No bake chocolate & pomegrate tart for a healthy and fancy dessert ✨ _________________ Crust: ✔️2 cups almond flour or oat flour (blended oats) ✔️1 tablespoon cacao powder ✔️65 gram coconut oil, melted ✔️2 tablespoons maple syrup ✔️pinch of sea salt Filling: ✔️1/2 cup canned full-fat coconut milk ✔️200 grams chopped dark chocolate (if its very bitter you can add some xylitol or other sugar to the filling mixture) ✔️seeds from 1/2 pomegrate Grease a tart form with some coconut oil. In a bowl, combine all of the ingredients for the crust. Press evenly along the bottom and up the sides of the prepared tart form. Place in the refrigerator while you prepare the filling. Place the chocolate in a large bowl. In a saucepan, bring coconut milk to boil. Pour hot coconut milk mixture over chocolate and let stand 1 minute, then whisk until smooth and melted. Pour the filling into the prepared crust and top up with pomegrate seeds. SOUTHWESTERN CHOPPED SALAD WITH CILANTRO-LIME DRESSING by @thegardengrazer Follow us @vegspirationfeed for Daily vegan recipes INGREDIENTS 1 large head romaine 15 oz. can black beans 1 orange bell pepper 10 oz. cherry/grape tomatoes 2 cups cooked sweet corn (I use organic frozen corn and thaw it) 5 green onions FOR THE CREAMY CILANTRO-LIME DRESSING: 1 cup loosely packed cilantro (stems removed and roughly chopped) 1/2 avocado (or 1/2 cup plain vegan yogurt) 2 Tbsp. fresh lime juice (about 1/2 lime, more to taste) 1-2 garlic cloves 1/4 cup olive oil (for oil-free, sub a little water to thin) 1 1/2 tsp. white wine vinegar 1/8 tsp. salt Recommended: agave & cumin to taste INSTRUCTIONS Make the dressing: blend all dressing ingredients in a food processor/blender until smooth. They are a great source of antioxidants, can be good for blood-sugar balance, and have a low glycemic impact. ⠀ ⠀ ⠀ Recipe Details (also at http://eatrefolo.com/blog and the link in bio)⠀ 1. What are your favorite simple meals that are sustaining you through your quarantine? Most of my favorite lunch bowls during this time have been super simple (which makes things a lot easier while we continue to juggle our current schedule). Always a versatile option, we have been enjoying many a meal with a good balance of greens (or other veggies) and grains. I like to make big batches at a time if I can and top them a little differently each time so we don’t get tired of eating the same exact thing. This massaged kale salad was lightly dressed with olive oil, lemon juice and a pinch of salt before I added some Persian cucumbers, cherry tomatoes, toasted pumpkin seeds, sunflower seeds and scallions. I made this meal more filling and balanced by adding some other leftover ingredients that I had in my fridge as well: red quinoa (toasted and cooked in vegetable broth), chickpeas that had been dressed the previous day in a little olive oil and za’atar, lime pickled red onions, crunchy mini pickles, the last of my fresh cilantro and a good drizzle of zesty beetroot tahini sauce. Maybe tomorrow I will top this with a poached egg or some leftover tempeh strips... either way, it is one less meal that I have to put a lot of time into! I hope you are all staying healthy! Sticky Garlic Tofu by @happyskinkitchen 🍛😋❤️ You find the original post and the recipe on her page! 👆 . Ingredients: 1 block of firm/ extra firm tofu 2 tbsp of toasted sesame seeds oil 1/2 cup of hoisin sauce 2 tbsp of Tamari or soy sauce 3 garlic cloves – finely minced . To serve: 1 cup of uncooked brown rice 3-4 spring onions finely chopped A generous sprinkle of sesame seeds 1 tsp of chilli flakes (optional) . Start by pressing the tofu between 2 tea towels to remove the excess water. Then chop the tofu into cubes. In a frying pan on a medium heat add soy sauce, hoisin sauce and the minced garlic and give it a good stir. Add in the tofu cubes and mix it all together to make sure the tofu is coated with the sauce. Remove from the heat, let it cool down and place it in the fridge for 20 minutes. In the meantime cook the brown rice according to the packaging instructions. In a frying pan add the sesame oil, once hot add in some of the tofu cubes in a single layer along with the sauce. Fry for 5 minute without flipping them, then flip them over and cook them on the other side for another 5 minutes. Add the chopped spring onion at the last minute. Sweet N spicy dip 🌱 . . Ingredients: 2 cups chopped sweet potatoes 1 cup chopped cauliflower 4 tbsp olive oil 1 tsp cumin 1/2 tsp paprika, garlic powder & red pepper flakes 1 tbsp lemon juice Salt & pepper to taste . . Directions: Steam or roast the veggies until soft Blend the veggies and the rest of the ingredients in a high speed blender until almost smooth leaving some chunks for texture. Using this down time to make @thehealthyavo's almond milk & almond pulp granola 🤤 Both recipes below 👇⁠ *Cashew Almond Milk*⁠ Ingredients:⁠ •1 cup raw almonds⁠ •1 cup raw cashews⁠ •5 cups filtered water⁠ •3 dates (depending on how sweet you would like it)⁠ •1/2 tbs cinnamon⁠ •1 tsp vanilla extract⁠ Directions:⁠ 1. Simply soak almonds and cashews overnight in water.