revolviendo cada tanto. 🌱 Pasados los 30' destapar y dejar que reduzca hasta el punto que les guste. 🌱 Ni bien estén las papas, ya está listo para comer, pero si lo dejan un rato más los sabores se concentran y acentúan. Una vez que esté listo, agreguen la acelga y revuelvan por 1' así se cocina un poco. 🌱 Servir con jugo de limón (para aprovechar mejor el hierro de las lentejas) Cuando consigo acelga linda y barata, o viene mucha en los bolsones y sé que no voy a llegar a comerla, separo las pencas cortadas en rodajas (que mando al freezer crudas) y las hojas (que mando al freezer cocidas en "bollitos" del tamaño de una porción). Tenía salsa casera congelada de la última vez que tuvimos mucho tomate a punto de pasarse. Si usan un puré de tomate fíjense de agregarle algo de azúcar.

Creamy avocado pasta 📷 by @hello.kalin 🌿🌿 New idea of using avocado 🥑 Tag a friend who is a huge pasta lover 😉⠀ .⠀ Ingredients: 1 ripe avocado • 2 minced garlic cloves • 1/2 cup fresh basil • juice from 1 lemon • handful raw spinach • 2 tbsp evoo (or sub veggie broth until you get a nice consistency) • salt & pepper to taste • 1 zucchini, thinly sliced • 1 box / 8 oz chickpea pasta or pasta of choice 🥑⠀ .⠀ .⠀ Directions: cook pasta, drain and set aside. Meanwhile, heat a non-stick skillet over medium-high heat. Add chopped zucchini with some salt & pepper and cook until browned (a dash of oil is optional). In a food processor, combine avocado, garlic, basil, lemon juice, spinach and evoo. Process until smooth. Toss on pasta and add zucchini on top. • BARRETTE DI AVENA E ARACHIDI 🥜 Ingredienti 1/2 tazza di farina di avena 4 cucchiai di burro di arachidi 2 cucchiai sciroppo d'acero 50gr di cioccolato fondente Procedimento 1. Unire tutti gli ingredienti in una ciotola e formare un'impasto liscio e compatto. Formare un rettangolo e riporre in frigo. La nostra base è pronta. 2. Sciogliere il cioccolato. 3. Versare il cioccolato fuso sulla base e ripetere di nuovo il tutto in frigo fino a che anche il cioccolato si sarà solidificato. Ora possiamo tagliare le barrette e conservarle in frigo o congelarle. • BARRETTE RAW AL COCCO Ingredienti per la base 2 tazze di cocco rapè o farina di cocco 1/4 tazza di latte di cocco 3 cucchiai di olio di cocco 4 cucchiai di sciroppo di agave o acero 1/2 cucchiaino di estratto di vaniglia Un pizzico di sale rosa Ingredienti per la marmellata raw 2 tazze di frutti rossi congelati 3 cucchiai di semi di chia Procedimento 1. Per la base unire tutti gli ingredienti in un frullatore e pressare il composto ottenuto su un contenitore rivestito di carta da forno. Posizionare in freezer per un'ora mentre prepariamo la marmellata raw. 2. Dopo aver sciacquato e asciugato i frutti rossi, frullarli insieme ai semi di chia. Stendere ora la marmellata raw sopra la base e lasciare riposare per un'altra ora in freezer. Ora le nostre barrette sono pronte per essere tagliate. Con questa dove otterrete circa 12 barrette. 😋 Nb: si conservano in frigo per 7 giorni.
