Between your vegan/plant-based eating journey and my sister, @annapowell27’s forays into vegan eating, I’m more inspired than ever to reduce our family meat and dairy intake (though our meat intake is admittedly already fairly low). Our almost vegan meal for last night’s Meatless Monday dinner. A grain bowl, made with @jovialfoods einkorn wheat berries, @lightlifefoods three grain tempeh, @wholefoods frozen fire roasted corn, @violife_foods vegan feta, avocado, tomatoes, sautéed onion and cauliflower, Cholula (@cholulahotsauce) and the only non-vegan item, a dollop of @daisybrand sour cream. ⁣Caroline and Scott approved! Penn ate butternut squash soup and broccoli because I knew this would be a step too far and I wasn’t willing to fight that particular fight on a Monday night. PS- I know it might not be the best photo. Tastes a lot better than it looks! Stir fry with crispy tofu, soba noodles, and tons of veggies! I used cabbage, spinach, carrots, shaved brussel sprouts, and broccoli. I used the quick and easy tofu recipe from @minimalistbaker and omg it was incredible. This is the first time I’ve actually enjoyed tofu! I also made a quick sauce using soy sauce, rice vinegar, and tonsss of chili garlic sauce bc 🤤 Lots of protein and no cruelty for #meatlessmonday 😊

Im ashamed I let myself get so unhealthy. I was in nursing school all day, studying all night. I was stressed 24/7, I was tired every second of every day. I was grieving after my grandpa passed away. I was mentally exhausted, and my body really suffered for it all. • • So what have I done? • 1. I made a decision and stuck with it. I decided I would NOT be an unhealthy nurse who was not practicing what she preached. • . 2. I surround myself with ONLY positive and supportive people who cheer me on constantly • • 3. I am not hard on myself and i do not judge myself AT ALL. I used to set strict and unrealistic goals that always left me feeling defeated. • . 4. I fed my brain knowledge about the things I was consuming and exposing myself to. Anything that was toxic was CUT TF out. • . 5. Every week I sit down and spend at least 2-3 hours focusing on my goals for the following week. Goals I plan to accomplish by the foods I choose to put in my body. I make an extensive meal plan and I stick to it! NO It’s not salad 3x a day, I have fun with it and eat the most flavorful food I have ever had! Success is planned and then executed. I am a firm believer of that! • . 6. And finally, I became a vegan 156 days ago. I am so thankful I chose this path, and that the people close to me supported my decision with no questions asked. No, it’s not some crazy fad diet, or coffee, or magic pill. It’s patience, education, commitment, dedication, and discipline. Last night I put myself to bed at 630pm and didn’t eat dinner. I still cooked a #meatlessmonday mushroom pasta for my family but I just didn’t feel like food was what my body wanted. My body wanted a hot bath and rest, so I obliged. As I get further into this journey, I’ve been really trying to listen to my body. Sometimes that means not eating a big meal (I had an apple and a piece of turkey pepperoni) and sometimes that means that I need to catch up on sleep (still need to, still tired today). I’m mid-cycle, which always takes it out of me. My body is bloated and slow and, I know, come Weds or Thurs, it will all be over and, for the following 10 days, I will be able to push harder and lift heavier, before the hormonal cycle begins again. There is no rule book, ladies. You don’t HAVE to eat 3 square meals a day, sometimes it’s 6 meals, sometimes it’s one meal, listen to what your body needs. Sometimes you can function on 4 hours of sleep, sometimes you need 11, whatever the issue, self-care is the answer: practice it and elevate your ability to be in tune with you! Al-Hamassies/ Sorrel /الحمصيص في فصل الشتاء يتميز المطبخ الفلسطيني  بطقوس استثنائيه تجعله ذي مذاق خاص وبأكلاته التي تعطي سعرات حرارية عالية تمد الجسم بالدفء .ولا زالت بعض الأكلات التراثية الشتوية محافظة على مكانتها،  وبعضها الآخر اندثرت الا من قليل مازال حاضرا على الموائد، خاصة مع حلول فصل الشتاء. الحمصيص من الطبخات التقليدية المشهورة والتي تقتصر على المطبخ الفلسطيني ختصة المطبخ الغزي واليافاوي ، وهي تطبخ عادة في الشتاء لأنه الفصل الذي تظهر فيه هذه  العشبة . وهي أكلة مناسبة جداً للنباتيين لاحتوائها على العدس الغني بالبروتين، ويحلو تناولها مع الشطه والبصل الأخضر والفجل كما هو الحال في معظم البيوت الفلسطينية الحمصيص نبتة معمرة نحيلة ومنخفضة. لها أوراق سهمية الشكل وسنابل طرفية تحمل أزهارا صغيرة خضراء تتحول إلى حمراء عندما تنضج بذورها. منه أنواع تنبت برية وبعضها يزرع... اهم ما يمتاز به هو حموضته. Palestinian cuisine is characterized by exceptional rites and  special  winter meals that happen to be high in calories in order to supply the body with warmth. Al-Hamassies is one of the most famous and traditional dishes in Palestinian cuisine especially Gazza and Yaffa . It is usually cooked in Winter because it is the season in which the herb appears and grows. This recipe is very suitable for vegetarians because it contains protein-rich lentil. Usually served with bread, green onions radishes and shattah. The plant is long and slender, leaves have the  shape of arrows and the flowers are small, green anr turn to red when they're mature. Albóndigas sobre hummus de garbanzos y salsa napolitana. 