Trying sooo hard to incorporate more salads into all of our diets. Every day this week we are doing salad lunches. I made up a big batch of marinated tempeh, prepped all the veggies and a bunch of rather add it’s so it’s easy to throw together each day and have some variety. For the tempeh 👇🏻 Cut and put into a container with coconut aminos, paprika and a little garlic powder. I let mine marinate for an hour then sautéed for a few mins. Last for a few days in the fridge so it’s a great option to have prepped to throw on salads, in sandwiches, stir fries etc..

This dinner took 30 mins total including prep. The pasta is made of gluten free, organic chickpeas & lentils and contains 23g of protein & 11g of fibre per serving. ✨I made homemade Italian dressing for the pasta salad (pasta has young olives, fresh garlic cloves, raw onion, tomato): . •1/2 cup avocado oil •1/4 rice wine vinegar • bit of coconut sugar(agave for sub) • 1 Tbs of roasted red pepper and garlic flakes, garlic powder, onion powder, Parsley, smoked paprika • salt & pepper to taste ————————————— • Quinoa: rinse and toast with desired seasonings then cover with water until boiling, cover and let steam until puffy! • Steam the kale & sweet potato —————————————- ✨Result is a gorgeous & healthy dinner that is FULL of complete protein 🌱

What I ate today! . . Started my morning with a chocolate peanut butter smoothie. Made with organic almond milk, chocolate peanut butter protein powder, flaxseed, 1 frozen banana 🍌, and ice. . . Before my workout 🏋️‍♀️. I made a small bowl of sprouted oats with almond milk, cinnamon, and a little stevia. Had errands really early and my workout 🏋️‍♀️ was latter then usual and I didn’t want to get too hungry. I know the oats seem boring but I am adding carbs back into my diet slowly. So no maple syrup too much carbs at one time. . . After my workout 🏋️‍♀️. I had a very small amount of roasted sweet potatoes 🍠, slow cooked black eye peas, and avocado 🥑. . . End my day with some bbq tofu, steamed green beans, and a very small salad 🥗. Nutritional yeast on my green beans. . . I stopped my vegan 🌱 keto ten week journey and slowly adding my carbs back in my diet. . . If you are on keto and want to take a break or stop keto it is just important to add carbs in slowly as it was to take them out slowly when starting a keto diet. . I suggest slow releasing carbs like oats, sweet potatoes 🍠, quinoa, rice (brown), potatoes 🥔, lentils, and bananas 🍌. I had dal and brown rice as an early dinner. I love this meal SO much, seriously. Today was the first school night that I’ve had a real dinner in months. This seems like it’s not a big deal but for me it is. Today’s packed lunch (pre- tipping into my lunchbox to take to school): kale, bean burgers, sweetcorn, baked butternut squash, bulgur wheat, sauerkraut, green olives, tahini, sriracha, and some nooch added after the photo. As you can probably tell, I’m still not sick of variations of this same meal. 🌱✨ Had a very productive day at school today doing photography work, then I got a lot out of my driving lesson which felt good. Ballet this evening has finished me off so I’m definitely ready for bed! Looking forwards to more photography work (last push this week to finish the unit!) and the gym tomorrow. Tuscan roasted root veggies and oven roasted cauliflower 😍😍🤤🤤🤤 . . We used : Carrots Kohlrabi Celery Celeriac Onions Garlic Tomatoes Cut all veggies in chunks and season with Salt Pepper Tuscan seasoning Olive oil Put it in the oven for 30 minutes 180° Celsius . Marinade for the cauliflower: Olive oil Salt Pepper Paprika Thyme Poultry seasoning Roast the whole cauliflower in the oven for 20 minutes 180°Celsius Then take it out and cut it in thick slices put it in the marinade and fry it in a pan. A really yummy vegan tomato basil brucheta!😍🌿 : Ingredients: (for 2 servings) 1 baguette, 6 inch (15 cm) ¼ cup olive oil (60 mL) 3 medium tomatoes, diced 1 clove garlic, minced 1 teaspoon balsamic vinegar 1 tablespoon fresh basil, chopped ½ teaspoon salt ½ teaspoon pepper 1 clove garlic, whole Preparation: : Preheat oven to 450°F (230°C). I've got a supreme treat for you to make tonight; save this post! Mango turmeric overnight oats 😍 This has been a highly requested breakfast in our house lately! Mangoes are good for the digestion and boost immunity, while turmeric is a potent anti-inflammatory and antioxidant! This combination works so well together, its amazing! A protein packed vegetarian meal prep recipe!! 🥳 it can also easily be made vegan by using dairy free greek yogurt! LENTIL TACO SALAD -Cook 4-5 servings of lentils -While they cook, chop half a red pepper, half an orange pepper, and 2 zucchini (onion would be good too but I got lazy) -Add your veggies to a pan with a little olive oil and seasonings like paprika, salt, pepper, etc. cook until tender -When the veggies are done, add your cooked lentils to the pan + one jar of salsa and stir to combine -Let it get heated through and thats it! When I went to eat mine I put it on top of a bed of spinach, added a scoop of plain greek yogurt, avocado and lots of lime juice! This made a huge portion for me and lasted all week. I also 100% preferred this cold instead of warm so I recommend eating straight out of the fridge, even easier to fix on busy nights :) Hope you all have a good week! I’ll just be over here dying in this cold weather 🙂

