I love cooking at home — which there seems to be an awful lot of these days. 💚🧡💛 It lets you control the ingredients and customize dishes to your preference. However, it can be incredibly time consuming. Especially when you count time spent searching for a recipe and clean up. I try to keep quick and healthy options on hand for when I don't want to spend more than 10 minutes in the kitchen, but still want a wholesome meal. My family loves these yummy frozen butternut squash raviolis! This brand is @rising_moon_pasta (which is organic + vegan), but you can use any kind of ravioli. Add your favorite veggies and spices to make a meal. TO MAKE: While I am cooking the ravioli per package instructions, I cut up some cauliflower, bell pepper, and garlic. I add it to a saute pan with frozen green peas and any other veggies I have on hand. Add a little avocado oil and a splash of water to the pan along with a generous sprinkle of turmeric, paprika, pepper, salt, and parsley. I also have a spice in my cabinet called zhug that is delicious and I put it on most things. Feel free to add your favorite spices! Cook on medium heat until the veggies are tender, adding more water if necessary and stirring every minute or two. Once the veggies are almost done, add the cooked ravioli to the pan and cook another 1-2 minutes to brown the ravioli. You may need to add more oil to the pan for this to prevent sticking depending on your cookware. Transfer to a bowl and enjoy! You can add pesto or your favorite sauces, but I enjoy it on it's own.

The photo doesn't do this dinner justice! Homemade vegan Katsu with rice & a side salad with a Chinese style dressing. I used the @lazycatkitchen recipe for the Katsu & it was really easy to follow & tasted great! The sweet potato was a winner with the child & the salad was a big hit with the OH. It's no Wagamama but it tasted ok for my first try.

Gluten free, vegan, soy free quiche. Time for a quiche and some salad today! I was wondering how would a quiche filling taste without eggs and milk. I found a solution. Here is what i used. Ingredients: Pie crust: - 190 g gluten free flour blend - 80 g vegan margarine - pinch of salt Veggies: - half a poree - 1 small broccoli - only the flower heads - cherry tomatoes to decorate the top of the quiche Filling: - 60 g buckwheat flour (you can use another gluten free flour blend) - 120 g almond milk (or any other plant based milk or water) - 240 ml vegetable broth - spices: salt, pepper, smoked paprika, onion powder Directions: Prepare the pie crust. No need to prebake it. 1. Mix flour and salt. Add cold margarine. Knead with your hands until a smooth dough forms. 3. Flatten dough into a disk, wrap it and refrigerate for 30 mins. 4. After it is refrigerated, roll it out then transfer into the pie dish, as the base. Veggies: 1. Boil the broccoli flower heads. 2. Cut them small. 3. Fry poree cut in small pieces. 4. Mix both together. Filling: 1. Mix buckwheat flour with the spices and the almond milk. 2. In a sauce pan bring the broth to a boil. 3. To the boiling broth slowly pour the buckwheat flour mixture while stirring. 4. Let simmer down for 5-6 mins and keep whisking frequently. It will get thick quickly, this is normal. Add the sauteed veggie mix over the pie crust. Pour the buckwheat mixture on top. Cut cherry tomatoes in halve and decorate the top of the quiche. 20 min- Korean Kimchi Soup recipe💖 For my weekly #kitchentiptuesday I thought I'd share my last night's dinner that came together out of pressure to get creative in the kitchen when our fridge was looking pretty empty as we are adjusting to doing grocery shopping online. This experience, actually made me realize that we've buying food in abundance and it's actually possible to stretch our meals with what we have and still eat healthy and well. 💪🙌 . So yesterday, I opened my fridge to find a few boxes of kimchi I bought from Costco that was about to expire and I thought to myself that it could be delicious with some broth and tofu. I recently decided to switch up sauerkraut that I grew up with and try kimchi for it's great gut health benefits and to be honest got a little addicted.