Stuffed sweet potato. 🤤 I found this awesome 10 ingredient meal prep from @rainbowplantlife that can be mixed and matched to make three different vegan meals. Instead of the pasta meal I used quinoa to make bowls. It’s day 28 in to Veganuary and in the plant based challenge. Today I have another very easy to make, healthy and super delicious lunch or dinner idea for you guys. Potato gnocchi in a tomato and red pepper sauce with garlic vegetables. I used courgette, mushrooms 🍄, broccoli 🥦, sweet potatoes 🍠 and spinach. I cooked all the veggies with garlic and vegan bouillon powder. Cooked the gnocchi and mixed with a tomato and red pepper sauce then mixed all the veggies together with the gnocchi. How to Cook Without Oil ? ⁣ ⁣ Here are a few simple tips to make oil-free cooking even easier: ⁣ ⁣ 1. Stir-frying and sautéing ⁣ Make sure the non-stick pan is nice and hot when you add your veggies, and keep sautéing with a wooden spoon to stop them from burning. If you find them sticking to the pan, just add a splash of water or veggie stock.⁣ ⁣ When cooking pasta sauces, I also like to sauté my onion and garlic in a splash of balsamic vinegar, which gives the sauce a deeper flavour, just as oil wood. 😍⁣ ⁣ When cooking curries and chilli, I dry fry the spices in a hot pan first (just make sure they don't burn), before adding my veggies and liquids.⁣ ⁣ Steaming is also a great way to cook veggie, which is naturally free of oil!⁣ ⁣ 2. Roasting ⁣ Roasting veggies without oil does dry them out a little more, but I really enjoy them cooked this way. Some ways to stop them drying out too much is by coating them in a little veggie stock or maple syrup for a 'glaze', or placing a tray of water at the bottom of your oven as the veggies are cooking, which adds extra moisture. ⁣ ⁣ 3. Salad Dressings ⁣ Oil-free salad dressing options are endless! My personal (lazy) favourite is a simple drizzle of lemon juice, apple cider vinegar or balsamic vinegar on my salad.⁣ ⁣ Other great dressings are mixing tahini with dijon mustard and lemon juice (optional, add a touch of maple syrup), balsamic and dijon, mashed avocado, or a hemp or cashew based creamy ranch.⁣ ⁣ I love also adding a mix of fresh and dried herbs and black pepper to my salads for extra flavour!⁣ ⁣ Whats your favourite way of cooking? I had so much Fun making this tonight I had a bunch of leftover sweet potatoes and was not sure what to do with them so I decided to make a sweet potato and veggie chowder. First I cut the sweet potatoes I peel them and I use veggie broth a little bit of vegan butter and put them in a pot to soften up while that was going, I chopped up all the vegetables, I used celery, red onions, cherry tomatoes, carrots, rainbow peppers, ginger, kale and zucchini. Once the sweet potatoes had soften, I used my immersion blender to blend it all up and brought that to a boil. Ones that came to a boil I put all the veggies inside of the sweet potato broth and let it come to a boil. For taste I used all seasoning spices, Cayenne pepper turmeric cumin and rosemary salt. It was so so super delicious this is an amazing veggie chowder anti-inflammatory and completely vegan I hope you guys give us a try. I don't know what to call this delicious dinner, but you'll probably notice we eat mashed potatoes with a few meals in a row because I make a giant batch from scratch every time I make them. Hi all! Remember we talked about the first step in digestion is to actually slow down and give yourself and your brain some time to process the action of eating and enter the rest and digest mode? ☺️ . Now we are going to talk about step number 2 in optimizing digestion. I’ll give two other simple steps to follow. Ready for it? ✌️ . There’s one simple thing that we all do but you have to do really, really well in order to most benefit from it and this thing is called chewing! 😉 . 1)You want to chew your food thoroughly until solid food feels almost like liquid in your mouth. . Ideally you would chew at lest 23 times per mouthful, and I’ve seen theories that says we should chew 50 times per mouthful (I honestly can’t even imagine that happening)! There no black and white answer as everyone and every food is different but chewing too little delays digestion and may cause you a stomachache. Just remember that your stomach doesn’t have teeth. 😹 . 2)Minimize your water intake/ liquid with your meals. Note that I did not say no water/ liquids whatsoever. Some liquid is totally fine: 4-6 oz. I personally drink some water with my meals. Drinking too much liquid during a meal dilutes your your precious digestive enzymes and that alone will hamper digestion and you’ll feel a sense of heaviness in your stomach. . Vegan lasagna is what we’re having for dinner tonight. This is a family favorite, and it’s easily one of my most protein packed dinners. I used Gardein beefless crumble in the red sauce, I made a tofu ricotta that I added some spinach to, and I used Ragu Simply Chunky Garden Vegetable red sauce, and shredded cashew cheese. I just wing it when layering my lasagna, and I paired this with balsamic honey (we consume honey) roasted brussel sprouts because I loveee brussel sprouts. • Vegan chickpea & pepper pasta • Chickpeas should be a cupboard staple for anyone following a #plantbased diet 🌱 they’re packed full of protein & iron, and plenty of fibre for a #healthygut 🦠 Ingredients 🛒 - 1 onion, diced - 1 garlic clove, crushed - 2 peppers, diced - 1 tin chickpeas - 1 tin tomatoes - Italian herbs, salt & pepper - pasta of your choice Method 👩🏼‍🍳 Cook the pasta according to packet instructions. Meanwhile, fry the onion and garlic in oil until starting to go translucent. Add the peppers and fry for 5 mins. Pour in the tomatoes and chickpeas, and season with the herbs, salt & pepper. Megan here! I made super simple rice bowls for dinner last night featuring the best tofu ever. I baked the tofu squares, brushing them with ssamjang sauce until they were super crispy. Then I sauteed some greens in loads of garlic and ginger, and chopped up some carrots and radish. This literally took 30 mins. I'm having it with some kimchi because a spicy Monday is the best kind of Monday. (Ps if you're a tofu hater, you can use chickpeas. Curry is my "go to meal" to clean up the fridge of different kinds of veggies & to warm me up on a chilly, dull day 👌😊 It's also very easy to make, contrary to a popular belief! Just invest in a good curry paste (that will last you quite some time too!), few staple spices (turmeric, ginger, garam masala, coriander being my favourite) and you're good to go! Bake on 200c for 20/25 mins 🧅Fry chopped onion for 6/7 mins until soft 💦Dissolve 50g solid coconut cream and 1 veg stock cube in 250ml boiled water 🧄Once onion has softened add 2 grated cloves of garlic, 15g of grated ginger, 1/2 tsp ground turmeric and 1 tbsp of korma curry powder. I cant express how alive I feel when I eat this way. One of the best things I ever did was train as a raw vegan chef. Food should energize you and this does. The pizza crust was dehydrated yesterday and today I made the macadamia, cashew cheese. My house smells amazing.. Back in the the dehydrator for a few hours and then it's chow time.. I’ve been working on my mindset lately.. I've been journaling, meditating, reading lots of self help books, surrounding myself with a community of like minded online entrepreneurs that hold me accountable and fill me up. I've been sleeping better and drinking my water. I love eating raw and love sharing my knowledge with others.. I feel my best when I eat this way. I normally eat raw 60-80% of the time..
