O meu primeiro pão de fermentação natural ❤️⠀⠀ ⠀⠀ Para quem desconhece, o pão de fermentação natural é um pão feito com farinha, água, sal e fermento natural (também denominado isco, massa mãe ou starter).⠀⠀ ⠀⠀ Ou seja, não é feito com o habitual fermento de padeiro, mas antes com um fermento natural, criado em casa durante vários dias, seguindo um processo cuidadoso e rigoroso de junção de farinha e água (sim, apenas estes dois ingredientes).⠀ ⠀⠀ É um pão, tal como o nome indica, que fica a fermentar durante várias horas, resultando numa melhor digestibilidade e disponibilidade de nutrientes (corrijam-me se estiver em erro).⠀⠀ ⠀⠀ Tem um sabor ligeiramente ácido, devido à fermentação. Faz lembrar o pão Alentejano ou o pão de antigamente, que era feito segundo este processo. É também chamado de pão de fermentação lenta, pão de massa mãe ou sourdough.⠀⠀ ⠀⠀ Este foi o meu primeiro. 100% integral (trigo) para ser logo um desafio ainda maior. Não ficou perfeito, mas ficou muito saboroso e foi adorado pelos meus pais e pela minha avó, que comia este pão quando era pequena.⠀ ⠀ Já foram muitos os pedidos e irei partilhar o método que segui com vocês, depois de mais algumas tentativas. My favourite quick and easy jackfruit curry with mushrooms! If you love curry and healthy comfort food try this one out for dinner 😍 jackfruit is so much fun to cook with and tastes incredible in curries, stews, soups, etc. What’s your favourite way to use it? Simple jackfruit curry with mushrooms Ingredients: 1 medium onion, chopped 2 cloves garlic, minced 1 tsp smoked paprika 1 tsp cumin 1 tsp garam masala 1.5 cups mushrooms, chopped 1 can jackfruit, drained and rinsed 1/2 can coconut milk 1/2 can tinned tomatoes 1 tbsp vegan curry paste (or curry powder) Salt and pepper, to taste Method: Add the onion, garlic, smoked paprika, cumin and garam masala to a non-stick saucepan with a splash of water. Sauté for 2-3 minutes, until softened and fragrant. Then, add the mushrooms and sauté for around 3 minutes more, until they begin to cook down. Meanwhile, pull apart the jackfruit pieces using your hands or a fork. Transfer the jackfruit to the saucepan and add the coconut milk, tomatoes, and curry paste. Simmer over a medium heat for 8-10 minutes, until thick and creamy. Season to taste with salt and black pepper before serving. Homemade Vegan “Twix” Bars by @thebigmansworld 💛 Follow @vegangotgame for more delicious vegan recipes!💚💚#vegangotgame Recipe:⠀ Instructions:⠀ For the cookie bar layer:⠀ 3/4 cup coconut flour 1 cup almond flour ⠀ 1/4 cup maple syrup⠀ 1/2 cup granulated sweetener of choice ⠀ 1/4 cup vegan cookies of choice ⠀ 1/2 cup plant-based milk of choice⠀ For the gooey caramel:⠀ 1 cup cashew butter - Can sub for any nut or seed butter⠀ 1 cup sticky sweetener of choice (like maple syrup)⠀ 1 cup coconut oil ⠀ For the chocolate coating:⠀ 2 cups vegan chocolate chips⠀ ⠀ Instructions: ⠀ 1. Line a square pan or loaf pan with parchment paper and set aside.⠀ 2. In a large mixing bowl, add your coconut flour, almond flour, and granulated sweetener of choice. Mix very well. Stir through your syrup and mix until a thick dough remains. ⠀ 3. Add your crushed cookies and using a tablespoon, add your milk of choice slowly until a thick batter remains. If the batter is too thick, continue adding milk. Once desired texture is achieved, transfer the batter to the lined pan and refrigerate. ⠀ 4. In a microwave-safe bowl or stovetop, combine your cashew butter, syrup and coconut oil and heat until combined. Whisk very well to ensure the coconut oil is fully mixed it. Pour the caramel over the cookie bar nougat layer and place in the freezer. ⠀ 5. Once the bars are firm, remove from pan and cut into 18 bars. Place back in the freezer again. ⠀ 6. Melt your chocolate chips. Remove the Twix bars and using two forks, dip each bar in the melted chocolate until evenly covered. Continue until all the bars are covered. Refrigerate until firm.⠀ Enjoy!