Creamy tomato pasta with mushrooms and kale 150g pasta of choice 1/2 large onion, chopped 150g mushrooms, chopped 150g fresh cherry tomatoes, chopped 1/2 can canned tomatoes 1/4 can coconut milk 1 tbsp tamari 1/2 tsp smoked paprika 1/2 tsp onion salt 1/4 tsp cumin 1 can kidney beans, drained and rinsed 2 cups kale, de-stemmed and chopped Cook the pasta according to packaging instructions. Meanwhile, add the onion and mushrooms to a non-stick frying pan and cook for around 5 minutes, until the mushrooms soften. Then, add the cherry tomatoes, canned tomatoes, coconut milk, tamari, smoked paprika, onion salt and cumin. For some reason, Britain and America use different distinctions: in the US, cilantro usually refers to the leaves and stalks; coriander refers to the seeds and roots of the same plant... Brits just tend to call it all coriander, not acknowledging the difference in flavours (cilantro is more floral, coriander deep and earthy). . . FINALLY tried cooking with jackfruit this week! Meal prep #1 = BBQ pulled jackfruit & lentil lettuce wraps with cabbage and radish slaw • • 4 servings Wraps: 🌱 1 20oz can jackfruit 🌱 1c dry green lentils (cook w/ 2c water) 🌱 1c BBQ sauce (I used my homemade sauce from last week) 🌱 1c water 🌱 1/2 onion diced Slaw: 🌱 1/2 large head of cabbage (red or green) 🌱 1 bunch radishes thinly sliced 🌱 1/3c Apple cider vinegar 🌱 1T mustard 🌱 1t turmeric 🌱 1/2t cumin 🌱 1/2t black pepper 🌱 raw hazelnuts for topping • • ☀️ sautée onion until translucent, add jackfruit, sauce, water, (extra cayenne if you want) => cover and simmer 10 minutes ☀️ add cook lentils and cook another 5-10 min ☀️ combine slaw ingredients in a big bowl ☀️ serve in lettuce wraps or tortillas!

