Albóndigas sobre hummus de garbanzos y salsa napolitana. 🥫🍝 Mi almuerzo de ayer!!! Algo diferente y súper fácil de hacer. Las “carne con la que hice las albóndigas es de frijol blanco y quinoa” de @vg3foods son hamburguesas vegetarianas pero yo las amase y las convertí en albóndigas (use dos hamburguesas) Para la salsa Tres tomates maduros partidos en 4. Los llevan al airfryer por 20 min a 200 grados centígrados con sal, pimienta y tris de aceite de oliva. Luego licuan con un par de hojas de albahaca fresca, un poquito de orégano, repasan: sal, pimienta y agregan dos cucharadas de aceite de oliva. Ahh y un tris de panela para matarle el ácido al tomate. Llevan esta salsa al sartén con las albóndigas y dejan unos 5-7 min a fuego medio bajo. Y listo!!!!! El humus es clásico hay muchas recetas en este numeral #hummuscool_turefood y lo q ven como nachos, fue unas tortillas de maíz q partí en 8 y lleve también al Airfryer por 4 min a 180 grados. Ready, set, go!!! Da var prosjektet i gang, og det første som måtte gjøres var å handle inn mat som ikke inneholder kjøtt. Det gikk veldig greit, og det var ikke spesielt dyrt heller! Kanskje å kutte ut kjøtt er noe man kan spare penger på?? This chilli from last week was sooooo tasty 🌶🤪😍 SHOOK at this @nakedgloryuk mince, literally unreal, even tasted good on its own!! Will be using wayyyy more often, Hands done best vegan mince I’ve tried ! Brown the mince in some olive oil and add a bit of salt! Add cumin, cayenne pepper, turmeric, fresh ginger and fresh garlic to taste! Then added a courgette, a bell pepper, celery, mushrooms, and a red onion and 2 veg stick pots and allowed to soften. PLUS as many chillis as you like 🌶 Add kidney beans and 2 x chopped tomatoes 🍅 the longer you leave this.. the better! 🌶🤷‍♂️ are chopped corriander towards the end ! 🍚 for the rice, I left to soak allll day, after rinsing @tildarice basmatic white and brown rice, add to a pan of water and salt, when rice starts to rise.. its nearly ready. 🍫grain free chocolate muffins🍫 ingredients: 2 cups almond flour 1/2 cup organic raw cocoa powder 1/2 cup agave 2 flax eggs 1 cup unsweetened applesauce 1 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt 1/4 teaspoon cinnamon 1 teaspoon pure vanilla extract 1/8 teaspoon pure almond extract __________ directions: 1. preheat the oven to 350 degrees f. 2. in a large bowl, add the wet ingredients, & stir until fully combined. 3. add the dry ingredients, & mix until fully combined. 4. scoop the batter into a lined muffin pan. (the batter will be thick.) 5. bake for 25 minutes or until a toothpick inserted comes out clean.

🍫grain free ultimate fudge brownies🍫 ingredients: ⅔ cup blanched almond flour ½ teaspoon salt 1 tablespoon organic raw cacao powder 6 ounces @eschocolate 72% dark chocolate, coarsely chopped ½ cup coconut oil 3/4 cup coconut sugar 2 flax eggs 1 teaspoon pure vanilla extract 1/2 cup @enjoylifefoods dark chocolate chips __________ directions: 1. preheat the oven to 350 degrees f. line an 8X8 baking pan with parchment paper. 2. in a medium bowl, whisk the almond flour, salt, & cocoa powder together. 3. put the chocolate & coconut oil in a large glass bowl, & microwave for 30 seconds. 4. stir, & repeat until the chocolate & coconut oil are completely melted & smooth. add the coconut sugar. whisk until completely combined. the mixture should be room temperature. 5. add the flax eggs to the chocolate mixture, & whisk until combined. add the vanilla, & stir. do not overbeat the batter. 6. sprinkle the flour mixture over the chocolate mixture. using a rubber spatula, fold the flour mixture into the chocolate until just a bit of the flour mixture is visible. fold in the chocolate chips. 7. bake in a preheated oven for 28-32 minutes or until a toothpick comes out with moist crumbs attached. be sure not to over bake.

