Super crispy mushroom lettuce cups with cucumber, coriander, vegan mayo and homemade hoisin sauce. This made a great light lunch. Look at my recent post for the crispy mushrooms (just switched up the spices to Chinese 5 spice and smoked paprika). 🥜For the hoisin, mix together: 🌶2 tablespoons smooth peanut butter 🌶2 tablespoons tamari 🌶1 tablespoon rice malt syrup or maple 🌶1 tablespoon rice wine vinegar 🌶2 teaspoons sambal olek (or other chilli sauce) 🌶A few drops sesame oil 🌶Black pepper For a smoother sauce, stir the tamari into the peanut butter one tablespoon at a time. I’m not really sure how to caption this, so I’m not going to. 🥕Clearly I’m holding dirt in my hands as it shows. But I took this picture last fall when we worked out garden one last time to work in all the compose it had accumulated through out the summer. 🥒🌽🌶 So What’s the point of this picture you may ask? If you would of ask me 8 years ago that I would be talking about gardening and how to grow a healthy garden and to heal your body with the food we eat, I’m not really sure what I would of come up with. I always knew that I chose the right company, but I just wasn’t sure how my knowledge of gardening and food would be incorporated...until now. So what can be better than this bowl of yumminess and health? 𝐒𝐀𝐌𝐁𝐀𝐑 𝐒𝐀𝐃𝐀𝐌 𝐖𝐈𝐓𝐇 𝐊𝐄𝐄𝐑𝐀𝐈 𝐓𝐇𝐎𝐑𝐀𝐍 Made this for our lunch a few days back. It is one of the everyday foods from the Tamil cuisine. It is nothing but SAMBAR and rice cooked together as a quick fix to a meal. Sambar rice is a dish made with lentils, rice, mixed vegetables, spices & herbs. It is a delicious, flavorful & protein packed dish that is also healthy & nutrient dense. Used carrot, potato, beans, and raddish for the sadam. In my plate: ✔️Rice ✔️Dalma ✔️Dahi Wale aloo ✔️Cucumber . . 💥Super tasty Dahi aloo recipe : . ✔️Keep and sallow fry some cubed boiled potatoes with salt, turmeric powder and red chilly powder . ✔️Take curd in a bowl, add one spoon of besan flour, redchilly powder, garam masala, jeera powder and cumin powder and mix it nicely . ✔️In a kadhai, heat oil and add bay leaves, Curry leaves, dry Red chilly and grated ginger followed by some kasuri methi leaves . ✔️Now add the curd mixture to the kadhai and stir regularly until the oil comes up . ✔️Then and the fried potatoes, salt as per taste and green chillies and fry it for 2/3 mins . ✔️Then add water as required and give it a boil.. Then the dish is ready.. . Salmon with crispy skin and crispy capers. Add some preserved lemon be transported to the Mediterranean. There were loads of tomatoes in the house so roasting them with garlic and serving on top of a thick yoghurt cheese halfway between labneh and sour cream reinforces the warm flavours of the rich roasted salmon. I have a large supply of chickpeas in the press (cupboard if you’re not Irish) that I’ve been told need to get used... so here we are BAM... chickpeas for lunch Roast pumpkin and chickpea (coat with oil and your choice of spices and roast for 20 min) with some meatballs, salad and toasted pitas. Simple easy and fun lunch. Lay it all out and let everyone grab what they want and make up their own pitas. We’ll use the rest of the pumpkin to make pumpkin and pea risotto later in the week. Momma’s lunch-4/2/20: lets be honest-the only two differences between my plate and J’s were he had one hot dog and I finished everything. ⁣ASIAN SALMON WITH GREENS AND BROWN RICE QUINOA😊👌⠀ ⠀ A great recipe for this lockdown/ social distancing phase as I have used ingredients that anyone would have stocked up on: frozen broccoli, fresh salmon I had frozen, and frozen rice/quinoa I had made previously.⠀ ⠀ Ingredients: ⠀ ⠀ 1 salmon fillet per person⠀ Frozen broccoli (I made the whole bag and kept the leftovers in the fridge)⠀ Leftover rice/quinoa.