10 Minute Garlic Mushroom Pasta! ___ The vote results were close between the pasta and the ramen but here it is! ___ Ingredients: 2 portions of dried or fresh pasta (you be the judge of your own portion😉) 180g chestnut mushrooms 2 large garlic cloves 1/4 tsp cracked black pepper 1/4 tsp sea salt 50g spinach 1/4 tsp chilli flakes 125ml oatly cream (single cream) ___ Method: Bring the pasta to boil in a pot of water with a generous pinch of salt ( boil for 10 minutes) In a separate pan chop the mushrooms then add to a deep frying pay with a generous glug of olive oil, fry for around 4-5 minutes Finely chop the garlic then add to the pan with the garlic and fry for a further 1-2 minutes until cooked Add the single oat cream and stir in the black pepper, salt and chilli flakes Drain the water from the pasta (leaving a little to stir in with the sauce) then pour the cooked pasta and water in with the garlic sauce Taste test adding a little more seasoning if needed & enjoy! *notes, I love adding a little dash of smoked paprika too*

"Clean out the fridge" veggie curry.⁣ ⁣ Using up all the half-used veggies in the fridge to make a spicy vegetable curry for hubby and I tonight with cauliflower, carrots, onions, peppers, mushrooms and tomatoes. ⁣ ⁣ The sauce is a vindaloo curry paste, veg broth, coconut milk and the liquid from the diced tomatoes.⁣ ⁣ Simply par-boil the cauliflower and carrots. Drain then set aside.⁣ ⁣ Then grab a deep pan, heat some oil and cook onions, peppers and mushrooms. Add some garlic, the diced tomatoes and as much curry paste as you can handle. Cook it for a couple of minutes until really fragrant. For not being Vegan, I’ve sure been eating a lot of Vegan meals😂 This one came together in 10 mins and makes a perfect side as well! • • [ d e t a i l s ] 1 pack @traderjoes precooked lentils 1 cup spinach 1 red bell pepper 1/3 cup mushrooms, chopped 1 tsp minced garlic 2 tbs hemp seeds 2-3 tbs organic sprouted pumpkin seeds Onion powder Salt + pepper Optional: 1/4 cup bone broth @bonafideprovisions (makes non Vegan) • • [ d i r e c t i o n s ] 1. Chop up bell pepper and mushroom, sautée in @chosenfoods avo oil for 5 mins, then add in spinach and garlic. Cook additional 2 mins. 2. Add in pre-cooked lentils and seasonings. Heat through. Option to add bone broth here as well to simmer through. 3. Top with hemp seeds and pumpkin seeds. Add hot sauce if you want an extra kick!

Making your own loose tea blends is a great way to save money and reduce waste. Dried orange peels go great in tea. Try this orange chai tea spice blend. 1 part whole cloves 1 part whole peppercorns ½ part star anise 1 part cardamom seeds 1 part coriander seeds 1 part cinnamon sticks 2 parts fresh ginger 3 parts dried orange peels Loose leaf black tea I usually just estimate the ingredients. You don’t need much star anise, because it is strong. You can make a large jar of the loose tea blend, then measure out a little bit each time you make tea. Enjoy!