🇮🇹kale & walnut pesto🇮🇹 ingredients: 1 medium bunch kale, center ribs & stems removed 2 garlic cloves 1/4 cup nutritional yeast 1/4 cup walnuts 1/2 cup extra virgin olive oil sea salt & freshly ground black pepper, to taste __________ directions: 1. add the kale to the food processor, & pulse until the leaves are slightly chopped. 2. add the garlic, walnuts, & nutritional cheese, & process. 3. slowly add the olive oil in a steady stream until the pesto is at desired consistency. 4. season with salt & pepper, to taste. 🇮🇹italian stuffed peppers🇮🇹 ingredients: 4 large bell peppers 4 cups organic cooked lentils 1 small onion, chopped 2 cups organic cooked quinoa 1 teaspoon sea salt 4 cloves garlic, finely chopped 1, 15 ounce, can no salt organic tomato sauce __________ directions: 1. preheat the oven to 350 degrees f. 2. clean out the peppers, & rinse the insides. 3. heat a large pot of water to boiling, & add the peppers. cook 2 minutes, & then drain. 4. in a large, nonstick skillet over medium heat, cook the onion until translucent. stir in the lentils, quinoa, salt, garlic, & 1 cup of the tomato sauce. heat through. 5. stuff the peppers with the lentil mixture. stand the peppers upright in a baking dish, & top with remaining sauce. 6. cover tightly with foil. bake for 10 minutes. uncover, & bake about 15 minutes longer until peppers are tender.

🍪grain free chocolate chip cookies🍪 ingredients: 2 cups almond meal 1/4 cup melted coconut oil 1/4 cup room temperature pure maple syrup 1/4 teaspoon sea salt 1/2 teaspoon baking soda 2 teaspoons pure vanilla extract 1 teaspoon apple cider vinegar 1/2 cup @enjoylifefoods dark chocolate chips __________ directions: 1. preheat the oven to 250 degrees f, & line a large baking sheet parchment paper. 2. in a large bowl, combine the almond flour, oil, maple syrup, salt, baking soda, vanilla, & vinegar, & stir well to create a uniform, sticky dough. fold in the chocolate chips. 3. drop the dough by heaping tablespoons onto the baking sheet. use your hands to gently flatten & shape them (they will not spread when baking). 4. bake until the cookies are firm to the touch around the edges. 5. remove the cookies from the oven, & let them cool on the pan for at least 10 minutes to firm up.

🎄christmas lasagna🎄 ingredients: 1 package @barillaus gluten free lasagna sheets 1 container @kitehillfoods ricotta 2 1/2 cups homemade tomato sauce 3/4 cup @daiyafoods mozzarella cutting board shreds __________ directions: 1. preheat the oven to 425 degrees f. 2. layer all the ingredients in a pan, beginning with the sauce. 3. cover with foil & bake for 40 minutes. 4. remove from the oven, & let rest for 15 minutes before serving.

🧇grain free waffles🧇 ingredients: 2 cups almond flour 1 cup tapioca starch 1 tablespoon + 1 teaspoon baking powder 2 flax eggs 1 cup unsweetened vanilla almond milk 2 teaspoons apple cider vinegar ¼ cup pure maple syrup 1 teaspoon pure vanilla extract ½ cup coconut oil, melted __________ directions: 1. in a large liquid measuring cup, combine the almond milk & apple cider vinegar, & allow this to rest until thickened & gelled (about 15 minutes). 2. preheat the waffle iron according to manufacturer’s directions. 3. in a large bowl, combine the almond flour, tapioca starch, & baking powder. whisk to combine well. 4. to the dry ingredients, add the almond milk & apple cider vinegar mixture, flax eggs, maple syrup, vanilla, & melted coconut oil. whisk just until batter is smooth. 5. using a ¼ cup scoop (or the size recommended by waffle iron manufacturer), pour the batter into the preheated waffle iron, & cook until golden brown.

🥞chocolate chip pancakes🥞 ingredients: 1 cup almond flour 1 teaspoon baking powder 1 teaspoon stevia extract pinch of salt 3 flax eggs 1/4 cup unsweetened vanilla almond milk 3 tablespoons @enjoylifefoods chocolate chips __________ directions: 1. in a medium bowl, add the dry ingredients, & whisk until all the ingredients are well combined. 2. in a separate bowl, add the flax eggs & almond milk. whisk for one minute until you have a creamy & liquid batter. 3. add the dry ingredients to the wet, & continue whisking for another 30 seconds. 4. add the chocolate chips, & stir them into the batter. let the batter sit for 4 minutes to thicken. 5. heat a nonstick griddle over medium-high heat, & spray with nonstick cooking spray. pour the batter onto the griddle, using approximately 1/3 cup for each pancake. brown on both sides, & serve hot.

🥞almond flour pancakes🥞 ingredients: 1 cup blanched almond flour 2 flax eggs 2 tablespoons pure maple syrup 2 tablespoons coconut oil 1 teaspoon baking powder 1 teaspoon pure vanilla extract 1/4 teaspoon fine sea salt __________ directions: 1. preheat a skillet over medium-low heat on the stove. as it heats, stir together all of the ingredients in a large bowl. (the batter will be a little thicker than traditional pancake batter.) 2. grease the preheated skillet with coconut oil, & then pour 1/4 cup of the batter into the center of the skillet. use a spatula to spread the batter out into a round pancake shape, about 1/4 to 1/2-inch thick. 3. cook until little bubbles start to form around the edges of the pancake, & as soon as the bottom feels sturdy enough to flip (about 3 to 4 minutes of cooking time), use a spatula to flip the pancake & cook the other side, about 2 to 3 more minutes. 4. repeat with the remaining batter, until all of the pancakes are cooked.

