Not only are beans a delicious source of protein.. you also get the benefits of the plantain both have fiber and other nutrients to fight against chronic illnesses . Stuffed plantains . 2Ripe Plantains 2 tbsps Oil (optional) (Use vegetable broth or paste to eliminate oil) 1Canned Black Beans 1/2 cup Onion (diced) 2Green Onions (diced) 1 tspMinced Garlic 1Medium Tomatoes (diced) 1 tspSmoked Paprika 1 tbspParsley 1/4 cupChopped Green Pepper Cooking Spray Preheat the oven to 400°F. Line baking sheets with foil and coat with cooking spray or oil Using a sharp knife cut both ends off the plantain. This will make it easy to grab the skin of the plantains. Slit a shallow line down the long seam of the plantain; peel only as deep as the peel. Remove plantain peel by pulling back. Place plantains on tray and lightly spray, bake for a about 15, turn and bake on the other side for another 15 minutes or until golden brown and tender. (See Notes for an quicker option and method) While the plantains are baking, add 2 tablespoon of oil or broth/paste to a saucepan, followed by smoked paprika, onions, green onion , garlic and tomatoes. Let it simmer for about 5-7 minutes, stirring frequently to prevent burning, add about 2 tablespoons or more of water if needed. Then, add beans and continue cooking for about 5-7 or more minutes. Finally add green pepper and parsley, adjust for seasoning Remove baked plantains from oven cool for a couple of minutes; make a horizontal slit in the plantains, stuff with equal amounts of beans mixture. Serve warm . I don't use meat-replacement mince/burgers etc that often, but in an attempt to reduce supermarket shopping I dug around in the freezer and found this reduced @meatlessfarm mince... I cooked it up into a chilli with leftover pizza sauce, some herbs and spices, veg that needed using and a tin of beans and one of lentils. Megannyi odaégetett ízetlen tofu, szinte folyóssá párolt brokkolik és túlfőzött tészták után @kristofsteiner akkori első könyvére esett a választásom. Sok sok receptet kipróbáltam a könyvből, idővel egyre otthonosabb lett számomra a konyha, egyre ügyesebben variáltam a hozzávalókat, és egyszerűen elkapott az az érzés, hogy én mennyire, de mennyire is szeretek főzni. . Rainbow 🌈 Carrots 🥕 I never liked carrots ever and so I never ate them, EVER, lol. Then I came across these beautiful carrots and decided that I would try to juice them with my other fruits and veggies since I had always read that they help with eyesight (I was contact lense wearer most of my life until I got lasik). These actually tasted sweet and smooth when I mixed with 🍎. So just yesterday, I was sent a video about carrots 🥕 that spoke of their acidity so I researched one of my go to sources, Dr. Sebi. This is what he has said: Dr Sebi spoke on carrots 🥕 to be an artificial man made acidic seedless vegetable created in Holland by mixing the Queens Anne’s Lace and the wild yam 🍠 through hybridization/ grafting. He also said that carrots are very high in starch, which is a man made chemical binder that is harmful to consume. We all should do our research and make the best decisions we can, but I’ma go with Dr Sebi on this one. There are a actually NO SEEDS and that gives me super pause. Kinda irritated I didn’t think of that before, but like I said, I don’t like carrots so I never really looked into the origin. What do you guys think? baked buffalo cauliflower bites⁣⁣ 🦋🦋🦋⁣⁣ preheat oven to 425 ⁣⁣ i cut up one medium head of cauliflower and in a medium bowl i mixed: ⁣⁣ *3/4 cup flour ⁣⁣ *1/2 cup water⁣⁣ *1/2 cup oat-milk⁣⁣ *some pepper ⁣⁣ *some salt⁣⁣ *some paprika ⁣⁣ *some lemon juice ⁣⁣ *i then coated all the cauliflower florets and put them on a baking tray. VEGAN RAMEN 🍜 this was my first time ever making & tasting ramen and i loved it! it is definitely a comfort dish. the broth was so rich and full of flavour, and the noodles just soaked it right up. of course i followed a vegan and gf recipe by @minimalistbaker (easy vegan ramen) and it was a great recipe to follow for someone who has never made it before. for veggies i used zucchini & mushroom (in the oven at 400f for 25 mins with some tamari, avocado oil, & a pinch of cayenne). i also used some raw tofu that i had marinated before hand (raw tofu is my favourite). to top it off i used some @sietefoods traditional hot sauce, and there you have it! super easy, super delicious ramen! check out the recipe: https://minimalistbaker.com/easy-vegan-ramen/

Who needs eggs when you can have My version of LOADED TOFU SCRAMBLE for the win! For this recipe i used FIRM tofu because i prefer the texture as I’ve always loved my eggs scrambled hard! . . The trick to cooking tofu is making sure you get all the water out! I cut it into thick slices and press between a clean cheese cloth or paper towel! . . . TOFU SCRAMBLE 🌱 🌱 8oz Tofu . 🌱Veggies of choice: i used eggplant, tomatoes, jalapeños, onions, roasted red peppers. . . SAUCE 🌱1/4 cup Unsweetened Almond Milk . 🌱1tbs Dijon Mustard . . 🌱2 tbs Nutritional Yeast . 🌱1/2 tsp Cumin . 🌱 1/2 tsp Tumeric . . 🌱 1/2 tsp Paprika . . Salt to taste 😋 . . I like to sauté my veggies first then add tofu and brown ... after the tofu gets some color I then add the liquid mixture and cook till all the liquid dries up and the tofu is my desired color! . . You can eat with any side of your choice! VEGAN LENTIL BOLOGNESE 🍝🍅Via @elavegan ⠀⁠ 📋 Ingredients:⠀⁠ 1 tbsp oil 1 medium onion finely diced 1 medium (52 g) stalk celery finely diced (1/2 cup) 10 oz fresh (280 g) mushrooms finely diced (or 1 oz dried) 2 medium (200 g) carrots finely grated 4 cloves garlic finely minced or crushed 2 tsp Italian seasoning or use 1 tsp each of dried oregano and basil 1 tsp onion powder 1 tsp coconut sugar or sweetener of choice Pinch of red pepper flakes or to taste Salt and black pepper to taste 1/3 cup (80 ml) red wine or use more vegetable broth 3 cups (750 g) crushed tomatoes or marinara sauce or tomato sauce 2 cups (480 ml) vegetable broth 1 bay leaf 1 cup (200 g) dry lentils I used brown, soaked 1 tbsp soy sauce gluten-free if needed or tamari 1 tbsp balsamic vinegar 1/2 cup (120 ml) plant-based milk 1 tsp cornstarch 8 oz (225 g) spaghetti gluten-free if needed or pasta of choice Vegan parmesan or nutritonal yeast to garnish (optional) ~~ 👩‍🍳 METHOD Heat oil in a pan or pot over medium heat. Add onion, celery, mushrooms, and carrots. Sauté for 3-4 minutes. Stir in garlic, sweetener, and all spices. Sauté for a further one minute, stirring frequently. Add red wine (or vegetable broth), crushed tomatoes, vegetable broth, the bay leaf, and the drained lentils. Stir to combine. Bring to a boil and let simmer for 20 minutes or until the lentils are tender (depending on the variety it can take shorter or longer). Meanwhile, cook your favorite pasta (e.g. spaghetti) as per package instructions. Add soy sauce and balsamic vinegar. Mix the plant-based milk and cornstarch in a small bowl and add the mixture to the pan. Taste and adjust seasonings. Add more salt/pepper/spices to taste. Also, add more vegetable broth if needed. Serve the lentil bolognese in bowls over pasta and sprinkle vegan Parmesan on top (optional). Enjoy!