🥫🍝 Mi almuerzo de ayer!!! Algo diferente y súper fácil de hacer. Las “carne con la que hice las albóndigas es de frijol blanco y quinoa” de @vg3foods son hamburguesas vegetarianas pero yo las amase y las convertí en albóndigas (use dos hamburguesas) Para la salsa Tres tomates maduros partidos en 4. Los llevan al airfryer por 20 min a 200 grados centígrados con sal, pimienta y tris de aceite de oliva. Luego licuan con un par de hojas de albahaca fresca, un poquito de orégano, repasan: sal, pimienta y agregan dos cucharadas de aceite de oliva. Ahh y un tris de panela para matarle el ácido al tomate. Llevan esta salsa al sartén con las albóndigas y dejan unos 5-7 min a fuego medio bajo. Y listo!!!!! El humus es clásico hay muchas recetas en este numeral #hummuscool_turefood y lo q ven como nachos, fue unas tortillas de maíz q partí en 8 y lleve también al Airfryer por 4 min a 180 grados. Meatless Monday was divine, last night. After getting in from the gym, I oven roasted organic shredded jack fruit in a spicy, garlicky, and vitamin rich homemade red and green chili sauce. I roasted the flavorful jackfruit at 400° for 30 min and it came out great! For dinner we devoured homemade Mexican City inspired baked vegan Huaraches (Masa dough, shaped like the bottom of a shoe) topped with the pulled red and green chili "pork," fresh avocado, watermen radish, Japanese Mustard greens, and hot sauce. Wczoraj umówiłam się z dziećmi na bezmięsny obiad w końcu mieliśmy #meatlessmonday 😉 Na stół wjechały kotleciki z fasoli, soczewicy i kaszy kus kus - dzieciaki się zajadały - a ja czułam ogromną satysfakcję, że zrobiliśmy kolejny krok w celu ograniczenia spożycia mięsa😊👍 ...małymi kroczkami - weganinami może nie zostaniemy ale warto ograniczyć i na początek wprowadzić jeden czy dwa dni w tygodniu bez mięsa - z korzyścią dla naszego zdrowia i dla środowiska😉 . Kotleciki pyszne i do zrobienia w kilka minut🙂 sprawdzą się i w domu i zabrane do pracy do lunchboxa😉 . Składniki: ✔1 puszka czerwonej fasoli ✔1 puszka soczewicy ✔100g kaszy kus kus @targroch.pl ✔3 jajka ✔1-2 ząbki czosnku ✔sól, pieprz, zioła prowansalskie, mielona papryka, szczypta kuminu ( opcjonalnie) ✔olej do smażenia Fasolę zblendować, wymieszać z pozostałymi składnikami. Kus kus możecie dodać suchy bądź zalany wcześniej odrobiną wody. Odczekać 10 minut aż masa stężeje (kus kus wchłonie płyny i masa zgęstnieje). Happy (belated) #MeatlessMonday ! This weekend, I busted out my Crock-Pot to make Lentil Vegetable soup. Would you believe it if I told you this Lentil Vegetable soup cost me next to nothing to make? Plus pantry Staples. •Lentis - I always have these on hand. They are a great source of plant protein and take on the flavor of nearly any dish. • Vegetables - after making previous recipes and lunches, I had leftover celery, carrots, and zucchini that I froze before it went bad. These vegetables are easy to freeze and defrost well in the Crock-Pot! • Potatoes from my @perfectlyimperfectproduce box. •1 can of diced tomatoes and tomato paste - purchased. • Spices from the pantry - salt, pepper, cumin, tumeric, red pepper. • Vegetable broth - homemade! I save vegetable scraps (celery hearts, Broccoli stalks, carrot peels, bell pepper stems) in a bag in my freezer. Once the bag is full, I add the scraps and enough water to cover them in my Crock-Pot, along with a Tbsp of seasoning salt. 8, hours later, I have vegetable broth! To make my soup, I add all ingredients to the crock pot and cover with vegetable broth. This was dinner last night. 🥑🥕🥦 : A fast and easy, fats and fibers filled meal for #meatlessmonday #lifewithadenomyosis : Carrots, tomatoes, asparagus, squash, onion and broccoli. Spread evenly on a sheet tray, seasoned with some Lemon Dash and olive oil then placed in the oven at 425 for 25-30 minutes (depending on cut size) .. pull them out and toss on an avocado pack or your choice of guacamole spread and mix it all together, while everything is still hot to glaze every piece with melted fatty goodness.

