Another vegetarian HIT in the Arcand house tonight! Starting with vegetarian shepherds pie from Epicure topped with chunky garlic and herb potatoes! I used riced cauliflower/lentils as my “meat”. To accompany that, we had a side of “Do you bake” garlic and herb cheese bread O M G 🤩. For the last almost 5 months I have REALLY concentrated on being dairy/egg free as much as I can. Part of the reason I’ll never be vegan is I don’t want to be stressing over labels and ingredients 🤷🏼‍♀️ lol. So, today (because I didn’t have enough of either) I used a combination of real cheese and dairy free cheese to make this DELISH meal happen! Mongolian Stir-Fry with 🥕 Carrot, Purple Cabbage, 🥬 Bok Choy , Baby Corn 🌽 and Quick-Cook Chinese Noodles (3 minute wheat noodles) When I saw the Mongolian Sauce @hmartofficial I remembered how there was one of those great lunch spots in midtown Manhattan with EVERYTHING. Fill a giant wooden bowl and bring it to the Mongolian BBQ station and they’d throw it on the giant hot rotating grill. You always took wayyy more food than you meant to and paid by the pound. Foodie Friday recommendation @realfoodsg Took the kiddos to see what they think of this vegan joint and they both gave thumbs up. 🍴Miss H had dumpling soup with brown rice vermicelli and extra points goes to the smooth and silky dumpling skin. 🍴Mr J had mushroom soy carbonara and loved that there was a generous amount of mushrooms. He wasn’t too sure about the nutritional yeast topping, because he ate it straight thinking it was cheese, but once all mixed in, he loved the taste. 🍴I had the curry noodle soup, the veggies were fresh and had bite and the spice level was just right to make each spoonful moreish. The menu is so varied that I want to go back and try the sandwiches and salads and their home made drinks. Oh and they have cakes and buns!! It’s an affordable restaurant to try out vegan eats, where the portion is spot on and lots of choice to cater for everyone. They do have a kiddies menu too. It’s Thursday and we usually have meat on the weekends so like to keep things meatless. This is a delicious and easy tofu veggie stir fry that takes little time and delicious over quinoa or brown rice. Simply sauté onions and garlic in avocado oil add assorted veggies (broccoli, carrots, cabbage, snap peas, mushrooms, etc) and cut up firm tofu. ⭐️ Family Friendly Chilli Paneer 😋 We had this really yummy dinner which everyone thoroughly enjoyed 🙌😍 Its quick and easy to make and I’ve made it milder so that it’s more kid friendly 😀 My kids pretty much love everything in a wrap so this was bound to be a winner! For this I used - 450g paneer, cut into small cubes (this was 2 packs) 1 yellow or green pepper, cut into pieces 1 red pepper, cut in pieces 1 courgette, cut into large pieces 2 red onions cut into large pieces 2 tsp @verylazyfooduk garlic Black pepper 1 tbsp Coconut oil for cooking Optional if you want add more spice - 2 green chillis, finely chopped For the sauce - 4 tbsp tomato ketchup 3 tbsp dark soy sauce 1-2 tbsp sriracha chilli sauce - depends on spice level you want. I did 1 tbsp as my kids don’t like it too hot 🥵 1 tbsp red wine vinegar 1 tbsp cornflour Mix the ketchup, soy sauce, red wine vinegar and chilli sauce in a bowl. Add the cornflour and mix together and set aside. Heat the oil in a pan or wok and add the pepper, onions, peppers and courgette cook for 10 minutes. Add the garlic and fry for a couple of minutes. Stir in the sauce and cook for another 5 minutes. Serve with wraps, mint sauce and salad 😋 This made enough for a family of 5 for dinner. Hope you’re all having a lovely week so far. Happiness is... HOT soup on a COLD day 🥶 🍲 ⠀ Vegan Split Pea Soup⠀ Ingredients:⠀ 2 tablespoons olive oil⠀ 1 medium onion, diced⠀ 2 medium carrots, diced⠀ 2 medium celery stalks, diced⠀ 3 garlic cloves, minced⠀ 1 bay leaf⠀ 2 sprigs of fresh thyme ⠀ 6 cups vegetable broth⠀ 1 pound dried split peas (about 2 cups)⠀ 1/2 teaspoon liquid smoke, or to taste⠀ Salt and pepper, to taste⠀ Instructions:⠀ -Coat bottom of large pot with oil, place over medium heat⠀ -Give the oil a minute to heat up, add onion, carrot and celery⠀ -Sweat vegetables for about 10 minutes⠀ -Add garlic, thyme and bay leaf, cook for a 1 minute⠀ -Stir in broth and peas. Raise heat to bring to boil⠀ -Lower heat and simmer until peas are very soft and falling apart, about 1 hour⠀ -If soup is drying out add more broth⠀ -Remove from heat, remove thyme and bay leaf, stir in the liquid smoke⠀ -Season the soup with salt and pepper to taste⠀ -Puree to your desired consistency⠀ -Ladle into bowls and serve! ⠀ This is a great soup to batch cook and freeze in portion sizes. 🙌🏻 to efficiency! ⠀ Recipe creation inspired by @connoisseurusveg

