STACKED BAGELS 🥯 mustard, rocket, pumpkin, flat mushroom, carrot, beetroot, avo + hot sauce! ✨✨✨✨✨✨✨✨✨✨✨✨✨✨✨✨ RECIPE: PUMPKIN: Chop a 1/6 of a small pumpkin into thumb sized chunks and season with 1 tsp of paprika + 1/2 tsp of dried thyme + add to a pan on medium heat. Add salt and pepper to taste and cook for 5 minutes each side + set aside. MUSHROOMS: Add a tsp of vegan butter to the pan + add 2 large flat mushrooms to the pan and cook for 3 minutes each side. Add a 1 tsp of crushed garlic 1 minute before serving. ASSEMBLY: Spread a tsp of wholegrain mustard onto the bagel. then stack rocket, pumpkin, mushroom, grated carrots + beets and sliced avocado. Made a Homemade Spinach Artichoke Dip to share with non vegans. It was a total HIT!! Creamy, gooey, cheezy, and yummy!! Recipe adapted from @minimalistbaker 😊 Since we have a nut allergy in our family, I used @publix Greenwise organic silken tofu and vegan mayo instead of soaked cashews, added lemon juice, @followyourheart vegan Parmesan shreds, @violife_foods mozzarella shreds, only sautéed the garlic and onions, and then mixed all ingredients together and baked for 20-25 minutes (or until bubbly on the sides) in 375 degree oven. My boyfriend (@jeb_brown13 ) took me on a date to Flower Child (@eatflowerchild ) and Jeni’s Splendid Ice Creams (@jenisicecreams ). I got the Glow Bowl with spicy potato noodles, boi chia, zucchini, onion, jalapeño, shiitake mushroom, coconut milk, sunflower butter, and tofu. It was incredible. Easily one of the best tasting meals I’ve ever had and it was vegan and gluten free. I paired it with a Lenny Boy Brewing (@lennyboybrewingco ) strawberry kombucha on tap. The decor and ambiance in Flower Child is so tranquil. I will 100% be going there atleast once a week now. Afterwards, we braced ourselves for the cold and got Jeni’s. I got the dairy-free Texas Sheet Cake on a vegan cake cone. It was absolutely the best vegan ice cream I’ve ever had. Hands. Down. Best. Day. @botanics.clothing Burger by @gone_vegan 🤤🤤🤤 Serves 2-4 Patties 1/3 cup finely chopped red onion 1/4 cup finely chopped green pepper 1 lb vegan minced “meat” 1/3 cup beetroot puree 1 tbsp liquid smoke 1 tsp hot sauce 1 tbs vegan bbq sauce 1/2 tbs sweet paprika 1/2 tsp salt (or to taste) Olive oil Burger 2 squared ciabattas, about 4.5x3.5inch 2 leaves fresh kale, chopped 1 roma tomato, sliced 1/4 red onion, sliced 6 slices smoked vegan cheese 1 tbsp vegan milk 1/2 zucchini, finely slice with a mandolin Sauces at choice (optional) Cut one of the ciabattas in half, as if you were making a sandwich. Remove both the top & the bottom of the second one, leaving a squared slice about 3-4 inch tall. That will become your central slice of bread. Warm 1 spoon of olive oil in a pan & gently pan fry onion & bell pepper for 7-8 min. Place a spoon of oil in a grill pan over high heat & grill the zucchini for about 3 min per side, or until the brown marks start to appear. Place the minced “meat” in a bowl, add the rest of the ingredients for the patties and stir well to combine, until the mix gets a nice and dark meaty color. When ready, place the pan fried onion & bell pepper in the bowl and stir again. Place half of the mix onto a chopping board & shape it into a rectangular, flat form with a flipper. The patty should be as large as the ciabatta, so use one of the slices of bread as a measurement for it. Repeat with the 2nd part of the minced “meat”. Place a spoon of oil in a large pan & carefully move the patties into it. Being so large they might fall apart so lift them gently with the help of two flippers. Cook the patties about 5 min per side, or until nicely brown and slightly crispy. Make sure the minced “meat” is cooked inside and not only outside. Place the vegan cheese & milk in a small pot & cook over low heat until the cheese has melted. Start composing your burger by placing the bottom of the ciabatta on a plate, top with the kale, then 1 of the patties, 1/2 of the melted cheese & the tomato. Add the middle slice of bread, zucchini & onion, then top with the second patty and finally the remaining melted cheese & the leftover slice

Vegan Gluten-free Tikka Masala Ingredients: - [ ] 1 Cauliflower - [ ] 1 white onion chopped - [ ] 1 garlic ; 6 cloves - [ ] 1/2 jalapeño ; chopped - [ ] 1/2 tsp mustard; ground - [ ] 1 Tbsp olive oil - [ ] Freshly chopped cilantro for garnish - [ ] 2 Tbsp cashew cream - [ ] 1-2 cups quinoa (don’t worry, quinoa is gluten-free) Sauce: - [ ] 3 med vine ripe tomatoes - [ ] 1 med red bell pepper - [ ] 1/2 cup fresh cilantro - [ ] 3/4 cup full-fat coconut milk Spices: - [ ] 3/4 tsp garam masala - [ ] 1/2 tsp coriander - [ ] 1/4 tsp turmeric - [ ] 1/2 tsp cinnamon - [ ] 1/2 tsp salt - [ ] Chili powder as needed Cashew cream: - [ ] 1/2 cup raw cashews - [ ] 1/4 cup water To Prepare the Sauce: 1. In a large saute pan, heat 1 tbsp cooking oil on medium heat. 2. Add in the finely grated ginger, minced garlic, green jalapenos (if using), ground mustard, and chopped onions. Cook for a few minutes until fragrant and translucent. Mix frequently. 3. While the mixture is cooking, add all the Sauce ingredients above into a blender 4. Once the onions start to become translucent add all the contents of the saute pan into the blender w/Sauce ingredients. Blend until smooth 5. Pour the sauce from the blender back into the sauce pan, add all the Spices listed above, and mix. 6. Heat the sauce on medium-low until simmering. Cook uncovered for 10-15 minutes on medium-low heat. 7. Rinse blender to make the cashew cream. To Make the Dish: 1. Add all the cauliflower florets into the sauce, toss, and cook, COVERED, for about 10 minutes on low heat (til tender) 2. Remove the cover and cook again on medium heat, stirring occasionally, for up to about 10-15 minutes (til sauce is consistently creamy). While you are waiting, prepare the cashew cream if using. 3. Season with additional salt if needed, turn off the heat, drizzle on 2 tbsp of cashew cream (if using), and garnish with some fresh chopped cilantro. 4.
