Creamy Tomato Mushroom Pasta Recipe: 125g pasta of choice 1/2 onion, chopped 150g mushrooms 2 tbsp tomato purée 1 tbsp tamari 1/2 tbsp maple syrup 1/4 can coconut milk Black pepper to taste Large handful kale Cook the pasta according to packaging instructions. Meanwhile, add the onion and the mushrooms to a non-stick frying pan and cook for around 5 minutes, until the mushrooms soften. Add the tomato purée, tamari, maple syrup, coconut milk, and season to taste with black pepper. A simple bean chilli by @nourishingalex 🥑 . Serves 2-3⁣ Ingredients: ⁣ - 1 small onion, diced⁣⁣⁣ - 400g can chopped tomatoes⁣⁣⁣ - 1 vegetable stock⁣⁣⁣ cube - 3tsp garlic powder/granules - 1tsp smoked paprika ⁣ - 1 1/2 tsp ground cumin ⁣ - 1/2tsp mild chilli powder⁣⁣⁣ - 1tsp dried oregano ⁣ - 1tbsp maple syrup⁣⁣⁣ - 1/2 390g tin red kidney beans, drained & rinsed⁣⁣⁣ - 1 tin black beans, drained & rinsed⁣⁣⁣ - salt & pepper, to taste⁣⁣⁣ ⁣⁣⁣ 1. Sauté the onion on a medium heat setting in a pan of water/oil until translucent for about 6mins.⁣⁣⁣ ⁣⁣⁣ 2. Pour in the chopped tomatoes, then using your chopped tomatoes tin, fill it with water halfway, then pour the water in the pan, then add in your vegetable stock cube. ⁣ ⁣⁣⁣ 3. Add in all the spices, dried oregano, maple syrup, beans, salt & pepper. Bring it to boil, then once it starts to bubble, turn down the heat to low and simmer for 30 mins until the sauce has reduced and thickened. ⁣ ⁣ 4. Serve with rice, quinoa, potatoes, salad or veggies and guacamole. ⁣ ⁣

Old faithful breakfast 🌿 Asda free from soft cheese is the best and no one will convince me otherwise 🥯 • Nothing gets me out of bed like a bagel (I wish I was joking). This was a fear food for a while so I’m glad that’s over with 🌻 • I went back to the gym last night for the first time since July and it was really great. Took it very easy because I don’t wanna push myself too hard. I’m here to get stronger and healthier this time, weight loss isn’t on the cards no matter how many time’s it tries to wheedle it’s way back into my head.

Ingredients 💁🏼‍♀️ 🍃 1 Cup Spinach Leaves, pre steamed 🍃 1/2 Cup Kale Leaves, pre steamed 🍃 1 Garlic Clove, crushed 🍃 2 Tbsp. Olive Oil 🍃 Pinch of Sea Salt 🍃 1/4 Cup Almonds 🍃 1 Tsp. Nutritional Yeast 🍃 Pasta (your choice), just cook according to instructions. 🍃 1 Cup Legumes (your choice), presoaked and boiled. 🍃 1 Tsp. Vegan Mayo . Method 💁🏼‍♀️ 1. In a blender (I just used the @nutribulletaus) blitz, almonds, greens, olive oil, vegan mayo and nutritional yeast into a paste, sauce like consistency. 2. Sauté some garlic in a pan, once cooked, add in cooked pasta, legumes and green sauce. 3. Tofu Katsu Sushi Sandwiches or “Onigirazu”! 📷 by @thefoodietakesflight Japanese Sushi Rice Recipe: 3 cups uncooked Japanese rice 1/2 cup rice wine vinegar (this type of vinegar is essential) 3 tbsp white sugar 1 1/2 tsp sea salt Preparing the rice 1. Wash the Japanese rice 2-3 times with water. 2. Cook in a rice cooker. 1 cup rice = 1 cup water 3. While the rice is cooking, pour rice vinegar, sugar and salt into a large wooden or ceramic bowl. Mix well. 4. Once rice is cooked, add into the vinegar mixture and mix well. The hot rice will easily absorb the mixture. 5. Cover the rice with a damp towel. Refrigerate for at least 1 hour. Cover with a towel or cling wrap then refrigerate. Wrap Japanese sushi rice in nori sheets, fil with the “Katsu” which are breaded hot and spicy vegan fillets, carrot ribbons, and some lettuce. Finish off with lots of sesame seeds and homemade teriyaki sauce! Apricot rugelach by @woon.heng . “⁣Happy Wednesday, everyone🤗. We all need dessert every once in a while, right?🥰 A combination of butter, cream cheese & a bit of flour gives this pastry a flaky & light crust that you can't stop after the first bite.😁 ⁣ Recipe (makes ~ 24 pieces)⁣ • Dough Ingredients (adapted from @nytcooking ):⁣ 🍃1 cup of all purpose flour, 4oz cold vegan butter, 4oz vegan cream cheese (@daiyafoods brand), sprinkle of salt, 2 tablespoons chickpea water⁣ ✔️In a food processor, blend all ingredients until just well combined (be sure not to overmix, stop before a dough forms, check stories☝🏻). Place dough on countertop & form two discs so it's easier to roll later. Wrap each dough with parchment paper & freeze for at least an hour. Work on the filling while waiting.👌🏻 ⁣• Apricot jam:⁣ 🍃2 cups dried apricot - cut into tiny bits, 1/2 cup fresh orange juice, 3-4 tablespoons maple syrup⁣ ✔️Place ingredients in a small pot & cook under low heat. Mash apricot with fork while cooking. If it's too dry, add a little water to thin it down until you get a soft & blendable apricots. Using a hand blender, blend mixture until it turns into a fine paste. Taste test, more maple syrup if needed. Dough has very little taste, so a flavorful but not overpowering filling is needed. 🤗 ⁣✔️Remove 1 dough from freezer and let thaw until you can roll them out. Roll dough into a rectangle shape, about 1/2" thick on a parchment paper underneath. Spread half of the apricot mixture on the dough, then roll into a log with the help of parchment paper. Cut log into 12-14 pieces, do not cut all the way. Freeze while you preheat the oven or work on your next dough. When ready, brush log with chickpea water & sprinkle with demerara sugar. Bake at 350F for 20 mins and broil on low for 2-3 mins (oven temperature varies, please check texture before adding more minutes). Remove from oven & let it cool , then, cut the pastry all the way. *Using a parchment paper was a lifesaver, if you roll it out on your countertop, be sure you do it fast or the dough will stick when it starts to melt.”