Homemade Crispy Tofu Gnocchi . by @the_clumsy_vegan 🌿 Share this with someone who'd love to try this! ​. ​Recipe: Ingredients: Tofu: 1 block pressed and broken into pieces Flour: 1 C + more for kneading Nutritional Yeast: 3/4th C Egg replacer: to make up 1 egg Oat milk: 1 C Olive oil: 1-2 T Salt and pepper ​ Method: 1) Add tofu, flour, nutritional yeast, egg replacer and oat milk to a food processor. Blend to form a sticky dough. 2) Knead dough on a floured surface for 3-4 minutes till it comes together. Use as little flour as possible. Drizzle 1 T olive oil over kneaded dough and keep it aside 3) Break off a bit and roll into the size of a tennis ball. Place ball on a floured surface and roll into a log. 4) Cut log into 1 inch pieces of gnnochi and press down gently with a fork on one surface to form markings 5) Add gnocchi to simmering water. Vegan Zongi recipe is here!! Swipe left to see what’s in these cute lil packages of deliciousness 😍⁣ ⁣ If you’ve never heard of zongzi before, it’s basically a Chinese sticky rice dumpling that is cooked inside a bamboo leaf— kind of like a tamale. The aroma of the bamboo leaves cooks into the rice and it’s so SOOOOO delicious. These were def my favourite thing to order at dim sum but I haven’t had it since going vegan aka 9 years 😱😱. ⁣ ⁣ Felt like I could use this time in quarantine to make a vegan version of these and ok not to like brag or anything but these are bomb.com ⁣ ⁣ I used vegan mock meat instead of pork belly and sausages and kabocha instead of eggs. ¿Qué más puedo pedir? 🍝🤤 Pasta con salsa de champiñones cocinada por 👨🏻, sopa de lentejas, una súper ensalada y mis galletas 🍪 (Receta pronto en mi canal de YouTube). . . Receta de la pasta: cocina 1/2 cebolla con 2 dientes de ajo y aceite de oliva hasta que estén transparentes. Agrega champiñones laminados y deja que se cocinen unos minutos hasta que estén un poco tostaditos. En ese momento agrega un chorro de vino blanco (yess 😜), sal, pimienta y bebida vegetal vegetal sin azúcar + alguna harina que ayude a espesar un poco la salsa (yo use harina de maíz que es la harina de arepas). También puedes sustituirlo por nata de cocinar vegana si consigues ✌🏽❤️. Deja que se cocine por unos minutos a fuego medio/ alto y listo! ✨

🇮🇹Un’idea di presentazione più che una vera ricetta. Se anche a voi piacciono i funghi abbinanti alle patate, o siete fan di mashed potatoes & mushroom gravy, vi propongo di servire i funghi in cestini di patate. Per realizzarli ho lessato delle patate e le ho schiacciate con lo schiacciapatate. Ho aggiunto un cucchiaio di burro vegetale e sale q.b e ho mescolato. Ho messo le patate schiacciate in stampini per muffins, rivestiti di carta forno, e ho creato dei cestini (vedi stories) Li ho cotti in forno finché sono diventati dorati. If you love mashed potatoes with mushroom gravy, these potato nests are a different way for you to serve them. They’re so easy to make. I mashed some boiled potatoes with a potato masher. I added a tbs of vegan butter and salt to taste and stirred. Then I made my potato nests using the muffin pan in the picture, (see stories) and I baked them in the oven until they became golden brown. Then I placed the cooked mushrooms (I had cooked my porcini mushrooms with olive oil, salt to taste and a garlic clove) in the center of the nests and I sprinkled with parsley and nutritional yeast. Ayer mi hermana @fiorellao.es hizo este seco con carne de soja para acompañar los frejoles que preparó mi mami y cómo le quedó buenazo 🤤 aquí les comparto la receta: (Sale como para 5 porciones) . . 1. Licuamos culantro (un atado completo de los que viene en plaza vea 😂) con 2 ajíes amarillos (sin venas y sin pepas) y un pedacito de pimiento rojo con 1 1/2 taza de agua hervida (no te olvides de desinfectar bien todo antes de licuar) . . 2. aderezo time: ponemos la olla a calentar y cuando sientas el fuego del infierno 🔥 agregas una cdta de aceite (de palta, vegetal, coco o el que tengas en casa) y al toque le metes: 1 cebolla picada en cubitos (métele amor y que estén bien chiquitos) y 1 cda de ajo molido, luego de unos minutos agregas la carne de soja (previamente hidratada, nosotras compramos en filetes porque sirve bastante bien para guisos). . . 3. Agregamos el saboooooor: sal, pimienta (1/4 cdta aprox) y comino (1/2 cdta aprox) y aprovechamos para meter las arvejitas (1/4 taza) y un pedazo de pimiento picado en tiras o cubos. . . 4. Para terminar, agregamos el licuado inicial de culantro y dejamos cocinar, aquí si deseas y eres fan de la papa amarilla como yo 🥔 puedes agregar un par cortadas en cuartos (a mi me gusta aplastar un pedazo cuando ya está cocida para darle textura al guiso). Si ves que está muy seco, puedes agregar agua hasta llegar a la consistencia que quieras . . . 5. Cuando las arvejitas ya estén listas, el guiso también ya está listo para servir 🌞