😝So this soup I'm sharing today is my take on a Korean classic. Enjoy! . . . Easy Korean Kimchi soup 1 onion, diced 4 cloves of garlic 1 inch fresh ginger 1 cup of kimchi 5 cups of broth/water 1 Thai red chilli , whole 1/2 package of gf pasta 1block of medium tofu 1 tbsp of gf tamari 1 cup of cut up broccoli Heat onion in a tbsp of oil for 4 mins, until transparent, then add garlic and ginger and cook for another min. Add broth, kimchi, red chilli. Cover and simmer for 10 mins for flavour to develop. Then add broccoli, tofu, tamari, . Simmer for another 5 -10 min (depending on how crunchy you like your broccoli). Season to taste. Serve with noodles, fresh green onions and black sesame seeds. PS.My kids surprisingly actually really liked the spicy broth. If you like more spicy, add another chilli or just dice and put it into the broth. But avoid touching your eyes! My favorite #quarantinemeal? Stir fry! Because it is easy, tasty, and full of veggies. I generally buy vegetables in bulk, pre-chop, and then freeze in reusable baggies. This makes it easy to grab whatever veggies I’m feeling that day to add to my frying pan! I throw them all in and add some oil and soy sauce. While doing that, I throw some tofu in my air fryer (I like this consistency the best) which is generally done by the time the veggies have thawed and cooked. I then add every to the plate and voila! Easy stir fry. A family favourite, served with mash or chips or in a bun for BBQ add extra bbq sauce if you like. Without sauce the baked seitan mix and be chopped and used for other dishes like stir fry or kebabs. Our homemade gut-healthy soups at Villa Gaia, come highly praised by guests. One of which, is our coconut ginger pumpkin soup. Pumpkin is fiber rich, low in calories & incredibly satisfying. Ginger is a powerful remedy for colds, indigestion and nausea. So without further ado, here's how you can support your immunity & lick your bowl clean ~ Thai Pumpkin Coconut Soup Serves 4-6 people 2TBS Sunflower or Grape Seed Oil 1 clove of garlic, minced 2 tsp cumin seeds 1 inch/2.5cm sliced galangal or sliced ginger 2 stalks lemongrass root, bruised (hit with something hard to soften the roots) 4 Kaffir lime leaves 1 small onion, chopped 600g pumpkin cut into big chunks 1 tsp salt or to taste 2 TBS soy or tamari sauce ½ tsp chili powder 2-3 cups of water 1.5 cups of coconut milk 2-3 TBS of coconut cream for garnishing (optional) In a soup pot, sauté garlic, cumin seeds, galangal, lemongrass root and kaffir lime leaves with the oil. Add onion, pumpkin, salt, soy or tamari sauce and chili powder. Cook and cover over a low heat for 3-5 minutes. Then, add water and bring to boil over medium heat. Reduce to low heat again and cook until the pumpkin becomes soft. Take out the lemongrass stalks and kaffir lime leaves. Blend into puree with coconut milk, using a blender or hand blender. I don't know about you but I grew up in a soup culture. Not having soup at least once in a while makes me feel incomplete 😄 Plant-based soups are flavorful and filling yet light. This LENTIL QUINOA SOUP has protein in the name. It's so easy to make especially if you have an Instant Pot. Both kiddos 3 and 1 enjoyed it very much! Try it! RECIPE: ✓ 1 onion, diced ✓ 4 cloves of garlic, minced ✓ 3 carrots, chopped ✓ 2 stalks of celery ✓ 1 cup of green lentils, rinsed ✓ 1/2 cup of quinoa, rinsed ✓ 1 tsp curry powder ✓ 1/2 tsp turmeric ✓ 1/2 tsp smoked paprika ✓ 6 cups of veggie broth (or water) ✓ 1/2 tsp salt ✓ 1/4 tsp black pepper ✓ juice of 1/2 lemon (or more to taste) ✓ optional greens, chopped 1. Turn Instant Pot on 'Saute' and add all the vegetables. Cook for ~5 minutes stirring occasionally and adding water to deglaze as needed. 2. Add curry powder, turmeric and smoked paprika, mix and cook for another minute. 3. Add lentils, quinoa, water or veggie broth, close the lid and set for 12 minutes high pressure. 4. After 5 minutes of natural release, manually release the remaining pressure and open the lid. Add salt, pepper and lemon juice. Taste and adjust seasoning. 5. Stir in optional greens. If you don't have Instant Pot you can still make this soup on a stove top. Perks of being home all day: ample time to supervise my lentils while they sprout and evenly marinate my tofu. Lentils are an excellent source of plant-based protein but Jarid has never liked them so I rarely cook them at home. Ingredients: 4 medium sweet potatoes, washed and dried 1 tbsp coconut oil 1 tsp cumin powder 1 tsp garlic powder 1 tsp paprika powder ¼ tsp pink Himalayan salt ¼ tsp pepper 1 can of organic chickpeas or garbanzo beans, drained and rinsed. 1 cup fresh organic spinach ¼ cup pomegranate seeds 2 Tbsp chopped green onion Tahini Sauce: ¼ cup tahini ¼ cup filtered water ½ Tbsp garlic powder ½ tsp salt 2 Tbsp water, optional for thinning Instructions: Preheat the oven to 400 degrees. Rub each sweet potato down with coconut oil and sprinkle with a little bit of salt. Place the whole potatoes on a sheet pan and bake for 30-35 minutes or until you can pierce a fork through the skin easily. In a large pan add 1 teaspoon of oil, chickpeas, cumin, paprika, garlic powder, and mix together. Sauté chickpeas on medium to high heat for 5 minutes or until the chickpeas are crispy. Add the fresh spinach to the pan and cook for another minute. In a medium bowl combine the creamy Tahini Sauce ingredients together and whisk until smooth and creamy. Cut cooked sweet potatoes in half and top with the chickpea and spinach mixture. Sprinkle with pomegranate seeds, chopped green onions and drizzle with Tahini Sauce. Enjoy, loves!
