Been totally MIA on here recently but I’ve been having some gut health issues over the past week and a half which have just been the worst (I now totally appreciate the feeling of having a healthy gut), and to top it off I’m just starting to recover from my second cold of 2020. Lucky me😂 In the past, an old version of me would have totally let go. Feeling extremely bloated 24/7 (like pregnant lady level) and cramps in the stomach, I probably wouldn’t have stepped foot in a gym (feeling totally uncomfortable in my gym clothes) and would have ended up binging on unhealthy foods. Because “the bloat had already reversed all my hard work at the gym so I may as well go all out.” Another version of me would have tried to ‘beat the bloat’ by fully restricting my food, going on crazy diet cleanses and training really hard in the gym everyday. Now: still not 100% better but I am fuelling my body with nutritious whole foods (no restriction!!), moving my body everyday (whether it’s at the gym or going for a walk) and most of all just LISTENING TO MY BODY🌸🌱 Hopefully back to regular posting soon, and if you’re reading this and have made it this far, I hope you have a lovely day/night🤍

🌱 NUTTERS 🍓🍢 🍽️ Yesterday for my dad's 70th birthday we took him to a gourmet restaurant, Had to ring up in advance so that they would provide vegan options as they don't have a menu (it's about time that they make one in this day & age!) You start by saying your likes/dislikes so I said I love mushrooms & I don't like hot/spicy. ✍️ so going backwards - Dessert - a fruit crumble - which was warm fruit juice with crumbly bits on top, sounds bad describing it but it was nice & sweet, it made up for the two other parts to the dessert - melon & pear dishes which are the two fruits I don't like! 😭 (wish I told them beforehand) I was disappointed as everyone else got sticky toffee & ice-cream & other 'proper' mini desserts other than fruit & it is so easy to make dairy/egg free versions nowadays that I thought they could have done better. Long gone are the days where sorbet is the vegans only option. ✍️ Main - fat chips with tenderstem Broccoli & spinach "tart" - was just the pastry with veg on top but tbf veg is always nice & the pastry was tasty too just could have had more substance like a quiche made with tofu instead of 🥚but it was still a good dish. I'm much more of a the skinnier the chip the better kind of gal tho tbh. ✍️ 'Main before the other main' a vegan favourite that you can't ever really go wrong with - risotto - in this case pea & parsley with blood orange sauce. - very creamy & garlicy which is what you want with a good risotto, but I wish they'd have put mushrooms with it as I'd kind of requested mushrooms at the start. ✍️ Starter I had a bean dish that I can't really explain but it was very plain & the white beans didn't taste like they had any sauce with them & I don't like plain beans - Who does? When these were put Infront of me I thought they were arancini which I love so boo to beans 👎. Soup was tomato & basil - basic but good. Bruschetta type apertisers were fab tho. 👍 £48 for the gourmet menu. Overall good but can do better. I'd love to try more gourmet plant based restaurant food so if anyone has any suggestions please let me know 😁

🌱 Even though it’s not nearly #fryday there’s no complaints here! Serving up some oil-free maple-glazed sweet potato fries in our house tonight with smashed avo & cashew sour cream🍠🥑😋. . • Plant based, vegan, oil free, dairy free, gluten free, soy free, egg free, refined sugar free. . ✖️ Oil-Free Maple-Glazed Sweet Potato Fries ~ Wash & scrub 2-3 large sweet potatoes. Pierce a few times with a skewer. Place in a large pot, cover with water & boil until tender, about 15 minutes - the time will vary depending on the size of your potatoes, use a skewer to test them from time to time. Preheat oven to 200°C fan-forced. Carefully remove S.P’s from pot & allow to cool slightly until easy to