🍫🌶CHOCOLATE TEQUILA TRUFFLES First off: these are D. A. N. G. E. R. O. U. S. Secondly, they are PACKED full of fiber, protein, chocolate and...of course...tequila! #yourewelcome Bookmark this recipe ➡️ for later and try it out or tag a friend below who might enjoy these boozy goodies. I personally didn’t feel like rolling them into traditional “truffle” shape so I put them in paper liners in a mini-muffin tin and it worked just as well! ENJOY BABES! 💋🍫 . INGREDIENTS: ▫️ 1/4th + 1/8th cup almond milk ▫️1/4 cup coconut milk (I used the lite, not full fat) ▫️1 scoop chocolate veggie superfood powder ▫️3/4 cups vegan dark chocolate chips (Lilly’s brand is what I found this time!) ▫️1 1/2 Tablespoons unsweetened cocoa powder (and extra to dust the top) ▫️3 Tablespoons Tequila ▫️ 1/2 teaspoon salt ▫️1/2 teaspoon vanilla extract ▫️1/4-1/2 teaspoon chili powder or cayenne pepper DIRECTIONS: 1️⃣ In a small sauce pot, stir both almond and coconut milk over low-medium heat until warm. Add Chocolate veggie superfood powder and cocoa powder and whisk until combined. 2️⃣ Slowly add the chocolate chips a little at a time and stir until melted and smooth. (Be cAreful that your pot isn’t too hot, otherwise it will burn the chocolate and won’t get smooth.) Remove from heat. 3️⃣ Add the tequila, vanilla extract, cayenne/chili powder and salt. If you want it to be spicier or more salty, adjust according to your preference. (Do NOT do this when the ganache is too hot because the heat will cook away all the alcohol in the tequila and vanilla) 4️⃣ Line a mini-muffin tin with paper liners and decide the ganache evenly between them. Tap the tray gently on the countertop so that you can bring all the air bubbles to the surface. Dust the top with unsweetened cocoa powder and place in freezer. 5️⃣ Freeze for a minimum of 2 hours before eating. They are best straight out of the freezer.

A warm and healthy meal that’s packed with germ-fighting nutrients from Inspire Health Nutritionist Dr. Betsy Redmond. Butternut + Chickpea Stew: 1. Heat 1 tsp olive oil and sauté ~ ¾ cup diced onions and 4 minced garlic cloves. 2. Once soft, add 2 tsp curry powder, 1 tsp cumin, 1 tsp paprika, ¾ tsp fresh ginger and a pinch of cayenne; sauté 1 minutes. 3. Add 1 can roasted-diced tomatoes, 1 bag frozen-diced butternut squash and 4 cups vegetable stock. 4. Bring to a boil and simmer ~15 minutes until squash is soft. 5. Add 2 cups fresh spinach, 1 cup of cooked brown rice and 1 can of chickpeas. The first year I went vegan, I feel off quite a few times for 2 major reasons.⁣⁣ ⁣⁣ 1 - I didn’t understand all my options. Thankfully, there are a TON of vegan options now!! Even when I went vegan seven years ago, it wasn’t bad. However, whenever something is new to you there’s going to be a bit of a learning curve.⁣⁣ ⁣⁣ 2 - I was taking a perfectionist approach. I wanted (thought I wanted, anyway) this perfect, utopian fresh-from-the earth diet that wasn’t always very practical. So even when I would discover vegan-friendly items, I would question if it was still “ok” for me to eat them.⁣⁣ ⁣⁣ This led to a lot of unnecessary restriction. Which eventually led to binge-eating behavior &/or running thru a drive-thru, or bakery to get junk food that most definitely wasn’t a good choice.⁣⁣ ⁣⁣ I felt like I was on another bad nutrition merry-go-round! After driving myself crazy enough times, I got clarity by asking myself what was really important to me.⁣⁣ ⁣⁣ Going vegan started as an experiment for me, but as time went on the ethical reasons became a more powerful motivator. So the first thing I decided was that I could eat anything I wanted as long as it was vegan.⁣⁣ ⁣⁣ I made the conviction that Animals Are Not Food, but food is just food. I did not punish myself if something I ate wasn’t tree-hugging natural. @whofooadventures Can’t have your regular six month cleaning at the dentist due to the “stay home” order? No problem! A little scrubbing motion on your teeth using a wet clean washcloth and some baking soda will help remove coffee and tea buildup making them feel clean and smooth!