⁠ 2. The next morning drain and rinse them, then place in a high speed blender. ⁠ 3. Add water, dates, cinnamon, and vanilla to blender. Blend until nice and creamy looking. ⁠ 4. Strain through your Bigger Better Nut Milk Bag. ⁠ Once strained, let chill in fridge and enjoy within 5-7 days.⁠ *No Waste Granola*⁠ •leftover cashew almond pulp⁠ •1/2 cup walnuts⁠ •1/2 cup pecans⁠ •4 dates⁠ •sprinkle of cinnamon⁠ Directions:⁠ 1. Place walnuts, pecans, and dates in a food processor and pulse a few times. Pour into a bowl and add in almond pulp with cinnamon. ⁠ 2. Give it a nice stir then pour onto a baking sheet, press flat onto sheet making sure the middle isn’t too thick. This granola will make big chunks! ⁠ 3. Bake at 350 for 20-25 min, once done let cool completely before breaking up into smaller pieces. ⁠ (This recipe is very minimal and clean, so add anything you want to spruce it up! Nut butter, coconut oil, or maple syrup would be great additions.)

@lafemmevegan⁣⁣ ⁣⁣ "One of the things that holds a lot of people back from #goingvegan is the fear of giving up so many foods they enjoy. If this is you, I get it! The first year I went vegan, I feel off quite a few times for 2 major reasons.⁣⁣ ⁣⁣ 1 - I didn’t understand all my options. Thankfully, there are a TON of vegan options now!! Even when I went vegan seven years ago, it wasn’t bad. However, whenever something is new to you there’s going to be a bit of a learning curve.⁣⁣ ⁣⁣ 2 - I was taking a perfectionist approach. I wanted (thought I wanted, anyway) this perfect, utopian fresh-from-the earth diet that wasn’t always very practical. So even when I would discover vegan-friendly items, I would question if it was still “ok” for me to eat them.⁣⁣ ⁣⁣ This led to a lot of unnecessary restriction. Which eventually led to binge-eating behavior &/or running thru a drive-thru, or bakery to get junk food that most definitely wasn’t a good choice.⁣⁣ ⁣⁣ I felt like I was on another bad nutrition merry-go-round! After driving myself crazy enough times, I got clarity by asking myself what was really important to me.⁣⁣ ⁣⁣ Going vegan started as an experiment for me, but as time went on the ethical reasons became a more powerful motivator. So the first thing I decided was that I could eat anything I wanted as long as it was vegan.⁣⁣ ⁣⁣ I made the conviction that Animals Are Not Food, but food is just food. I did not punish myself if something I ate wasn’t tree-hugging natural. Need some dinner inspiration? Well look no further! @katiescraftykitch's cashew vodka sauce with bowtie pasta 🍝 Recipe below 👇⁠ Ingredients:⁠ •2 cups of your favorite marinara OR alternatively, make it from scratch, in which case, you will need: 1 15oz can of crushed tomatoes, 1 clove minced garlic, 1/2 cup diced onion, 1 tbsp olive oil, 1 tsp dried oregano, and salt and pepper to taste⁠ •1/2 cup of cashews, soaked in hot water for a couple of hours, drained, and dried⁠ •1/2 cup of water⁠ •2 shots of vodka (We prefer Tito's, plus it's gluten free)⁠ •Couple leaves of fresh basil⁠ Directions:⁠ 1. If using pre-made marinara sauce, add the 2 cups to a sauté pan, and heat over medium heat. If starting from scratch, heat olive oil over medium heat, then add in garlic and onion, and sauté until onions become translucent. Add in crushed tomatoes, oregano, salt, and pepper, and mix through.⁠ 2. Add in vodka and stir through.⁠ 3. Cook for 5-10 minutes on low heat to cook out the alcohol, stirring often.⁠ 4. Meanwhile, take the 1/2 cup of soaked, drained, and dried cashews, along with the 1/2 cup of water, and blend together in the food processor until creamy.⁠ 5. Add the cashew cream to the marinara + vodka mixture, and mix through.⁠ 6. Add in basil leaves.⁠ 7. Cook for another 2-3 minutes, so flavors blend together.⁠ 8. Add salt and pepper, if necessary. ⁠ 9. Toss with pasta and serve hot!⁠ *Recipe makes 4-6 servings, and it will keep in an air tight container in the fridge for up to a week*
