How comfortable are you with preparing and cooking vegetarian meals? ⁣ ⁣ If the answer is “not so much,” I hear you! A ½ cup cooked lentils provides about 12 grams of protein and over 30% of your fiber needs! Try split red or whole green lentils!⁣ ⁣ ✳️ Nuts and Seeds - in salads, yogurt, oatmeal, smoothies⁣ ⁣ Go for hemp hearts, flaxseed, sunflower or pumpkin seeds to enhance micronutrients! Try sprouted as they are easier to digest! Almonds will give you 6 grams of protein per ounce and add a crunch and can be easily sourced unsalted for those watching sodium. Rich in protein and a variety of fats, you can grab any nut oil for instance, but you’ll be missing out on the fiber so be sure to include both!⁣ ⁣ ✳️ Tempeh - for meatballs, taco meat and chili⁣ ⁣ Tempeh is made from fermented soybean, however, it uses the whole soybean which makes it nutritionally a better choice than tofu. It also has a higher protein content and vitamins and minerals than its counterparts. It’s great to mix with spices as it takes on the flavor of what you are cooking it with!⁣ ⁣ ✳️ Fatty fish - salmon, tuna steak, halibut⁣ ⁣ Hitting up the local fish fry? It’s worth it to ask if they have baked fish. Although many serve cod, some are offering salmon! That’s a very healthy addition to the list! GLUTEN FREE LASAGNA! Meat free Monday’s will now be on a Friday during Lent! Thank you to @barillaaus for the recipe on the back of the package (swipe left to see the pasta sheets I used) I highly recommend these Gluten Free pasta sheets, you will never know the difference, honestly. that is a DELIGHTFUL vegan quiche from @vegan_emm ! double tap if you wanna try it this weekend 🤩🤩 #Repost @vegan_emm • • • • • • Bracknell 💚 VEGAN QUICHE 💚 Been wanting to make a quiche for so long now. This is my first attempt and I think it came out pretty well. I struggle so much with pastry even if it's shop bought, I just don't get on with it 🤷‍♀️ so I've been putting it off for a while. This one is a broccoli, bacon, tomato & feta quiche but you could use any veg and vegan cheese. Here's how I made it 👇👇👇 I used ready rolled shortcrust pastry and blind baked it for 20 mins. 🧡 For the quiche filling take a 350g pack of silken tofu and blend until smooth 🧡 add 4tbsp of nooch, 2 tbsp of chickpea flour (gram flour) add any seasonings you want 🧡 I added salt, pepper & dried basil 🧡 I also added half a block of @violife_foods Mediterranean and blended again 🧡 I sautéed some chopped broccoli, red onion and half a pack of @waitroseandpartners streaky slices then added this into the quiche mixture 🧡 Lastly I added 1 chopped tomato 🧡 Once its all mixed together, pour the mixture into the pastry case and bake for 30mins at 180c This came out so well I'm excited to try different flavours now 🤩 Recipe also in highlights 😋

PESTO SAUCE Pesto is one of those things that I always just purchase from the supermarkets because it’s easier but I can assure you this sauce is worth making if you are planning on having it with pasta like we’ve done, you can beat those fresh flavours INGREDIENTS . . 🌸2 cups basil, firmly packed 🌸1/4 cups pine nuts 🌸1/4 cups cashews 🌸1/4 cup nutritional yeast 🌸1 tbs garlic mince 🌸1 tbs lemon juice 🌸1/4 cup oil 🌸1/4 cup water 🌸Salt & pepper . . 💕In your food processor mix together all ingredients except oil and water, you’ll need to scrape sides down and blitz . . 💕Then slowly pour in oil and water whilst the motor is running . . 💕Store in a container for a few days in fridge, if it lasts that long - otherwise mix in with cooked pasta like we are doing tonight . . 💕If you’re not vegetarian, add a can of tuna to the pesto and pasta, you won’t regret it!!