handle. Cut the potatoes into chunky fries, coat in seasoning ~ I used a mix of onion, garlic & cumin powders. Place on a lined baking tray & bake for 30-35 minutes, flipping at the halfway point. Cooking time may also vary slightly depending on the size of the fries & your oven. Remove from oven & using a pastry brush lightly coat with maple syrup. ✖️ Homemade Cashew Sour Cream ~ 1 heaped cup natural unsalted cashews {soaked in boiling water for minimum 20 minutes} 1/4 cup + 1 tbsp fresh lemon juice 1/2 cup water 2 tsp nutritional yeast @marigoldengevita 1/4 tsp salt ~ Place all ingredients in a high speed blender. I use a Vitamix which works perfectly. Blend on high for about 5 minutes or until the mixture is smooth but thick. Stop to scrape down the sides when necessary. Tofu, Noodle & Veggie Bowl with Ginger Nectarine Vinaigrette by @janetsmunchmeals 🌿 A perfect way to use up some leftover veggies and noodles! Served with a super tasty, sweet and tangy vinaigrette. . . Recipe below: . Saute 1 block tofu cut in 1cm cubes, and a small package sliced shiitake mushrooms in bit of oil, browning on a few sides. Roast a small bag of brussel sprouts (cut in half) and bundle of asparagus (tough bottom end trimmed off). Chop half of a seedless cucumber. Dressing (2-3 servings): Blend the following 2 T rice vinegar 1 T sesame oil 3 T avocado oil 1 T coconut aminos 1.5 tsp grated fresh ginger 1 garlic clove 1 nectarine* 1/8 tsp each kosher salt and pepper * cook 1 diced nectarine over medium-low heat with a dash of water for about 3 to 5 minutes covered, until very soft. Plate all the veggies over baby spinach or other greens, along with a bit of noodles. Drizzle dressing over top. Top with red chili flakes and fresh mint. . Great start to the day. @morrisons avocado smash on toast with pumpkin seeds ( I really enjoy the Morrisons guac and its the only store brought one I've found that doesn't contain milk oddly enough so I thought I'd try their avo smash whilst I was at it). @richmond_foods meat free sausages which are actually the best I've tried, the taste, the texture, the flavours it was just the absolute best. Pan mix of fresh mushrooms, yellow pepper, red onion, red chilli, spinach and cherry tomatoes. 🌱😍 One Pot Orzo With Grilled Vegetables Topping! 📷 by @veganmum.foodblog Recipe: (6-8 port.) * 3 tbsp vegan butter * 400 ml coconut milk * 600 ml broth * 200ml white wine * 4 chopped cloves of garlic * 450 g of Orzo * 3 tbsp lemon juice and a lemon zest * 4 sprigs of thyme * 1 handful of green peas (frozen) OVEN BAKED VEGETABLES * 1 fennel bulb quartered * 200g cherry tomatoes cut in half * 1 yellow pepper cut into strips * 1 zucchini * 1 tbsp white balsamic vinegar * 1tbsp garlic powder * 1tbsp smoked paprika powder * 5tbsp olive oil * Salt and pepper TOPPING * Yoghurt dressing (250g soy yogurt, 3 tbsp vegan mayonnaise, salt, pepper, 1 teaspoon maple syrup) * Olives and pine nuts PREPARATION 1️⃣Heat the oven to 220 C. 2️⃣Place the vegetables and the remaining ingredients in a bowl and mix everything well Put it in the oven for 16 min. After 8 minutes you switch to the grill function. ORZO 1️⃣Heat butter in an ovenproof deep pan. 2 scharf Fry the garlic and peas. After about 1 minute, add the orzo and thyme and fry everything golden / brown. (5min) 3️⃣Add the coconut milk, white wine, 3 tablespoons of lemon juice, lemon peel, onion spice, salt, pepper and Add garlic powder. 4️⃣ Now slowly add the 500ml broth and boil everything. Recipe (yields 3-4 servings)⁣ Ingredients:⁣ 🍃Kombu dashi⁣ ~ 8 caps of shiitake mushrooms⁣ ~ 2oz* dried kombu, clean with a slightly damp towel⁣ ✔️In a pot with 8-10 cups of water, place both ingredients in & turn on the heat. Right before it comes to a hard boil (a crucial step to prevent the stock from turning slimy), turn off heat & drain stock to a bowl, set aside. Save leftover in a jar, if needed. *I love kombu, so I used the whole pack.