😍😍 from @vegan3oh5 ・・・ There’s something about a big bowl of polenta that is just comforting 😍 I made this cheesy polenta using Follow Your Heart shredded Parmesan cheese. I think I much prefer the Parmesan from Violife in this recipe because the flavor shines through more since it is slightly pungent like a real Parmesan. On top are some crispy balsamic and garlic roasted Brussels sprouts. Mixed it all together and it was 👌🏼 •

Excited to share one of my favorite recipes that I’ve been making for a few years😌 Curried mung bean & cabbage stew! _ Have you tried mung beans?! They’re not as common in the US, but they are a staple in India, China, & Southeast Asia. They have been used in traditional Chinese medicine for centuries to support the spleen & stomach. They are also one of the easiest beans to digest! _ ✨2 cups dried mung beans ✨3 carrots ✨3 celery stalks ✨1/2 a medium cabbage ✨Veggie stock ✨Fresh garlic cloves ✨Bay leaf, curry powder, turmeric, cayenne pepper, black pepper, Himalayan salt, bay leaf Rinse dried mung beans & soak in water for 12-24 hours. Rinse & discard any bad beans. Chop all veggies & garlic. Sauté garlic with coconut oil & spices on medium heat, add chopped celery & carrots, add veggie stock & 2-3 cups of water depending on pot size, add cabbage & mung beans, bay leaf, bring to boil. Simmer for 45 min.

They are a great source of antioxidants, can be good for blood-sugar balance, and have a low glycemic impact. ⠀ ⠀ ⠀ Recipe Details (also at http://eatrefolo.com/blog and the link in bio)⠀ 1. Blend all these ingredients: 1 (15-ounce) can tomato purée 5 medjool dates, 1 teaspoon onion powder, 1 teaspoon garlic powder, 2 teaspoons paprika, 3 tablespoons mustard and 1 tablespoon apple cider vinegar.⠀ ⠀ 2.Plop it in a high speed blender and blend until smooth, adding water if necessary to thin.⠀ ⠀ 3. grab a medium sized sauce pan and simmer the mixture for about 10 minutes to intensify the flavors⠀ ⠀ 4.enjoy :)⠀ ⠀ We had this sauce with some collard wraps, What would you eat this with?

Typically, the only canned veggies I normally ever use is beans. However, we’re living in weird times and I prefer to only go to the grocery store when absolutely necessary. So I created this recipe to be a simple meal that can be thrown together when all of your fresh produce is gone and the ingredients are hopefully made up of items in your pantry. Also, this meal is quite cheap. I purchased every single item from @aldiusa for this recipe. When choosing a salsa, make sure it is a flavorful one as it is a large part of the flavoring. I hope you all enjoy and are staying safe and well! * * Simple quinoa salad Makes 3-4 servings (according to how much my husband and I eat in one serving😂) 2 cans of chickpeas, drained and patted dry 2 tsps olive oil 1 can sweet whole kennel corn, drained 1 can green beans or peas, drained 1/2 tsp garlic powder 1/2 tsp pepper 1/2 tsp turmeric 1/2 tsp dried cilantro 1 tsp chilli powder A pinch of salt 1/2 cup dry quinoa 1 cup of your favorite salsa (I recommend at least a medium spice one. The salsa provides a good majority of the flavor in this recipe) Optional toppings: avocado or guacamole, fresh cilantro, cheddar or feta, hot sauce * * Preheat the oven to 400 degrees. Toss the chickpeas in the olive oil and all of the spices. Cook the chickpeas for 10 minutes, toss them around in the oven to prevent sticking and add in the corn and beans, and cook for another 10 minutes. Meanwhile, cook your quinoa according to the package instructions. Once the quinoa is done, stir in the salsa and then all the veggies. 30 minute Garlic Veggie Stir-Fry with Rice Noodles. 🍲🥰 . Follow @jungleofveggies for more! . Picture by @itsallgoodvegan . Garlic Vinaigrette 3 Tbsp oil, I used olive oil. Add more to thin your dressing out. 3 Tbsp soy sauce, sub for GF soy sauce or GF tamari ½ tsp agave or maple syrup ½ tsp rice vinegar ½ tsp garlic powder ¼ tsp salt ¼ tsp pepper . Stir-Fry 1 tsp water ½ cup frozen shelled edamame 1 cup fresh spinach ⅓ cup asparagus , chopped . Noodles ½ package of rice noodles, cooked according to the back of the package. . Garnish- toasted sesame seeds, green onion, and micro kale mix . Directions In a medium bowl combine the Garlic Vinaigrette ingredients together and whisk. Set vinaigrette aside. Heat a large pan on medium heat. Once hot, add the water, edamame, and asparagus. Cook for 4-5 minutes, stirring occasionally. Add the fresh spinach to the pan and toss. Take the pan off the heat immediately (the fresh spinach will wilt quickly).Assemble your bowl. Add the rice noodles and stir fry. Lightly drizzle the noodles and veggies with the garlic vinaigrette. I am practically living in the kitchen at the moment. Happily, I might add and creating and cooking up all sorts. I love this recipe, vegan faux gras, or mushroom and lentil pate. It makes a nice change from hummus and you can add it on crackers, toast, freshly baked bread, eat it as a dip or with a spoon. It’s honestly, so flavoursome and moreish and hard to close the lid on. I’ve left a link in my bio and you will find the recipe there. When I’m not cooking, I’m working hard on writing and creating recipes. As well as improving my blog. I love cooking at home — which there seems to be an awful lot of these days. 💚🧡💛 It lets you control the ingredients and customize dishes to your preference. However, it can be incredibly time consuming. Especially when you count time spent searching for a recipe and clean up. I try to keep quick and healthy options on hand for when I don't want to spend more than 10 minutes in the kitchen, but still want a wholesome meal. My family loves these yummy frozen butternut squash raviolis! This brand is @rising_moon_pasta (which is organic + vegan), but you can use any kind of ravioli. Add your favorite veggies and spices to make a meal. TO MAKE: While I am cooking the ravioli per package instructions, I cut up some cauliflower, bell pepper, and garlic. I add it to a saute pan with frozen green peas and any other veggies I have on hand. Add a little avocado oil and a splash of water to the pan along with a generous sprinkle of turmeric, paprika, pepper, salt, and parsley. I also have a spice in my cabinet called zhug that is delicious and I put it on most things. Feel free to add your favorite spices! Cook on medium heat until the veggies are tender, adding more water if necessary and stirring every minute or two. Once the veggies are almost done, add the cooked ravioli to the pan and cook another 1-2 minutes to brown the ravioli. You may need to add more oil to the pan for this to prevent sticking depending on your cookware. Transfer to a bowl and enjoy! You can add pesto or your favorite sauces, but I enjoy it on it's own.