Jeden z mých nejoblíbenějších obědů do krabičky, vhodný i pro vegetariány🌱, případně vegany, pokud vynecháte vajíčko: dhal ze dvou druhů čočky s kokosovým mlékem🥥, rajčaty, tofu a bulgurem. Jídlo je bez masa, přesto s dostatkem bílkovin💪 Makra najdete na konci😉 • Na oleji osmahnu cibuli, po chvíli přidám i koření. Hodí se zázvor, garam masala, kari a drcený římský kmín. Na to hodím propláchnutou čočku, tady jsem použila zelenou a červenou. Přidám 50 ml koko mléka, 50 ml nasekaných rajčat z plechovky, přiliju vodu nebo vývar a nechám na mírném stupni vařit do změknutí. Ke konci přidám tofu na kostičky, konkrétně uzené tomu dodá super chuť. Dosolím a dokořením podle potřeby. • K tomu mám bulgur, skvěle se hodí i kuskus, quinoa nebo celozrnná rýže. • Můžete různě měnit luštěniny, namísto tofu přidat tempeh a super jsou i batáty🍠 nebo dýně na kostičky. • Pokud chcete šetřit tuk, jehož je koko mléko vydatným zdrojem, sáhněte po light variantě, běžně ji mají třeba v Lidlu. • Celé jídlo má 532 kcal, 56 g S, 20 g T a 28 g B. 𝙼𝚎𝚡𝚒𝚌𝚊𝚗 𝚂𝚙𝚒𝚌𝚎𝚍 𝙲𝚊𝚞𝚕𝚒𝚏𝚕𝚘𝚠𝚎𝚛 𝙱𝚘𝚠𝚕⁣ 𝘔𝘺 𝘧𝘢𝘷𝘰𝘶𝘳𝘪𝘵𝘦 𝘮𝘦𝘢𝘭 𝘳𝘪𝘨𝘩𝘵 𝘯𝘰𝘸 😍 ⁣ ⁣ For 4 days of Meal Prep 👇🏼⁣ ⁣ • 1 whole Cauliflower ⁣ • 2 medium sized Sweet Potatoes ⁣ • Quarter of Red Cabbage ⁣ • 1 Carrot⁣ • 4 Tomatoes⁣ • 1 Can of Corn ⁣ • Hand Full Chopped Coriander ⁣ • 1 Lime ⁣ • Mexican Spiced Mix (of your choice from all ready made supermarket packet or make your own) ⁣ • Chipotle Mayo ⁣ • Coleslaw Mayo⁣ ⁣ 1. Pre Heat oven to 240 degrees ⁣ and line two baking trays with baking paper⁣ ⁣ 2. Chop Cauliflower in bit sized pieces and toss Mexican Seasoning, olive oil and salt and pepper through in a bowl and place onto a tray ⁣ ⁣ 3. Chop Sweet Potato into small squares also toss in olive oil with salt and pepper and place onto a tray - put both Cauliflower and Sweet Potato into the oven for 30 minutes or until cooked to your liking ⁣ ⁣ 4. Shred the Cabbage and Carrot together and mix about 2 Tbsp Coleslaw Mayo⁣ ⁣ 5. Dice the Tomatoes, Rinse the Corn and chop the Coriander roughly - Add into a separate bowl and drizzle with a squeeze of lime and salt and pepper ⁣ ⁣ 6. (Optional) When the Sweet Potato is cooked chuck in a hand full of cheese over the top and slip back into the oven until melted ⁣ ⁣ Place a hand full of everything into a bowl or take away container, top with Chipotle Mayo and a slice of lime and serve with avocado and sour cream (optional) ⁣ ⁣ Note: I serve this straight away or I place into the fridge and eat cold the next day - lasts 4 days in an airtight container 🙌🏼 ⁣ ⁣ #mealprep #yourwelcome 😜

Or doing a 50/50 approach such as 50% meat/50% beans in a bolognese, or 50% white bread and 50% wholegrain bread. ▪︎ An overall balanced approach is key and focus on creating a healthy lifestyle not restrictions 👌 ▪︎ Puff pastry with vegan cream cheese, garlic fried aubergine, bell pepper and onion with kale which i filled the puff pastry with and into the oven. Finally adding some vegan feta cheese (not sponsored 😅). “Not Your Average Quinoa Salad” This salad is LOADED with health benefits. It’s anti-inflammatory, low gi, full of protein, full of healthy fats and is detoxifying. I’m changing up my what I eat and trying to eat a anti-inflammatory diet due to my asthma. Do you want me to do a youtube about what foods I’m incorporating to reduce the inflammation in my body? Let me know in the comments below 👇🏽😊 What you will need for salad- •1 cup of quinoa •1 handful of rocket •3 stalks of Tuscan kale(make sure you get the spine out of it because it’s really hard) •1 cup of walnuts •1 small pumpkin Tahini dressing- •1 tsp of @mayversfood tahini •2 tsp plant milk •salt to taste Pumpkin marinade- •2 tbs extra virgin olive oil •1 tsp cinnamon •1 tsp turmeric •1 tsp black pepper •salt to taste Caramelised walnuts- 2 tbs water 1 tbs brown sugar Method- Start by making your marinade and base the pumpkin and cook on 200 for 30 mins. Cook the quinoa as per instructions on packet. De-spine your kale and add to a large bowl with the rocket. Caramelise your walnuts for 2 mins