Chickpea and sweet potato curry👋🏼 kinda fancied something warming after a busy productive day! Forgot to take chicken out the freezer so just had lots of veggies to make do with 👌🏼 Combined onion, pepper, garlic and carrots. Fried off in some oil with chilli powder and curry powder. In the meantime I roasted the sweet potato to soften it. Then I added tomato purée and chickpeas. Brought to simmer and added the roasted sweet potato. With 200 ml of boiling water I added half a bag of spinach and brought the whole thing to simmer for 7-10 minutes with a lid on, medium heat. Ihr wolltet ein Gericht mit Fenchel und hattet die Wahl zwischen #colcannon oder Fenche-Pasta. Unschwer zu erkennen, dass ihr euch gegen die Pasta entschieden habt 😁 Colcannon ist ein irisches Gericht und pures #comfortfood Und hier ist das Rezept für euch. . Zutaten: 700 g mehlig kochende Kartoffeln 200 g Wirsing 1/2 kleiner Fenchel 2 Lauchzwiebeln 4 Champignons 100 g Räuchertofu (optional) 2 El Magarine (ich liebe die @naturli ) 150 ml Hafersahne 1/2 Bund Petersilie Salz, Pfeffer, Muskatnuss . Zubereitung: ¹ Kartoffeln grob würfeln und in Salzwasser kochen. ² Wirsing in Streifen, Fenchel in kleine Würfel, Champignons in Scheiben, Räuchertofu in kleine Würfel und Lauchzwiebeln in Ringe schneiden. Petersilie hacken. ³ Räuchertofuwürfel in etwas Öl 5 Minuten anbraten. Gemüse - bis auch die Lauchzwiebeln - zugeben, kurz anbraten, Hitze reduzieren und mit Deckel ca. 7 Minuten schmoren. ⁴ Kartoffeln abgießen. Mit Hafersahne und Magarine zerstampfen. Abschmecken mit Salz, Pfeffer und geriebener Muskatnuss. ⁵ Kartoffelstampf zum Gemüse geben, alles vermengen. Lauchzwiebeln und Petersilie unterheben. . Ihr könnt natürlich die Gemüseanteile variieren. Wenn ihr lieber Fenchel, als Wirsing mögt, ändert ihr es einfach ab 😉 Räuchertofu gehört da eigentlich gar nicht rein und im Ursprungsrezept wird das Gemüse in Wasser gekocht. The meatless beef tips by @gardein and the non-beef flavored bouillon by @edwardandsons are out of this world and very delicious. . . What is your favorite soup? . . . ⏹⏹⏹ INGREDIENTS ⏹⏹⏹ . 1 package meatless beef tips 2 chayotes 4 russet potatoes 16 oz green beans 1 onion, chopped 1 large tomato, chopped 1 head cabbage cut into wedges, cut away core 12 baby carrots cut 1 fresh jalapeño 3 ears corn, husked and cut in thirds 6 sprigs fresh cilantro 2 sprigs fresh mint 2 tbs extra virgin olive oil 4 beefless bullion 1 tsp black pepper 1 tsp cumin 1 tsp cayenne pepper 🔥 8 cups . Top off with: Limes, cut into wedges Radishes sliced Jalapeño sliced Corn or flour tortillas . ⏹⏹⏹ METHOD ⏹⏹⏹ . 1️⃣With medium heat, add oil to Dutch oven pot 2️⃣Add meatless beef tips, and sauté 3 minutes. 3️⃣Add onions to pot and sauté another 3-5min 4️⃣Remove and set aside meatless beef tips. 🟠Vegan Roasted Tomato Soup . . . 🔸🔸🔸INGREDIENTS🔸🔸🔸 . 15 Roma Tomatoes 1 Yellow Onion 2 Whole red bell pepper 4 Cloves Garlic 13.5 Oz Coconut Cream 1 Tbs Dried Basil 1 Tbs Dried Parsley 1 Tbs Dried Oregano 1 Tbs Salt 1 Tbsp Pepper 2 Tbsp Extra Virgin Olive Oil . . . . . 🔸🔸🔸METHOD 🔸🔸🔸 1️⃣Preheat oven to 400 degrees. Line baking sheet with aluminum foil 2️⃣Cut tomatoes in half, slice onions, and keep red bell pepper whole. Toss in olive oil 3️⃣Spread as 1 layer onto baking sheet 4️⃣Roast for 30 - 40 minutes; add garlic towards the last 5 minutes of cooking time 5️⃣Pour coconut cream in blender, along with roasted tomatoes, garlic, onions, bell peppers, and spices. Vegan Potatoe Leek Soup . . . . . . . ••••••Ingredients * 3 large leeks, chopped * 8-10 small russet potatoes, diced * 2 small onions, diced * 3 or 4 cloves of garlic, minced * salt and pepper salt to taste * 1 bay leave * 1-2 sprigs fresh thyme * 1-2 sprigs fresh rosemary * 1 tsp ground coriander * 6 c vegetable broth * 2tbs olive oil * 2 tbs fresh lemon juice * 1 c coconut milk . ••••••Instructions: * Wash leeks well, chop * Heat oil in a large pot, (#gothamsteel my fav @gotham_steel ) over low heat * Add leeks, onions, sauté 4-7 minutes * Add potatoes, sauté for 4-6 minutes * Add garlic, thyme, rosemary, and coriander. Sauté 1-2minutes * Add vegetable broth, bay leaf, salt, pepper * Cook for about 15-20 minutes, or until the potatoes are fork tender. * Turn heat off from heat, remove bay leaves *Stir in the coconut milk & lemon juice * Use immersion blender, blend until smooth. . . . .

Garlic Cauliflower Mashed . . . . INGREDIENTS: 2-3 heads cauliflower 4-6 tbs vegan butter Pinch of salt to taste Pinch of black pepper to taste 1 c plant based milk 4-6 cloves garlic . . . INSTRUCTIONS: 1) Cut cauliflower in pieces, and place in a steamer over a large pot of boiling water. 2) Steam for 10/15 minutes until tender. 3) Remove cauliflower & drain 4) In small pan, sauté garlic in vegan butter over low heat for 2-3 minutes. 4) Place cauliflower to a food processor or immersion blender. 5) Add non-dairy milk, salt, pepper and garlic t o blender. 6) Blend until puréed. 7) Garnish with fresh parsley (and more butter if you like) Enjoy! . . . .

It’s a gloomy rainy day in not so sunny Phoenix, AZ. Thought i would throw some left over veggies from the fridge, and also to start to empty it to make room for Vegan Thanksgiving. . . . . I was in the mood for a hot dish so I put together this yummy spicy hot coconut curry soup. . Simple fast recipe below . . . Ingredients: 24 oz coconut milk 4 red potatoes diced 2 tbsp Thai red curry paste 1 tbsp fresh gingerroot 2 c vegetable broth 3 stalks bok choy chopped 1 onion diced 1 cup green peas 2 cups shiitake mushrooms Top off with Red pepper flakes . . Method: 1. In large pot, add coconut milk, vegetable broth, Thai red curry paste and ginger-root 2. Heat to medium heat. 3. Stir in veggies. 4. Lastly, cook over medium heat 10 minutes or until potatoes are tender. Serve with lime wedges 😊