Ajo El ajo es una planta de la familia de las cebollas, sobre su origen, se dice que llegó al medio Oriente hace unos cuatro mil años procedente de Asia central. Su uso en la India y Egipto está documentado en el tercer milenio antes de Cristo. Se cultiva en todo el mundo por sus propiedades culinarias y efectos saludables, es rico en un compuesto de azufre llamado alicina, del que se cree es el responsable de todos los beneficios que aporta a nuestra salud. El ajo contiene cantidades significativas de algunos micronutrientes como el manganeso, la vitamina B6, la vitamina C y el selenio, y es bajo en calorías. Es rico en polifenoles y otras sustancias antioxidantes. Los principales beneficios del ajo, derivan de su riqueza en sustancias antioxidantes, en la antiguedad fue muy utilizado como remedio de diversas enfermedades, en la actualidad hay datos científicos que apoyan su uso. Se han demostrado ciertos beneficios para el control en las personas con hipertensión arterial, con hipercolesterolemia y con diabetes mellitus tipo 2. Por otro lado el ajo tiene propiedades hipotensoras e hipolipemiantes, mejorando la circulación sanguínea y ayudando a personas con problemas de colesterol. También es un antiagregante plaquetario, por lo que su consumo excesivo o en formas concentradas puede interferir en los medicamentos anticoagulantes. Uno de los principales problemas es que el ajo se repite, pero eso podemos evitarlo abriéndolo y extrayendo el germen o brote central que hay en su interior. También podemos poner el ajo en remojo durante un par de horas antes de utilizarlo para que la sustancia que hace que se repita se diluya, recuerda estos tips antes de incluir el ajo en tu “sofrito” de verduras. Mixed together with oat flower they get a nice crispy crust when baked in some olive oil. Connaissez vous la soupe de riz ? C'est une recette traditionnelle chinoise à priori assez austère, puisqu'il s'agit de faire cuire le riz longtemps à feu très doux dans beaucoup d'eau, sans assaisonnement, pour un résultat proche du porridge, mais en réalité hyper réconfortante et surtout parfaitement digeste - la médecine chinoise la considère d'ailleurs comme le remède idéal quand on se sent un peu patraque ou qu'on couve quelque chose. Je la prépare souvent le dimanche soir quand on a un peu trop "profité" du week-end et j'y ajoute des légumes en cours de cuisson, comme ici une belle patate douce en gros bâtonnets. J'ai mis sur la table tamari, graines de sésame, cebettes, coriandre et miso et chacun a customisé son bol de riz comme il voulait 🍚🍚 Il en restait une part, que j'ai partagé avec ma fille le lendemain matin accompagnée de miso blanc et de fruits frais, c'était délicieux. "𝗩𝗲𝗴𝗮𝗻 𝗶𝘀𝘁 𝘃𝗶𝗲𝗹 𝘇𝘂 𝘁𝗲𝘂𝗲𝗿.." ⠀ Hast du diesen Satz auch schon mal von jemandem gehört oder vielleicht sogar schon selbst gesagt? Wenn ich ehrlich bin, auch ich habe das vor einigen Jahren gedacht als ich das erste mal etwas von Veganer Ernährung gehört habe. Ich sah Kochbücher in denen Lebensmittel standen, von denen ich zuvor nie etwas gehört oder gelesen habe… „Tahin, Mandelmus, Tofu etc.“ und auch Gemüsesorten mit denen ich zuvor nie hantiert habe 🙃 Wenn man diese Dinge dann vor die Nase gehalten bekommt und von einigen Lebensmitteln die Preise sieht, denkt man sich nur „Whaaaaaaaat?“ 🤯 Natürlich gibt es teurere & günstigere Lebensmittel ABER diese gibt es in jeder Hinsicht und nicht nur bei Veganer Ernährung. Auch wenn du Fleisch isst hast du immer die Wahl zwischen gutem Bio Fleisch welches teurer ist und billigem Fleisch aus der Massenhaltung. Ich hoffe hier wählst du ersteres… ⠀ Der springende Punkt ist jedenfalls das -egal wie du dich ernährst- immer auf frische und unbehandelte Lebensmittel zurück greifen solltest. Also selbst kochen. 🥒🌶 Umso mehr Fertigprodukte du kaufst, desto mehr Geld wirst du auf den Tisch legen. Ich rede hier von TK Pizzen, Lasagne, Süßkram und und und. Das sind alles Sachen die ziemlich teuer sind & auch nicht satt machen- also isst du mehr & kaufst auch mehr. Seitdem ich Überwiegend im Bio Laden einkaufen gehe, zahle ich sogar weniger als im normalen Supermarkt! Kein Scheiß. Warum? Weil ich nur das kaufe was ich auch wirklich verwerte & satt werde. Ich lasse mich zudem nicht von sinnlos-Lebensmitteln verführen, da es davon im Bioladen ohnehin kaum welche gibt. Im Korb landet also nur das, was ich wirklich brauche. Lebensmittel dich mich gesund halten & satt machen… mit denen mein Körper etwas anfangen kann. So häufig sehe ich bei anderen Körbe voller Fertig-Fraß und Unmengen an Chips, Schokolade, Softdrinks etc. Und diese Einkäufe sind weitaus teurer als vollwertige & gesunde Lebensmittel 🥦🍫 ⠀ Du hast eben die Wahl. Immer.