⁣😅 ⁣ 🍃Ramen broth (may prep ahead of time without milk, inspired by justonecookbook.com)⁣ ~ 6-8 stalks chopped scallions, white & green parts separated ⁣ ~ 1.5 tablespoons grated ginger⁣ ~ 1 tablespoon finely minced garlic⁣ ~ 4 tablespoons ground sesame seeds (used a small pestle & mortar)⁣ ~ 1 tablespoon *hot bean sauce/paste 'doubanjiang'⁣ ~ 1 tablespoon white miso paste⁣ ~ 4 cups of ginger miso broth (used @traderjoes brand or replace with more kombu stock)⁣ ~ 4 cups kombu stock⁣ ~ 1-2 cups of unsweetened plant based milk (used cashew)⁣ ~ toasted sesame oil (used Kadoya brand)⁣ ⁣ ✔️In a heated pan with 3 tablespoons sesame oil, sauté white part of scallions, garlic & ginger until fragrant. Add miso broth, kombu stock, miso paste, hot bean sauce, ground sesame seeds & let simmer for 5-10 mins. Blend mixture (optional). Season accordingly with miso/bean sauce. Then add in milk, stir until well combined & turn the heat off. ⁣ 🍃Other ingredients⁣ ~ Noodles of your choice (used sunnoodles brand) - cooked based on package instructions⁣ ~ 1 pack firm tofu, drained & cut into cubes. Then, dip tofu cubes in cornstarch & fried, season with salt⁣ ~ sautéd mushrooms from kombu stock (no waste food😁) & chopped scallions (green part)⁣ & sesame seeds ⁣ Serve warm, enjoy!🤩 *use non spicy bean sauce/paste for no heat.⁣ . Vegan Gluten Free Carrot Cake by @emerson_cooks 🧡 . 1 cup buckwheat flour 1 cup GF flour 1/2 cup almond meal 1 cup coconut sugar 2 tsp baking powder 1 tsp baking soda 2 tsp cinnamon 1 tsp all spice 1 ripe banana 1 tsp vanilla 1 cup oat mylk 1 chia “egg” (1 tbsp chia seeds mixed with 3 tbsp water) 1/2 cup avocado oil or coconut oil 2 cups grated carrot 1/2 cup chopped walnuts (optional) Coconut cream topping: 1 cup coconut yoghurt 2 tbsp maple syrup (light agave would also work well) 1. Preheat oven 180C/360F. 2. Combine the flours, almond meal, baking powder, bi-carb soda, spices and sugar in a bowl and set aside. In a blender add all of the remaining wet ingredients and blend slowly to incorporate everything. Add the wet mix to the dry and stir to combine, lastly, stir in the grated carrot and chopped walnuts. Line a slice tray with baking paper and pour the mix into the tray, smooth out the top with a spoon and bake for 40 minutes or until a skewer inserted comes out clean. Allow loaf to cool. 3. To make the creamy topping, start by whisking the coyo with an electric beater, as the mix starts to double in size add in the maple syrup and whisk until light and fluffy! Happy Monday my dear friends! ❤ How was your weekend? I ate something wrong in a restaurant yesterday and didn't feel well all afternoon. I feel sick everytime I go to that place and keep coming there anyway. I always say that it was the last time and then I go there again. It's the only vegan place that is close to my home, so this might be the reason. But this time was really the last time! No added sugar or oil super banana bread granola Had 3 ripen bananas and granola was the only thing I could think of to be left at room temperature for weeks. ✨Idea de Vrunch -V de Vegano-✨ ¡Feliz lunes bellos! Hoy quería compartir otra idea de vrunch fácil que también podéis aplicar a un plato combinado para almuerzos o cenas 🍲. Muchas veces con las preparaciones que tenemos listas o los restos que nos quedan en la nevera, podemos preparar algo delicioso, saludable y completísimo como mi combo de hoy. ✨ ¿Cómo puedes construir tu propio plato? Incluye proteína vegetal de calidad, vegetales y fruta, algún cereal, semillas y frutos secos y grasas saludables. ¿Fácil no? En mi vrunch de hoy 👇🏻: 🌿 Scramble tofu: simplemente desmenuza el tofu con los dedos, añade un poso de sal, pimienta, curry y cúrcuma y saltea en la sartén con AOVE. 🌿 Tomate cherry y cebolla al horno. 🌿 Aguacate con semillas de sésamo. 🌿 Guisantes salteados con un chorrito de salsa de soja. 🌿 Unos poquitos de garbanzos especiados (tenéis la receta en mi feed). 🌿 Un zumo de naranja natural, un kiwi y un trocito de pan de masa madre.