Curry z ciecierzycą i batatem 🍛 Czego potrzebujemy ? -ciecierzyca 400g -batat 1 sztuka -papryka 0,5 sztuki -przecier pomidorowy 0,5 litra -mleczko kokosowe 1 puszka -limonka 1 sztuka -cebula 2 średnie -olej/oliwa 5 łyżek -szpinak spora garść -ryż -przyprawy: curry 3 łyżki, papryka słodka 2 łyżeczki, kurkuma 1 łyżeczka, papryka wędzona 0,5 łyżeczki, sól, pieprz -dodatkowo: orzechy nerkowca, mięta, kolendra/natka pietruszki/szczypiorek 1. Cebulę, czosnek, imbir i batata obieramy. Cebulę kroimy w piórka lub kosteczkę. Batata w średnią kostkę. 2. Oliwę podgrzewamy z dwiema łyżkami curry, po chwili dodajmy cebulę i czosnek z imbirem przepuszczony przez praskę, gdy się zeszkli, dodajmy przecier pomidorowy, mleczko kokosowe, sok wyciśnięty z połowy limonki i resztę przypraw. 3. Po 5 minutach dodajemy batata, po następnych 15 odsączoną cieciorkę i paprykę. Gotujemy bez przykrycia jeszcze przez ok. 15 minut, by woda wyparowała, a sos zrobił się gęsty. 4. The easiest way to make nicecream ❤️ use 2-3 frozen bananas and 1 cup frozen berries and blend with plantbased yoghurt and a little plantbased milk or water (some blenders need more liquid to blend). MUSHROOM BURGER 🍄🍄 with caramelised onions, guac and sides of sweet potato fries and a salad with tahini dressing 🥗🥑🍠 This is my go to burger recipe. It has a "meaty" texture, doesn't fall apart and is super tasty 🍔 _______________________ Serves 2 Mushroom burger: ✔️300g mushrooms ✔️ 1/2 red onion ✔️2 garlic cloves ✔️ 1/2 tsp oregano ✔️1/2 tsp chilli powder ✔️2 tbsp nutritional yeast ✔️3 tbsp oats ✔️3 tbsp bread crumbs Tahini dressing: ✔️ 1 tbsp tahini ✔️ 1 tbsp vegan yoghurt ✔️1 tbsp olive oil ✔️1/2 tsp cumin ✔️ 1/2 tsp paprika ✔️ seasoning ______________________ 1. Roughly chop the mushrooms, onion and garlic then using a blender pulse few times 2. Fry in a pan with oil on medium with seasoning. Cook down until moisture has gone. Add oregano and chilli for a further minute 3. In a bowl add to the mixture the remaining ingredients and mix well. Let sit for 10 mins for the dry ingredients to soak up the wet 4. With wet hands form 2 burgers 5. Chocolate chip cookiessss😍😍 I used the recipe by the lovely @veggiereporter for these and they are so so good! A julienne peeler is one of my favourite tools for peeling root veg e.g. adding crunchy carrot spirals to lunchtime salads and soups. Also, if you’re not confident in your chopping skills, then why not grate it?! A great technique for onions.⠀ ⠀ SPICE THINGS UP: Keep a variety of dried herbs and spices. Easy to stock, long-lasting and great for flavour in place of extra salt. Dried herbs are great when you can’t get hold of fresh. Plus, if you have a local International supermarket near you, they will sell large batches of spice which are better value for money.⠀ ⠀ ⠀ SUPPORT LOCAL BUSINESSES: Speaking of local, support small businesses during this time to give them a fighting chance of revival once this is all over. Homemade Crispy Tofu Gnocchi . by @the_clumsy_vegan 🌿 Share this with someone who'd love to try this! ​. ​Recipe: Ingredients: Tofu: 1 block pressed and broken into pieces Flour: 1 C + more for kneading Nutritional Yeast: 3/4th C Egg replacer: to make up 1 egg Oat milk: 1 C Olive oil: 1-2 T Salt and pepper ​ Method: 1) Add tofu, flour, nutritional yeast, egg replacer and oat milk to a food processor. Blend to form a sticky dough. 2) Knead dough on a floured surface for 3-4 minutes till it comes together. Use as little flour as possible. Drizzle 1 T olive oil over kneaded dough and keep it aside 3) Break off a bit and roll into the size of a tennis ball. Place ball on a floured surface and roll into a log. 4) Cut log into 1 inch pieces of gnnochi and press down gently with a fork on one surface to form markings 5) Add gnocchi to simmering water.