HOW TO LOWER GROCERY COSTS 🥦 . . One of the biggest expenses when it comes to high food cost is not being organized or planning ahead. This causes us to default and buy something quick and easy but usually more expensive than a home cooked meal. . . Now that most of us are at home and have the time, start meal planning. . . Here are a few tips that our household has found helpful. . . 1️⃣ Buy in bulk. We have found zero-waste grocery shopping actually saves us money. FYI there is going to be a new zero waste grocery store @chickpeaceplanet opening in Kelowna early this summer. . . 2️⃣ Cook from scratch and batch cook. Leave out expensive prepackaged foods. . . 3️⃣ Switch out meat and cheese for dried beans. Not only are beans, lentils etc inexpensive, but they have lots of fibre and protein to keep you fuller longer and have less sodium than canned beans. When we went whole foods plant based our grocery bill dropped significantly. Also the added health benefits more energy, reduced inflammation and feeling better overall. . . 4️⃣ Buy produce that is in season. . . 5️⃣ Meal plan, find meals that are tasty and satisfing like chili, curries, stews also very inexpensive to make. . . 6️⃣ Monitor your families eating habits, are you eating out of boredom, which a lot of us are doing right now or actual hunger. Who needs eggs when you can have My version of LOADED TOFU SCRAMBLE for the win! For this recipe i used FIRM tofu because i prefer the texture as I’ve always loved my eggs scrambled hard! . . The trick to cooking tofu is making sure you get all the water out! I cut it into thick slices and press between a clean cheese cloth or paper towel! . . . TOFU SCRAMBLE 🌱 🌱 8oz Tofu . 🌱Veggies of choice: i used eggplant, tomatoes, jalapeños, onions, roasted red peppers. . . SAUCE 🌱1/4 cup Unsweetened Almond Milk . 🌱1tbs Dijon Mustard . . 🌱2 tbs Nutritional Yeast . 🌱1/2 tsp Cumin . 🌱 1/2 tsp Tumeric . . 🌱 1/2 tsp Paprika . . Salt to taste 😋 . . I like to sauté my veggies first then add tofu and brown ... after the tofu gets some color I then add the liquid mixture and cook till all the liquid dries up and the tofu is my desired color! . . You can eat with any side of your choice! 🇩🇪⬇️ Baked Miso Eggplant 🍆💚 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ How to make: Cut an eggplant into cubes. Salt the pieces and drizzle them with with a bit of oil, bake for 15 min (250 °). Mix 1 tbsp miso paste, 1 tbsp mirin, 1 tbsp tahini, 2 tbsp soy sauce, 2 tbsp lemon juice, 2 tbsp water and a bit of garlic. Take the eggplant out of the oven and mix it with the miso-marinade. Put it back in the oven for about 20min - Done! I served it with cauliflower rice and cucumber salad. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 🇩🇪 Gebackene Miso-Aubergine 🍆💚 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Zubereitung: Aubergine in Stücke schneiden, mit Salz bestreuen und mit etwas Öl beträufeln. Etwa 15min im Ofen bei 250 ° backen. In der Zwischenzeit 1 EL Misopaste, 1 EL Mirin, 1 EL Tahini, 2 EL Sojasoße, 2 EL Zitronensaft, 2 EL Wasser und etwas Knoblauch zu einer Marinade verrühren. VEGAN LENTIL BOLOGNESE 🍝🍅Via @elavegan ⠀⁠ 📋 Ingredients:⠀⁠ 1 tbsp oil 1 medium onion finely diced 1 medium (52 g) stalk celery finely diced (1/2 cup) 10 oz fresh (280 g) mushrooms finely diced (or 1 oz dried) 2 medium (200 g) carrots finely grated 4 cloves garlic finely minced or crushed 2 tsp Italian seasoning or use 1 tsp each of dried oregano and basil 1 tsp onion powder 1 tsp coconut sugar or sweetener of choice Pinch of red pepper flakes or to taste Salt and black pepper to taste 1/3 cup (80 ml) red wine or use more vegetable broth 3 cups (750 g) crushed tomatoes or marinara sauce or tomato sauce 2 cups (480 ml) vegetable broth 1 bay leaf 1 cup (200 g) dry lentils I used brown, soaked 1 tbsp soy sauce gluten-free if needed or tamari 1 tbsp balsamic vinegar 1/2 cup (120 ml) plant-based milk 1 tsp cornstarch 8 oz (225 g) spaghetti gluten-free if needed or pasta of choice Vegan parmesan or nutritonal yeast to garnish (optional) ~~ 👩‍🍳 METHOD Heat oil in a pan or pot over medium heat. Add onion, celery, mushrooms, and carrots. Sauté for 3-4 minutes. Stir in garlic, sweetener, and all spices. Sauté for a further one minute, stirring frequently. Add red wine (or vegetable broth), crushed tomatoes, vegetable broth, the bay leaf, and the drained lentils. Stir to combine. Bring to a boil and let simmer for 20 minutes or until the lentils are tender (depending on the variety it can take shorter or longer). Meanwhile, cook your favorite pasta (e.g. spaghetti) as per package instructions. Add soy sauce and balsamic vinegar. Mix the plant-based milk and cornstarch in a small bowl and add the mixture to the pan. Taste and adjust seasonings. Add more salt/pepper/spices to taste. Also, add more vegetable broth if needed. Serve the lentil bolognese in bowls over pasta and sprinkle vegan Parmesan on top (optional). Enjoy!

