I鈥檓 trying out some new cookie recipes for the kids for school that limit any grains or highly processed flour products. I came across these Paleo Ginger Molasses Cookies from @thegranoladiaries, so these are first on my list. Even though they contain some added sugar, both the sugars, especially the molasses are way more nutrient dense than the regular refined sugar which are often added to many baked goods. Hope you try these out. Ingredients: * 1/4 C Coconut oil, at room temperature (soft, but not liquid) * 1/4 C Coconut sugar * 1 egg * 2 鈥 3 Tbsp Molasses (or Blackstrap Molasses) * 1/3 cup Coconut Flour * 1 tsp ginger (more if you like it really 鈥済ingery鈥) * 1/2 tsp cinnamon * 1/2 tsp baking soda * Pinch of salt * For rolling: 3 Tbsp Coconut Sugar + 1/2 Tbsp Coconut Flour Directions: 1. Preheat oven to 180C. Mix room temp/soft coconut oil and coconut sugar until combined, like a paste. 2. Add in egg and molasses and mix to combine. 3. Add in the rest of the ingredients, and fold together until combined. 4. Take about 1 Tbsp of dough, roll into a ball, and roll in mixture of coconut flour and sugar. Place on some baking paper and gently press down with your fingers.聽 5. Bake for about 9 minutes. Let cool completely. Makes about 8 鈥 9 cookies. Always a pleasure dining @thelebanesebakerybh . We went for breakfast today and I absolutely loved the egg and cheese Manoushe. The crust was golden and puffy and held up well to the egg and cheese filling. This paired with a piping hot cup of Lebanese coffee is just the way to wake up! RAW LAMINGTON SLICE . . Coming at ya with another Australia Day themed treat 馃コ because is there really anything more Aussie than the Lamington? 馃嚘馃嚭 . . I re-shared my Lamington Protein Ball recipe yesterday that I鈥檝e made the last few Australia Day鈥檚 but now I鈥檝e revamped it into this delicious 3-layer Raw Lamington Slice! 馃槏 . . GLUTEN FREE - VEGAN - RIDICULOUSLY SIMPLE TO MAKE . . SAVE this post to make it for your Aussie Day celebrations tomorrow or as a snack for your next #mealprep! . . HOW TO MAKE: BASE 1 cup almond meal 1 1/3 cup oats 1 cup shredded coconut 20 pitted dates (soaked in boiling water for 20 minutes until soft) 1 scoop vanilla protein powder (I use @googysproteinbars powder) 2 tbsp maple syrup 2 tsp vanilla essence 3.5 tbsp melted coconut oil Blend all ingredients in a food processor until it comes together into a dough like mixture. Add 鈪 of the base mixture to a prepared tin and press the mixture down firmly with your hands (should be just under 1cm thick). . . RASPBERRY JAM FILLING: 1 punnet raspberries 1.5 tbsp honey 1 tbsp chia seeds 1 tsp vanilla essence 1 tbsp warm water Place all ingredients into a blender and blend until combined. Place in a bowl in the fridge to thicken for 20-30 minutes. Then spoon over the base layer (this recipe makes extra so store remaining in the fridge for another use). Sprinkle remaining base mixture over the jam layer until the jam is completely covered. Sprinkling helps to create an even layer and hold the jam in place. Gently press down firmly and set aside. . . CHOC TOPPING: 陆 cup cacao 陆 cup coconut oil 1.5 tbsp maple syrup Pinch of salt Add everything to a saucepan and heat over low heat, stirring until smooth. Remove from heat and pour over slice. Place in the freezer to set for 3-4 hours before cutting.