Kids really are no side job. Everyone should know that. But you might think you'd be able to squeeze in some other activity here and there, like doing some postpartum exercises, having a quick snack or even making lunch. But it seems that I'm incredibly unlucky with my kids sleeping behaviours. My 6 weeks old slept only an hour from waking up in the morning until now - 12 hours!!!... I didn't have more coffee than usual and haven't done anything different today - besides writing a list of things I wanted to do while baby is napping.... That might just be law of attraction in action.. Worrying that he might not sleep keeps him awake... Very peculiar..... He only let me sit down for lunch 25 minutes. I am very tired now.... and hungry. Breastfed him so many times today to send him off to sleep which only left me hungrier and baby fuzzier... Sometimes you just wanna eat and cry at the same time... 😭 . In meines muss zwingend viel frischer Dill rein. Mit dem Knoblauch könnt ihr selber variieren wir benutzen immer reichlich! Aber nun zum Rezept. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ich benutze folgende Zutaten: ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 Becher Alpro Skyre Style 1 halbe Salatgurke 1 Knoblauchzehe (ich habe 2 genommen) 1 halber Bund frischer Dill optional geht auch getrockneter, schmeckt aber dann nicht so aromatisch Salz Pfeffer frisch gepresster Zitronensaft Oregano ein paar schwarze Oliven zur Dekoration gutes Olivenöl zum beträufeln ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Als erstes nehmt ihr die halbe Gurke wascht diese gut ab und raspelt sie mit Schale klein . Die Gurkenmasse salzt ihr jetzt und stellt sie auf Seite. Dann nehmt ihr den halben Bund Dill wascht diesen auch gut ab und schüttelt ihn trocken. Dieser wird dann mit einem Messer klein geschnitten. In einer Schüssel mischt ihr nun den Joghurt mit dem frischen Dill presst die Knoblauchzehe und gebt sie dazu. Das ganze schmeckt ihr nun mit frischem Zitronensaft Salz und Pfeffer ab. Zum Schluss drückt ihr die Gurke gut aus damit das überschüssige Wasser abgeschüttet werden kann. Nun die Gurkenmasse unter den Joghurt heben alles gut verrühren. Minestrone 😍🌱 . I'm so addicted to the instant pot. Last night I pre-made the beans for this soup FROM DRY in half an hour (if you're vegetarian/vegan this is a game changer). . Ingredients: 1 onion 3 cloves garlic 2 carrots Half a zucchini Handful of green beans 1.5 cups cooked beans (any will do, I used pinto) 2 cups slightly undercooked macaroni noodles 2 vegan sausages 1 can fire roasted tomatoes 1 cup frozen corn 2 - 3 tbsp tomato paste Oregano Thyme Bay leaf Handfull fresh parsley 8 cups (ish?) veg stock (I used water and better than bouillon no chicken stock) . Prep/dice all the things. Slice vegan sausage (I used the Mexican chipotle Fieldroast brand - it's quite spicy but pairs well with the mild soup). Brown sausage in a separate cast iron pan on medium with a little oil. .  Saute onion in instant pot (or regular soup pot) in vegan butter for 2 mins. Add garlic, carrot, and green beans and continue to saute for a few more mins (bottom of pot will start to brown). . Add the rest of the ingredients except the fresh parsley. Adjust amounts/ingredients as you prefer. I added the stock last and added liquid until the "full" line (didn't really measure the cups). Set instant pot to pressure cook for 6 mins. If making soup in a regular pot you know what to do. . When the steam has released, check veggies to make sure they're cooked/not too firm. Add chopped fresh parsley. Adjust seasonings to taste. . I used to be busy before I came here. So busy, that preparing meals was a major chore. Three times a day. It felt like work. Even though I cared so much about what my family ate, I could barely go a couple of days without succumbing to ordering food or getting take-out for dinner. I was busy... Not an excuse. It was my reason. A funny thing happens when you slow down. Of all the things there's more time for, food preparation stands out. I find myself doing all the things I used to ponder who on Earth actually has time to do in this day and age. Like, making humanure compost to create soil where there was none... in order to plant seeds saved from the previous year... in order to grow the organic food to put onto our plates... in order to keep our bodies, minds + souls happy and healthy... and then continue the beautiful cycle endlessly, effortlessly, doing good for us and the environment simultaneously. City-girl-me would've cracked up at the mere sound of the word humanure let alone the thought of me ever loving living this simple slow life so much. But there's just no denying it.