Sometimes dinner is a well thought out coordinated affair, and other times it’s a mishmash of things that need to be eaten. Like tonight. BEAN BURRITO BOWL The team at @goodful have got a winner with these burrito cups ! 🌿🌿🌿 They say: “Veggie Bean Burrito Bowl Serves 4-6 INGREDIENTS For the burrito bowl: 1 tablespoon olive oil 2 zucchini squash, diced 1 yellow bell pepper, diced 1 red bell pepper, diced 3 garlic cloves, minced 1 14-ounce can cannellini beans, rinsed and drained 1 tablespoon thyme leaves ½ teaspoon cayenne pepper 1 ¼ teaspoons salt 4-6 8-inch flour tortillas For toppings: Guacamole Pico de Gallo 🌿🌿🌿 PREPARATION 1: Preheat oven to 350°F/175°C. 2: Turn a muffin tin upside down, and stuff tortilla shells into the spaces between the cups so that the tortillas form a bowl shape. Bake for 20-25 minutes until golden and crispy. 3: Heat the olive oil in a large, nonstick skillet. Toss in the diced bell peppers, zucchini, salt, cayenne pepper, thyme, and garlic, and sauté until the vegetables have softened, about 8 minutes. 4: Add in the cannellini beans and sauté just until the beans have fully warmed through, about 2 minutes. 5: Divide the mixture evenly between 4-6 tortilla bowls. "Cooking done with care is an act of love." ❤ Vegan Chocolate chip banana squares! Ingredients: 150gr bananas, mashed 73gr brown sugar 3 tbsp plant based milk (I used hazelnut) 1/2 tsp vanilla extract 3/4 tsp cinnamon 1/2 bicarbonate of soda 1/4 salt 90 gr chocolate chips (vegan, dark or if you don't have just chopped the chocolate into very small pieces) How I made it: Preheat the oven to 180°C. Add baking paper on a square tin 20cm. In a large bowl add the mashed bananas, sugar. Non dairy milk and vanilla extract and mix it well. Add the flour, baking soda, cinnamon and salt and mix. Fold in half the chocolate chips. Pour the mix in the baking tray using a spatula and spread it evenly. Sprinkle the rest of the chocolate chips on top. Bake it for 15 mins or until a toothpick inserted comes out clean. Let it cool down before slicing. They are a great source of antioxidants, can be good for blood-sugar balance, and have a low glycemic impact. ⠀ ⠀ ⠀ Recipe Details (also at http://eatrefolo.com/blog and the link in bio)⠀ 1. Blend all these ingredients: 1 (15-ounce) can tomato purée 5 medjool dates, 1 teaspoon onion powder, 1 teaspoon garlic powder, 2 teaspoons paprika, 3 tablespoons mustard and 1 tablespoon apple cider vinegar.⠀ ⠀ 2.Plop it in a high speed blender and blend until smooth, adding water if necessary to thin.⠀ ⠀ 3. grab a medium sized sauce pan and simmer the mixture for about 10 minutes to intensify the flavors⠀ ⠀ 4.enjoy :)⠀ ⠀ We had this sauce with some collard wraps, What would you eat this with?

Mexi-Style tofu scramble---> WINNING! Okay but for reals, there are so many ways to flavor your food and mix it up so that you don't get bored. It's funny when people eat vegan food and are amazed by how good it tastes...you flavor your meat to taste good don't you? Why wouldn't you do the same for your veggies! In this tofu scramble I used chili powder, paprika, cumin, lime, coconut aminos and some vegan queso to add some mexican flare. And then of course I topped it with hot sauce because hot sauce goes with everything right?! lol. The key to food in general is how you season it, vegan or not! I love using spices in my cooking and also adding in as many different color sas possible. The more variety of colors, the more variety of nutrients. Here I used mushrooms, onions, red yellow and green peppers, tomatoes and cilantro. Now that we are all cooped up at home, it's a good time to play around with your food! DANONINHO DE INHAME INGREDIENTES -4 inhames médios -150g de morango -1 pitada de sal -1/2 colher de chá de baunilha -2 colheres de sopa de açúcar demerara MODO DE PREPARO Cozinhar o inhame em água até ficar bem macio e bater junto com os outros ingredientes no liquidificador. Resfriar na geladeira por 2h e saborear!