鈥淲ere you always so crunchy? Or did you become crunchy after you were diagnosed with cancer?鈥 I get this question a lot. The truth is YES and NO. I have been a recycling, reusable bag bringing, reduce your waste hippie most my whole life. My aunt owned a herbal gift store from when I was 11-17. It sold teas, essential oils, skincare, fresh and dried herbs, bath and body products, and the like. That was my first introduction to Essential oils and herbs. I got into food and nutrition when I became a vegetarian at age 17. And while my perspectives on food have changed drastically since then, it was the major catapult into this health world. I鈥檝e always had a love hate relationship with conventional medicine and have been questioning my doctors since I was a young adult. This is coincidentally around the same time big pharma was allowed to push drugs on TV. That really pissed me off even as a teen. BUT being given a diagnosis of cancer at age 31 is life changing. So yes, I鈥檓 much crunchier now. This Mediterranean inspired salad is full of whole-food goodness and is a nutritional powerhouse. This meal is packed full of protein with quinoa (a whole grain with a complete amino acid profile), almonds and Greek yogurt. Greek yogurt also provides us with probiotic goodness to support our gut health. Gorgeous green vegetables offer an array of essential nutrients including magnesium to help sore muscles, vitamin C for immune support, iron for healthy bloody cells and fibre to keep us feeling fuller for longer and support optimum digestion. Extra virgin olive oil provides us with healthy monounsaturated fats and anti-inflammatory properties. The contrasting flavours of tangy lemon yogurt dressing and sweetness of the dates work synergistically to create something very special in this very nutritionally balanced meal. INGREDIENTS 2/3 cup quinoa 200g brussel sprouts 1 bunch broccolini 1 small zucchini 陆 cup Greek yoghurt (pot set) 1 clove garlic, minced 1 lemon 2 pitted medjool dates, roughly chopped 2 tbsp natural almonds, roughly chopped 2 large handfuls mesclun mix 1 tbsp olive oil Mint (to garnish) Pink Himalayan or Celtic salt 1. Preheat the oven to 180 degrees Celsius. 2. In a medium pot add rinsed quinoa and 1 1/3 cups of water and bring to boil, over a low heat simmer, covered for 15 minutes, until tender. 3. Quatre Brussel sprouts lengthwise and trim ends, cut zucchini into 1cm coins and trim broccolini ends. 4. Place the vegetables on a baking tray, drizzle with olive oil and season with salt and pepper, tossing to combine and arrange evenly. Roast vegetables on the middle rack of the oven for about 15 minutes or until browned and tender. 5. In a small bowl combine yoghurt, the juice of 1/2 lemon and 2 tsp of lemon rind and garlic. 6. Add almonds, dates to cooked quinoa. 7. Assembly quinoa, roast vegetables and mesclun in a bowl. Garnish with mint leaves, an extra squeeze of lemon juice and the lemon yoghurt dressing.

The most common request I get from clients is what are some good, quick, healthy meal ideas!馃 . I'm really big on pantry and freezer staples, along with bulk prepping your proteins. Here's what I mean 鉃★笍 . This is 5 minute chicken and veggie curry!馃崉馃ガ馃崊馃崡馃馃崰 . I had mixed root veggies and stir fry veggies in the freezer (freezer staple) and @mayakaimalfoods coconut madras curry in the pantry (pantry staple) and I had a whole chicken pre cooked (bulk prep.) . All of this heated up in a pan on the stove took about 5 minutes! I added some extra garlic salt, onion powder, ginger powder, curry powder, cayenne and salt馃and BOOM! I鈥檓 listening to @daveramsey tonight as my husband and I are doing a Financial Peace class through our church. I鈥檝e heard of his steps but we have never totally executed. With our debts and loans finally becoming within sight, I know we can do this. . He just quoted this verse and it really spoke to me from a wellness perspective also. Trying new things and changing your whole lifestyle is uncomfortable, challenging, hard, exhausting, and a struggle. It does take discipline and blood, sweat and tears. It takes baby steps. It takes back slides. It takes someone smacking you in the face one day to wake up. But my oh my, when you get on the other side and experience the harvest of peace, it鈥檚 beyond worth it. . Pesto Shrimp Fettuccine in Mushroom Garlic Sauce recipe by @juliasalbumblog鉅 .