Add 1 medium russet potato (grated), 4 garlic cloves (minced), 1/2 tsp ground mustard seed powder, 1/2 tsp garlic powder, 1/2 tsp onion powder/granules, 1/4 tsp red chili flakes. Sauté another minute. Add 2/3 cup raw cashews and 1 cup vegetable broth or water. Bring to a simmer and cook until potatoes are done(about 10 minutes), adding more water or broth as needed and stirring regularly. Transfer to a blender and add 1 tbsp apple cider vinegar + 1/4 cup nutritional yeast (+ 1/2 tsp pickled horseradish optional). Blend until smooth. Salt to taste. Mix in sautéed or lightly steamed veggies of choice. Last night’s dinner 😍 roasted up some cauliflower with oil, salt, smoked paprika and cumin at 450 for 30 minutes (flipped them halfway through). Then made a little sauce out of almond butter, lime juice, a thinly sliced chili and a crushed garlic clove. I added water until it was the right consistency. Then I heated up the tortillas in a pan and plated up with some thinly sliced onion, purple cabbage, avocado and lime juice. Also added some extra hot valentina’s hot sauce after I took the pictures 🤤

Yep, I'm on that sourdough bandwagon and not ashamed. I've wanted to make a starter for years but, honestly, couldn't be bothered 😂 I wanted to do some more baking while I have time on my hands but don't consider yeast an essential.. It is also non existent in supermarkets right now. Keen as ever to avoid food waste I've been looking into uses for the 'discard' (the bits you throw away after a few days) and came across a recipe for these sourdough crackers. These ones are topped with sesame seeds and flavoured with fresh rosemary and sea salt and they are deeeeelicious. Let's hope my future sourdough loaves are this successful!

Easy vegan friendly cashew cookies with chocolate chips oh my days!⠀ ⠀ ⠀ Recipe:⠀ 2 spotted bananas⠀ 1 tsp cinnamon⠀ 4 tbs cashew butter⠀ 1 cup rolled oats⠀ Chocolate chips⠀ ⠀ ⠀ Preheat the oven to 180c. Mash the bananas, add the cashew butter and cinnamon and mix. Stir in the oats and choc chips. Roll into cookie shapes on a baking tray and bake in the oven for 18-22 mins!