⠀ Asian marinade: 1/4 cup honey, 2 cloves minced garlic, 2 tablespoons soy sauce, 1 tablespoon of rice vinegar, sesame oil, freshly minced ginger, pinch o black pepper and 1 tablespoon of hot sauce of choice which is optional. ⠀ ⠀ Method:⠀ ⠀ Whisk all the ingredients for the Asian marinade until well combined. Place salmon in a ziplock bag and pour marinade into bag. Close bag and gently massage the marinade in the salmon. Pop the bag in the fridge for as long as you can or at least 30min. When ready to cook, put the salmon in foil parcels, pop the marinade on top, seal the parcel and place in the oven at 180o for about 20 to 25 min. ⠀ Meanwhile, heat a frying pan on high heat. Add olive oil or any oil of choice. Add broccoli, garlic salt, onion powder and chilli fakes (optional). Stir on Med to high until lightly browned/charred. Add a little more oil if necessary. ⠀ When the salmon is done, you can either serve as is or grill it a bit for a deeper colour. 5 MIN HEALTHY SUSHI I felt like sushi for lunch but #quarantine so I made this yummy version using ingredients that I had in the cupboard 😋. I used a 90sec microwave white & red quinoa packet instead of sushi rice which tasted great but didn’t hold together the same as sushi rice. It was a bit messy to roll and eat. Alternatively, you could make deconstructed sushi and just throw all the ingredients into a bowl. Same same. Tonight, I learned how easy it is to make tostada shells. I was out and did not want to go the store! Just brush tortillas with oil and bake until crispy at 400° turning halfway. I will NEVER buy tostada shells again 😆. For the chicken: place chicken breasts, your favorite salsa ( Trade Joe's salsa verde), taco seasoning, and a bit of water. Chicken burger with Chips 🍔🍟 ................................................................. -1 person- 2 burgers (chicken or beef or pork or vegetables) 1 small and 1 medium potato 1 cucumber (peeled) Homemade Ketchup (see post) **optionally 2 bans or slice bread and cheese Burgers 500g chicken minced Pepper, salt, sweet paprika, garlic powder and cumin **optionally breadcrumbs, fresh parsley and onion Instructions 1) Process all ingredients into a bowl and knead minced until all the ingredients are well combined. 2) Store in the fridge for 15 minutes and then start to create shape (the dosage for 1 normal burger is 2/3 cup) *To prevent the meat fibers breaking during the cooking, beat it in your palm several times. The leftover burgers store in the freezer for next time. 3) Preheat oven to 180 °c *The meat should turn it over ONLY one time. When you see that the burgers are completely baked, turn them on the other side (20 - 25 minutes), because if turn it over and over again the meat will be dry. Also, for better baking at the bottom of the oven put a tin bowl with water inside. Chips *You have two options: 1. Fry (as we know) 2. Lunch för today is ready 🙌 I've prepared a grilled chicken breast fillet with mixed herbs as well as oven roasted sweet potatoes and broccoli. Lots of orange and #antioxidants on the plate with a serve of fresh tomatoes on the side. A few weeks ago I made pulled pork and popped it in the freezer for a day like today. LOVE recipes like this! The flavours can be adapted to multiple cuisines... I added bbq sauce today to make these pulled pork bbq rolls, but you could easily add regular taco seasonings and pop this mix into soft tortillas. • I slow cooked in my Kogan 18-in-1 Multicooker Pro (swipe 👉🏼) which I’ll link up in my stories (I’ve had lots of questions about what appliances I use so I’ll have a full post coming soon). • PULLED PORK RECIPE • 1kg of pork shoulder (this recipe is good for up to 1.5kg), skin off, rub with 1 tbsp each paprika, onion powder, oregano plus 1 tsp each salt, cumin and pepper. Place in slow cooker with 1 onion roughly chopped, 4 whole garlic cloves and 1 cup of water and 1 chicken stock cube. Cook in slow cooker on high 6 hours or until meat can easily be shredded with a fork. Eat immediately or freeze! Defrosts beautifully, just pop it in the microwave!