MAC AND GOUDA BAKE😍Do you love Baked Mac & Cheese? YUM Follow us @vegadishes for daily vegan recipes Ingredients 1 lb of Short Pasta ( I used a really fun shape called Fusilli Bucati Corti) 6 slices of Follow Your Heart Smoked Gouda Cheese 1 cup of Raw Cashews ( I use Terrasoul Mylk Cashews) 1/3 cup Nutrional Yeast 1 tsp of Garlic Powder 1 tsp of Onion Powder 1 tsp of Dried Tarragon 1 tsp of Liquid Aminos or Light Soy Sauce 3 tsp of Horseradish Mustard 2 1/2 cups of Unsweetened Plant Milk ( I like Unsweeted Cashew Milk from Silk) Salt & Pepper to taste Bread Crumb Topping: 1/3 cup plus Seasoned Bread Crumbs 1 Tbsp of Vegan Butter melted 1/2 tsp of Garlic Powder Chopped Parsley for garnish Directions 1. Soak the Cashews in enough hot water to completely cover them for at least 30 minutes. 2. Rinse the Cashews after soaking and blend them with about half of the Plant Milk until completely smooth and creamy 3. Add in the Nutrional Yeast, Liquid Aminos, Mustard, Spices and Gouda Cheese (cut the slices into smaller pieces) and blend again until smooth 4. Season with Salt & Pepper, add in the rest of the Plant Milk and blend again until completely creamy 5. Cook the Pasta according to package directions and once drained add back to the cooking pot. 6. Pour the Cheese Sauce over the cooked Pasta and mix well 7. Pour the Mac and Cheese into a baking dish and top with the bread crumb mixture 8. Cover with foil and Bake at 350 for 30 minutes 9. Garnish with chopped Parsley before serving . . Tonight's dinner was a vegan sweet potato shepherd's pie! I made mashed Japanese sweet potatoes, and marinated mushrooms in a sauce that I made with tomato paste, garlic, balsamic, red wine, and herbs. Then I cooked the mushrooms in a skillet with carmelized onions. I also sauteed a bunch of veggies in garlic, olive oil, and thyme. When all that was done I filled a baking dish with spinach, the veggies, mushrooms, and sweet potatoes, and sprinkled red pepper flakes on top! I put it in the oven long enough to cook the spinach and brown the top. It was delicious, and I liked it as much or more than shepherd's pie with meat !