鉅 Checkout the link in our bio for our monthly meal plans!鉅 .鉅 Ingredients:鉅 2 tablespoons olive oil, more if needed鉅 1 lb shrimp, peeled and deveined鉅 10 oz white mushrooms, sliced鉅 1/2 cup basil pesto鉅 4 garlic cloves, minced鉅 1/2 cup sodium free chicken broth (adjust salt if not sodium free)鉅 10 oz fettuccine pasta (use gluten free for gluten free version鉅 1/4 teaspoon salt鉅 .鉅 Seasoning Mixture:鉅 1 teaspoon Italian Seasoning (thyme, oregano, basil - combined)鉅 1/4 teaspoon red pepper flakes鉅 1/2 teaspoon paprika鉅 1/2 teaspoon salt鉅 chopped fresh basil鉅 ----鉅 Instructions:鉅 Heat 1 tablespoon of olive oil in a large skillet over medium heat. Put shrimp in a mixing bowl and rub in seasoning mixture. Mix well to make sure shrimp is coated well. Add to the hot pan and cook for about 3 minutes, turning once midway, until shrimp is pink and cooked through. Remove shrimp from the skillet.鉅 Add second tablespoon of olive oil to the skillet. Once the pan is hot, add sliced mushrooms and 1/4 teaspoon of salt and cook, stirring, until mushrooms release liquid and reduce in volume and get soft, for about a minute or two. Add minced garlic for the last few minutes, when mushrooms are almost ready.鉅 Add back the cooked shrimp. Add 1/2 cup basil pesto and 1/2 cup chicken broth. On medium heat, mix everything to combine. Remove from heat.鉅 In the meantime bring a large pot of water to boil, add pasta and cook it according to instructions. Drain the pasta, but do not rinse.鉅 Add pasta to the skillet with mushrooms and shrimp, and stir until pasta is fully coated in sauce. Season with more salt if necessary.鉅 Serve with additional red pepper flakes, if desired.

鈥淧ulled鈥 Tofu Tacquitos 馃尞馃尞馃尞 @thevegansara uses a freeze/thaw/press method with her tofu. This time around after pressing, she cuts the tofu into narrow strips to replicate a pulled meaty texture, then baked. Check out @thevegansara page, she's got super creative, easy vegan recipes! What you need: 1 block of extra firm tofu (15oz), 1 tbl neutral oil, 2 tsp maple syrup, 1 1/2 tsp chili pepper, 1 1/2 tsp cumin, 1 1/4 tsp smoked paprika, 1 tsp garlic, 1 tsp salt, 1/4 tsp pepper, 8 6in soft flour tortillas, 1/2 cup salsa, 2 cups shredded vegan cheddar cheese. 1锔忊儯 Take out tofu from packaging, cut block in half, then cut each half in 3 slabs horizontally from its depth, giving you 6 pieces total. Wrap each slice in parchment paper, place in freezer safe container to freeze overnight 2锔忊儯 The Tofu will be yellow. No worries.Thaw to room temp on kitchen towel, then gently press each slab with a towel to get out water 3锔忊儯 Thinly slice each slab (does not need to be uniform) so it resembles pulled meat- and place in a large bowl, there will also be some crumbles which is fine. Drizzle oil and maple syrup and gently mix 4锔忊儯 In a small bowl combine all your spices, then add tofu to bowl 5锔忊儯 Spread tofu on large baking sheet lined with parchment paper that has been misted with oil . Bake at 375 F 15 min rotating and shaking pan every 5 min or so. After baking, place back in bowl & mix with salsa 6锔忊儯 To make tacquito, on tortilla, at the end closest to you, place 1 tbl cheese, next comes 1/4 cup tofu/salsa, then top with 1 tbl cheese. Thai food is one of the genres of food I really love and that always feels like comfort food to me! It used to be my go-to before I started eating Paleo, and it鈥檚 our favorite date night when we decide to eat out these days. I have to admit though, this Paleo and Whole30 friendly coconut lime chicken really takes me back to a trip to Thailand several years ago. It鈥檚 so flavorful, fresh and satisfying!