Super simple green soup. 🥦🥦 . All I did was fry an onion with 3 cloves of garlic in a little olive oil, then add the last of the broccoli I had, with 2 zucchinis, top with boiling water (water was sitting just under the veggies) with a heaped teaspoon of bone broth. I only let it simmer for a minute, then blitzed it. Then add fresh lemon juice, salt and pepper. Then topped with a some good fats, like little olive oil, pumpkin seeds and hemp seeds.😋

I tried to re create the California spring salad they have at Milestones. If you know... you know 😋. It’s one of my favs! This salad is packed with purple kale, red onion, strawberries, feta cheese & candied walnuts. Topped with @shiramcd ‘s almond butter dipping sauce. It’s filled with almond butter, rice wine vinegar, lemon juice, maple syrup, soy sauce, water & salt. It is such a delicious dressing, it literally pairs well with anything, I love it on noodles or salad. You can find the recipe on her blog. This is my second (or third) quarantine baked ‘strata’ or savory bread pudding, however you wish to call it. To me it’s more like a frittata plus. A bit more comforting because of the milk-soaked bread and extra cheese, but still loaded with veggies and a good way to clean the crisper, use up stale bread and bits of leftover cheese. A good pantry-staples recipe these days, and a keeper for brunch when this is all over — since it can be prepped the day before and popped into the oven the next morning. 🍅Mee goreng (Sweet and Spicy Fried Noodles) with Tomato eggs 🌶️ 番茄蛋+炒面🥢 A spicy, sweet and tangy fried noodles, top with tomato scrambled eggs. Simply flavorful! 😋 Fried Noodles🥡: 1 packet of fresh yellow noodles, vegetable oil, dried chilli flakes/ fresh red chilli pepper, lime, soy sauce, ketchup, hot sauce, white pepper and salt to taste. Blanch the yellow noodles with hot water for a few seconds until it loosens. Once the noodles are no longer stick together, remove, drain, and set aside. It is easier to fry mee that do not stick together. Add cooking oil in pan and dunk in the noodles and all the seasoning. Stir-fry until well combined. Remove from heat, squeeze the lime and slurp away! Topping🍅🍳: Stir-fry tomato and scrambled eggs ingredients: 2 tomatoes, 3 eggs, dried basil, salt and pepper to taste.

Hope your week has started off well! Working at home mode is on for me. One of the perks or rather blessing being in MCO is being able to have meals at home with family. 🙏🏾🤗 . . Our lunch meal yesterday was bacon and cheese flavored homemade sausage, boiled and lightly grilled, sauerkraut, sautéed spinach with garlic. Served with 3 different mustards - extra strong Dijon, whole grain and hot English. I like mixing the mustards on my sausage. Hot and spicy for my tastebud 😋😄 . . How has your week started? 🥗Creamy Potato Salad with Greek Yogurt🍋 🥚希腊酸乳马铃薯蛋沙拉💕 图一还是图二呢?💁🏻‍♀️ - I used plain Greek yogurt, it’s super creamy and tangy. It’s also a nice replacement for mayonnaise. This is probably one of the easiest potato salads you can make! Ready to boil?🥔 - In a medium sized bowl whisk together Greek yogurt, salt, black pepper, olive oil, freshly squeezed lemon juice🍋and some fresh rosemary or dill. Add boiled potatoes and gently stir to combine. Add hard-boiled eggs to potato mixture, stir to combine. Add more salt and pepper to taste. Cover and refrigerate until chilled, about 1 hour before serving. Potato salad can be made up to one day ahead too.😉