One of the very few things Alexis will ask for to eat, she is very picky and routine about her food choices. She will like only 1 or two things for a month straight & just change it up on us sporadically. The @beyondmeat burger and fries are #AlexisApproved -these patties are very realistic!!! So realistic that I question them every time, "this isn't real, is it?" Vegan food options are available virtually everywhere nowadays, making life easier than ever to be cruelty-free and environmentally aware of how your food choices affect everyone and the planet. I am not trying to claim that this is a healthy food option by any means, I'm explaining my experience with having a soon-to-be adult child with autism that has adapted so well to a vegan lifestyle but is very picky. I will not be discouraged when the food choice isn't exactly healthy, yet cruelty-free, we can work from there. Winter always seems to deplete us and we need more whole food plants to get us back on track. Minor grocery trip this weekend 🤤 From left to right we got: Frozen broccoli - super quick and nutrient dense side. Frozen spinach - my husband has a weird thing for frozen spinach. Ask him about it. Fresh spinach and lettuce - goes on anything and everything. Cuties - duh. Mushrooms - tons of minerals. Peppers - delicious and packed with vitamins. Mango - trying it out. Avocados and limes - healthy fats and guacamole. Coconut water - works the way Gatorade is supposed to. Almond butter - 🤤 plus healthy fats. Rice - staple. Pasta sauce - easy to add to meals. Whole wheat and sprouted bread - we like different breads so we get both 🤷‍♀️ Tortillas - I use for everything, maybe an obsession, I don’t know. Powdered peanut butter - very macro friendly substitute for the regular stuff. Lentil pasta - 25 grams of protein for eating spaghetti. Tofu - great protein source. I’m typically not a fan but I’ve recently found a way to make it delicious. Mock deli slices - a different alternative. Pudding - my guilty pleasure. Vanilla almond milk - every. Single. Garlicky Bok Choy Carrots 🥬 🥕 . No rice, no nothing, just plain old bok choy, carrots, garlic, ginger, and tamari sauce 🥰 . . . . . . . . . . . . Ingredients . 2 tbsp tamari sauce 1 tbsp extra virgin olive oil 1/2 c vegetable broth 2 heads baby bok choy, cut stalks in quarter pieces, and keep separate from greens 2 cups carrots, diced 6 cloves garlic, minced (adjust more or less to taste . . Instructions . 1) Add broth to pan or wok, medium heat 2) Add carrots, stir 5 minutes 3) Broth should dissipate mostly by now, add oil to pan (no worries if it has not) 4) Add white stalks, sauté for 3 min 5) Carrots should now be tender and stalks crispy (unless you like stalks to be tender like I do-sauté another 2 minutes for more tender) 6) Add greens of bok choy, sauté 1-2min 7) Add garlic and tamari sauce stirring frequently for 1-2min . Kimchi Fried Cauliflower Rice w/Scramble Tofu . . . Ingredients: •1 onion, diced •1 c carrots, chopped •1 c cabbage, chopped •2 garlic cloves, minced •1 c kimchi, chopped •4 c cauliflower rice •2 scallions, diced •1 c green peas •1 c corn •3 tbs rice vinegar •1 tbs tamari •1 tsp pepper •1 tsp turmeric •3 tbs extra virgin olive oil •1 cup extra firm tofu, pressed then chopped •••••••••••• . Method •Add 2 tbsp oil to pan, on medium heat •Add tofu chopped to pan, cook 3-5min each side •Remove from skillet & place tofu in bowl •Add remaining oil to skillet •Add onion,garlic, sauté 2min •Add kimchi, sauté 2 min •Add cauliflower rice •Mix frequently, 7-10min •Add cabbage, 3min •Add vinegar & tamari, mix •Add tofu last, prevent soggy •Top with scallions . Enjoy!

Vegan Creamy Potato Vegetable Soup . . Our weather in AZ is beautiful today! About 79 degrees. I anticipated a little cooler weather when I had this dish in mind. In any case, it is absolutely delicious. And not because I made it. These flavors come together, and the Vegan butter makes all the world of difference! . . . . . . I used a Dutchpot, you can use a saucepan if you don’t have one. . . . . Ingredients: . 6 red potatoes 1 cup chopped onion 8 oz mushrooms 1 cup sliced carrot 1 cup chopped celery 3 cups vegetable broth 8oz coconut cream milk 3 tbs vegan butter 3/4 tsp salt 3/4 tsp pepper Parsley for garnish . . . Method: . •Chop Veggies •Heat Dutchpot Medium Heat •Add Vegan Butter to Pot •Add All Veggies to Pot •Stir for 5 Minutes •Add Broth •Bring to a Boil •Reduce Heat, Cover, Simmer 15 minutes •Add Coconut Milk •Stir for 2 minutes . Vegan Roasted Cauliflower Corn Soup . ................... Ingredients: 1 head cauliflower 2 tbsp vegan butter 32 oz vegetable broth 3/4 c coconut cream 2 cloves garlic 1 c corn 1 c celery 1 c mushrooms 1 onion, sliced 2 tbsp extra virgin olive oil 1 tsp oregano 1 tsp cayenne pepper Pinch of Kosher salt Pinch of black pepper Green onions for garnish .................... Instructions .................... 1) Preheat oven to 400 degrees F 2) Spread following veggies evenly to a baking sheet: cauliflower, celery, onions, and corn 3) Save a few pieces of raw cauliflower if you want to add for crunch 4) Drizzle oil, salt, pepper, oregano and cayenne pepper 5) Roast for 30-35 minutes, until edges of cauliflower turn brown 6) A few minutes before veggies are roasted, take pot and turn heat to low setting, and melt vegan butter, my choice @miyokoscreamery. Add chopped garlic, sauté for 2 minutes. 7) Add roasted veggies from baking sheet to pot, along with vegetable broth and coconut cream 8) Bring to a boil Top with chopped green onions. Vegan Soul Food . . . . Meatless BBQ Ribs w/All the Vegan Organic Fixings. . . It’s been a long time since I had good ol tasting soul food. It is my absolute favorite in this entire world 🌎. I grew up on eating this through adult years and as well cooked this. Sadly, I stopped making it, simply because I thought it just wouldn’t taste the same without smoked meat in my greens.