BUCATINI CACIO E PEPE: I absolutely love this dish! The classic is literally black pepper and cheese (melted together to make a sauce with butter and pasta water) but I've jazzed mine up with a little garlic, rosemary and olive oil...plus a combo of Pecorino and Gruyère cheeses...sorry purists! I love the way the rosemary sizzles in the pan, flavouring the buttery sauce along with the garlic. I've used bucatini pasta so all that sauce can flavour the inside and the outside; it's kinda like fat spaghetti with a hole through the middle! It was also double carbs tonight, with ciabatta garlic bread on the side. I'll show you in my stories later 🖤

Just a good old fashioned stir fry that I whipped up based on what was in the fridge. My husband was floored when he found out this was a “spur of the moment” meal followed immediately by annoyance that I may not remember this to recreate it another time 😂 • • • Don’t worry babe, I snapped a pic and am writing it down now: marinated tofu dredged in flour and air fried, baby bok choy fried in avocado oil with garlic and ginger, and stir fried broccoli, radishes, onion, mushrooms, and celery with a little tamari sauce. I buy these falafel bites (2sp each) at Costco and put them on Joseph’s Pitas (1sp each) with some peppers, onions and my Homemade 0sp Tzatziki (it’s not completely 0sp if you’re on @ww 💚- find the recipe in the link in my bio, I often omit mint from the recipe and like it just as much!) and I mixed up a quick chick pea salad using peppers, onions, cucumber, 1 can of chickpeas, avocado oil spray and pink Himalayan salt (4 servings per recipe for 2sp each). Making #Minestrone tonight for dinner. I never made Minestrone before until last month when I started recipe testing. I wanted to make a healthy vegetable soup & since hubby & I both love Minestrone that’s what I decided to make. It came out SO good & it’s very easy to make too. You can mix & match different beans, greens & other veggies. I shared with my bff @phiha2 & her hubby Ty when I first made this and they both loved it, my recipe below. . Shirley’s Minestrone #ミネストローネ . INGREDIENTS: serves 8 2 ~ 14 oz can Kidney Beans drained & rinsed 1 ~ 14 oz cans Cannellini Beans extra-virgin olive oil 1 medium yellow or white onion, chopped 2 medium carrots, peeled and chopped 2 medium celery stalks, chopped 3 cloves of minced garlic 1 (28-ounce) can crushed San Marzano tomatoes 2 tablespoons Tomato paste 1 cup red wine (I used Chateau St Michelle Cabernet Sauvignon) 2-3 medium yellow potatoes, peeled and diced 1 1⁄2 cups green beans, chopped into 1 inch pieces or frozen that are already cut up 2 cups baby kale 1 1/2 tablespoon Italian seasoning 1 teaspoon red pepper flakes 2 bay leaves 6 cups of vegetable, chicken stock or bone broth chopped fresh basil leaves Sardinian fregula pasta (optional) 1 teaspoon salt or to taste 1⁄2 teaspoon freshly ground black pepper or to taste Grated Parmesiano Reggiano DIRECTIONS: 1. Warm 3 tablespoons of the olive oil in a large soup pot or Dutch oven over medium-high heat. Add onion, carrots, potatoes and celery; cook, stirring often making sure they don’t get brown or stick, about 4-5 minutes. Move veggies to the side & add the tomato paste with garlic and stir together. Cook until fragrant, about 30 seconds. Add the red wine to deglaze the pan. Cook another minute. 2. Add canned tomatoes, stock, Italian seasoning, red pepper flakes, bay leaves & drained beans. 3. Raise heat to high & bring to a boil. Reduce heat to low & simmer, uncovered, for 20 - 30 minutes, or when veggies are soft. 4. Add salt and pepper, green beans & baby kale. Cook another 5-7 minutes. Remove bay leaves & add basil a minute before serving. 5. Divide soup in bowls and top with grated cheese & If using pasta boil & add before serving. #soupoftheday