on a low heat then add to salad. Once the pumpkin is cooked, add to the salad and top with your tahini dressing. This salad sounds complicated but it’s super easy and a quick lunch or side for your dinner. Recipe makeover! My cottage pie recipe has had a facelift. Not one of those discreet jobs, a few fillers here and there. No,this is the kind of face lift with staples behind the ears and an expression normally only achieved in a wind tunnel. . My husband loves a cottage pie, but he’s not a mash fan. He prefers a crispy potato. And I had an abundance of potato and parsnip. So this hedgehog looking dish was born. . . . 🌱small dice onion and carrot and sauté until softened and beginning to caramelise. Add puréed garlic and cook for a further minute or two. 🌱add your protein substitute- I used frozen soy mince, but puy lentils are really good too. Brown the mince then add, two teaspoons of English mustard powder, a few sprigs of thyme- leaves stripped, one tbsp of miso paste and a few good dashes of liquid smoke. Stir to combine. 🌱add your gravy at this point (I used instant gravy granules, onion flavour) and add a little extra water as the mix will continue cooking as you crisp the top. 🌱wash a large potato, a parsnip and a carrot. Fine slice them using the fine blade on a food processor, or a mandolin. Pour the cottage mix into an oven dish, then stand the slices of root veg up in the mix, alternating between potato, parsnip and carrot until the dish is covered. Butter beans with spinach cooked in a paprika tomato sauce 💕 this was such a simple meal but delicious all the same.👩‍🍳 Onion and garlic is cooked in a pan, chopped tomatoes, a teaspoon of smoked paprika and a small amount of water is added to the pan. Simmer until thickening slightly. Add the beans and spinach to wilt. Drizzle with olive oil and transfer to the oven for about 30 minutes . ⭐️ Family Friendly Chilli Paneer 😋 We had this really yummy dinner which everyone thoroughly enjoyed 🙌😍 Its quick and easy to make and I’ve made it milder and extra veggies so that it’s more kid friendly 😀 My kids pretty much love everything in a wrap so this was bound to be a winner! For this I used - 450g paneer, cut into small cubes (this was 2 packs) 1 green pepper, cut into pieces 1 red pepper, cut in pieces 1 courgette, cut into large pieces 2 red onions cut into large pieces 2 tsp @verylazyfooduk garlic Black pepper 1 tbsp Coconut oil for cooking *Optional if you want add more spice - 2 green chillis, finely chopped For the sauce - 1/4 cup tomato ketchup 3 tbsp soy sauce 1-2 tbsp sriracha chilli sauce - depends on spice level you want. I did 1 tbsp as my kids don’t like it too hot 🥵 so add to taste 1 tbsp red wine vinegar 1 tsp honey 1 tbsp cornflour Mix the ketchup, soy sauce, red wine vinegar and chilli sauce in a bowl. Add the cornflour and mix together and set aside. Heat the oil in a large pan or wok and add the paneer, onions, peppers and courgette cook for 10 minutes or until golden. Add the garlic and fry for a couple of minutes. Stir in the sauce and cook for another 5 minutes. Serve with wraps, mint sauce and salad or with rice and salad 😋 This made enough for a family of 5 for dinner. Hope you’re all having a lovely week so far. Root vegetable shapes (just spread root veg mash onto a tray, baked with sesame seeds on top and cut with a cookie cutter), spinach, courgette and red pepper muffin with cheddar and cottage cheese on top and broccoli on the side. Prepping! Today I was lucky enough to have 3 hours of cleaning and cooking time with Max's Granny here to entertain him so after I blitzed the house I used up the blackening bananas on these little guys. I stewed the 2 slightly too soft to eat apples and mashed in the bananas. Then I added a few spoons of peanut butter, ground almonds, chia seeds, milled linseed with omega and 2 massive handfuls of oats. Rolled them into balls, sprinkled them with coconut and baked for 15 ish mins. They were delicious and ready now for when Max gets hungry or to pad out any meals.