Buffalo Cauliflower Bowl 🔥 with an easy buffalo cashew sauce on top for double the flavor 😎 My favorite #meatlessmonday in awhile because this sauce turned out so tasty! And the buffalo cauliflower too 🤤 I roasted all the veggies at once in the oven + made the sauce in just a few minutes. And now I’ve got tons of leftovers 👌🏻 Can’t wait to use this sauce on everything! - - #dinner details 👉🏻 Preheat oven to 425F Buffalo cauliflower: 1 Head of cauliflower cut into florets and coated with 1 tbsp olive oil + 1/2 cup of @sietefoods hot sauce + sprinkle of garlic powder and pink Himalayan salt Add to a greased baking sheet. For the other veggies, I just did 1 tbsp of olive oil + salt + garlic on each of these: 1 lb brussel sprouts (cut into 1/3s) 1 Head broccoli (cut into florets) 3 sweet potatoes Added all of these veggies to 2 pans and baked for 20 minutes. Then I drained and rinsed 1 can of chickpeas. Sprinkled those with chili powder, salt, and garlic. Added those to a pan and baked everything for another 15 minutes. Buffalo cashew sauce: Soak 1 cup of cashews for at least 4 hours in water. Then drain and rinse. Add to a food processor with 1/4 cup @sietefoods Hot sauce 2 tbsp nutritional yeast 1 tsp chili powder 1/2 tsp sea salt 1/2 cup water Pulse everything until it’s a sauce consistency. Detox Thai chop salad with yellow lentils and savory peanut sauce || As I’ve been getting way more into baking lately, I’ve also been finding myself craving mostly raw simple dinners to balance. This salad is super easy if you have a food processor or blender and it’s so flavorful I could not get enough. I had a healthy Taco Tuesday all cued up for you guys from a few days back, but I’m kind of still working on my photography with my DSLR camera, and I didn’t feel like the picture was good enough to post. I’ve been so motivated to get better at photography, but with certain lighting, it’s really hit or miss for me. I start to feel a little frustrated sometimes and want to give up because no amount of editing seems to make some of these pictures presentable haha. I’m going to watch some tutorials online to supplement the photography podcasts I’ve been listening to, but I’m happy to take any tips if you have em. 🆘 #deats (makes enough for 2) are listed below in case you want to save them: 10 brussel sprouts 1 Persian cucumber 1 carrot 1 yellow bell pepper 3 leaves of purple cabbage 1 head and stem of broccoli 1/2 onion 🔹Pop each one into the blender or food processor for maybe 5-10 seconds individually for a coarse chop. You can do it by hand as well if you’ve got a few more minutes to spare. 🔹Cook 1 cup yellow lentils or split peas into the instant pot with 1.5 cups of water, and 1/2 teaspoon salt and pepper for about five minutes. 🔹Mix all of this together and drizzle with peanut sauce and add raw cashews. 🔹Peanut sauce recipe is: 2 1/2 tablespoons peanut butter, 1 tablespoon soy sauce, 2 tablespoons sesame oil or olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 cup nondairy milk, juice of one lime, 1/2 teaspoon chili powder, dash of salt and pepper.

Easily top 3 meals I ever make🙌🏼Tofu Scramble Tacos are always in the weekly rotation because they are quick and easy, they work for breakfast and dinner and anytime in between and they are SO GOOD😍 Whether you make these for #meatlessmonday or #tacotuesday or literally any day or time you won't be disappointed👏🏼👏🏼 ~ "Scrambled" tofu #recipe: Sauté some onions and garlic in a pan then add in desired amount of tofu and mash it all up with a fork. Throw in some nutritional yeast and @thespicehunter smokey turmeric (this spice will change your life buttt can also just use turmeric/garlic powder/cumin/paprika) and let cook for a few minutes until heated through and delicious. Sometimes those dinners are a hit, other times there are groans of dissatisfaction for the lack of meat at the table. Im all about a quick go to meal which is probably why I always go back to this one. I know I’ve taken pictures of it but I wanted to share with you all how quick and easy it really is. . . . I season the shrimp with basil, parsley, Italian seasoning and a little pepper. I add a little butter to steam the shrimp. Once the shrimp starts turning pink I add my cut up peppers (all colors) and mushrooms. I let this sit on medium temp for about 5min. While I’m waiting for the veggies to soften a little I add red pepper flakes ( I love spice) and then BAM meal prep for three days! This go around I paired it with my new found recipe of kale, spinach and onions sautéed in a little extra Virgin olive oil and seasoned to my liking. . . . . Don’t you think that’s pretty easy?

I don’t know how, but I managed to forget to upload this the other day. Me and my boyfriend fancied a vegan brunch last weekend so I made us this. Linda McCartney sausages, toast with vitalite butter, beans, scrambled tofu and garlic spinach and mushrooms. It was delicious! To make the scrambled I use silken tofu (most people use firm but I’ve never liked it) you fry onion, pepper until softened then add the silken tofu(chop it up in the pan until it’s your desired texture), paprika, garlic, herbs, salt and pepper, turmeric or anything you like.