🌱garlic kale chips🌱 ingredients: 1 bunch kale (about 6 cups), loosely packed 1 tablespoon extra virgin olive oil 1 teaspoon garlic salt 1/8 teaspoon freshly ground black pepper _________ directions: 1. preheat the oven to 325 degrees f. 2. in a small bowl, mix together the garlic salt & pepper. set aside. 3. remove the leafy green part of the kale from the tough stalk, & tear into smaller pieces. place the kale leaves into a large mixing bowl. 4. add the olive oil, & massage with your hands until every single piece of kale is coated. 5. sprinkle the garlic salt mixture over the oil-coated kale chips. 6. toss the mixture carefully with tongs to evenly distribute the dry ingredients on the kale chips. 7. bake for 25-40 minutes or until the kale is crispy & just begins to brown. stir halfway through. 8. once brown & crispy, let cool completely.

🎄grain free granola🎄 ingredients: 1 1/2 cups unsweetened coconut flakes 3/4 cups sliced raw almonds 3/4 cups whole raw pecans 1/2 cup sprouted organic pepitas 1 tablespoon organic chia seeds 1/2 teaspoon cinnamon big pinch sea salt 4 tablespoons pure maple syrup 1 tablespoon coconut oil 1 teaspoon pure vanilla extract __________ directions: 1. preheat the oven to 300 degrees f. 2. combine the first 7 ingredients (coconut chips through salt) in a large bowl. stir to combine. 3. add the maple syrup & coconut oil to a small bowl. microwave for 25-30 seconds to melt the coconut oil. stir in the vanilla. 4. pour the maple syrup mixture over the granola mixture. mix well to coat. 5. spread onto nonstick cookie sheet, & bake for 15-20 minutes or until almond slices & coconut chips are golden brown (don't let them get too dark), stirring twice. granola will crisp as it cools.

❄️pumpkin chia seed pudding❄️ ingredients: 1/4 cup organic chia seeds 1, 15 oz., can full-fat coconut milk 1 teaspoon pumpkin pie spice 1/2 cup organic canned pumpkin purée 1 teaspoon pure vanilla extract 2 tablespoons maple syrup toppings of choice (optional) __________ directions: 1. stir together the chia seeds, coconut milk, pumpkin, pumpkin pie spice, vanilla, & maple syrup. half the mixture, & pour into two containers. 2. cover, & refrigerate overnight. remove from the fridge, & top with desired toppings, if using. 🇮🇹pesto🇮🇹 ingredients: 2 cups packed fresh basil (stems removed) 3 tablespoons pignoli nuts 3 large garlic cloves, peeled 2 tablespoons lemon juice 3 tablespoons nutritional yeast 1/4 teaspoon sea salt 2 tablespoons extra virgin olive oil 4 tablespoons water __________ directions: 1. to a food processor, add the the basil, nuts, garlic, nutritional yeast, lemon juice, & salt. blend until a loose paste forms. 2. add the olive oil a little at a time, streaming in while the machine is on. scrape down the sides, as needed. 3. add a tablespoon of water at a time until the desired consistency is reached - a thick but pourable sauce. 🍩pumpkin pecan donuts🍩 ingredients: 2 1/2 cups almond flour 4 tablespoons @miyokoscreamery butter, melted 1/3 cup agave 2 flax eggs 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon cinnamon 1 teaspoon pure vanilla extract 1/2 cup chopped raw pecans 1 cup organic pumpkin purée organic sprouted pepitas, for topping (optional) __________ directions: 1. preheat the oven to 350 degrees f. 2. mix all the ingredients, except the pecans, in a blender. fold in the pecans. 3. fill a nonstick 12 mini donut pan with the batter. top with pepitas, if using. 4. bake for 25 minutes or until a toothpick inserted comes out clean.

❄️butternut squash turmeric soup❄️ ingredients: 1 large butternut squash, cooked 2 tablespoons fresh ginger, peeled and chopped 1 onion, diced 1 tablespoon olive oil 2 cups organic no salt gluten free vegetable broth 15 oz. canned lite coconut milk kosher salt, to taste freshly ground black pepper, to taste 1 teaspoon ground turmeric __________ directions: 1. in a large pot, saute the ginger and diced onion in oil over medium heat until softened. add the stock, & bring to a boil. 2. add the cooked butternut squash. 3. stir in the can of coconut milk. 4. season with salt, pepper, and turmeric. 5. use an immersion blender to blend to a smooth purée. taste, and adjust seasonings as needed.
